This paper gives the maximum absorption of 10 secondary metabolites of lichens in a 96% alcohol solution. An assessment of the content of lichen acids growing in the Muransky pine forest, the Buzuluk pine forest, the Krasnosamarsky Woodland and in the Bolshechernigovsky district of the Samara Region was also carried out. All the species studied by us accumulate more secondary metabolites when growing in the Krasnosamarsky Woodland in comparison with those in the Buzuluk pine forest by 1,12-5,47 times. From the point of view of medicine and agriculture, as a raw material for drugs, as well as for drugs with fungicidal and insecticidal activity, it is more expedient to collect material in the Krasnosamarsky Woodland and other areas in the steppe zone with similar contrasting ecological factors, where the total amount of active stuff is more. The total content of secondary metabolites decreases in the order: Evernia mesomorpha Hypogymnia physodes Evernia prunastri Xanthoparmelia camtschadalis Parmelia sulcata Pseudevernia furfuracea Cladonia arbuscula Cladonia furcata Cladonia fimbriata Cladonia rangiferina . In general, the studied representatives of the genus Cladonia accumulate secondary metabolites 2 times or more less than representatives of the Parmeliaceae family.

The species of Parmelia genus have long been used in Indian folk medicine for the treatment of bronchitis, ulcers, furunculosis, cardiovascular diseases, urolithiasis, amenorrhea, and also at infectious and inflammatory diseases. In Ukraine, the most common lichens of the Parmelia genus are Parmelia sulcata Tailor and Parmelia vagans Nyl. At the same time, thalli of Parmelia genus lichens belong to the non-officinal and poorly studied types of raw material. The qualitative composition and the quantitative content of phenolic compounds in Parmelia sulcata and Parmelia vagans thalli was studied by HPLC. According to the results of the chromatographic analysis, salazinic, fumaroprotocetraric, usnic acids, chloratranorin and atranorin were identified in both types of raw material studied. In addition, protocetraric acid was identified in Parmelia sulcata thalli. According to the results of the experiment, the total content of identified phenolic compounds in Parmelia sulcata thalli was 2019.71±40.39 g/mol, and in Parmelia vagans thalli it comprised 1754.18±34.77 g/mol. In the thalli of both studied species of Parmelia genus, fumaroprotocetraric acid dominanted by the quantity. This substance was present in Parmelia sulcata thalli in the amount of 474.00±9.00 g/mol, and in Parmelia vagans thalli – 456.21±8.67 g/mol. In addition, a significant amount of chloratranorin (408.79±8.99 g/mol) was present in Parmelia sulcata thalli. Quite a high content of atranorin (393.34±8.65 g/mol) and usnic acid (375.31±7.53 g/mol) were defined in Parmelia vagans thalli. The results obtained can be used in the development of quality control methods for Parmelia sulcata and Parmelia vagans thalli, as well as medicines based on these types of raw materials.

The aim of this study was to analyze the total content of antioxidants (TCA) at different stages of production of the Khakass national product talgan, made from sprouted wheat and barley. Grain crops were grown on the territory of the Bey district of the Republic of Khakassia, which is characterized by favorable climatic conditions from the point of view of growing grain with an increased content of antioxidants. To determine the TCA value in the grain, two solvents were used – hot bidistilled water and 70% ethanol. The TCA measurement was performed on the device "Color Yauza-01-AA". Among all the grain samples studied, higher values were recorded when using hot bidistilled water as an eluent. It was found that the germination process did not reduce the taste qualities of the grain product. The value of the TCA in talgan, made on the basis of sprouted barley grain, was higher in comparison with wheat by 34%. The effect of increasing the level of TCA in the product in comparison with the initial raw material after the stage of grain germination in wheat and barley, respectively, by 1.5 and 2 times, and after the stages of roasting and grinding by 2 and 2.5 times. The value of FSA in bran exceeded that in the original grain by 44 and 65% for wheat and barley, respectively. Thus, as a result of the research, it was found that regardless of the studied crop (wheat, barley), the process of germination of grain is one of the effective ways to increase the value of TCA in the talgan product made on its basis.

Thalli of epigeic lichenized fungi of the genus Cladonia P. Browne are sources of high biological activity substances with a proven pharmaceutical potential. Its necessary to study characteristics of the accumulation of biomass by thalli, as well as conditions affecting the accumulation of secondary metabolites by lesions. For the first time, studies of the primary productivity and concentrations of secondary metabolites in lichens of the genus Cladonia in pine forests in the center of the European part of Russia are presented on the example of the Kostroma Region. The primary productivity of bushy lichens of the genus Cladonia in the pine forests of the Kostroma Region is in the range of 16,0534,72 g/m per year for C. arbuscula and 14,7028,18 g/m per year for C. rangiferina. The weight gain of the living part of the subset is in direct proportion to the intensity of sunlight: the optimum for C. arbuscula is 41006100 lx (0,0250 g/year), for C. rangiferina it is 38005800 lx (0,0407 g/year). The influence of abiotic factors (biotope humidity and sunlight intensity) on the parameters of primary productivity and the accumulation of secondary metabolites by thalli was revealed. The influence of biotic factors is manifested on the projective cover of species. The highest values of the projective cover, 85,67% (C. arbuscula) and 61% (C. rangiferina), are confined to well-illuminated biotopes with rarefied sunlight (thin sphagnum pine forest, sphagnum-heather pine forest slope). The maximum amount of acetone extract of secondary metabolites per weight of air-dry raw material of lichenized fungi of the genus Cladonia was isolated from well-illuminated areas of pine forests at 58007400 lx (11,541 and 15,916 mg/g q.s. of C. rangiferina and C. arbuscula raw materials, respectively). The increased humidity of the biotope and shading conditions slow down the accumulation of secondary metabolites in the subsets.

Abstract Lichens are one of the most common air quality bioindicators. Airborne heavy metal pollution causes various physiological changes in lichens, but sensitivity to metal pollution is species specific. In this research, three lichen species (Parmelia sulcata, Flavoparmelia caperata and Evernia prunastri) were exposed to cadmium (50 mg L−1) in laboratory conditions. Photosynthetic efficiency of photosystem II and content of secondary metabolites were determined after one, three and eight days of exposure. In all investigated species treatment of lichen thalli with cadmium significantly changed Fv/Fm and RFd only after eight days of exposure. Quantification of metabolites showed a decreased content of the medullary depsidones salazinic acid (in P. sulcata) and protocetraric acid (in F. caperata) but increased content of cortical depside atranorin (in P. sulcata) and dibenzofurane usnic acid (in F. caperata) after cadmium exposure. However, no changes in secondary metabolites were found in E. prunastri. Results show that investigated species are relatively resistant to short-term cadmium-exposure and that secondary metabolites could have an important role in the protection of primary metabolism from negative cadmium impacts, at least in some species.

Any change of the raw material sources for glazes, economically, ecologically motivated, and also from the glaze quality point of view, is conditioned by the molecular formula rationalization and by the variation limits of the molecular formula, respectively. The proper glaze compositions are placed within their limit variation intervals with optimized processing and utilization properties. For this purpose, the rationalization criteria and procedures of molecular formulas are summarized in the present paper, as well as the results referring to their rationalization obtained in the authors previous work. Thus, one starts from a base of raw materials that are selected, usable and also accessible for the design and producing of the glazes. On these bases the groundwork and the design equation for the glaze recipes are developed, exemplified for a single glaze. For an easy access to results, computer programs are used for an easy access to results.

Blackcurrant is a healthy, affordable, and traditionally gardened berry that, thus far, has been underused in food applications. From the consumers’ point of view, the acidic taste of blackcurrants is a challenge; therefore, these berries have mainly been utilized for sugary juice production. This research study aimed to develop a frozen vegan blackcurrant product with pleasant sensory properties and potential probiotic function. A candidate probiotic, Lactoplantibacillus plantarum Q823, was used in the manufacturing process. The physicochemical properties, nutritional composition, and consumer preference for the developed product were assessed, as was the viability of L. plantarum Q823 during storage time and in an in vitro gastrointestinal model. Consumers (n = 71) perceived the developed product to be pleasant. L. plantarum Q823 had high viability counts (log colony forming units (cfu) g−1 7.0 ± 0.38) in the final product, although the viability of L. plantarum Q823 during storage time needs to be enhanced to obtain a probiotic product. Thus, within an optimized formulation, blackcurrant berries represent a potential raw material for functional frozen food products.

Rising consumer attraction towards superfoods and the steadily increasing demand for healthy, environmentally sustainable, and regionally produced food products has sharpened the demand for chia. Over the course of 4 years, two early flowering chia varieties belonging to Salvia hispanica L., and Salvia columbariae Benth. Species were identified to complete their phenological development and, therefore, able to reach maturity under a photoperiod >12 h, thus enabling the cultivation of chia in central Europe—more specifically, in southwestern Germany—consistently for the first time. Results obtained by the conducted field trial in 2018 showed that chia seed yields and thousand-seed mass ranged from 284.13 to 643.99 kg ha−1 and 0.92 to 1.36 g, respectively. Further, the statistical analyses showed that the protein content of the cultivated chia varieties ranged from 22.14 to 27.78%, the mucilage content varied from 10.35 to 20.66%, and the crude oil content amounted up to 28.00 and 31.73%. Fatty acid profiles were similar to previously reported data with α-Linolenic acid being the most prominent one, ranging from 60.40 to 65.87%, and we obtained ω6:ω3 ratios between 0.2 and 0.3. In conclusion, chia could represent a promising raw material from a nutritional point of view, while being able to diversify the local food basis of southwestern Germany.

A joint and unified vision of stochastic diffusion models associated with the family of hyperbolastic curves is presented. The motivation behind this approach stems from the fact that all hyperbolastic curves verify a linear differential equation of the Malthusian type. By virtue of this, and by adding a multiplicative noise to said ordinary differential equation, a diffusion process may be associated with each curve whose mean function is said curve. The inference in the resulting processes is presented jointly, as well as the strategies developed to obtain the initial solutions necessary for the numerical resolution of the system of equations resulting from the application of the maximum likelihood method. The common perspective presented is especially useful for the implementation of the necessary procedures for fitting the models to real data. Some examples based on simulated data support the suitability of the development described in the present paper.

Efficient sustainability management requires the use of tools which allow material, technological and construction variants to be quantified, measured or compared. These tools can be used as a powerful marketing aid and as support for the transition to “circular economy”. Life Cycle Assessment (LCA) procedures are also used, aside from other approaches. LCA is a method that evaluates the life cycle of a structure from the point of view of its impact on the environment. Consideration is given also to energy and raw material costs, as well as to environmental impact throughout the life cycle - e.g. due to emissions. The paper focuses on the quantification of sustainability connected with the use of various types of concrete with regard to their resistance to degradation. Sustainability coefficients are determined using information regarding service life and "eco-costs". The aim is to propose a suitable methodology which can simplify decision-making in the design and choice of concrete mixes from a wider perspective, i.e. not only with regard to load-bearing capacity or durability.
