Given their beneficial effects in terms of health, the natural products, especially beehive products, have drawn the attention of consumers since long time ago. In order to guarantee the quality of these products on the market, their chemical composition needs to be analyzed. Thus, this current research had as objective the establishment of quality parameters for beehive brood food derived products: apilarnil and queen bee larvae triturate. These two products were compared with royal jelly which is the basis of brood food in the first 3 days of larval stage. The carbohydrates were determined by HPLC-IR and allowed the identification of seven carbohydrate compounds, predominantly glucose, fructose and sucrose. The lipid profile was analyzed by the Soxhlet method. The total protein content was determined by the Kjeldahl method. Free amino acids were analyzed by LC-MS. A total of 31 amino acids were identified of which nine are essential amino acids for humans.

The aim of the work is to develop innovative technology for potato cultivation aimed at potato food processing with the use of effective microorganisms (EMs), limiting the chemicalization of agriculture. The basis for the research was a field experiment established by the randomized subblock method, in three repetitions, where two factors were examined: cultivation technologies (3) and potato varieties (14). The influence of experimental factors on the quality of French fries (FF) and potato chips (PC) was investigated. The water content was assessed by the drying method, and the fat content by the Soxhlet method. The sensory assessment was performed by a team of 10 panelists in accordance with EN ISO methodology. In the production of both FF and PC, cultivation technologies using EMs contributed to a significant reduction in the absorption of fats and a significant reduction in the disadvantages of FF, the so-called “dark ends”, and the sensory characteristics of these products have not deteriorated. Potato obtained from cultivation in the EM system is a better raw material for the production of FF and PC than potato from plantations without the use of effective microorganisms. The beneficial effects of these preparations depended on the exposure time to EMs and the potato variety.

                                                                   AbstrakAsam amino adalah komponen terkecil yang menyusun protein. Sejumlah asam amino akan dihubungkan satu sama lain melalui perantara ikatan peptida untuk membentuk protein. Asam amino telah dibagi menjadi dua; yaitu asam amino esensial dan asam amino non-esensial. Asam amino esensial adalah asam amino yang tidak dapat disintesis oleh tubuh ikan; karena itu asam amino esensial harus ada dalam pakan. Lisin adalah salah satu dari sepuluh asam amino esensial, fungsi lisin adalah untuk pertumbuhan dan perbaikan jaringan tubuh. Penelitian ini bertujuan untuk mengetahui pengaruh lisin dalam pakan komersial terhadap retensi protein dan retensi energi ikan bawal air tawar. Metode yang digunakan adalah desain eksperimen rancangan acak lengkap. Perlakuan yang digunakan adalah kadar lisin yang berbeda, yaitu P0 (0%), P1 (0,6%), P2 (1,2%), P3 (2,4%), P4 (4,8%) dan perlakuan  diulang 4 kali. Parameter utama yang diamati adalah retensi protein dan retensi energi pada air tawar bawal. Parameter yang diukur didukung oleh parameter kualitas air. Analisis data menggunakan Analisis Varian (ANOVA) dan untuk menentukan perlakuan terbaik digunakan Duncan's multiple range test. Hasil penelitian menunjukkan perbedaan yang signifikan (p <0,05) dalam retensi protein dan energi adalah daging ikan bawal air tawar. Retensi protein dan retensi energi dalam pengobatan P1 (0,6% lisin), P2 (1,2% lisin), P3 (2,4% lisin) dan P4 (4,8% lisin) berbeda secara signifikan dengan perlakuan P0 (kontrol). Kualitas air selama 40 hari perlakuan ditetapkan pada suhu 27-300 C, pH 7,5-8,5, amonia 4 mg / l dan oksigen terlarut 4 mg / l.                                                                 AbstractAmino acids are the smallest components that compose proteins. A number of amino acids will be conducted to one another through the intermediary of peptide bonds to form proteins. Amino acids have divided into two; those are essential amino acids and non-essential amino acids. The essential amino acids are amino acids that can not be synthesized by the body of fish; therefore the essential amino acids must be in feed. Lysine is one of the ten essentials amino acids , the function of lysine are for the growth and repair body tissues. This research was aimed to determine the effect of lysine in commercial feed on protein retention and energy retention of freshwater Bawal.The method used is experiment with a completely randomized design as an experimental design. The treatment used is different lysine levels , namely P0 ( 0 % ) , P1 ( 0.6 % ) , P2 ( 1.2 % ) , P3 ( 2.4 % ) , P4 (4.8 % ) and treatment was repeated 4 times. The main parameters were observed protein retention and energy retention on Bawal fresh water. Parameters measured were supported by water quality parameters. Analysis of the data using Analysis of Varian ( ANOVA ) and to determine the best treatment used Duncan 's multiple range test. The results showed the significant differences ( p < 0.05 ) in protein retention and energy were freshwater pomfret fish meat. Retention of protein and energy retention in treatment P1 ( 0.6 % lysine ) , P2 ( 1.2 % lysine ) , P3 ( 2.4 % lysine ) and P4 ( 4.8 % lysine ) was significantly different with treatment P0 ( control ). The quality of water for 40 days treatment was set to temperature 27-300 C, pH 7.5-8.5, ammonia 4 mg/l and dissolved oxygen 4 mg/l.

n the current paper, we aimed to analyze the way in which packing (different polyethylene types) influence the quality of pasteurized melange during storage, packing being realized in units of 1 kg (Tetra Pak) (batch Lexp-1) and units of 5 kg (Bag in box) (batch Lexp-2). Products were stored during a period of 28 days at a temperature of +4�C, qualitative determinations being realized in first day (day 0), at 7 days, at 14 days, 21 days and in day 28 of storage. Were effectuated a sensorial examination and chemical analysis were was established the content in dry matter (%), water (%), proteins (%), content in essential amino acids (isoleucine, methionine, tryptophan, phenylalanine) and non-essential amino acids (alanine, histidine, glycine, serine) (mg/100g) as well as the content in lipids (%) establishing their profile by identification of some saturated fatty acids (16:0 mg/100g and 18:0 mg/100g) and unsaturated fatty acids (16:1 mg/100g and 18:1 mg/100g). After sensorial examinations, the first modifications were observed at the checking effectuated in day 21 for batch Lexp-2, the obtained score being of 18 points, and at checking effectuated in day 28 was given a score of 18 points for melange belonging to batch Lexp-1 and only 14 points for melange from batch Lexp-2. Differences were recorded also in case of chemical composition of products, so for protein content at batch Lexp-1 in first checking day was obtained a mean of 12.730�0.24% and at batch Lexp-2 12.614�0.22%. Differences between those two batches were insignificant (p[0.05). In case of fat content, at the end of storage period was obtained a mean of 11.256�0.06% for batch Lexp-1 and 11.244�0.11% for batch Lexp-2, differences being insignificant (p [ 0.05). Regarding the profile of amino acids and fatty acids, the mean values obtained during whole storage period oscillated from one stage to another, but the differences between those two batches were insignificant (p [ 0.05). Pasteurized egg melange suffers certain sensorial modifications during storage, especially on consistency and colouring, modifications which are accentuated mainly by storage conditions. Type of polyethylene utilized for this product hadn�t influenced the nutritive qualities of product.

Effect of storage time on the quality of smoked heteroclarias was studied. 108 samples of heteroclarias (average weight 210 + 15g) was used. Analysis carried out include: proximate, mineral composition (Ca, Na, Fe and Mg), biochemical, amino acid and sensory evaluation. Data obtained was subjected to Analysis of Variance (ANOVA) while the sensory data was subjected to nonparametric test (Kruskal Wallis test). Smoked heteroclarias have good nutritional quality in terms of proximate, mineral and amino acids all of which decrease with increase in duration of storage at ambient temperatures. Glutamic acid  was the most predominant amino acid and the highest non-essential amino acid (NEEA), lysine was the most predominant EAA. There was higher concentration of non-essential amino acids than essential amino acids, EAA/NEAA ratio (0.86 – 0.93) recorded indicates that the fish have excellent protein quality; its the predicted protein efficiency ratio (P-PER) ranged between 3.44-3.61 and its biological value ranged between 79.84 -75.04. Its chemical score and TEAA decrease with increase in storage time. Its texture quality reduced significantly (χ2 = 12.207, p<0.01) with increased storage period. It is therefore recommended that smoked heteroclarias be consumed as soon as it is smoked and regularly for good healthy conditions especially among children, aged and other vulnerable groups.

The effect on the protein quality of meat meals of processing them under commercial conditions in a continuous dry renderer at maximum temperatures ranging from 116 to 160°C for a running time of 115 min was studied. Although the total levels of amino acids were little affected by processing temperatures, the biological availability of all essential amino acids, as determined by the protozoan Tetrahymena pyriformis, was reduced as the processing temperature increased. At 140 and 160°C the availability of certain amino acids was reduced by 37-56%, lysine, histidine, and methionine being the most severely affected. The availability of essential amino acids in meals produced at temperatures from 121 to c. 138° was not significantly different. The growth-promoting ability of the meat meals for chickens was closely related to the availability of the essential amino acids. __________________ *Part VI, Aust. J. Agric. Res., 19: 171 (1968).

1. In a previous study (Kindt et al. 1983, 1984) it was assumed that a protein hydrolysate, devoid of phenylalanine, together with intact protein as given to children with phenylketonuria (PKU), was equivalent to egg or milk protein. One group of children was given this ‘PKU protein’ in amounts corresponding to the Joint FAO/WHO ad hoc Expert Committee (1973) recommendations. The results indicated that the Joint FAO/WHO ad hoc Expert Committee (1973) recommended levels of protein intake were marginal.2. The purpose of the present study was to evaluate whether the quality of the protein hydrolysate, together with intact protein (‘PKU protein’), is equivalent to egg or milk protein. This was done using a rat bioassay. Four protein sources were used: (1) egg protein, (2) protein hydrolysate, (3) protein hydrolysate diluted with non-essential amino acids, (4) protein hydrolysate mixed with food proteins (‘PKU protein’), comparable with the diet previously used (Kindt et al. 1983, 1984).3. The results indicated that the ‘PKU protein’ was of very high qua1ity: net protein utilization (NPU) > 90. The protein hydrolysate alone and the protein hydrolysate diluted with non-essential amino acids gave a NPU > 80.4. The conclusion drawn from the present study is that the ‘PKU protein’, as used in the treatment of children with PKU, is equivalent to egg or milk protein. This supported the view that the Joint FAO/WHO ad hoc Expert Committee (1973) recommended levels of intake were marginal.

Abstract The efficacy of plant growth regulators (PGRs) has been demonstrated in the flowering of economically significant orchid hybrids, but studies of their effects in wild species with commercial potential are scarce. The effect of three doses of gibberellic acid (GA3) and 6-benzyladenine (BA), individually or in combination, and a control without PGRs, were evaluated during three flowering periods in Laelia anceps subsp. anceps, in the temporal behavior of flowering, morpho-floral quality parameters and in potential residual effects and malformations. Significant effects were observed between the experimental periods and doses used, with a single application of PGRs in the first period reducing the days to visible flower induction (DVFI), days to anthesis (DAN) and days of flower life (DFL), mainly in the first period. There were no significant differences between doses for morpho-floral quality parameters within each period, but differences existed between experimental periods, where the life and size of the flower increased in the first period, and the number of flowers and flower stems increased significantly in the second period. The doses of 2.37 mg · L−1 BA + 100 mg · L−1 GA3 showed highest significant consistency in the reduction of DVFI, DAN and increase of DFL and flower stems in the study. There were no floral malformations, and a positive residual effect was observed in temporal variables in the second period. Most of the doses used encourage beneficial effects in the various aspects of flowering evaluated.

The results of studies of protein substances of brine cheese from sheep milk with partial replacement of salt with potassium chloride in the amount of  20 and 30 % are presented in the article. Benefits of cheese as a foodstuff are a large number of vitamins B, A, E, it is rich in minerals, including trace elements and essential amino acids. The bacterial preparation RSF-742 in combination with Fresh-Q (Chr. Hansen, Denmark) was used to make the cheese, which adversely affects the development of yeast and mold, thus extending the shelf life of the cheese. Two groups of cheese were made. The first group (without Fresh-Q): K (control) using NaCl; D1 and D2 with 20 % and 30 % replacement of NaCl by KCl, respectively. Second group (with Fresh-Q): CF using NaCl; DF1 and DF2 with 20 and 30 % replacement of NaCl by KCl, respectively. The Kjeldahl method was used to determine the content of total Nitrogen, total soluble Nitrogen, Nitrogen of non-protein soluble nitrogen-containing compounds. The positive effect of salt replacement and the use of biosecurity culture on the course of proteolytic processes has been proved. Nitrogen content of soluble protein substances, which determines the dietary properties of cheese, increased in samples with 20 and 30 % replacement of table salt with potassium chloride. Determination of digestibility of proteins by digestive enzymes in vitro was performed using the basic method Pokrovsky-Ertanov. The essence of the method consists in the sequential effect on the protein of the object under study of the proteinase system and the removal by dialysis of some hydrolysis products to avoid inhibition of the reaction by low molecular weight peptides and free amino acids. Brynza with partial replacement of sodium chloride with potassium chloride is characterized by better digestibility compared to cheese, which is made by traditional technology. The data are confirmed by high rates of digestibility. The test specimens of the breeze according to these indicators fully meet the requirements of the current regulatory documentation.
