The Functional Properties of Chokeberry and Kale Powders Obtained by an Innovative Method of Fluidised-Bed Jet Milling with Drying Compared to Freeze Drying

AbstractThe study evaluated the functional properties of chokeberry and kale powders obtained by the fluidised-bed jet milling with drying (FJMD) method compared to the freeze-drying (FD) method. The powders obtained by the FJMD method were characterised by low water activity (<0.3), vitamins C content of 320.2 mg/100 g d.m. for kale powder, total content of polyphenols of 1864.2 mg/100 g d.m. for chokeberry powder, antioxidant activity of 37.0 and 27.6 mmol Trolox/g d.m for chokeberry and kale powders respectively and sensory quality similar to raw material. The high content of vitamin C in the kale powder indicates the desirability of its greater use as a natural source of this vitamin. The properties of FJMD powders were similar to the functional properties of the FD powders, which indicate that the FJMD method can be very competitive as compared to FD method.

Berries of Actinidia kolomikta (A. kolomikta) are known for high ascorbic acid content, but the diversity of phenolic compounds has been little studied. The present research aimed to investigate phenolic compounds and antioxidant activity in berries and leaves of twelve A. kolomikta cultivars. The UHPLC-ESI-MS/MS technique was used to determine differences among cultivars in the quantitative composition of individual phenolic compounds. Antioxidant activity was determined by DPPH• free radical scavenging and CUPRAC methods. In the present study, 13 phenolic compounds were detected in berries, whereas leaves contained 17 phenolic compounds. Flavonols were the primary class found in both berries and leaves; other identified phenolic compounds were flavan-3-ols, flavones and, phenolic acids; and dihydrochalcone phloridzin was identified in the leaves. The amount and variety of phenolic compounds in berries and leaves and antioxidant activity were found to be cultivar-dependent. The highest total content of phenolic compounds was found in the leaves of the cultivar ‘Aromatnaja’ and in the berries of the cultivar ‘VIR-2’. Results of this study have confirmed that berries and leaves of A. kolomikta could be a valuable raw material for both food and pharmaceutical industries.

The polyphenol content of cocoa beans and the products derived from them, depend on the regions in which they are grown and the processes to which they are subjected, especially temperature. The aim of the study was to compare the total content of polyphenols and antioxidant activity of chocolates obtained from roasted and unroasted cocoa beans. The chocolates produced from each of the six types of unroasted beans and each of the five types of roasted beans were investigated. The seeds came from Ghana, Venezuela, the Dominican Republic, Colombia and Ecuador. The highest total polyphenol content was determined in cocoa beans originating from Colombia and in the chocolates obtained from them. A higher content of total polyphenols was found in unroasted cocoa beans, which indicates the influence this process had on the studied size. The ability to scavenge free DPPH radicals was at a high level in both the beans and the chocolates produced from them, irrespective of the region where the raw material was grown. A positive correlation between the total polyphenol content and the ability to scavenge free radicals was found.

Loloh teter leaf is one of the traditional drinks in Bali, it made from raw material of teter leaf and other matter such as tamarind fruit, sugar and salt. The study aims to determine the effect of additional tamarind fruit (Tamarindus indica L.) to produce Loloh Teter leaf (Solanum erianthum) with the best characteristics. The experimental design used was a Completely Randomized Design (CRD) with the addition of tamarind fruit treatment consisting of 6 levels, namely : 0%, 0.5%, 1%, 1.5%, 2% and 2.5%. The treatment was repaeated 3 times for abtaining obtained 18 experimental units. The data obtained were analyzed by variance and if the treatment had significant effect followed by Duncan Multiple Range Test (DMRT). The results of this study indicate that the treatment of tamarind fruit addition has a very significant effect (P<0,01) on total phenolics, total flavonoids, vitamin C, antioxidant activity, total solids, color (hedonic test) and taste (scoring test). The best treatment in this study was the addition of 2,5% tamarind fruit with the total phenolics 0.86 GAE/100ml, total flavonoids 0.48 QE/100ml, vitamin C 26.39 mg/100ml, antioxidant activity 47.05% with IC50 valued 271,382.73 ppm, total solids 7.44%, the color is usual as well as, the aroma is rather liked, the teste is sour and rather liked and overall acceptance is rather liked.

Guazuma ulmifolia Lam., popularly known as mutamba, mutambo and mucungo, is widespread throughout Latin America. Studies on the physicochemical characteristics and the technological application of its constituents can support its use as raw material for enrichment and formulation of food products. This study aimed at to identify substances of food interest derived from mutamba fruit, through its physical, physicochemical, proximate, mineral, bioactive compounds and antioxidant activity characterization in two maturation stages. The incomplete and full physiological maturation had, on average, mass of 5.52 and 3.54 g, respectively, and acid pH of 4.84 on average. Soluble solids content increased with maturity reaching 32.9 °Brix. Regarding proximate composition, it was observed an increase in protein, lipid, crude fiber and ash; and reduction of 80% in moisture. The most concentrated minerals were K, N, Ca, P and Mg. The content of anthocyanins, polyphenols, yellow flavonoids and the antioxidant activity increased with maturation, while vitamin C remained at 1500 mg.100 g-1. This study is innovative as mutamba fruits with incomplete physiological maturation were characterized for the first time. That mutamba fruits, no matter the physiological maturation, have potential of exploitation in the food industry, due to their high content of soluble solids, as well as in the enrichment of other food products as source of vitamin C and minerals.

Одним из путей повышения функциональной ценности пищевых продуктов является увеличение содержания в них химических соединений, обладающих антиоксидантной активностью. Последние, как известно, играют важную роль в профилактике различных заболеваний человека. Антиоксидантами богаты зерновые культуры, на основе которых изготавливаются наиболее употребляемые населением продукты питания. Целью данного исследования являлось определение величины суммарного содержания антиоксидантов (ССА) в зерновом сырье на разных этапах производства хакасского национального продукта талган, изготовленного из пророщенного зерна овса. Овес выращивали на территории Бейского района Республики Хакасия в 2019 г. Очищенное зерно проращивали при комнатной температуре в течение 56 ч, затем его просушивали и обжаривали при температуре 180…200 °С в течение 10-15 мин, а далее измельчали и просеивали через сита с ячеей 0,9 мм. В результате получали продукт талган и отходы в виде отрубей. Для определения уровня ССА в зерне использовали два растворителя - горячую бидистиллированную воду и 70 %-ный этиловый спирт. Измерение значения ССА выполняли на приборе «Цвет Яуза-01-АА». Среди исследуемых образцов более высокие показатели ССА были зарегистрированы при использовании в качестве элюента горячей бидистиллированной воды. В работе выявлен эффект увеличения уровня ССА в конечном продукте по сравнению с исходным сырьем после этапа проращивания зерна в среднем в 2 раза, а после этапов обжаривания и измельчения в 2,1 раза. Величина ССА в отрубях превышала таковую в исходном зерне в среднем на 47 %. Таким образом, в результате исследований было установлено, что введение в технологию изготовления овсяного талгана дополнительного этапа, заключающегося в проращивании зерна, является одним из эффективных способов повышения величины ССА в полученном на его основе продукте. One of the ways to increase the functional value of food products is to increase the content of chemical compounds that have antioxidant activity. The latter are known to play an important role in the prevention of various human diseases. Antioxidants are rich in cereals, on the basis of which the most commonly consumed food products are made. The purpose of this study was to determine the value of the total content of antioxidants (TCA) in grain raw materials at different stages of production of the Khakass national product talgan, made from sprouted oat grain. Oats were grown on the territory of the Bey district of the Republic of Khakassia in 2019. The purified grain was sprouted at room temperature for 56 hours, then it was dried and fried at a temperature of 180…200 oC for 10-15 minutes, and then ground and sieved through sieves with a mesh of 0.9 mm. As a result, the product talgan and waste in the form of bran were obtained. To determine the level of TCA in the grain, two solvents were used - hot bidistilled water and 70 % ethyl alcohol. The TCA value was measured on the device «Color Yauza-01-AA». Among the studied samples, higher TCA values were recorded when using hot bidistilled water as an eluent. The paper reveals the effect of increasing the level of TCA in the final product in comparison with the initial raw material after the stage of grain germination by an average of 2 times, and after the stages of roasting and grinding by 2.1 times. The value of TCA in bran exceeded that in the original grain by an average of 47 %. Thus, as a result of research, it was found that the introduction of an additional stage in the production technology of oatmeal talgan, which consists in the germination of grain, is one of the effective ways to increase the value of TCA in the product obtained on its basis.

Kiwifruit is an excellent source of vitamin C and other bioactive compounds, which contribute to its high antioxidant activity. However, the fruits with small size and low weight are considered waste and are unprofitable; therefore, the production of healthy kiwifruit-based dried snacks, which contain a lot of health-beneficial ingredients, could be a viable alternative for their use. The aim of this study was to develop formulations and methods to produce attractive and nutritionally valuable dried snacks based on yellow kiwifruit. Three different puree formulations (kiwifruit; fennel; and strawberry, lemon, or spinach) with or without addition of sugar were subjected to two drying methods: freeze-drying (fruit bars) and conventional hot air drying (fruit leathers). The obtained products were analysed for their content of total polyphenols (TPs), flavonoids, and vitamin C, as well as their antioxidant activity. The results showed that snacks prepared by freeze-drying (fruit bars) presented higher TP, vitamin C, and flavonoids content than those prepared by convective drying; however, the antioxidant activity did not always follow this trend. The amount of bioactive compounds depended on the formulation used for the preparation of snacks. The effect of the sugar addition seems to be strictly related to the mix used and specific bioactive compound investigated.

The effects of a 80°C, 1 minute thermal treatment (H treatment) and of the same treatment combined with sucrose (SH treatment) on the chemical and sensory qualities of arazá purée were evaluated during 4 months of storage at -20°C. For the control, an untreated sample (C) was included. The chemical qualities evaluated were vitamin C content, total phenolic compounds (TPC), and antioxidant activity (AoA), which were measured with the ferric reducing ability of plasma (FRAP), 2,2'-azino-bis(3-ethylbenzothiazoline-6-sulfonic acid) (ABTS), and 1,1-diphenyl-2-picrylhydrazyl (DPPH), while a trained panel was used for the sensory quality evaluation. After 4 months of frozen storage, SH was more effective than H at controlling the loss of chemical quality. SH provided a similar FRAP-AoA (89%) and vitamin C content (87%), as well as a higher TPC (145%), ABTS-AoA (272%), and DPPH-AoA (115%), when compared to C before frozen storage. The total sensory qualities in both the SH purée (15±1) and the H purée (16±1) after 4 months at -20°C were comparable to those of the C purée before the frozen storage (18±2). Therefore, using sucrose combined with a thermal treatment and subsequent frozen storage preserves the chemical and sensory qualities of arazá purée.

The vast majority of fruits and unprocessed vegetables, have a very short shelf life, mainly due to its high-water activity. Drying technology is an effective process, used to increase the shelf life of these products. It also can provide an effective method of consumption of fruits in food products. In this study, the influence of the maturation stage and drying method on the phenolic compounds and antioxidant activities of Japanese grape pseudo-fruits (Hovenia dulcis T.) were studied. The centesimal composition, reducing sugars and nonreducing sugars, ratio, color, phenolic compounds and antioxidant activity by oxygen radical absorbance capacity (ORAC) of the unprocessed pseudo-fruits, at different maturation stages (immature, in maturation and mature), were analyzed. Two drying methods were employed in the pseudo-fruits (oven with air circulation and freeze drying) obtaining flour from which moisture content, instrumental color, phenolic compounds and antioxidant activity were determined. The unprocessed pseudo-fruits of Japanese grape showed significant content of phenolic compounds at the early stages of maturation and high antioxidant capacity when mature (at the final stages of maturation). In addition, they showed a high content of fibers and sugars, and can be used as raw material in the food industry. After dehydration, the freeze-drying process provided a more stable color, because this process minimizes the enzymatic browning reactions, and preserved a greater number of phenolic compounds. The antioxidant activity, however, showed to be associated with the drying method, being higher in the flour obtained from lyophilized immature pseudo-fruits.

Straw from jackfruit so far is still considered a waste that is still thrown away by most people and even often becomes a problem that can pollute the environment. Jackfruit straw contains many of the same substances as fruit flesh such as protein, crude fiber, sugar and so on. Jackfruit straw has pectin which can be used as raw material in making jam. In making jam, fruits that have high acidity are also needed. Rosella contains vitamin C and flavonoids in the form of antosanin which can be used as flavor enhancers and natural dyes. The aim of this study was to determine the addition of rosella flower concentration that produced the best jackfruit straw jam based on the level of panelist preference (texture, color, taste), anthocyanin content, vitamin C content. This study used a completely randomized design with 5 treatments consisting of concentrations 0%, 10%, 20%, 30% and 40% with 5 repetitions. Analysis carried out by ANOVA test, if there is an effect of giving rosella juice then it will be followed by Duncan's test. The results showed that the addition of 40% roselle flower extract affected the level of preference for texture, color and taste. The addition of 40% has the highest total anthocyanin content of 45.22 mg / 100g and the total content of vitamin C in jackfruit straw sheet jam is 35.11 ppm.   Keyword : Jam sheet, jackfruit, rosella essence, levels of pleasure, anthocyanin contains, vitamin C contains.

Cocoa nibs ( cacao L.) are the cocoa beans after being fermented, dried, broken into small pieces, and then toasted. The cocoa nib composition is primordial for producers, industry, and final consumers because it affects the final quality of the raw material and any derivative product. The chemical composition was analyzed using , , , and Scharrer-Kurschner methods. The results showed that the cocoa nibs studied were rich in lipids (44.02 ± 5.22%), followed by carbohydrates (25.30%), raw fiber (12.85 ± 3.67%), protein (10.73 ± 1.80%), and ash content (2.58 ± 0.15%). The fatty acid profile was determined by gas chromatography and showed the presence of , , and acids. The low moisture content (4.52 ± 0.12%) and total acidity (2.25 ± 0.45 NaOH 100 g-1) contributed to the low count of microorganisms, which may give cocoa nibs a longer shelf life. Additionally, it presented high antioxidant activity, with a total content of 843.45 ± 11.85 mg acid / 100 g extract and 89.42 ± 0.02% iron reducing power.
