ABSTRACT: The Brassicaceae plants are among the most consumed vegetables in the world. They feature a large biodiversity, in which landraces and primitive cultivars still play a major role on the cultivation systems of many countries. Brassicas and especially broccoli are closely linked to antioxidant compounds that play a key role for human health. This experiment aimed to characterize some Italian unknown broccoli landraces from the antioxidant point of view. Five landraces named BF, BF4, BFT, BB and BS were evaluated. The total antioxidant properties of broccoli were significantly different among ecotypes and the higher values were recorded in BS and BF4. Total phenols showed the higher values in BF4 and concerning the ascorbic acid content found in the different ecotypes results can be summarized in three groups: the first one is represented by BB with higher values, the second one by BF4 and BS and then BF and BFT. BB represented the lower amount of hydroxycinnamic acids, whereas BF4 showed quite higher sulforaphane content (+95%) than other cultivars. The high content of phenolic acids, vitamin C and antioxidant compounds make these broccoli landraces, still little known, an important natural source of dietary antioxidant.

AbstractThe purpose of this study was to investigate the biological properties of an extract obtained from the waste of blueberry fruit. The study covered the optimization of extraction of antioxidants from blueberry pomace and the determination of antioxidant properties of the extract using HaCaT as the model organism. Research showed that the yield of antioxidants extraction from blueberry waste was dependent on the applied extraction conditions. Based on the mathematical models, the optimal conditions of extraction process in which the maximum quantity of antioxidant compounds is achieved from the waste mass unit, i.e., the relation of the waste mass to the volume of ethanol equal to 1:17.36, and process time equal to 1000 s. The obtained extract was characterized by high antioxidant activity, which was shaped by high content of polyphenols, mainly anthocyanins. Moreover, the extract showed a high ability to protect HaCaT cells from the occurrence of oxidative stress induced by H2O2. Cells treated with the extract and H2O2 generated a lower amount of ROS than cells treated with H2O2 only. The obtained results will be base of further studies on applying the extract in production of diet supplements and functional foods with increased antioxidant activity. Moreover, the main research material is blueberry pomace which is a troublesome waste material for juice producers. Consequently, according to a sustainable development idea, the study results will provide an opportunity to increase interest in the problem of rational use of the waste material to a certain extent.

Beer is one of the most consumed drinks around the world, containing a variety of compounds that offer both appreciated sensorial characteristics and health advantages. Important healthy compounds in beer are those with antioxidant properties that attenuate the content of free radicals produced as by-products in the human metabolism, exerting an appreciable effect against cancers or cardiovascular diseases. This work details a study of antioxidant compounds present in beer, focusing on the two main groups: phenols (including polyphenolic forms) and melanoidins, formed specifically during brewing as Maillard products. The fundaments of the most important methods to evaluate beer antioxidant activity, the main antioxidant compounds present in beer—especially those with healthy properties—and the new trends to increase beer antioxidant activity are also discussed.

Rice is one of the most abundant food crops in the world and its straw stands as an important source of fibres both from an economic and an environmental point of view. Pulp characterization is of special relevance in works involving alternative raw materials, since pulp properties are closely linked to the quality of the final product. One of the analytical techniques that can be used in pulp characterization is near-infrared spectroscopy (NIRS). The use of NIRS has economic and technical advantages over conventional techniques. This paper aims to discuss the convenience of using NIRS to predict Kappa number in rice straw pulps produced under different conditions. We found that the resulting Kappa number can be acceptably estimated by NIRS, as the errors obtained with that method are similar to those found for other techniques.

For the last time a lot of attention has been paid to strawberry as a garden crop. All this thanks to its preventive and medical benefits related to the consumption of its fruit. The paper presents the data analysis of foreign and domestic researchers on the accumulation of basic food components (sugars, organic acids), vitamins, mineral substances and other valuable ones in. Which determine the high antioxidant properties of strawberries. On the basis of scientific literature sources, the vitamin profile was compiled wich reflects the accumulation of vitamin groups, specific for a given crop. With all diversity of vitamins found in strawberry fruits, the fruits of this plant are primarily good as a valuable source of ascorbic acid, folic acid, polyphenolic compounds (anthocyanins, ellagic acid). As for mineral substances, the presence of iron amount confirms the fact. In spite of fact that the strawberry composition is studied enough, the further detailed characterization of genetic resources is necessary both by total antioxidant activity and by definite chemical components, the last ones, obviously, present the antioxidant complex of strawberry fruits. The given information will be a base for future related investigations of phytochemical compounds of fruits and berries. They are extraordinary important in healthy food of humans as well as in creation of nutraceutical products.

: Pulses are a staple food cultivated since ancient times, which play an important role in the human diet. From a nutritional point of view, pulses are very interesting foods as they are rich in proteins, carbohydrates and dietary fibre. Dietary antioxidants are a complex mixture of hydrophilic and lipophilic compounds usually present in foods of plant origin, including pulses. In the present study, the phytochemical composition of selected pulses (common beans, fava beans, lentils, chickpeas, peas and lupins) has been reviewed in terms of their content of antioxidant compounds. The content of hydrosoluble antioxidants (organic acids, phenolic compounds), liposoluble antioxidants (tocopherols, carotenoids) and other compounds which exert antioxidant properties, such as dietary fibre and minerals (zinc, selenium), has been studied, reporting that pulses are an interesting source of these compounds, which have important health benefits, including a preventing role in cardiovascular diseases, anticarcinogenic or neuroprotective properties. : It is important to take into account that pulses are not usually consumed raw, but they must be processed before consumption in order to improve their nutritional quality and their palatability, therefore, the effect of different technological and heat treatments (germination, cooking, boiling, extrusion) on the antioxidant compounds present in pulses has been also reviewed. In this regard, it has been observed that as a consequence of processing, the content of phytochemicals with antioxidant properties is usually decreased, but processed pulses maintain relevant amounts of these compounds, preserving their beneficial health effect.

AbstractTwo solvent extraction procedures were used to investigate the extraction efficiency in terms of total antioxidant capacity and total phenols in apricot fruit. Samples were either sequentially extracted with aqueous ethanol (ethanol/water 80% v/v) and tetrahydrofuran or directly extracted with tetrahydrofuran. Each extract was analyzed for total antioxidant capacity by the Trolox Equivalent Antioxidant Capacity (TEAC) assay and total phenols by the Folin-Ciocalteu assay. The results showed that using sequential solvent extraction, the majority (85%) of the total antioxidant capacity and total phenols was due to hydrophilic compounds. In tetrahydrofuran direct extractions, the total antioxidant capacity and total phenols were higher than values obtained with aqueous ethanol and the sum of results obtained from sequential extracts for either total antioxidant capacity or total phenols was similar to the tetrahydrofuran-extract antioxidant values. A linear correlation between total antioxidant capacity and total phenols was found and was independent of the solvent extraction method. In conclusion, the choice of solvent is related to the antioxidant potential of fruit and depends on the food hydrophilic/lipophilic composition.

The term “roofing slate” comprises all natural rocks that can be used for roofing. Some of the characteristics that define their performance as construction materials are water absorption, bending strength, mineral composition, and aesthetics. From a sustainability point of view, roofing slates also have the largest life expectancy and lowest carbon emissions of all covering materials. This work reviews the constructive characteristics of roofing slates, from technical data provided by producers from all over the world. These data, supported by the petrological characterization of several roofing slate samples, are used to propose a general classification for this special type of rock. Thus, roofing slates are sorted in twelve lithotypes, depending of their petrographical characteristics, defined by the color. The resulting classification is named International Roofing Slate Classification (IRSC), formally defined in this paper.

Cornus species fruits are well known as a rich source of antioxidant compounds responsible for their diverse health benefits. The present study aims to investigate the variation of the total antioxidant capacity of Cornelian cherry (Cornus masL.) fruits during storage, using high-performance thin-layer chromatography (HPTLC) and two spectrophotometric assays based on different mechanisms: the 2,2-azinobis(3-ethylbenzothiazolyne-6-sulphonic acid) radical cation (ABTS+∙) assay and the ferric reducing antioxidant power (FRAP) assay. The fruit extract was stored at room temperature (22°C) for 19 days. No major differences in the total antioxidant capacity were observed during this period, indicating that storage does not have any deleterious effect on the antioxidant properties of the investigated fruits extract. The antioxidant capacity varied between 12.91 and 12.83 µmol Trolox/g fruit as determined by the HPTLC method and from 36.13 to 33.93 µmol Trolox/g fruit as determined by the ABTS assay.

Romania has a wide variety of local landraces and heirloom genotypes. Our study aims to assess the performance of twenty halotolerant tomato landraces, collected from areas with medium and high levels of soil salinity, in terms ofthe accumulation of antioxidant compounds in fruits and to cluster them according to their nutraceutical components. The tomatoes used in the study were harvested once they had attained full ripeness and then analyzed for lycopene (Lyc), ascorbic acid content (AsA), total phenolic content (TPC), and total antioxidant capacity (TAC). The results revealed major differences between genotypes in terms of nutraceutical values. According to principal component analysis, the tomato landraces were grouped into five clusters, characterized by different proportions of compounds with antioxidant activity. The high/moderate nutritional values of Lyc, TAC, TPC, and AsA were obtained from varieties taken from local lands with high soil salinity, over 6.5 dS m−1. These findings support the idea that metabolites and secondary antioxidants are involved in the process of stress adaptation, thereby increasing salinity tolerance in tomatoes. Our results show that there are tomato landraces with a tolerance of adaptation to conditions of high soil salinity and provide information on their ability to synthesize molecules with antioxidant functions that protect plants against oxidative damage.
