Assessment of some biochemical parameters of apple juices from two cashew varieties as affected by three regions of co´te d Ivoire

Some biochemical parameters of juices from two red and yellow cashew apple varieties from three regions of Cote d Ivoire were analyzed. The parameters such as proteins, total soluble solids, total sugars, dry matters, and ashes had contents in juices ranging from 0.35 ± 0.01 % to 0.65 ± 0.02 %, 9.66 ± 0.28 % to 14.40 ± 0.10 %, 270.20 ± 5.15 g/L to 381.04 ± 9.86 g/L, 8.94 ± 0.02 % to 11.45 ± 0.43 % and 1.19 ± 0.01 % to 1.51 ± 0.03 % respectively. Besides, the Analysis of Variance (ANOVA) indicated that the region and variety had significant effects (P≤ 0.05) on these parameters. It so appeared significant differences (P≤ 0.05) between their contents. As for pH, these values varying from 4.00 ± 0.10 to 4.74 ± 0.10, differed meaningfully (P≤ 0.05) from one variety to another, whatever the region is. Otherwise, the results revealed that both red and yellow cashew apple varieties juices contained high rate of Tannins (1081.99 ± 34.64 - 2561.61 ± 95.11 mg/L), Flavonoids (223.83 ± 2.94 mg/L - 490.04 ± 5.32 mg/L) and total phenolic compounds (1587.59 ± 76.99 - 3043.03 ± 69.87 mg/L) whereas the carotenoid (0.97± 0.02 mg/mL -2.94 ± 0.02 mg/L) and Anthocyanin (6.57 ± 0.17 mg/L to 10.38 ± 0.15 mg/L) contents were found low. They also indicated yellow cashew apple variety juice didn't contain Anthocyanin content. Besides, the Analysis of Variance (ANOVA) showed that the region and variety main effect had significant effects (P 0.05) on these parameters. Thus, there were significant differences (P 0.05) between their rates. Furthermore, studies mineral elements (K, P, Mg, and Na) were only affected by improvement zone except to Na and they varied significantly (p 0.05). Red and yellow Cashew apple juices were the best sources of mineral elements and could be used in the diets of infants and young children. It was also rich in Vitamin C (210.61±5.01 mg/100mL and 403.73 ± 8.88 mg/100mL) and should be considered a potential supply source of adequate daily nutritional requirement for children and adults.

This work studied the effects of centrifugal block freeze crystallization (CBFC) on physicochemical parameters, total phenolic compound content (TPCC), antioxidant activity (AA), and process parameters applied to fresh murta and arrayan juices. In the last cycle, for fresh murta and arrayan juices, the total soluble solids (TSS) showed values close to 48 and 54 Brix, and TPCC exhibited values of approximately 20 and 66 mg gallic acid equivalents/100 grams dry matter (d.m.) for total polyphenol content, 13 and 25 mg cyanidin-3-glucoside equivalents/100 grams d.m. for total anthocyanin content, and 9 and 17 mg quercetin equivalents/100 grams d.m. for total flavonoid content, respectively. Moreover, the TPCC retention indicated values over 78% for murta juice, and 82% for arrayan juice. Similarly, the AA presented an increase over 2.1 times in relation to the correspondent initial AA value. Thus, the process parameters values were between 69% and 85% for efficiency, 70% and 88% for percentage of concentrate, and 0.72% and 0.88 (kg solutes/kg initial solutes) for solute yield. Therefore, this work provides insight about CBFC on valuable properties in fresh Patagonian berries juices, for future applications in health and industrial scale.

Abstract Flowers have received special attention not only for their ornamental nature but also for their nutraceutical, cosmetic, aromatic, and culinary properties. This study aimed to characterize physicochemical attributes and the antioxidant capacity of flowers of four gladiolus cultivars. The cultivars used were White Friendship, Rose Supreme, Jester, and T704. We analyzed the content of total soluble solids (SS), total titratable acidity (TA), SS/TA ratio, pH, vitamin C, anthocyanin, flavonoids, total phenolic compounds (TPC), total antioxidant activity (TAA), and the relationship of TPC with flavonoids and TAA for each cultivar. The results showed that the Jester flowers had the lowest TA and highest SS/TA ratio, indicating the best flavor. Jester also had the highest flavonoid content, similarly to the White Friendship and Rose Supreme. As a result, these cultivars have flowers with higher TPC and TAA content than T704. The anthocyanin content was the characteristic attribute of cultivar T704, due to its purple pigmentation. Gladiolus flowers, traditionally used in landscaping and as cut flowers, have the potential for use in human nutrition, particularly the White Friendship, Rose Supreme, and Jester cultivars.

Strawberries are one of the most important food crops grown in Florida, with a harvested area of ≈10,000 acres. The University of Florida strawberry breeding program develops cultivars adapted to this region and its particular weather conditions, with a major aim of increasing overall quality. The objective of this study was to compare the fruit of advanced breeding selections to those of commercial cultivars, for compositional attributes. Seven different strawberry genotypes were compared at harvest and after 7 days at 4 °C across multiple harvest dates during two consecutive years. Compositional attributes were highly influenced by year, harvest date within a year, genotype, and storage. Overall, compared with other genotypes, selection FL 09-127 exhibited consistently higher soluble solids and total sugar (TS) contents at harvest and after cold storage. Higher ascorbic acid (AA) and phenolic contents at harvest were observed in selection FL 07-193. However, its anthocyanin content was among the lowest. In contrast, FL 10-47 exhibited relatively low AA content at harvest but consistently high total anthocyanins (TACs) and total phenolic (TP) contents after storage. Overall, results from this study provide valuable information to the breeding process by identifying new genotypes with improved compositional attributes combined with suitable quality characteristics after cold storage.

The haskap has been successfully cultivated in many geographical zones in Canada. We investigated whether the latitude has any impact on the anthocyanin accumulation and total antioxidant capacity in the haskap berry. The measured quality attributes were compared with that of the blueberry. Haskap ‘Aurora’ berries were collected from Yukon, British Columbia, Saskatchewan, and Nova Scotia in Canada, and blueberries were collected from Nova Scotia. Cyanidin-3-O-glucoside (C3G), the most abundant anthocyanin of haskap berry, the total anthocyanins, the total polyphenols, the soluble solids (°Brix), the pH value, the total antioxidant capacity, and the moisture content were determined. The results revealed that the total anthocyanin, total phenolic content, and antioxidant capacity of the haskap range between 88 to 273 mg C3GE/100 g fresh weight (FW), 256 to 442 mg GAE/100 g of FW, and 27 to 52 µmol TE/g FW, respectively. The liquid chromatography-mass spectrometry (UPLC/MS) analysis revealed that the C3G contained in the haskap berry is highly dependent on the harvest stage. Among the samples, the haskap berry harvested on July 19, 2019, from the Yukon had the highest C3G content. Interestingly, the total anthocyanin content of the haskap berry is comparable to that of the lowbush blueberry, but higher than the highbush blueberry. A systematic multi-year experiment employing many cultivars and growing locations is recommended to better understand the latitude effect.

The use of grumixama and jambolan in the preparation of food products is an interesting alternative, when considering the bioactive compounds present and their sensorial characteristics. In order to propagate the consumption of these fruits, both jams and yogurts of grumixama and jambolan were developed. The analysis of moisture content, fixed mineral residue, proteins, lipids, fibers, pH, acidity, and soluble solids were performed on the products obtained. The sensorial acceptability of the products was verified by hedonic scale tests and purchase intention. The influence of the type of processing was verified by the quantification of the total phenolic compounds, anthocyanins, and antioxidant activity. It has been found that the chemical composition and physical characteristics of the products developed are similar to other jams and yoghurts produced with different fruits. Processing grumixama and jambolan into jam reduced the phenolic content from 664.58 to 613.07 and 590.67 to 563.08 mg GAE/100 g, the anthocyanin content from 1.46 to 0.14 and 4.37 to 2.23 mg/100 g, and the antioxidant activity from 1273.25 to 1522.63 and 1292.53 to 1427.23 g sample/g of DPPH, respectively. However, the amount of these compounds in jams is still significant. The acceptability index was over 70% for all products, and majority of the tasters indicated (66% for the jams of grumixama and jambolan, 70% for the yogurt of jambolan and 55% for the yogurt of grumixama) that they would probably or would certainly buy the products, showing that it was well received. Therefore, the results obtained indicate potential use of these fruits in food products.

La manzana es fuente de compuestos polifenólicos con propiedades antioxidantes que tienen efectos protectores para la salud humana. El objetivo del trabajo fue determinar los sólidos solubles totales (SST), acidez total (AT), pH, compuestos fenólicos totales (CFT), contenido total de flavonoides (CTF), contenido total de antocianinas (CTA) y capacidad antioxidante (ABTS y DPPH) en cinco variedades de manzana cultivadas en México. Los resultados indican que, en todas las variedades de manzana, los CFT, CTF, CTA, ABTS y DPPH se encuentran en mayor cantidad en la piel, seguido por el fruto entero y pulpa. En la manzana Golden delicious y en la pulpa de todos los cultivares no se detectaron antocianinas. El análisis de componentes principales (ACP) indica que los SST y AT están asociados a la pulpa y fruto entero, mientras que los CFT, CTF, CTA, ABTS y DPPH están asociados a la piel del fruto. Los CFT y CTA presentaron correlación positiva (r: 0.72-0.83) con el método DPPH en piel, mientras que el ensayo ABTS tuvo correlación positiva (r: 0.75-0.89) con CFT y CTF en piel. Los SST, AT, pH, CFT, CTF, CTA, ABTS y DPPH varían dependiendo del cultivar, región geográfica y parte del fruto.ABSTRACTApples are a source of polyphenolic compounds with antioxidant properties that have protective effects on human health. The objective of this work was to determine total soluble solids (SST), total acidity (AT), pH, total phenolic compounds (CFT), total flavonoid content (CTF), total anthocyanin content (CTA) and antioxidant capacity (ABTS and DPPH) of five apple varieties harvested in Mexico. Results indicate that CFT, CTF, CTA, ABTS and DPPH are distributed in the following order: peel, whole fruit, pulp. In the Golden delicious variety and in the pulp of all apple varieties no anthocyanins were detected. The ACP indicates that SST and AT are associated with pulp and whole fruit, while CFT, CTF, CTA, ABTS and DPPH are associated with the peel of the fruit. The CFT and CTA showed a positive correlation (r: 0.72-0.83) with the DPPH method in peel, while the ABTS assay had a positive correlation (r: 0.75-0.89) with CFT and CTF in peel. The SST, AT, pH, CFT, CTF, CTA, ABTS and DPPH vary depending on the cultivar, geographic region and part of the fruit.

Seven residues from tropical fruit (acerola, cashew apple, guava, mango, papaya, pineapple, and sapota) processing were prospected for physicochemical parameters (pH, total soluble solids, water activity, reducing sugar, acidity, protein, moisture, ash, and lipids), functional compounds (total phenolic content, anthocyanins, ascorbic acid, and free radical scavenging activity—DPPH), fatty acid profile, and mineral content. Prospection of these industrial residues aimed its use as potential sources for food supplementation. Acerola residue was found to be a valuable source of anthocyanins, phenolics, and vitamin C; cashew apple residue could be a source of unsaturated fatty acids; pineapple and papaya residues could be used, respectively, as manganese and phosphorous source.

Due to high perishability, plums are harvested at an early stage of maturity to extend postharvest storage life. Storage time and temperature can significantly affect the phytochemical and sugar composition of plums, altering their palatability and nutritional quality. In this study, variations in physiochemical properties (total soluble solids (TSS), titratable acidity (TA), color (chroma and hue angle)), phytochemical composition (total phenolic content (TPC), total anthocyanin content (TAC), and carotenoids), and sugars in three different tissues of the Queen Garnet plum (QGP) during storage at two common domestic storage temperatures (4 and 23 °C) were evaluated. There was an increase (p > 0.05) in TSS and a reduction (p < 0.05) in TA of the outer flesh at 23 °C. Chroma values of all the tissues reduced (p < 0.05) at 23 °C. At 4 °C, chroma values fluctuated between storage days. The TAC of the peel was the highest (p < 0.05) among the different tissues and continued to increase up to 10 days of storage at 23 °C (3-fold increase). At 4 °C, the highest (p < 0.05) TAC (peel) was observed after 14 days of storage (1.2-fold increase). TPC showed similar results. The highest (p < 0.05) TPC was recorded in the peel after 10 days of storage at 23 °C (2.3-fold increase) and after 14 days of storage at 4 °C (1.3-fold increase), respectively. Total carotenoids in the flesh samples at both storage temperatures were reduced (p < 0.05) after 14 days. Total sugars also decreased during storage. The results of the present study clearly showed that common domestic storage conditions can improve the nutritional quality of plums by increasing the content of bioactive anthocyanins and other phenolic compounds. However, the increase in phytochemicals needs to be counterbalanced with the decrease in total sugars and TA potentially affecting the sensory attributes of the plums.

The exploitation of genetic diversity within agricultural plants, including grapevine, is suggested as a valuable tool to cope with the negative impacts of climate change on yield and crop quality. In some winegrowing regions of Europe, there is a renewed interest in knowing the grapevine genetic resources available, focusing on the prospection, recovery, and study of ancient cultivars typical of every zone. Grapevines are naturally associated with arbuscular mycorrhizal fungi (AMF), which provide some benefits to the host plant, although such effects depending on many factors, including variety. Therefore, the aim of this research was to characterize the potential fruit quality of eight old grapevine varieties recovered in Navarre (northeastern of the Iberian Peninsula), associated or not with AMF. The study was carried out on fruit-bearing cuttings grown under controlled conditions (greenhouse). Overall, AMF inoculation reduced bunch and berry mass, as well as phenolic content in fruits. In some varieties, AMF association improved some berry traits by increasing the concentrations of soluble solids and anthocyanins; in others, berry colour, total phenolic and anthocyanin content were diminished in AMF-inoculated plants. The results, therefore, suggest that intraspecific diversity of old grapevines could include different abilities to respond to arbuscular mycorrhizal symbiosis.

В статье изложены результаты изучения 5 сортов летнего срока созревания отечественной и зарубежной селекции. Исследования проводились в опытно-демонстрационном саду ФГБУН «Ордена Трудового Красного Знамени Никитский Ботанический сад - Национальный научный центр РАН». В ходе анализа собранного материала были выделены сорта с хозяйственно ценными признаками для условий Предгорного Крыма, позволяющие увеличить сортовое разнообразие летней группы сортов. Наиболее раннее цветение, согласно многолетним данным, было наблюдаемо у сорта яблони Монтет. Были определены среднемноголетняя степень цветения, балл цветения, средняя масса плода. Был установлен срок созревания плодов данных сортов яблони в условиях Предгорного Крыма. Наблюдалась поражаемость изучаемых сортов яблони паршой и мучнистой росой. Был проведен биохимический анализ данных сортов яблок, в ходе которого изучались такие показатели как концентрация аскорбиновой кислоты, кислотность сока плодов, сумма сахаров, концентрация растворимых сухих веществ, концентрация абсолютно сухих веществ, был определен сахаро-кислотный индекс. Также была проведена дегустация изучаемых сортов яблони, в ходе которой наибольшую оценку получил сорт яблок Настя (4,8 бала). The article presents the results of study of 5 apple varieties of summer ripening period of domestic and foreign breeding. The research was conducted in the experimental and demonstrational yard of Nikitsky Botanical Garden - National Scientific Center of the RAS. Cultivars with economically valuable characteristics capable to increase the diversity of summer group of varieties were distinguished taking into account the conditions of the Piedmont zone of Crimea. The earliest flowering, according to long-term data, was observed for ‘Montet’ apple variety. The long-run annual average flowering rate, flowering score and average fruit weight were determined. Period of fruit ripening of these apple varieties in the conditions of the Piedmont zone of Crimea was established. The infestation of studied apple varieties with scab and powdery mildew was observed. Biochemical analysis of these apple varieties was carried out, during which we studied such parameters as: concentration of ascorbic acid, acidity of fruit juice, total amount of sugars, concentration of soluble solids and absolutely dry substances. Sugar-acid index was also determined. There was also a tasting assessment of the studied apple varieties, during which the highest rating was given to ‘Nastya’ apple variety (4.8 points).
