Plant fruits, leaves, stems, and other parts are of high nutritional value, and are the source of physiologically active compounds, which can contribute to the treatment of many diseases caused by oxidative stress. Enrichment of the species spectrum of the fruit plants expands the possibilities of their use in dietary nutrition and human treatment. Unfortunately, the introduction of the new fruit plant species in industrial gardens in the Steppe Dnieper is limited to a large extent by the unfavorable climate. In this regard, the assessment of the possibility of realizing the genetic potential of fruit plants from different geographical areas in the steppe climate acquires both scientific and practical significance. The study was conducted on the basis of the fruit plants collection collection of the Botanical Garden of the DNU including four introduced species and one natural species from the genus Berberis. The anomalous weather conditions during the growing season of 2017 (snowfall in April followed by a drought in June) were accompanied by an earlier stage appearance of leaves, flowering and fruit ripening of all introduced plants, especially the Asian species B. amurensis and B. koreana, compared to the native species B. vulgaris. In accordance with the results obtained, fresh weight of the ripe fruits of Berberis species decreased in the order of B. amurensis > B. vulgaris > B. canadensis > B. koreana > B. x declinata. The highest total phenolics content, determined in the isopropanolic fruit extracts by Folin – Ciocalteau assay, was found in the fresh ripe fruits of B. koreana (1362 ± 66 mg GAE/100 g WW), followed by B. x declinata and B. vulgaris fruits (91% and 77% of the B. koreana phenolics content respectively). The highest total flavonoids content determined using the aluminum chloride method was revealed in the fruits of B. koreana (210 ± 6 mg RE/100 g FW) exceeding the content in fruits of other Berberis species by 1.1–2.1 times, while the lowest value (103 ± 4 mg RE/100 g FW) was found in the fruits of B. amurensis. The total reducing power, determined by RP assay, varied in the range from 5.0 to 9.6 mg AAE/100 g DW, and the highest levels were found in the fruits of B. koreana and B. x declinata (respectively, 9.6 ± 0.6 and 8.6 ± 0.5 mg AE/100 g DW) exceeding the reducing capacity of other Berberis species by 1.7–1.9 times. In the fruits of genus Berberis species strong positive correlation was found between the total reducing power and the total content of phenols (r = 0.87), as well as between the reducing power and the total content of flavonoids (r = 0.84). High correlation coefficients confirm the significant contribution of the Berberis fruit phenolic compounds, including the flavonoids, to the antioxidant capacity. So, the study results showed that fruits of all examined Berberis species can be an easily accessible source of antioxidants, however, the antioxidant capacity of fruits decreased in order of B. koreana > B. x declinata > B. vulgaris > B. amurensis > B. canadensis.

This study evaluates nutrients and health-promoting compounds responsible for antioxidant capacity in eight novel formulations based on lyophilized fruit and vegetable powders. The composition contained lyophilized carrot, pumpkin, lentil sprouts, raspberry, strawberry, and apple. The effect of functional additives on the antioxidant, nutritional, and functional characteristics of powdered beverages was determined in the powders and after rehydration followed by in vitro digestion. The antioxidant activity, phenols, vitamin C, and reducing power were significantly higher in the powders enriched with additives having potential functional properties. Furthermore, the analyses indicated that all the powdered formulations may be potential sources of total starch (100–112 mg/100 mL) and proteins (125–139 mg/100 mL). The designed powdered beverages after reconstitution exhibited high antioxidant content, reasonable consumer acceptance, and good in vitro bioaccessibility. The best results of antioxidant capacity were obtained for beverages enriched with raspberry, i.e., 10.4 mg Trolox equivalent (TE)/100 mL and 12.1 mg TE/100 mL rehydrated at 20 °C and 80 °C, respectively. Additionally, color characteristics were used as indicators of the quality of the powdered beverages. This research promotes the reduction of food waste, since whole plant tissues are used, thus allowing maximum exploitation of food raw materials; moreover, drying provides stable shelf life.

Boletus edulisis a wild edible mushroom habitually consumed by rural populations. Ethanolic and methanolic extracts was obtained in cold and hot water from dried fruit bodies. The antioxidant activity of freeze-dried extracts fromB. eduliswere investigated using free radicals scavenging activity, reducing power, metal chelating effect, inhibition of lipid peroxidation, and the identification of antioxidant compounds. The levels of different compounds with antioxidant properties were higher in alcoholic extracts compared with aqueous extracts. Rosmarinic acid was the major phenolic compound, it being identified in a concentration between7±0.23and56±0.15 mg/100 g extract. A positive correlation between the content of total phenols, flavonoids, anthocyanins, and tocopherols, and the antioxidant capacity of the extracts was determined. The results showed that the ethanolic extract of Romanian wild mushroomB. edulisrepresents a natural source of functional compounds.

Hydrogen peroxide treatment and the phenylpropanoid pathway precursors feeding affected the antioxidant capacity of quinoa sprouts. Compared to the control, total phenolics content was significantly increased by treatment of control sprouts with 50 mM and 200 mM H2O2—an elevation of about 24% and 28%, respectively. The highest increase of flavonoids content was found for the sprouts treated with 200 mM H2O2obtained from seeds fed with shikimic acid. All the studied modifications increased the antioxidant potential of sprouts (at least by 50% compared to control). The highest reducing power was found for the sprouts treated with 200 mM H2O2obtained by phenylalanine feeding (5.03 mg TE/g DW) and those obtained from the seeds fed with tyrosine (5.26 mg TE/g DW). The activities of L-tyrosine (TAL) and L-phenylalanine (PAL) ammonia-lyases were strongly affected by germination time as well as the applied modification of sprouting. On the 3rd day the highest PAL activity was determined for both untreated and induced with 50 mM H2O2sprouts obtained by phenylalanine feeding. H2O2induced TAL activity; the highest TAL activity was determined for 3-day-old sprouts induced with 200 mM H2O2obtained from seeds fed with phenylalanine.

The paper presents the results of studying fruits antioxidant properties of several species, previously combined into the genus Sorbus L. (Rosaceae family). Ripe fruits were collected in September 2020 from the plants of Cormus domestica (L.) Spach, Sorbus aucuparia L., Karpatiosorbus latifolia (Lam.) Sennikov & Kurtto and Torminalis glaberrima (Gand.) Sennikov & Kurtto from the collection of the Botanical Garden of the Oles Honchar Dnipro National University. Total phenolic content (TPC), total flavonoids content (TFC), ferric reducing antioxidant power (FRAP) and total antioxidant capacity (TAC) were determined both in the fruits peel and pulp. In the fruits of all species, higher values of the determined indicators were found in the fruit peel than in the pulp. Moderate and strong positive correlation was found between FRAP and TPC as well between FRAP and TFC both in peel and pulp of all studied species. At the same time, notable interspecific differences of the phytochemical traits were established, indirectly confirming the ambiguity of the taxonomy of the genus Sorbus L. According to the fruits antioxidant properties and secondary metabolites accumulation, species K. latifolia (broad-leaved whitebeam) and T. glaberrima (wild service-tree) are the most promising for cultivation in arid conditions of the central steppe of Ukraine.

Plants of the genus Chaenomeles are traditionally used in the countries of South-East Asia, due to their high nutritional and health-promoting properties. However, the successful introduction of species promising for gardening from geographically remote areas requires the study of plant ontogeny under the conditions of new habitat. This is a very substantial problem for the steppe zone, where the continental climate has features of aridity and complicates the process of increasing the diversity of fruit crops by introducing the desired species. The present study aims to assess the effectiveness of the protective enzymatic system of different Chaenomeles genotypes subject to a steppe climate as well as the accumulation of the biologically active compounds with high antioxidant capacity. The study was performed on the basis of the introduced horticultural plants collection in the Botanical Garden of the DNU, and the Chaenomeles fruits, leaves, and the seeds were examined. The highest activity of catalase, benzidine-peroxidase and guaiacol-peroxidase, and the greatest enzymes activation during vegetation were found in leaves of Ch. cathayensis and Ch. speciosa, while the lowest activity was in leaves of both Japanese species. The biggest total phenolic content in the isopropanolic plant extracts, determined by Folin–Ciocalteau assay, was found in leaves of Ch. × superba, Ch. × californica and Ch. cathayensis (44.8, 52.8, and 43.6 mg GAE/g WW); a less high level was found in leaves of Ch. japonica and Ch. japonica var. maulei (43.1 and 40.2 mg GAE/g), while the lowest was in leaves of Ch. speciosa (29.3 mg GAE/g). The total flavonoids content determined using the aluminum chloride method, did not differ by variety or species in the plant leaves, being in the range of 2.6–2.9 mg of RE per g WW (accordingly, in leaves of Ch. japonica var. maulei and Ch. × californica). The high total reducing power determined by potassium ferricyanide assay was found in leaves of both hybridogenic species and Ch. cathayensis (respectively, 11.6, 14.1, and 11.4 AAE/g WW); leaves of both Japanese species had slightly lower values and the lowest was in leaves of Ch. speciosa (7.7 AAE/g). In the Chaenomeles fruits, the total phenolic content was the lowest in Ch. speciosa (17.8 mg GAE/g), average in both Japanese species (28.7 and 27.8 mg GAE/g), and the highest (33.3 mg GAE/g) was in Ch. cathayensis. The flavonoid accumulation was highest in the fruits of Ch. cathayensis and Ch. japonica var. maulei (0.67 and 0.63 mg RE/g), intermediate in both hybridogenic species and Ch. japonica (accordingly, 0.57, 0.42 and 0.38 mg RE/g), and the lowest in Ch. speciosa (0.30 mg RE/g). The total reducing power of Chaenomeles fruit was lower as compared to leaves, and decreased from 11.2 to 5.7 mg AAE/g in the series Ch. cathayensis > Ch. × californica > Ch. japonica > Ch. japonica var. maulei > Ch. × superba > Ch. speciosa. High correlation coefficients between total reducing power and total phenols content in the Chaenomeles leaves and fruits (respectively, r = 0.96 and r = 0.95, P < 0.05) confirm the significant contribution of phenolic compounds to the antioxidant capacity. The study results indicate a high antioxidant capacity of the Chaenomeles species in the conditions of the steppe climate due to the antioxidant enzymes activity and the accumulation of a significant amount of phenolic metabolites in leaves and fruits.

Plants have a large number of bioactive compounds with high antioxidant activity. Studies for the determination of the antioxidant activity of different plant species could contribute to revealing the value of these species as a source of new antioxidant compounds. There is a large variety of in vitro methods to quantify antioxidant activity, and it is important to select the proper method to determine which species have the highest antioxidant activity. The aim of this work was to verify whether different methods show the same sensitivity and/or capacity to discriminate the antioxidant activity of the extract of different plant species. To that end, we selected 12 species with different content of phenolic compounds. Their extracts were analyzed using the following methods: 2,2-di-phenyl-1-picrylhydrazyl (DPPH) radical scavenging capacity assay, ferric reducing (FRAP) assay, Trolox equivalent antioxidant capacity (ABTS) assay, and reducing power (RP) assay. The four methods selected could quantify the antioxidant capacity of the 12 study species, although there were differences between them. The antioxidant activity values quantified through DPPH and RP were higher than the ones obtained by ABTS and FRAP, and these values varied among species. Thus, the hierarchization or categorization of these species was different depending on the method used. Another difference established between these methods was the sensitivity obtained with each of them. A cluster revealed that RP established the largest number of groups at the shortest distance from the root. Therefore, as it showed the best discrimination of differences and/or similarities between species, RP is considered in this study as the one with the highest sensitivity among the four studied methods. On the other hand, ABTS showed the lowest sensitivity. These results show the importance of selecting the proper antioxidant activity quantification method for establishing a ranking of species based on this parameter.

In this study, the effects of different fruit parts and extraction conditions on the antioxidant properties of jujube (Ziziphus jujuba Mill.) fruit were investigated. Five in vitro antioxidant models and statistical analyses were performed. The results revealed that jujube peel with pulp (peel pulp) exhibited better antioxidant capacity than did seeds. Overall, jujube peel pulp extracted using 50% ethanol at 60 °C exhibited the best antioxidant capacity in terms of 2,2-diphenyl-1-picrylhydrazyl radical scavenging activity (0.3 ± 0 mg/mL), 2,2-azino-bis-(3-ethylbenzothiazoline-6-sulfonic acid) radical scavenging activity (0.5 ± 0 mg/mL), total phenolic content (38.3 ± 0.4 mg gallic acid equivalent per gram dry weight), total flavonoid content (43.8 ± 0.2 mg quercetin equivalent per gram dry weight), and reducing power (41.9 ± 2.2 mg ascorbic acid equivalent per gram dry weight). The results indicated that jujube peel pulp is a more potential natural antioxidant than seeds.

AbstractNumerous investigations on the antioxidant properties of different plant tissue extracts are available in literature, but few studies on the effect of thermally modified wood on secondary metabolites were carried out up to now. This study highlights the influence of the thermal modification of Castanea sativa Mill. wood on total content of antioxidant compounds and consequently on its antioxidant activity. In addition, a chemical profile by Gas Chromatography–Mass Spectrometry (GC–MS) of the extractives was carried out. Wood of chestnut, thermally modified at 180 °C for 3 h, was used to obtain wood meal which was subjected to different extraction techniques, as maceration extraction (ME), ultrasound assisted extraction (UAE) and accelerated solvent extraction (ASE). The total content of principal antioxidant compounds, such as polyphenols, flavonoids and tannins, as well as the evaluation of antioxidant capacity by using different in vitro assays were determined. Relative Antioxidant Capacity Index (RACI), which is used to compare all antioxidant parameters, has also been applied. The study demonstrated a positive influence on chemical compounds present in C. sativa Mill wood originating from the thermal modification process. Thus, is possible to consider thermal modification as a promising strategy to improve the antioxidant activity of chestnut wood extractives.

The influence of various gamma-radiation dose absorptions on oregano (<i>Origanum vulgare</i> L.) solid samples was monitored by means of electron paramagnetic resonance (EPR) spectroscopy. Further, the antioxidant activity of oregano methanol/water extracts was characterised using DPPH (1,1-diphenyl-2-picrylhydrazyl free radical); thiobarbituric acid reactive substances (TBARS); ferric reducing power (FRP); and total content of phenolic compounds (TPC) assays. EPR spectroscopy was used for the investigation of the influence of the absorbed dose on the character of the paramagnetic structures formed, as well as for their thermal stability and life-time characterisation. EPR spectrum of the reference (non-irradiated) sample represents a broad singlet line with unresolved hyperfine splitting, attributable to Mn(II) ions, upon which the additional sharp EPR signal (g = 2.0022, &Delta;B<sub>pp</sub> &asymp; 1 mT) is superimposed, assigned to stable semiquinone radicals produced by the oxidation of polyphenolic compounds present in plants. The additional paramagnetic structures of different origin (mostly of cellulose and carbohydrate), possessing diverse thermal stability and life-time, were identified in the gamma-irradiated samples. Immediately after irradiation, a statistically significant increase was observed of the TBARS values and the total content of phenolic compounds in methanol/water oregano extract. The alterations of the antioxidant properties of oregano extracts with the time after the radiation treatment were also monitored. A substantial time-dependent decrease of antioxidant activity was observed, probably as a result of storage, with both irradiated and non-irradiated oregano samples, as obvious from the ferric reducing power test and the content of total phenolic substances. The influence of irradiation and subsequent storage of oregano samples on the DPPH radical-scavenging ability was only negligible.

The main purpose was to demonstrate differences in the total content of phenolic compounds, phenolic acids and to analysis differences in the antioxidant properties of extracts obtained from seeds of several narrow-leaf lupine cultivars ( Lupinus angustifolius L.). The biological material consisted of seeds of four cultivars of narrow-leaf lupine characterized by different concentrations of alkaloids. The total content of phenolics was determined with the colorimetric method using the Folin-Ciocalteau reagent. Other determinations included the ability of seed extracts to scavenge DPPH• radicals and ABTS•+ cation radicals. The reducing power of the extracts was also determined. Chromatographic and qualitative separation of the phenolic compounds present in seeds was performed with the RP-HPLC method. Out of the four cultivars, the bitter narrow-leaf lupine produced seeds with the highest total content of phenolic compounds, which was also correlated with its antiradical characteristics. In the analyzed seeds were also found to contain three phenolic acids: ferulic, sinapinic and p-coumaric one.
