Introduction. The national economy is currently developing a system for monitoring the quality and safety of goods. Food products, ingredients, and additives possess various pro- and antibiotic properties. Therefore, available express methods of quantitative assessment of microbiological contamination are a relevant aspect of domestic food industry. Study objects and methods. The study featured ten essential oils of plant origin that can be used as functional additives to various food products. Results and its discussion. The research introduced a new biotesting technique for repetitive recording of changes in the intensity of elastic light dispersion. The technique made it possible to measure pH and electrical conductivity of a liquid nutrient medium incubated in the presence and absence of viable test microorganisms and test samples. The paper describes the results of this technique applied to a comparative analysis of antibiotic activity of various essential oils in different concentrations. As the concentrations of the test extracts decreased, their antibiotic activity monotonically also went down, while the probiotic activity increased. The shortterm biological activity of test samples appeared to be significantly higher than their long-term activity. The medium-term biological activity of the test samples was mostly intermediate in value. Only rarely did it exceed both the long- and short-term biological activity of the same TE. The essential oils obtained from the leaves of Thuja occidentalis, Eucalyptus globulus, and Cupressus sempervirens exhibited the most active and long antibiotic properties. Conclusion. The biological activity of food products, including various plant extracts, depends not only on the raw material and the extraction method, but also on the concentration of the extract in the product. As a rule, the exact nature of these dependencies can only be established empirically and requires a set of various tests. The present article introduces a new highly objective and informative express methodology that simplifies this process. The technique is less labor-, time-, and material-consuming than standard visual microbiological methods. It can be used to assess the effect of test samples on the vital activity of microorganisms in various foods, ingredients, and additives.

A biotesting technique is described that provides for periodic (every 2 hours) recording of changes in pH, redox potential, and electrical conductivity of a liquid culture medium incubated in the presence and in the absence of viable test microorganisms (TM) and test samples (TS). The results of a comparative analysis using this technique of antibiotic activity against Staphylococcus aureus of different concentrations of «essential oils» obtained from 10 types of plant raw materials are presented. Based on this, we can conclude the following. Using the presented methodology, it is possible to assess the effect on the dynamics of the vital activity of TM of samples of various pharmaceutical, cosmetic, food, feed and other products, much more quickly, objectively and informatively than using standard visual methods of microbiological testing. The initial antibiotic activity of TS in most cases was greater than their prolonged antibiotic activity. At the same time, the mid-term (in terms of the time of interaction of TS with TM) antibiotic activity of TS was usually intermediate in value between their initial and prolonged biological activity.

Hydrolates, also referred to as hydrosols, floral or distillate waters, as well as aromatic waters, are produced in the same isolation process with essential oils by steam distillation. A small amount of essential oil constituents is dissolved in hydrolates providing specific organoleptic properties and flavor, as well as biological activity which makes them useful as raw material in many industries. Their popularity is still on the rise, especially in aromatherapy. The objective in this review is to analyze the chemical compositions of hydrolates and their corresponding essential oils, as well as biological activity of hydrolates (antimicrobial, antioxidant and antiinflamatory) and potential uses, not only in food industry for flavoring, and preservation of fresh-cut fruits and vegetables, but also as functional (soft) drinks. However, hydrolates can be used in aromatherapy and cosmetics, as well as in organic agriculture and aquaculture.

Background: The use of essential oils is receiving increasing attention worldwide, as these oils are good sources of several bioactive compounds. Nowadays essential oils are preferred over synthetic preservatives thanks to their antioxidant and antimicrobial properties. Several studies highlight the beneficial effect of essential oils extracted from medicinal plants to cure human diseases such as hypertension, diabetes, or obesity. However, to preserve their bioactivity, the use of appropriate extraction technologies is required. Method: The present review aims to describe the studies published so far on the essential oils focusing on their sources and chemical composition, the technologies used for their recovery and their application as antioxidants in food products. Results: The review has been structured in three parts. In the first part, the main compounds present in essential oils extracted from medicinal plants have been listed and described. In the second part, the most important technologies used for extraction and distillation, have been presented. In detail, conventional methods have been described and compared with innovative and green technologies. Finally, in the last part, the studies related to the application of essential oils as antioxidants in food products have been reviewed and the main findings discussed in detail. Conclusions: In summary, an overview of the aforementioned subjects is presented by discussing the results of the most recent published studies.

Salvia officinalis, known also as sage, is a medicinal plant belonging to the Lamiaceae family that spreads all over the word in several countries. The demand for the raw material and extracts of this plant is increasing due to its numerous applications in pharmacy, food and herbal tea production. The present study investigated for the first time the effect of 15, 30 and 45 cm intra-row spacing (plant density) on the main constituents of sage essential oils and rosmarinic acid content. The highest content of essential oils (2.7%) and rosmarinic acid (2.0%) were obtained in plants grown using 15 cm planting space. Likewise, close spacing resulted also in a substantial content of 1,8-cineole (47-50%, GC/FID; 55-60%, GC/MS). This work indicated that 1,8-cineole chemotype was a dominant character of cultivated S. officinalis in south of Jordan. In general, the percent of α-thujone in essential oil was not affected by intra-row spacing. However, the percent of β-thujone decreased from (2-3%, GC/MS) in plants grown using 15 cm intra-row spacing to (1-2%, GC/MS) in plants grown using 30 and 45 cm intra-row spacing. The highest content of α-and β-pinene was recorded in plants grown using 45 cm planting space (8-10%, GC/FID; 5-6% GC/MS). Based on GC/MS, camphor compound was enriched (9-10%) in sage plants grown under 15 cm spacing and greater than in plants grown under 30 (6-7%) or 45 cm (5-6%) spacing. The results make the potential use of sage extracts in the treatment of some human disorders or illness an area of further research.

Patchouli essential oil can be obtained from fresh, dried and fermented plant material. It is a highly valuable product in the fragrance industry and its quality changes depending upon raw material age and oil storage. In this work, patchouli essential oils derived from different treatments have been subjected to GC-FID quantitative analysis using an internal standard (ISTD) method with response factors (RF). Samples were obtained from i) fresh plants; ii) hydrodistillation of one year mature and fermented plants; iii) hydrodistillation of one year mature plants; iv) commercial products from Indonesia and Malaysia. Linear Retention Indices (LRI) for both polar and non-polar GC-MS analyses were also measured as a tool for qualitative analysis towards a homologous series of C7-C30 n-alkanes. The results obtained confirmed that, in all samples, patchouli alcohol was the main volatile constituent, with higher amount in lab-scale produced oils, compared with commercial samples. Other major compounds, in lab oils and commercial samples respectively, were: δ-guaiene, α-guaiene, pogostol, seychellene and α-patchoulene. Another 36 compounds were also found.

A recent tendency in Ukraine is the changes in the structure of food consumption, which are caused by the reduced consumption of some product groups and by their decreasing quality. A persisting problem is that affordable and easy-to-consume food products made with due consideration of the needs of patients with certain categories of diseases can hardly be found on the domestic market. The products present on the domestic market are all imported, available in a limited assortment, very expensive, and not customised to suit all the specific needs of human metabolism. Approaches to the nutrition of patients with certain types of nutrition-dependent and non-infectious diseases have been analysed. It has been established that аn effective component in the diet of patients with non-infectious diseases can be plant-based milk analogues. It has been determined how important it is to use domestic raw materials: it will contribute to expanding domestic production, will help the gross domestic product growth, and will reduce the product’s costs, thus reducing the costs of diagnostic and treatment procedures. It has been established that the assortment of plant-based milk analogues is constantly expanding. The vegetable raw material conventionally used to make this product group has been analysed. It has been shown that fenugreek seeds can be most effectively used to make special food products (in particular, plant-based milk analogues) for the nutritional support of patients with non-infectious diseases. This is feasible due to the availability of the raw material, simple cultivating conditions, the chemical composition of the product (e. g. a wide range of biologically active substances), low costs of the product when it is made from domestic raw materials, and the simple production technology. It is expected that manufacture of milk analogues from fenugreek seeds will widen the assortment of this product group, and satisfy the target consumers’ needs of safe and high quality products that offer an alternative to imports.

The paper presents the current prospects for the development of the fish gelatin market, the advantages the new product over conventional gelatin made of the livestock raw material. The results of a survey of 150 respondents on the specific consumer preferences for fish gelatin, a new structural agent for the food and nutrition industries have been analyzed. The main preferences for choosing fish gelatin are: safety; assortment of food products containing gelatin; shape of the new ingredient; packaging; price. It has been found that 60% of respondents prefer gelatin made in Russia. 79% of respondents expressed a desire to consume food products with fish gelatin meeting the Halal principles. Based on the study, a portrait of the average consumer of fish gelatin was formed: gender - female; age - from 18 to 49 years old; occupation - workers and students; scope of activity - provision of services; confession - Christianity and Islam; consumption of gelatin-containing products - several times a month; preferences - cakes and pies, desserts, jellied meat; preferred shape - powdered gelatin produced in Russia with net weight 100 g, packaged in polymer bags; aware of the existence of fish gelatin; unaware of prion diseases; consumes Halal compliant products; wants to eat foods with safe fish gelatin that are compliant with halal principles; willing to pay a higher price for fish gelatin compared to conventional gelatin. The data obtained allow to form a strategy for promoting a new food regulator of consistency in the regional market.

The article provides a review of world data on the characteristics of the chemical composition of tomato fruits and the impact on their quality of the soil and climatic conditions of cultivation, varietal characteristics and maturity. It is noted that the current regulatory and technical documentation in the Russian Federation does not provide for the determination of functional substances. It has been shown that tomato fruits are a promising plant-growing raw material for the production of functional food products and directions for obtaining lycopene-containing products, canned foods, in particular, from tomato fruits, have been determined. The types of canned food and tomato products containing the highest concentrations of lycopene have been established. The regularity of increasing the concentrations of lycopene in tomato products with various methods of heat treatment is substantiated. The irreplaceable physiological significance of lycopene for the human body is proved, due to its antioxidant properties and the lack of the possibility of its synthesis. The biochemical nature of lycopene as a carotenoid and pigment is analyzed. The progressive foreign technologies of tomato processing have been studied, allowing to reduce the economic costs of production, increase the duration of storage of products containing extremely high concentrations of lycopene. The necessity of developing domestic food products of physiological importance, available for consumption in baby and diet food, is substantiated. It is proved that the Republic of Dagestan has a high climatic and resource potential for growing hybrid varieties of tomatoes containing high concentrations of lycopene and the mass fraction of dry matter necessary for the rational production of canned tomatoes.
