<p>The study aimed at measuring changes in chemical composition of maize kernels due to <em>Aspergillus flavus</em> Link. and <em>Fusarium verticillioides</em> (Sacc.) Nirenberg infection. The samples of maize kernels were incubated at 28 °C for 7, 14, 21, and 28 days. The samples were analysed for mycotoxin, moisture, crude fat, crude protein, crude ash, and crude fibre. Maize kernels inoculated with <em>A. flavus</em> and <em>F. verticillioides</em> exhibited a significant decrease in crude fat. Aflatoxin B1 (AFB1) contamination increased in maize kernels inoculated with <em>A. flavus</em>, and fumonisin B1 (FB1) in kernels inoculated with <em>F. verticillioides</em>. Crude ash and crude fibre content showed no changes. Incubation time significantly affected AFB1 and FB1 contamination levels, moisture, crude fat, and crude protein contents. AFB1 and FB1 contamination were significantly correlated with crude fat degradation. The tested strains had similar deteriorative effects on maize kernels. The significant changes in the proximate composition were only observed in maize kernels with mycotoxin contamination above the regulatory limit of 10 µg kg−1, thus not fit for human consumption.</p>

The influence of the stage of maturity of alfalfa on the chemical composition and in sacco digestibility was studied in a laboratory experiment. Alfalfa plants were analysed in 8 vegetation stages harvested in regular intervals before the beginning of bud setting until the fall of blossoms. The contents of nitrogenous substances, fat, crude fibre, ADF, NDF, Ca, P, Na, K and Mg were determined in the samples, and using the in sacco method also the organic matter digestibility in the rumen. Further we assessed the energy content and calculated the N−free extractives (BNLV) value. In some stages the chemical changes were monitored in the whole plant. It was discovered that during vegetation there was a statistically significant increase in the crude fibre content and in the ADF and NDF fractions and a reduction in nitrogenous substances. A strong negative correlation was detected between the stage of maturity of alfalfa and content of crude protein and net energy for lactation (r = −0.97 and r = −0.92, respectively). In the individual stages of vegetation the differences in the content of nitrogenous substances, fibre and fat were statistically significant (P < 0.05). The statistically highest content of crude protein (28.97%) was detected in the first stage before bud setting and the lowest (11.97%) in the stage after the fall of blossoms. Later vegetation also had a stronger depressive effect on the content of fat and NEL. The organic matter digestibility (P < 0.05) was the lowest in alfalfa in the last stage of sampling (62.6%) when it reached a mere 85.99% of the digestibility at the beginning of bud setting. The highest organic matter digestibility (72.80%) was detected in a sample of young alfalfa prior to bud setting. In the experiment we confirmed a strong and negative correlation (r = −0.97) between the crude fibre content and organic matter digestibility. The correlation was also strong between the stage of maturity of alfalfa and the content of magnesium (Mg).

Altogether 19 fodder climbers were collected with local information for their quality, feeding season and preference by livestock from Sunsari district, Nepal. Fodder climbers were distributed under 15 angiospermic families. Among them, 6 climber species were analyzed for dry matter, crude protein, ether extract, crude fibre, N-free extract, total ash and mineral contents (K, Ca, and P). Dry matter content ranged from 24.12 to 45.43%. Crude protein content showed slight variation. Ether extract ranged from 2.13- 4.23%, while Crude fiber content ranged between 18.62 and 22.52%. N-free extract showed narrow variation in the content while Total ash content exhibited a wide variation ranging from 5.67 to 11.52%. Among the minerals, Phosphorus showed distinct variation in the content from 0.19 to 0.46%. Fodder quality assessed by local people was compared with the result of chemical composition. On the basis of local information and chemical composition, Hedera nepalensis and Hedyotis scandens were considered as very good fodder climbers.

Chemical Composition and Nutritive Value of Protein of the Pea Seeds - Effect of Harvesting Year and VarietyWe tested nutritional usability of pea seeds (Pisum sativumL.) at full maturity. Four white-flowering and 5 colour-flowering new Polish cultivars were compared. We determined proximate composition of ground seeds collected over 4 years period as well as amino acids, minerals (Ca, P, Na, K), tannins and fiber fractions (NDF, ADF, ADL). The seeds contained between 224 and 260 g·kg-1of crude protein which was rich in Lys (6.8±0.8 g) but poor in Met+Cys (2.0±0.2 g·16 g-1N). The amount of tannins (as tannic acid equivalent) in white-flowering cvs was 4.3±0.9 g and in colour-flowering - 7.4±2.2 g. The calculated protein nutritional values were compared against amino acid standards of human and animal nutrition and the whole egg protein. Effects of the cropping year and variety variance in respect of chemical composition of seeds were examined. Crude protein, crude oil, N-free extractives, tannins, K, amino acid content: Leu, Phe+Tyr and Ala content were influenced significantly by the cultivar, while the cropping year had a significant influence on dry matter, crude ash, crude protein, crude fibre, crude oil, N-free extractives ADF and ADL fiber fractions, content of P, Na and K, most of the amino acid levels and on nutritional values of the protein measured by means of CS and EAAI indices.

Fumonisins are mycotoxins (MTs) produced mainly by the fungus Fusarium verticillioides, the main pathogens of maize which cause ear rot. The aim of this work was to evaluate some factors that may lead to high fumonisin production by F. verticillioides in maize grains, correlating the pathogen inoculation method with different genotypes grown in four Brazilian states. Experiments were conducted in 2015–2016 in maize crops from experimental maize fields located in four distinct states of Brazil. Results showed that contamination by fumonisin mycotoxins occurred even on symptomatic or asymptomatic grains. In all municipalities, the samples showed levels of fumonisin B1 that were higher than would be tolerable for the human consumption of corn products (the current tolerance limit for fumonisin is 1.5 μg g−1). High severity of grains infected with F. verticillioides does not always show high concentrations of fumonisins. Environments with higher temperatures may influence the production of high concentrations of fumonisin in maize hybrids. Spray inoculation methods and inoculation at the center of spikes did not influence fumonisin concentrations. Results showed that the hybrids P3630H, P32R48 and P3250 presented higher disease severity, as well as higher mycotoxin levels in the studied locations with higher temperatures.

The levels of proximate composition, minerals, antinutrients, fibre components and calculated parameters for mineral bioavailability were determined in the testa, dehulled and whole seeds of Bambara groundnut on dry weight basis. Proximate levels were (g/100 g): ash (2.46- 4.36); crude fat (2.47-6.99); crude protein (15.2-22.2); crude fibre (1.03-22.9) and carbohydrate (51.6-61.9). The non-starch polysaccharide (NSP) components were (%): ADF, 7.13-29.0 (or 16.1 %-65.5 %); NDF, 1.77-23.6 (or 6.28 %-83.7 %); ADL, 6.15-28.0 (or 14.9 %-67.8 %); cellulose, 1.36-23.3 (or 5.02 %-86.0 %) and hemicellulose, 0.84-26.5 (or 2.86 %-90.1 %). In minerals (mg/100 g): Mn, Co and Cu were not detected; Na, K, Ca, Mg, Fe and P were low in values whereas Zn was high at 11.2-40.2. These parameters were also good for human health: Na/K (0.47-0.51) and Ca/Mg (2.58-4.36). Antinutrient values showed that Phy was high (14.4-29.2 mg/g); oxalate was high (5.02- 8.59 mg/g) and unavailable phosphorus as Pp % of P (10.2-49.3 %). The mineral bioavailability showed Ca/Phy to be good at 0.20-0.89 and [Ca] [Phy]/[Zn] to be good at 0.09-0.23 thereby making Zn bioavailable in all the samples. The results of more than fifty estimates1 of herbage yield and ninety-seven analyses of chemical composition are presented in the first of several reports on nutritive evaluation studies of Panicum maximum (guinea grass). Effects of stage of maturity and season are discussed.Herbage yield increased at an increasing rate with maturity, and was depressed by about 40 % in the dry season compared to the wet season. The most significant differences in chemical composition were a decrease in crude protein from 9·8 % to 6·6% and a corresponding increase in crude fibre from 32·1 % to 39·4% as the grass matured from about 2½ weeks to about 2½ months in age. An increased level of nitrogen fertilization resulted in crude protein content being nearly doubled and crude fibre somewhat reduced.

The present study was conducted to develop buckwheat cookies supplemented with wheat flour.Buckwheat and wheat flour were examined for their proximate composition. Buckwheat flour contained11.6% moisture, 15.79% crude protein, 1.81% crude fat, 1.83% ash, 0.70% crude fibre content and 68.27%NFE, while wheat flour contained moisture content 13.12%, crude fibre content 1.93%, crude fat 1.42%,crude protein content 12.53%, ash content 1.57% and 69.43% NFE, respectively. Wheat flour was incor-porated into buckwheat flour at 10, 20, 30, 40 and 50% ratio to make composite flour and the developedcookies were analysed for quality evaluation. Supplementation of wheat flour significantly influenced theproximate and mineral composition of buckwheat flour based cookies. Moisture contents, crude fibrecontents and NFE (Nitrogen Free Extract) increased, whereas crude fat, crude protein and ash contentsdecreased. Mineral contents (Fe, Ca, K, Zn and Mg) of developed buckwheat cookies decreased withincrease in wheat flour supplementation levels. Sensory characteristics of supplemented cookies increasedwith increase in supplementation levels of wheat flour and were acceptable by judges in terms of test,colour, texture and overall acceptability. Cookies developed from C 50% C supplementation level of wheatflour got maximum scored points while C0 control C0 was found to be more nutritious and gluten freehaving more crude protein and mineral contents when compared to supplemented cookies.

In this paper we analysed the change of the chemical composition and nutritive value of Timothy observed during the spring of 2005. The nutritive value of Timothy was observed between the end of April and the beginning of June relating to the following parameters: crude protein, crude fibre, crude fat, ash, N-free extract, net-energy growth, net-energy lactation, net-energy maintenance, Metabolizable Protein Energy dependent, Metabolizable Protein N-dependent. We also analysed whether a relationship between the environmental factors that affect thegrowing period of grasses and the chemical composition can be detected or not. While testing for correlation, the number of days from 1st January, the amount of heat accumulation, solar radiation and rainfall were considered as independent coefficients.For the estimation of weather conditions we calculated the climate index. The observed year can be described as a year with a rainfall above the average and abundant solar radiation. A correlation can be detected between the change of parameters of nutritive value and the quality of the current year. In 2005 the result of the analysis of nutritive value was showed a significance difference with respect to each chemical composition at the rate of P<0.001 depending on the time when the samples were taken.According to the outlined data it can be stated that the change of the value of crude protein and ash show decreasing tendency agreeing the research literature. In parallel with the change of nutritive value, the amount of crude fibre and N-free extract increased. However, the value of Net-Energy maintenance showed an alteration only in the first half of the observed period. The same alteration tendency can be detected in the Net-Energy growth and the Net-Energy lactation.

<p>The chemical composition and in vitro dry matter digestibility of 45 samples of different species of lichen are reported. Mean content (g/100 g dry matter) of the main nutrients was: crude protein 4.2, crude fat 3.2, crude fibre 16.6, ash 1.9, Ca 0.15, P 0.09, Mg 0.05, K 0.13, Na 0.035, S 0.07. The content of microminerals (mg/kg dry matter) was: Cu 2.5, Mo 0.11, Zn 27.2, Se 0.12, Fe 898, Mn 154. The mean in vitro dry matter digestibility was 35%. However, the in vitro method do underestimate the dry matter digestibility of lichens. Stereocaulon spp. showed higher levels of crude protein, P, S, Cu and Mo than Cetraria spp. and Cladonia spp. Cetraria nivalis showed higher digestibility and contained more NFE, ash, Ca, Mg, but less crude fibre than Cladonia stellaris.
