In this study, the meat of llama (Lama glama) and alpaca (Vicugna pacos) were examined. Data were analyzed through the analysis of variance (ANOVA) using the Centurion Statgraphics software. The bromatological characteristics of the meat were evaluated through proximal analysis. A high percentage of protein content was identified, with a higher value in the llama meat (24.025%). Regarding the ethereal extract, minimum values ​​were obtained in the alpaca meat (2.707%), indicating lean meat. The humidity was variable depending on the conditions of the conservation, and the organic matter present in the meat defined the ash content, which was not higher than 5%. In terms of the microbiological analyses, the value ​​of viable aereobic mesophiles in llama meat was 1330 cfu/g, and in alpaca meat it was 1490 cfu/g; and the values for E. coli were 0.500 cfu/g and 1,250 cfu/g, respectively. RESUMEN La carne de Llama (Lama glama) y Alpaca (Vicugna pacos) cumple con los requisitos para ser considerada como carne; Mediante el análisis de varianza (ANOVA) utilizando el Software Statgraphics Centurion se evalúa los requisitos bromatológicos por medio del análisis proximal de las carnes en estudio, donde se identifica un alto porcentaje en el contenido de proteína, lo que conlleva a un elevado valor biológico en ambas especies, siendo más destacada, en la carne de llama con 24,025%; En cuanto a extracto etéreo  se obtiene valores mínimos en especial en la carne de alpaca con 2,707%, favoreciendo a la obtención de carne magra; En lo referente a humedad va a ser variable dependiendo de las condiciones de conservación de la misma, mientras tanto la materia orgánica presente en la carne define el contenido de cenizas, el cual no podrá ser mayor al 5%. En relación a los análisis microbiológicos los valores de Mesófilos Aereobios Viables en la carne de llama fueron 1330 ufc/g, en la carne de alpaca 1490 ufc/g, para E. Coli  de 0,500 ufc/g, y 1,250 ufc/g respectivamente encontrándose dentro de lo establecido en la Norma, y valores no permisibles por la presencia de Coliformes Totales.    Palabras clave: software, Lama glama, Vicugna pacos, análisis proximal, requerimientos microbiológicos.

The objectives of this work were to evaluate the forage performance of several hybrids in relations with six checks. The farmer hybrids were realised by "Instituto Mexicano del Maíz", located at Saltillo, Coahuila. The agronomic traits taken into account were: grain yield and some chemical traits and their relationships with production and quality of forage in corn. Their work was divided in two parts, the first one under the field conditions in Gómez Palacio, Durango, (1992) where 25 hybrids were evaluated with a population density of 62,500 plants/ha. The analysis of variance showed no significance for production of green forage. However, one hybrid overcame the best check for more than 4 t. The second phase was carried out in the quality forage laboratory during 1992 - 1993, where each plant representing an entry was divided in three parts; later, a proximal analysis was performed and two variables were analized for green forage and ensilage. For percentage of fat, some experimentals hybrids had lower vulner than commercial hybrids in both green forage and ensilage, whereas for protein content six experimental hybrids overcame, the mean of the best checks. However, it is important to mention that the value was higher vulner of the entries for protein content were highest on ensilage than those shown for green forage whose group means were 6.91 and 6.12 respectively. In the other hand, it was posible to detect some experimental material with low vulner of fiber, mainly, in the phase of ensilage. We observed that the midde part of the plant was the richest for protein content in both ensilage and green forage. Finally, we observed the superiority of some experimental hybrids as for the parameters of contents of organic matter, portein, amount of ensilage and green forage.

      Brownies merupakan cake coklat yang terbuat dari tepung terigu, lemak, telur, gula pasir dan coklat. Metode pemasakan brownies ada dua yaitu pemanggangan dan pengukusan. Penelitian ini menggunakan tepung jewawut dan tepung maizena agar dihasilkan brownies kukus bebas gluten. Penelitian ini bertujuan untuk mengetahui formulasi tepung yang memiliki kadar protein tertinggi pada brownies dan untuk mengetahui lama pengukusan yang optimal sehingga menghasilkan brownies kukus tepung jewawut dan tepung jagung yang paling disukai. Penelitian ini menggunakan Rancangan Acak Lengkap (RAL) dengan dua faktorial yaitu faktor pertama ratio tepung jewawut dan tepung jagung (50:50, 40:60 dan 30:70), sedangkan faktor kedua lama pengukusan (30 menit, 40 menit dan 50 menit). Hasil penelitian menunjukkan Brownies kukus tepung jewawut dan tepung jagung dengan ratio 50:50 dan lama pengukusan 50 menit merupakan ratio yang terbaik karena memiliki kadar protein paling tinggi yaitu 5.828%.  Pada perlakuan ini menghasilkan 19.967% kadar air, 1.585% kadar abu, 1.786% gula total, serta uji organoleptik terhadap warna 3.590 (coklat gelap), tekstur 3.340 (lembut), flavor jewawut 2.855 (sedikit terasa) dan kesukaan keseluruhan 3.285 (disukai). Kata kunci : Brownies, tepung jewawut, tepung jagung, kadar protein.  ABSTRACT      Brownies is chocolate cakes made from flour, fat, eggs, sugar and chocolate. There are two methods of cooking brownies namely roasting and steaming. This study uses millet flour and maizena flour to produced gluten free steamed brownies. This study aims to determine the best of flour formulated which has highest protein content in steamed brownies and to knew the optimal steaming time that produced the most favored  of  steamed brownies millet flour and  corn flour. This study used a completely randomized design (CRD) with two factorials, the first factor is ratio of millet flour and corn flour (50:50, 40:60 and 30:70), while the second factor was the duration of steaming process (30, 40 and 50 minutes). The result of the study showed steamed flour of millet flour and corn flour with ratio of 50:50 and with steamed process duration 50 minutes is the best ratio because it had the highest protein content of 5.828%.  In this treatment yielded 19.97% moisture content, 1.585% ash content, 1.786% total sugar and organoleptic test is 3.590 (dark chocolate) colors, 3.340 (soft) texture, 2.855 (slightly felt) millet flavors and 3.285 (preferred) overall preferences. Keywords :  Brownies, millet flour, corn flour, protein content

The incorporation of sugar beet fiber (0–5%) to tortilla chips and the effects on the chemical and sensory properties were studied. Addition of sugar beet fiber (SBF) led to an increasing of water absorption capacity, ash content and darkness while lowering the protein content and oil absorption. Sensory evaluation showed that the overall acceptability of tortilla chips reduces if adding more than 2% SBF.

Indonesia’s government is attempting to improve the leading economic sectors such as the fishing industry, together with its processed products that could strengthen the national economy. Therefore, small industries should be able to improve the quality and security of their products for consumers’ assurance. Fish Skin Cracker is one of the products from domestic industry in Serangan, Bali, which made from Tuna and Shark. Those kinds of crackers are processed by adding spices, in which the spices would be different among processors and result in different quality. This research was aimed to investigate the best-quality fish skin cracker among the processors, based on the microbiological, chemical, and organoleptic analyzes. This research used Descriptive Method. Based on the results of analyzes, it was discovered that the best Tuna Skin Crackers were those from processor number 2 with values of quality analyzes; Moisture Content 6.1%, Ash Content 0.04%, Protein Content 59.33%, Fat Content 25.98%, TVB 14.21mg N %, TMA 7.45mg N%, Micro Analysis 4.9 x 104 Colony/gr, Organoleptic rates: texture 6, taste 7, aroma 6, and color 6. Processor number 2 used garlic, salt, and flavor enhancer as the seasoning. Meanwhile, the best Shark Skin Crackers were those from Processor number 5 with values of quality analyzes; Moisture Content 9.3%, Ash Content 0.04%, Protein Content 86.94%, Fat Content 3.7%, TVB 20.08mg N%, TMA 10.64mg N%, Micro Analysis 2.1 x 104 colony/gr, Organoleptic rates: texture 6, taste 6, smell 6, and color 6. Processor number 5 used garlic, coriander, turmeric, flavor enhancer, and lime juice as the seasoning.

1. 670 samples of the mixed milk from 15 herds were analysed, and the average percentages of total ash, soluble ash, insoluble ash, lime and phosphoric acid are given.2. Tables showing frequency distributions are also given, with the standard deviation, mean and probable error of mean for each constituent determined.3. Various correlations of these constituents with solids not fat and protein have been prepared, and these correlations are illustrated by graphs.It is observed that the total ash falls with the solids not fat until low values of solids not fat are reached, when the ash content appears to rise. This variation is confirmed by a curve illustrating the variation in ash content of samples of individual cow’s milk. Soluble ash rises as the solids not fat falls, but the insoluble ash shows a reverse variation. Lime and phosphoric acid both fall with the solids not fat.

The study investigated the characteristics of packaged water stored under ambient and sunlight conditions. This is with a view to testing the effect of prolonged storage under different storage conditions on its quality. In addition it analyzed the interactions between the parameters. Two packs each of bottled and sachet water was purchased from each factory at the point of production and ready for distribution to wholesalers. Twenty eight pieces of packaged water from each factory were kept at room temperature and the same quantity were kept under sunlight. Physico-chemical and microbiological analyses were carried out on the remaining packaged water within 24hrs. Half of the samples stored at the two storage conditions were removed for analysis at 3 weeks while the remaining half was analyzed after 6weeks. The physico-chemical characteristics were within the WHO recommended values except for the pH of some samples that have values in the acidic range of 6.2-6.48. All the physico-chemical values increased for samples kept under sunlight. All the water samples showed growth in faecal coliform (4-46 cfu/100 mL) and E. coli (0-13 cfu/100 mL) for samples kept under sunlight at three weeks and this growth increased to the sixth week. The presence of E. coli is an indication that the packaged water is not pure. Displaying packaged water under the sunlight and storing beyond 3 weeks by vendors have effect on the potability of the product. The regulatory bodies should raise awareness and ensure manufacturer have a quality control unit to test on a routine basis.

This study was carried out to assess the microbiological status of three hot meals served in eight selected school canteens of Mauritius, with two schools randomly selected from each of the four school zones of the island. Three individual samples of farata, panini, or fried noodles were collected at each school during two independent visits. The three individual samples of each food type collected during each visit were then pooled before being subjected to microbiological analyses. A total of 48 composite samples were analyzed. The parameters tested were Total Viable Count (TVC), Escherichia coli, Salmonella spp., Clostridium perfringens, Staphylococcus aureus, and Listeria spp. The microbiological analyses revealed that paninis were deemed as generally acceptable with TVC falling in the range of 3.0-5.7 Log CFU/g and undetectable levels of S. aureus and E. coli. In contrast, fried noodles and faratas harboured a moderately high level of TVC (4.4-6.7 Log CFU/g) and objectionably high levels S. aureus (3.1 to 5.0 Log CFU/g) and E. coli (3.1-5.1 Log CFU/g) for seven out of the eight schools.

This aims of this research was to know the effect of comparison between green bean flour and wheat flour on characteristic of analogue meatball and to know the right comparison of green bean flour and wheat flour to produce analogue meatball with the best characteristics. The design used in this research was completely randomized design (CRD) with the comparison between green bean flour and wheat flour i.e. (70 g :30 g), (60 g :40 g), (50 g :50 g), (40 g :60 g), and (30 g :70 g). Data were analysed by analysis of variance, followed by Duncan test. The result of this research showed that the comparison between green bean flours and wheat flour had no real effect on water content and aroma of analogue meatball, but significant effects were found on ash content, protein content, fat content, crude fiber content, texture, sensory characteristic such as color, flavour, texture, and overall acceptance of analogue meatball. The best characteristic of analogue meatball was comparison between green bean flour and wheat flour 30 g : 70 g i.e. 59.00 percent of water content, 1.34 percent of ash content, 6.88 percent of protein content, 1.77 percent of fat content, 1.77 percent of crude fiber content, level of elasticity 6.38 N, color (liked), aroma (neutral), texture (liked) with chewy characteristics, with the taste is rather not typical of green beans and liked, and overall acceptance (liked).

Gelatin is an intermediate ingredient which is oftenly used in many field such as food, pharmacy, and cosmetics. It is usually extracted from pig and cow. Halal issue of gelatin sources and the outbreaks of mad cow diseases encouraged people to find an alternative sources of gelatin. One of the alternative sources of gelatin was duck bone. The aim of this research was to describe physicochemical properties of duck bone gelatin which is extracted by using acid extraction method as an alternative sources of halal gelatin. The extraction of duck bone gelatin used 5% concentration of HCl (hydrochloric acid). The extraction process consisted of four steps, they were degreassing, defating, demineralization, and acid extraction. The result showed that gelatin which was extracted from duck bone had these several characteristic: yield of 6.24%, pH 4.0, water content of 13.43%, ash content of 13.42%, protein content of 65.43%, and whiteness degree of 30.35%. Generally, gelatin which was extracted from duck bone had similar characteristic with commercial gelatin and SNI standard. Further researcher had been suggested to reoptimized extraction method in order to reduce ash content.
