Introduction: Since 1970s, a school of thought on management of innate and acquired immunity systems using biologically active substances of the Far East marine origin has been developed by the Immunology Laboratory of Somov Research Institute of Epidemiology and Microbiology of the Russian Federal Service for Surveillance on Consumer Rights Protection and Human Wellbeing (Rospotrebnadzor). Biopolymers, which constitute the structural basis of live marine organisms and sustain numerous vital processes, draw special attention as potential candidates for pharmaceutical forms. The objective of our study was to summarize the results of long-term research on biologically active substances (BAS) from marine aquatic organisms (hydrobionts) of the Pacific Ocean as the basis for developing medicinal preparations for infectious disease prevention and treatment and dietary supplements for food and functional food products. Methods: We have selected and analyzed 46 principal published works of the researchers of the Institute found in electronic databases (Web of Science, PubMed, and eLibrary) using appropriate keywords. Results: We established that over 500 substances from various hydrobionts of the Pacific Ocean including invertebrates, fish, algae, marine bacteria (polycationic and polyanionic polysaccharides of brown and red algae), pectins (colloidal carbohydrates of high molecular weight and complex structure), lipopolysaccharides and polysaccharides from marine proteobacteria, glycoproteins, proteoglycans, glycolipids, low-molecular compounds of marine origin (sulfated polyoxysteroids, peptides, beta-glucans, nucleic acids, amino acid complexes, naphthoquinones and spinochromes of sea urchins) had been studied for their biological properties over the past almost half a century. The studies produced abundant new data on immunomodulatory, antibacterial, antiviral, antitumor, anti-adhesive, anti-endotoxic, pro-apoptotic, hepatoprotective, and hypolipidemic properties of biologically active substances, substantiated feasibility of designing innovative BAS-based medicines, and developed environmentally safe functional food products and dietary supplements. Conclusions: Biologically active substances from marine hydrobionts are a promising source for the development of novel domestic pharmaceuticals.

Перспективным направлением разработки пищевых продуктов, в том числе продуктов для детского питания, является использование в их составе природных ингредиентов растительного происхождения. Критический подход к подбору таких ингредиентов позволяет повысить ценность пищевого продукта, с одной стороны, за счет использования биологически активных веществ в их естественной форме, с другой - за счет существенного улучшения органолептических кондиций продукта. Проведенные исследования химического состава плодов фейхоа показали привлекательность их использования в качестве ингредиента растительного происхождения, который может позиционироваться как «источник органического йода», относящегося к дефицитным микроэлементам. Определены этапы и параметры технологического процесса получения компонента растительного происхождения - сухого экстракта плодов фейхоа. Разработана нормативная документация на сухой экстракт плодов фейхоа. Проведены исследования рецептур продуктов с компонентами растительного происхождения. Определены этапы и параметры технологического процесса производства продуктов с компонентами растительного происхождения. Разработан проект технологического регламента производства продуктов с растительными компонентами. Разрабатываемый продукт позиционируется как источник природной формы йода. Согласно технологической схеме выработки продукта, потери биологически активных веществ наиболее вероятны на стадии пастеризации, в связи с чем проведены исследования потерь биологически активных веществ, находящихся в составе экстрактов фейхоа, в процессе тепловой обработки. A promising area of development of food products, including products for baby food, is the use of natural ingredients of plant origin in their composition. A critical approach to the selection of such ingredients allows to increase the value of the food product, on the one hand, due to the use of biologically active substances in their natural form, on the other, due to a significant improvement in the organoleptic conditions of the product. Studies of the chemical composition of feijoa fruits have shown the attractiveness of their use as an ingredient of plant origin, which can be positioned as a «source of organic iodine» belonging to deficient micronutrients. Stages and parameters of technological process of obtaining component of plant origin - dry extract of feijoa fruits are determined. Regulatory and technical documentation for feijoa fruit dry extract has been developed. The preparations of products with components of vegetable origin were investigated. Stages and parameters of technological process of production of products with components of plant origin are defined. A draft technological regulation for the production of products with plant components has been developed. The product being developed is positioned as a source of natural iodine. According to the process scheme of the product production, losses of biologically active substances are most likely at the pasteurization stage, in connection with which studies of losses of biologically active substances in the composition of feijoa extracts during heat treatment were carried out.

The effect of biologically active substances (BAS) Siliplant, Epin-Extra and Ekofus on the height and biomass of soybean plants was studied in a field experiment carried out at the Field Experimental Station of the Russian State Agricultural University named after K.A. Timiryazev in 2020. The treatment was carried out at the beginning of flowering according to the method developed by the authors of BAS (Epin-Extra - 40 ml / ha, Siliplant - 1.5 l / ha and Ekofus - 3 l / ha). The growth of plants in height in the variants with biologically active substances significantly exceeded the control by 10,6 – 11,4 %. The maximum plant biomass was registered during the period of seed filling and was significantly higher than the control by 11,1 - 11,4 %.

The most significant nutritional problems of modern man are the reduction of the need for energy, and, therefore, for food. This is due to low physical activity, as well as insufficient intake of vitamins, minerals and other biologically active substances into the body. In this regard, the creation of functional and specialized food products that allow eliminating the observed deficit and providing the diet with a sufficient amount of effective ingredients that contribute to improving the functioning of the body is acquiring particular relevance. The article presents the main achievements of the nutrition department of RUE Scientific and Practical Center of the National Academy of Sciences of Belarus for Food in the development of functional and specialized products, as well as the prospects for creating new types of food products, taking into account the individual characteristics of a person and the methodology of personalized nutrition.

Abstract Fruits and vegetables are the most popular raw ingredients that act as a source of dietary fiber and other biologically active substances that benefit the human body. The vast majority of nutrients enter the human body with food, so the daily ration of an average person should include those useful products that can provide the body with the necessary amount of biologically active substances. Vegetable-based raw materials containing vitamins, minerals, antioxidants, dietary fibers used in the production of food products are considered a source of functional properties. A priority area of product technologies is the search for technological methods for the production of functional food products with a given biological value (high BAS and antioxidant content). The paper presents recipes and innovative technology for the production of functional syrups based on Viburnum fruits, as well as the evaluation of consumer characteristics, nutritional value and functional orientation of the corresponding products.

It is well–known that cranberry is an especially rich and heterogenic source of phytochemical substances. Modern technologies allow to produce food products of wild fruits and berries, but they use their diverse and useful chemical composition insufficiently. The aim of the work was in studying features of the chemical composition and content of biologically active substances in cranberries, harvested at the territory of Ukraine, and the influence of processing technologies of cranberry on main indicators of its chemical composition at producing juices. It was established, that the maximal extraction of biologically active substances is possible at juices production using biocatalysis method, because the essential part of functional elements in the raw material is in the bound condition and is a base of cellular walls that is why it is expedient to disturb nativity and integrity of these natural biopolymers. There was experimentally grounded the influence of a processing technology on the quality of cranberry juice. There was studied the phenol composition of cranberry composition and influence of different ways of fermentolysis on PS extraction. It was confirmed by results of the study of the fraction composition of phenol substances, that their maximal extraction is achieved after the enzymatic processing of pulp and momentary heating to inactivate the effect of enzymatic preparations. It was proved, that enzymatic biocatalysis of cranberry pulp also favors the essential increase of the output of organic acids (lemon, apple, amber), sugars (fructose, glucose), sorbite polyalcohol and also phenol substances of cranberries. The mechanism of the enzymatic complex influence on cranberry pulp at fermentolysis was demonstrated. The use of products of cranberries processing at food products manufacturing will allow: to enrich the chemical composition, to compensate deviations of functional–technical properties of the raw material and to introduce resource–saving technologies. Based on the researches there were substantiated perspectives of using juices and marc of cranberry in different branches of the food industry: non–alcoholic, meat processing and at manufacturing products of the restaurant industry.

The effect of biologically active substances Siliplant, Zircon and Epin-Extra on the formation of soybean productivity elements was studied in a field experiment carried out at the Field Experimental Station of the Russian State Agricultural University named after K.A. Timiryazev in 2020. The number of pods on average per plant increased in the variant Zircon by 17%, Siliplant and Epin-Extra by 9 and 11%, respectively. The number of pods on the main stable significantly increased by 9% compared to the control only when the plants were treated with Zircon. The number of pods on the lateral branches exceeded the control by 27 and 43% in the variants Epin-Extra and Zircon.

Herbal raw materials are a unique source of biologically active substances that are of particular value in the treatment of various diseases. Sea buckthorn is one of the most famous and widespread medicinal plants, widely grown in the United States, Europe, Asia, the Russian Federation and the Republic of Belarus. Information on the phytochemical composition of fruits is quite fully covered in the scientific literature. Sea buckthorn fruits are rich in essential nutrients and biologically active substances, but remain less in demand. Thus, it is important to study and implement new ways of processing sea buckthorn fruits that can contribute to the development of new functional foods and attract the attention of consumers to these products. This review summarizes studies on the development of food products using sea buckthorn fruits and lactic acid bacterial cultures. Particular attention is paid to the process of malolactic fermentation and its influence on the content and profile of organic acids and polyphenols in the juice of sea buckthorn fruits, it is shown what changes in antioxidant properties and organoleptic characteristics occur. The role of sea buckthorn fruits and their components in the development of new probiotic dairy and non-dairy products is considered.

The technology for obtaining biologically active substances of a lipoid nature, enriched with omega-3 acids, from waste from the processing of hydrobionts by means of electrochemical hydrolysis and cryoconcentration has been developed. A comparative analysis of the composition of wastes from cutting herring and trout is carried out, and the expediency of their use for obtaining biologically active substances of a lipoid nature is shown. A technological scheme has been developed and fat yields have been determined when it is obtained from fish waste by an electrochemical method. The fatty acid composition of the fat obtained by the electrochemical method has been determined. It was found that cryoconcentrated fat obtained from wastes from trout and herring cutting by the electrochemical method has a significantly increased content of omega-3 acids and, accordingly, biological value compared to edible and medical fish oil from the liver of the cod family. It was found that during cryoconcentration, the concentration of polyunsaturated fatty acids increases, reaching values close to 90%, which allows the resulting product to be classified as biologically active additives. It was shown by calculation that to create functional fish-based food products from fish of the salmon family, it is sufficient to introduce 4 g of the obtained biologically active additive per 100 g of the product. There is also an improvement in the organoleptic properties of foods from lean fish species. It has been shown that in order to meet 30% of the recommended daily intake of omega-3 acids in the development of functional food products based on rainbow trout and Atlantic herring, it is necessary to introduce 1.98 g and 1.8 g of cryoconcentrated fish oil. After encapsulation in nanocapsules, the drug will be suitable for enrichment with omega-3 acids in any food products, which is the subject of further research.
