Masih kurangnya konsumsi sayuran dan buah yang terjadi di Indoensia saat ini. Kembang kol dan strawberry merupakan sayur dan buah yang mengandung zat gizi dan antioksidan yang berperan penting dalam mengurangi resiko timbulnya berbagai masalah kesehatan. Salah satu upaya dalam meningkatkan konsumsi buah dan sayur dapat dilakukan dengan cara pemanfaatan kembang kol dan strawberry secara bersamaan yang diolah menjadi produk pangan basah seperti puding. Penelitian ini bertujuan untuk menganalisis kandungan gizi, aktivitas antioksidan dan uji organoleptik pada puding berbasis kembang kol dan strawberry. Metode penelitian ini menggunakan metode penelitian dan pengembangan (Research and Development) dengan model 4D. Penelitian ini terdiri dari proses pembuatan puding dengan campuran 30% kembang kol dan 25% strawberry, analisis kandungan gizi puding yang terdiri dari analisa kadar air, kadar abu, protein, lemak, karbohidrat, kalium, natrium, analisis aktivitas antioksidan dan uji organoleptik. Hasil analisis kandungan air, abu, protein, lemak, karbohidrat, natrium dan kalium masing masing sebesar 80,82%, 2,35%, 8,20%, 0,18%, 89,18%, 380,59 mg, dan 278,09 mg, sedangkan aktivitas antioksidan sebesar 229,23%. Puding ini dapat diterima oleh panelis dengan nilai terhadap sifat keseluruhan sebesar 3,7. Kesimpulannya, kembang kol dan strawberry dapat digunakan sebagai formula dalam pembuatan puding yang memiliki kandungan sayuran dan buah.Nutrient content, antioxidant activity and Organoleptic test of Pudding Based on Cauliflower (Brassica oleracea var. Cauliflower and strawberry are vegetables and fruits that contain nutrients and antioxidants which can play an important role in reducing the risk of various health problems. One effort to increase consumption of fruits and vegetables can be done by utilizing cauliflower and strawberries that are processed into food such as pudding. This study aims to analyze the nutritional content, antioxidant activity and organoleptic tests on cauliflower and strawberry-based pudding. This research used research and development methods using 4D model. This research applied mixture of 30% cauliflower and 25% strawberry in pudding. Nutrients analysis wer done on water content, ash content, protein, fat, calcium, potassium, sodium, antioxidant activity. Organoleptic analysis was also conducted in this research. The results of the analysis of water, ash, protein, fat, carbohydrate, sodium and potassium content were 80.82%, 2.35%, 8.20%, 0.18%, 89.18%, 380.59 mg, 278.09 mg, respectively, while the antioxidant activity achieved 229.23%. This pudding could be accepted by panelists with a total value of 3.7. In conclusion, cauliflower and strawberry could be used in making vegetable and fruit rich pudding.

Kubis Merah (Brassica oleracea L.) merupakan salah satu hasil pertanian yang mengandung kandungan antosianin yang berpotensi sebagai antioksidan. Tujuan yang hendak dicapai dalam penelitian ini adalah untuk menggali potensi kubis merah sebagai antioksidan alami pada kerupuk kubis merah. Tahapan dari penelitian ini adalah pembuatan kerupuk kubis merah dengan berbagai formulasi tepung tapioka dan kubis merah, uji organoleptik serta penentuan aktivitas antioksidan dan kadar antosianin. Hasil penelitian menunjukkan bahwa aktivitas antioksidan dari kubis merah dan kerupuk kubis merah sebesar. Dari uji organoleptik yang paling disukai panelis adalah perlakuan T2K1 yaitu 150 gram tapioka dan 50 gram kubis mera yang memiliki kadar air sebesar 15,49%, kadar abu 1,18%, kadar protein 1,48%, kadar lemak 16,55%, antosianin 1,31% dan aktivitas antioksidan sebesar 23,93%. Dengan demikian dapat disimpulkan bahwa kerupuk kubis merah memiliki potensi sebagai sumber antioksidan. Antioxidant content  in Red Cabbage  (Brassica oleracea L.) and Application In The Making of Crackers Red Cabbage (Brassica oleracea L.) is one of the agricultural products containing anthocyanin content that has potential as antioxidant. The purpose of  this study was to explore the potential of red cabbage as a natural antioxidant in red cabbage crackers. The stages of this research are the manufacture of red cabbage crackers with various formulations of tapioca flour and red cabbage, organoleptic test and the determination of antioxidant activity and anthocyanin levels. The results showed that antioxidant activity of red cabbage and red cabbage cracker amounted to. The most preferred organoleptic test of panelist is T2K1 treatment which is 150 g tapioca and 50 g of red cabbage which has water content 15,49%, ash content 1,18%, protein content 1,48%, fat content 16,55%, antocyanin 1.31% and antioxidant activity of 23.93%. Thus it can be concluded that red cabbage crackers have the potential as a source of antioxidants.

Este trabalho objetivou realizar uma revisão de literatura sobre bebidas mistas de frutas e vegetais e seus principais componentes no contexto do consumo alimentar. O presente estudo é uma revisão narrativa elaborada a partir da consulta em diferentes bases de dados, como: Web of science e Science Direct. Optou-se pela busca por termos livres. Os termos  juice, drinks foram combinados com as palavras fruits “AND” vegetables  para localizar estudos sobre os dois temas. Posteriormente, a fim de selecionar estudos com os principais componentes das bebidas mistas, foram utilizados  os termos livres “citrus limon”, “Malus domestica”, “Ananas comosus”, “Cucumis savitus”, “Brassica oleracea”, “Spinacia oleracea”, “Zingiber officinale” e “Mentha ssp”. O critério de inclusão dos trabalhos foi pautado na seleção de materiais que tivessem por objetivo estudar os efeitos isolados do consumo dos  principais ingredientes das bebidas mistas, como também os artigos que utilizaram a bebida mista  com alegação “detox” nos estudos. O direcionamento dos artigos selecionados está relacionado com a prospecção da atividade antioxidante e, apesar da composição das bebidas ser diversificada, destacam-se o uso de maçã, de repolho e de pepino como ingredientes das preparações. As bebidas mistas, sucos ou smoothies apresentaram variável composição que determina os atributos sensoriais, composição físico-química, compostos bioativos e atividade antioxidante.   Palavras-chave: Suco. Nutrição. Alimentação.   Abstract This study aimed to conduct a literature review on mixed fruit and vegetable drinks and their main components in the context of food consumption. The present study is a narrative review elaborated from the consultation in different databases, such as Web of science and Science Direct databases. It was chosen to search free terms. The terms juice, drinks were combined with the words fruits “AND” vegetables to locate studies on both themes. Subsequently, in order to select studies with the main components of mixed drinks, the free terms "citrus limon", "Malus domestica", "Ananas comosus", "Cucumis savitus", "Brassica oleracea", "Spinacia oleracea" ”,“ Zingiber officinale ”and “Mentha ssp ”. The inclusion criterion of the studies was based on the selection of materials that aimed to study the effects of vegetable consumption alone, which are the main ingredients of mixed drinks and included articles that used the mixed drink or juices with claim “detox” in the studies. The direction of the selected studies is related to the prospecting of antioxidant activity and, although the drinks composition is diverse, the use of apple, cabbage and cucumber as ingredients of the preparations stand out. Plant foods are important sources of nutrients for food. The mixed drinks, juices or smoothies presented variable composition that determines the sensory attributes, physicochemical composition, bioactive compounds and antioxidant activity.   Keywords: Juice. Abstract Nowadays, thanks to greater awareness of society and development of restorative medicine, more and more attention is paid to preventive care. That is caused by the fact that there is little progress for both sexes in the frequency of healthy behavior: girls fall much worse than boys in terms of frequency of physical activity, they do not eat breakfast either; boys do not maintain a healthy diet and are reluctant to eat vegetables and fruits, they often drink high-calorie sodas and less frequently brush teeth. Though with age some improvements in oral hygiene and certain eating behaviors can be noticed. It has been determined that overweight and obesity is a serious problem, as they can contribute to developmental disorders. In this respect it should be the responsibility of teachers to provide individual physical education (according to medical qualifications), prevent various forms of discrimination and bullying among peers, provide individual counseling and health education, weight control of students. It has been defined that for modern teachers it is a difficult task as students rarely eat fruits and vegetables, do not care about hygiene and frequency of meals, have passive mode of leisure. The acquisition of health during puberty allows functioning smoothly in society. However, despite the continuous work on improving and introduction of new programs of health education classes into schools of Poland, children still suffer from health-related problems. According to epidemiological research most of children in Poland fall on obesity, overweight and accompanying disorders and allergies. Youth is also exposed to accidents and related injuries. The problem is that students do not receive assistance and necessary information.

Indonesia as an agricultural country has the potential to compete in the agricultural market in the international market, in line with the existence of the ASEAN / ASEAN Free Trade Area (AFTA) Free Market. Ngawi Regency is a fertile area and is one of the buffer zones of the agricultural sector in East Java. Horticulture commodities are one of the main sources in the agricultural sector, because they have high potential and can contribute to the economy of a region. Horticultural commodities in the form of fruits and vegetables are an important food source to meet the nutritional needs of the community. Agriculture with a focus on horticultural crops in Ngawi Regency was developed with a cluster system based on the level of progress, harvest area and by considering agro-climate to map the superior horticultural commodities. The purpose of this study was to map the conditions of horticultural agriculture and analyze problems in the cluster of horticulture plants in Ngawi Regency. The research method is a mixed method using descriptive analysis, Geographic Information System (GIS), and using the Analysis Hierarchy Process (AHP). The conclusion of this study is that the potential development of horticultural clusters in Ngawi Regency requires structuring and developing the location of base commodities in accordance with the conditions of the agro-ecosystem. The development of existing commodities at these base points will make the commodity superior and support the creation of horticultural cluster centers and the development of existing agribusiness in an area. Development of horticulture base commodities for seasonal vegetables and fruits can be adjusted to the LQ results for each sub-district in Ngawi Regency. The results of the Indepth interview processed using AHP obtained results that in fact there were three main factors in the development of clusters, namely production consisting of four derivative factors namely research and development, superior seeds, fertilizers and anti-pest drugs and then marketing with derivative factors namely product standardization, packaging , traditional markets and modern markets. Then the third factor of the institution consists of training, networking, government support and assistance.

Carotenoids are a class of natural pigments found mainly in fruits and vegetables. Among them,β-carotene is regarded the most potent precursor of vitamin A. However, it is susceptible to oxidation upon exposure to oxygen, light, and heat, which can result in loss of colour, antioxidant activity, and vitamin activity. Thus, the objective of this work was to study the microencapsulation process ofβ-carotene by spray drying, using arabic gum as wall material, to protect it against adverse environmental conditions. This was carried out using the response surface methodology coupled to a central composite rotatable design, evaluating simultaneously the effect of drying air inlet temperature (110-200°C) and the wall material concentration (5-35%) on the drying yield, encapsulation efficiency, loading capacity, and antioxidant activity. In addition, morphology and particles size distribution were evaluated. Scanning electron microscopy images have shown that the particles were microcapsules with a smooth surface when produced at the higher drying temperatures tested, most of them having a diameter lower than 10μm. The conditions that enabled obtaining simultaneously arabic gum microparticles with higherβ-carotene content, higher encapsulation efficiency, and higher drying yield were a wall material concentration of 11.9% and a drying inlet temperature of 173°C. The systematic approach used for the study ofβ-carotene microencapsulation process by spray drying using arabic gum may be easily applied for other core and wall materials.

From a ‘farm to fork’ perspective, there are several phases in the production chain of fruits and vegetables in which undesired microbial contaminations can attack foodstuff. In managing these diseases, harvest is a crucial point for shifting the intervention criteria. While in preharvest, pest management consists of tailored agricultural practices, in postharvest, the contaminations are treated using specific (bio)technological approaches (physical, chemical, biological). Some issues connect the ‘pre’ and ‘post’, aligning some problems and possible solution. The colonisation of undesired microorganisms in preharvest can affect the postharvest quality, influencing crop production, yield and storage. Postharvest practices can ‘amplify’ the contamination, favouring microbial spread and provoking injures of the product, which can sustain microbial growth. In this context, microbial biocontrol is a biological strategy receiving increasing interest as sustainable innovation. Microbial-based biotools can find application both to control plant diseases and to reduce contaminations on the product, and therefore, can be considered biocontrol solutions in preharvest or in postharvest. Numerous microbial antagonists (fungi, yeasts and bacteria) can be used in the field and during storage, as reported by laboratory and industrial-scale studies. This review aims to examine the main microbial-based tools potentially representing sustainable bioprotective biotechnologies, focusing on the biotools that overtake the boundaries between pre- and postharvest applications protecting quality against microbial decay.

More food with high nutritional content will be needed to feed the growing global human population, which is expected to reach 10 billion by 2050. Fruits and vegetables contain most of the minerals, micronutrients, and phytonutrients essential for human nutrition and health. The quantity of these phytochemicals depends on crop genetics, weather and environmental factors, growth conditions, and pre-harvest and post-harvest treatments. These phytochemicals are known to have anti-cancer properties and to regulate immunity, in addition to hypolipidemic, antioxidant, anti-aging, hypotensive, hypoglycemic, and other pharmacological properties. Physical treatments have been reported to be effective for managing several post-harvest diseases and physiological disorders. These treatments may affect the external, internal, and nutritional qualities of fruits and vegetables. Therefore, the aim of this review is to summarize the information recently reported regarding the use of physical treatments applied either directly or in combination with other means to maximize and maintain the phytochemical content of fresh and fresh-cut or processed fruits and vegetables.

AbstractChemical contamination of foods pose a significant risk to consumers. A source of this risk is due to the consumption of products contaminated with heavy metals such as cadmium (Cd) and lead (Pb). The aim of the study was to research the levels of Cd and Pb contamination of selected species of vegetables and fruits in the form of fresh, frozen, dried and processed products. The goal was to verify which of these food groups was more contaminated with heavy metals. The study covered 370 samples of fruits and vegetables including apples, pears, grapes, raspberries, strawberries, cranberries, as well as beetroots, celeries, carrots and tomatoes. The content of Cd and Pb was determined by atomic absorption spectrometry. Quantitative results were analyzed using statistical models: analysis of variance, outlier analysis, post-hoc multiple comparison Tukey test. The tests showed that the levels of Cd and Pb concentration in samples of fresh, processed, frozen and dried fruits and vegetables varied substantially. The highest concentrations were recorded in dried products. Several fruit and vegetable samples exceeded the maximum permissible concentrations of Cd and Pb. The contamination of these products could be a significant source of consumer exposure to heavy metals when these products are a part of the diet.

This paper set out to comparatively study five species: white cabbage (Brassica oleracea L. var. capitata alba Alef.), red cabbage (Brassica oleracea L. var. capitata f. rubra Alef.), Kale (Brassica oleracea L. var. Acephala), cauliflower (Brassica oleracea var. botrytis) and broccoli (Brassica oleracea var. cymosa) in order to identify those with high enzymatic and antioxidant activities. The enzymatic activity of superoxide dismutase (SOD), catalase (CAT) and soluble peroxidase (POX) as well as the antioxidant activity against 2.2’-azino-bis (3-ethylbenzothiazoline-6-sulphonic acid (ABTS) radical cation were determined. Total superoxide dismutase activity was measured spectrophotometrically based on inhibition in the photochemical reduction of nitroblue tetrazolium. Total soluble peroxidase was assayed by measuring the increase in A436 due to the guaiacol oxidation and the catalase activity was assayed through the colorimetric method. The capacity of extracts to scavenge the ABTS radical cation was assessed colorimetric using Trolox as a standard. The obtained results show that studied enzymatic activities and the antioxidant activity against ABTS vary depending on the analyzed species. So, among the studied Brassicaceae species, it emphasize red cabbage with the highest enzymatic activity (CAT 22.54 mM H2O2/min/g and POX 187.2 mM ΔA/1min/1g f.w.) and kale with highest antioxidant activity, of 767 μmol TE/100g f.w. The results of this study recommendintroducing the studied varieties in diet due to the rich antioxidant properties.

the current utilization of nike fish and tuna is still limited to fresh condition. Crackers are a very popular food by all levels of society. Utilization of nike fish and tuna in processed form with longer shelf life has not been done. Nutritional content of both types of fish is a reason in the selection as a basic ingredient in making crackers. The purpose of this research is to know the formulation of nike fish and tuna to the quality of crackers. The observation parameters in this study are the level of favorite or hedonic method, water content, ash content, bloom and texture analizer. The results showed that the average water content of nike fish crackers and skipjack fish from treatment A1 3.3%, treatment A2 3.29%, A3 3.77%. Mean of ash content at treatment of A1 1,97%, treatment of A2 1,55%, treatment of A3 1,58%. The average of A1 is 283,54%, A2 242,75%, A3 182,23%. and the mean of analyzer analyzer test at A1 1185,6%, A2 708,9%, and A3 783,83%. Based on the results and the discussion that has been done on the quality of crackers, it can be concluded that the best formula and liked by the panelists is formula A1
