Chicken meat is one of the most popularly consumed meat in Indonesia, particularly in West Java, according to the socio-economic research and chicken meat production in 2013 issued by the Official of Animal Husbandry West Java. The consumption of chicken meat each year reaches 3.6 kg. Cognizant that the population of Moslems is up to 99.67%, each production and consumption of meat has to fulfill the requirements of its halalan tayyiban (considered good and permitted according to the Islamic syaria law). Speaking of which, a number of activities directly concerning on its halal or haram, later called the halal critical point. This point produces variables and factors that affect both the halal and the haram of the chicken meat. The use of resource referred is to simplify the description of the existing variables and factors. The research method is that which explores the chain of chicken meat production supply. The result of this research is the mapping of the halal critical point, and the measurement in the form of scoring to slaughterhouse and market with the help of experts using AHP. Thus, it could be concluded that the most critical points lurk within the semi-modern slaughterhouse activities, while traditional slaughterhouse has fewer critical points. In the scoring results, the fulfillment of the scores is gained more in semi-modern slaughterhouses as well as modern markets than in that of traditional. Keywords: Halal Critical Point; Chicken Meat; Supply Chain; Mapping; Halalan Tayyiban

Meat production and consumption have been claimed to have negative impacts on the environment, and even on the consumer’s health. In this sense, alternative sources of protein, mainly meat substitutes and cultured meat, have emerged due to those perceived negative effects. Our paper carries out a choice experiment to analyze the preferences of 444 Spanish consumers and their willingness to pay for plant-based and cultured meats, as compared to conventional meat. Spain was considered of interest for this study due to its significant gastronomic culture, with high-quality meat products that make a great contribution to the economy, meaning that this could be a suitable and also challenging market in which to test alternative sources of protein. The findings show that consumers’ motivations and their interactions with these products are complex. Additionally, a cluster analysis allowed us to identify three types of consumers in terms of preference for these products: price-sensitive millennials, conscious/concerned consumers, and indifferent consumers. Only one group showed some level of acceptance of these alternative products meats.

In this paper we explore the event of foodscares as an example of what Callon calls ‘hot situations’, in which the landscape of competing knowledge claims is at its most molten, and alternative production and consumption practices galvanise new modes of sense-making against the market and state-sanctioned rationalities of industrialisation. Through a case study of the Belgian cooperative Coprosain and its meat products, we examine the ‘stuff’ of food as a ready messenger of connectedness and affectivity in which ‘risk’ is transacted as a property both of the growing distance between the spaces of production and consumption and of the enduring metabolic intimacies between human and nonhuman bodies.

The purpose of the article is to analyze the current state of the meat market in Ukraine, to identify trends in its development. Research methods. The following methods have been used generally accepted methods and techniques: a set of scientific methods of abstract and logical method (induction and deduction, analysis and synthesis, analogy and comparison, formalization) for develop theoretical positions and analyze the situation in the meat market; statistical when assessing the meat market; tabular for visual representation of the research results; graphic for identify and illustrate trends of the research economic phenomena. Research results. The meat market is an important component of the food market of the country, on the stability of which the living standards of the population and the food security of the country largely depend, has been generalized. Meat and meat products are among the most important foods. It has been found that the meat market operates in rather difficult economic conditions. Meat producers increase production volumes with the decline of certain branches of animal husbandry In the livestock industry of Ukraine there are transformational processes that cause changes in the meat market structure. The meat market structure is considered and the peculiarities of its functioning are revealed. Poultry meat has been found to have a monopoly on the meat market. The increase in poultry meat production is primarily due to the growing demand from the population and the food industry. The basis of the "meat diet" is poultry meat, as the most available type of meat has been determined. Scientific novelty. Production of poultry meat in Ukraine is the most profitable has been specified. The rapid return on investment in poultry production has led to increased investment in the industry, the construction of modern large poultry farms and the creation of powerful vertically integrated companies. Pork production has stabilized somewhat. However, African swine fever causes significant damage. Raising cattle remains a non-profit business. The trend of cattle slaughter continues in Ukraine,. At the same time, the main producers of cattle meat are households. Analytical assessments and determinations of factors influencing meat production and further development of the meat market have been further developed. Practical significance. Analytical materials of the article have been based on relevant official statistics, which can be can be used for addressing development of the meat market. In this article we would like to present the production and consumption issues of pork meat in the world. We intend to examine the production and consumption of pork meat from the point of view of the population. The growing population of the world requires an increasing amount of food, especially animal source of protein, ie meat. We want to examine how the world can supply the growing population with food, including (pork) meat. The growing population generates ever-increasing consumption from year to year, and may not be able to satisfy it, adequately supplying the population with food, especially (pork) meat. Livestock farming, especially extensive animal husbandry, will be less able to produce sufficient quantities of meat for the growing needs. During the analysis of food (meat) data we would like to present the difference between each continent on both the production and the consumption side. Examining the pork consumption, it should be mentioned the differences in the cultural habits, because the pork meat is the most affected in religious restrictions, regulations. The religious affiliation/identity is basically determined by the food and consumer habits, too. Due to the differences in dietary habits and religious culture, we think that the consumption of pork can be highly variable in the world and from country to country as well. In general, we would like to answer questions about how the world (pork) meat production is going, is the meat consumed in the countries where it is produced (export – import issues), what are the factors that influence (pork) meat consumption (culture and religion impact on pork consumption, animal health issues), and is there enough (pork) meat for the world's growing population. The relevance of this topic of the article is associated with the need to automate and digitalize the branches of agro-industrial complex of the Republic of Kazakhstan, ensuring the country's food security and improving the well-being of the rural population. The main problems of the development of animal husbandry in the republic are considered. The structure of its production by farm categories has been analyzed. It has been determined that about 55% of the industry's products are provided by the households, which contain 55.3% of the cattle population. The purpose of the study is to justify the need to increase the volume of beef cattle breeding through the use of innovative technologies and digitalization of livestock farms, as well as the development and scientific confirmation of rational options and technical solutions for low-cost, environmentally friendly meat production technologies. The work uses the methods of economic and statistical analysis, which consists in summarizing statistical data, illustrative presentation of factual information, etc. Results – the authors state that meeting the existing high demand for Kazakhstani meat products in domestic and foreign markets currently requires a transfer and adaptation of highly efficient technologies based on automation and digitalization of production processes in livestock farming, taking into account the objective conditions in the regions of the country. The data on technology of organizing winter and cultivated pastures in cattle breeding, pasture rotation, seasonal rotations, preparation of scientifically grounded feeding rations, the choice of machines and equipment for the automation of technological processes are presented. An economic assessment of the effectiveness of creating model farms by levels of digitalization was carried out: basic, advanced, digital; indicators of labor productivity, payback period are calculated. The conclusions indicate the need to increase government support for the meat industry.

The article is devoted to the development of innovative processes in the livestock industry of meat sector. The main forms and methods of classification of innovations are studied. The features of innovative activity of enterprises of agro-industrial complex of Kazakhstan are analyzed. Indicators of innovative activity of agricultural entities of the republic in comparison with European countries are presented. The author pays main attention to the formation and development of innovative processes at enterprises for production of meat and products of its processing, which is of considerable interest, since innovative activity in this industry has its own specific features. In agricultural sector, economic and financial state of production directly depends on introduction of innovations, the use of modern innovative technologies that save resources, increase the profitability and efficiency of production system. The assessment of potential resources for the development of beef cattle breeding has been carried out, the tendencies of the growth of livestock, meat production, its import and export in recent years have been studied. The main problems of animal husbandry industry, in particular raising of beef cattle, are highlighted, conclusions about the possibility of increasing the potential of meat products are drawn. On the basis of performed analysis of the level of innovation activity, the identified problems in agricultural production, recommendations were developed for the future development of innovations in the country's beef cattle breeding, since in the new economic conditions, an important role is played by innovative developments and their application in this industry.

In order to explore the production and consumption pattern of red meat three districts namely, Killa Saifullah, Pishin and Jaffarabad of Balochistan were selected randomly.300 hundred respondents were selected. Well-structured questionnaire was used. Cronbach's Alpha program was 0.84. to 0. 81.Chi-Square test was applied and the p-value was considered significant at p<0.01. Results revealed more than (53%) of the respondents fell into the age group of 36 to 45. While most (44%) of the respondents were acquainted with religious schooling. More than half (55%) of the respondents belonged from married categories. Chi-Square technique about the production and consumption pattern of red meat based on (p ≤0.01) was used. Highly statistically variations were observed regarding the production and consumption pattern as district-wise. Based on the results following recommendation has been developed. Government should be encouraging the new emerging technologies in the livestock sector and livestock farmers should adopt different methods and approaches for animal breeding so as to increase the livestock production. Government should promote the integrated livestock approaches and system within terms of real practices shape and mode

The risk of Listeria spp. contamination was assessed in frozen ready-to-eat chicken meat production lines by establishing a mathematical model for determining the probability of Listeria spp. prevalence on environmental surfaces directly in contact with the product at various times in a chicken plant in Thailand. Environmental surfaces were divided into three zones. Zone 1 included surfaces in direct contact with products. Both zones 2 and 3 included indirect contact surfaces; zone 2 was next to zone 1, and zone 3 was next to zone 2, relatively far from the product. The model for probability of Listeria spp. contamination on surfaces in zone 1 was derived from the probability of Listeria spp. on surfaces in zone 1 after the cleaning and sanitizing process multiplied by the probability of Listeria spp. transferred from zones 2 and 3 and the probability of Listeria spp. growth. The surfaces in zone 1 were cleaned with warm water, cleaned with detergent, and sanitized with a sanitizer. Factors affecting cleaning and sanitizing were water temperature, concentration, and contact time of detergent and sanitizer. The probability of Listeria spp. prevalence on surfaces in zone 1 was not affected by water temperatures of 50, 60, and 70°C and detergent concentrations of 0.5, 1, and 2% (vol/vol) at contact times of 5, 10, and 15 min. However, it was affected by sanitizer concentrations of 0.25, 0.5, and 1.25% (vol/vol) at contact times of 5, 10, and 20 min. Sensitivity analyses were conducted using the Monte Carlo simulation. The sanitizer concentration had the most significant influence on the prevalence of Listeria spp. on surfaces in zone 1. The prevalence of Listeria spp. on surfaces after cleaning and sanitizing, the production time, and the contact time with the sanitizer were highly correlated with the prevalence of Listeria spp. in zone 1. This model could be used as a management tool for assessing the risk of Listeria spp. contamination in food products.

The pig breeding behaves to the most more widespread directions of stock-raising in the world, which forms considerable part in balance of meat and meat products in many countries. The level of pork production and industry development volumes on the whole substantially influences on world food security. In the article the presented results of research are in relation to consisting and basic tendencies of pork production in the world and in the separate countries where the pig breeding is most developed. Conducted analysis of hog herds dynamics production and pork volumes in the world, and also basic factors which substantially influenced on development of the pig breeding for probed period are set. Certainly structural influence of most producers of pork is in the world on the indexes of industry development. Investigational the stance of pork production, and also conducted analysis of standard purchase prices, is on pigs in different countries in the world. Presented information in relation to the structure of pork export and import in the world and in the separate countries which most influence on pork market development. Positions and influence of Ukraine are appraised at the international market of pork. The basic prospects of pork production development are set and grounded in the world and in the separate countries, in particular in Ukraine. The production of pork in the world during 2017–2019 years decrease on 8.1 %, and the pigs herd dynamic diminished on 13 %. A sharp downstream of pork herd is in the world connected with spread of dangerous infectious diseases of zoon’s, which the African swine fewer, which resulted in considerable reduction of herd and meat production particular in China on which was nearly 40 % in world production. However, compensated a downstream in countries South-East Asia in a greater measure of industry development of the pig breeding in the USA, Brazil and EU, which behave to the basic exporters of pork in the world, which is form about 85 % of global products export. One with positive factors, which in the future will assist the pig breeding development in the world there is gradual growth of pork production and consumption in the developing countries, where an increase of herd, and also increase the technological efficiency of swine growing. The considerable not realized potential of the pig breeding industry in many countries, in particular in Ukraine, which is one of most in the world producers and exporters of feed crops, necessary for industry development.
