DEVELOPMENT OF TECHNOLOGY FOR PRODUCTION OF HERBAL TEA ON THE BASISOF PLANT RAW MATERIALS

Разработана технология получения фиточая на основе растительного сырья. В качестве объекта исследования как основного компонента разрабатываемого фиточая выбрано сырье эхинацеи пурпурной (Echinacea purpurea Moench). Проанализированы существующие технологии экстракции эхинацеи пурпурной и выявлены их недостатки. Новая технология включает предварительную подготовку сырья эхинацеи пурпурной методом экстракции диоксидом углерода при температуре 30°С и давлении 6,5 МПа в течение 180 мин. Установлено, что при данных параметрах процесса предварительной подготовки сырья происходит наибольшее извлечение оксикоричных кислот (86%) при заваривании фиточая из полученного продукта – шрота эхинацеи пурпурной. Подобраны оптимальные рецептуры фиточая, включающие дополнительные компоненты из нетрадиционного растительного сырья – шроты из цветков липы и ромашки, листьев малины, плодов шиповника. Определено, что оптимальным соотношением шрота эхинацеи пурпурной со шротами нетрадиционного растительного сырья является соотношение от 1 : 1 до 2 : 1. Исследования органолептических показателей разработанных напитков свидетельствуют об их высоких вкусовых качествах. The technology for producing herbal tea based on plant raw materials has been developed. As the object of research as the main component of the developed herbal tea the echinacea purpurea (Echinacea purpurea Moench) raw material was chosen. Existing technologies of echinacea purpurea extraction and shortcomings have been analyzed. A new technology is includes preliminary preparation of raw echinacea purpurea by extraction with carbon dioxide at a temperature of 30°C, pressure of 6,5 MPa during 180 min. It is established that under the given process parameters, pretreatment of raw material is the largest extraction of hydroxy-cinnamic acids (86%) when brewing herbal tea from the odtaining product – the extraction cake of echinacea purpurea. Optimal herbal tea formulas are selected, which include the use of additional components from unconventional plant raw materials – extraction cake of the chamomile and Linden flowers, raspberry leaves, rose hips. It is determined that the ratio of 1 : 1 to 2 : 1 is the optimal ratio of the extraction cake of echinacea purpurea with the extraction cake of unconventional plant raw materials. Studies of organoleptic characteristics of the developed drinks show their high taste qualities.

The use of phytopowders as food additives allows you to create highly nutritious mixtures with a pronounced taste and aroma of fresh fruits and berries. Fruit and berry powders are already used in the production of jelly, fruit drinks, drinks, juices and sauces based on domestic plant raw materials with a high proportion of biologically active substances. The most important phytonutrients of sea buckthorn fruits (Hippophae rhamnoides L.) are carotenoids, flavonoids, anthocyanins, sugars, organic and amino acids, tannins and pectin substances, phospholipids, macro- and microelements. The aim of the research was to study the quality and nutritional value of freezedried sea buckthorn powder. Sublimated sea buckthorn was the object of study (TU 10.39.25-007-0111115841-2018) manufactured by IP A.N. Mazurina (Russia, Kaluga region, Borovsky district, Borovsk). The quality of packaging and labeling, as well as organoleptic characteristics, nutritional value and mineral composition of raw materials have been studied. It was determined that the marking of sublimated sea buckthorn does not comply with the regulated requirements of GOST R 51074-2003 and TR CU 022/2011. Organoleptic characteristics of phytopowder are identified as characteristic of this type of raw material. The actual protein and fat content of the test material does not correspond to the levels stated by the manufacturer. The studied raw materials are distinguished by a variety of chemical composition, namely, the content of protein, carotenoids, vitamins E and A, lipids, dietary fiber, unique trace elements – Al, Co, Cr, Cu, Fe, Li, Mn, Ni, Ti, Zn.

  The article is devoted to the study of the chemical composition, physical and thermal-pfysical characteristics of damp apple pomaces and the identifying patterns of influence of drying temperature the functional composition and gel-forming ability of pectin. The research is aimed at obtaining initial data for the subsequent calculation of the main technological, hydro-mechanical, thermal, structural and economic characteristics of devices for drying the plant raw materials, ensuring the environmental safety and high quality of pectin-containing raw materials, the reducing heat and energy costs. As a result of the study of the thermal characteristics of apple pomaces, the critical points (temperature conductivity – 16.5 x 10-8 m2/s, thermal conductivity – 0.28 W/m K, heat capacity – 1627 j/(kg K)) at a humidity of 56 % are determined, which characterizing the transition from the extraction of weakly bound moisture to the extraction of moisture with strong bonds (colloidal, adsorption). It was found that the pomaces obtained from apples of late ripening have a higher content of solids (21-23 %), soluble pectin and protopectin (2.5-4.5 %). Dried pomaces obtained from apple varieties of late ripening contain up to 25 % pectin, which allow us to recommend them as a source of raw materials for the production of pectin. The optimum modes of preliminary washing of raw materials are offered, allowing to the remove the ballast substances as much as possible. It is established that when the drying temperature increases, the destructive processes are catalyzed: the strength of the pectin jelly and the uronide component and the degree of pectin esterification are reduced. The optimum drying temperature of damp apple pomaces is 80 0C, at which the quality of pectin extracted from the dried raw materials is maintained as much as possible. It is shown that the most effective for the pectin production is a fraction with a particle size of 3-5 mm, which allow us to extract up to 71 % of pectin from raw materials.

Разработан новый быстрорастворимый продукт (кисель) с определенным фазовым составом и строением на основе молочной сыворотки и местного растительного сырья – черноплодной рябины (Aronia melanocarpa). Разработана модель технологии производства быстрорастворимого гранулированного продукта (кисель) на основе молочной сыворотки и черноплодной рябины. Исследована сохраняемость киселя в трех температурных режимах: 1-й (21 ± 1)°С; 2-й с низкой плюсовой температурой (5 ± 1)°С; 3-й с повышенной (39 ± 1)°С при влажности окружающей среды 80%. По окончании годичного исследования сохраняемости при температурных режимах (21 ± 1)°С и (5 ± 1)°С изменений в органолептических показателях продукта не наблюдали. Скорость растворения продукта при температурных условиях хранения (21 ± 1)°С и (5 ± 1)°С не изменялась на протяжении 9 мес. Установлено, что при хранении в условиях пониженных положительных температур 4–6°С и в режиме комнатной температуры (21 ± 1)°С исследуемый пищеконцентрат по окончании 6 мес. хранения не изменил свойств по показателям качества. Сроки испытания продукта превышали по длительности в 2 раза заданный срок хранения (коэффициент запаса). Результаты испытаний явились основанием для разработки технической документации на производство быстрорастворимых гранулированных плодово-ягодных киселей. A new fast – soluble product (kissel) with a certain phase composition and structure based on whey and local plant raw materials Aronia melanocarpa. A model of technology for the production of a rapidly soluble granular product (kissel) based on whey and Aronia melanocarpa has been developed. The stability of kissel in three temperature modes was studied: 1st (21 ± 1)°C; 2nd with a low plus temperature (5 ± 1)°C; the 3rd with the increased (39 ± 1)°C at 80% ambient humidity. At the end of a year-long study at temperature conditions (21 ± 1)°С and (5 ± 1)°С, no changes in the organoleptic characteristics of the product were observed. Dissolution rate of the product under storage temperature conditions (21 ± 1)°C and (5 ± 1)°C did not change for 9 months. It is established that when stored at low positive temperatures 4–6°C. With and at room temperature (21 ± 1)°C. At the end of 6 months of storage, the food concentrate under study did not change its properties in terms of quality. The product testing period was 2 times longer than the specified storage period. The test results were the basis for the development of technical documentation for the production of instant granulated fruit and berry kissel.

The development of targeted beverages is a priority for healthy eating. Plant raw materials containing a wide variety of biologically active substances are used for their production. The presence of these ingredients helps to improve many physiological processes in the body, as well as to increase its immune status. The high efficiency of ultrasonic effects on various technological processes was confirmed by numerous studies. Ultrasonic extraction was carried out at t = 20 ? and an ultrasonic wave frequency of 22 kHz. As a result of the research, it was found that the equilibrium state is achieved within 15 minutes with ultrasound exposure. Natural raw materials, their chemical composition and the influence on the human body were studied in the work to develop new beverages recipes. The selected ingredients in a certain quantitative ratio made it possible to obtain beverages with improved bio-corrective properties, which allows satisfying the daily requirement of the human body for biologically active substances. Ultrasonic exposure has a positive effect on the organoleptic characteristics of the beverage and the aftertaste, as proved by the comparative organoleptic evaluation of the samples. The functional properties of the beverages developed were confirmed experimentally. The following was determined in the beverages: macronutrients content, antioxidant activity, vitamin C content, shelf life duration. The ultrasonic extraction method application in the technology of beverages manufacturing allows: to reduce the preparation time by half, to reduce the amount of raw materials by 15%, to increase the content of macronutrients by 45%, to increase the content of vitamin C by 35%, to increase the antioxidant activity by 45-50%, to increase storage stability by 50-60%, to improve organoleptic characteristics. The results obtained prove the intensifying effect of ultrasonic exposure in the production of functional beverages.

A technology for pilot production of feed products via microbiological conversion of plant raw materials (mixed substrate of pine sawdust and vegetative part of Jerusalem artichoke) by Plerotus ostreatus PO-4.1 and Pleurotus djamor PD-3.2 strains is developed. The technology includes hydrodynamic activation of substrate at the seed stock production stage. The overall technology includes three key stages: submerged fermentation of pure cultures of production strains; submerged-solid phase fermentation of hydrodynamicly activated plant raw materials for seed stock production; solid-state fermentation of mechanically ground plant substrate for feed products production. A successful approbation of submerged-solid state fermentation of production strains on media containing 3% of hydrodynamicly activated raw materials allowed for obtaining seed stock with 14.5 g/l yield of submerged mycelium biomass fully adopted for this type of substrate. Further use of this seed stock biomass at the solid state fermentation stage makes the overall process duration three times shorter compared to existing technologies for direct wood waste bioconversion. The pilot plant results show valuable practicability of plant raw material hydrodynamic activation with the purpose of enhancing its bioaccessibility with consequent increase in degree of microbiological conversion. The product of bioconversion contains 14–16% of protein, biofiber, vitamins and minerals and could be considered for successful use as feed by agricultural enterprises.

The authors study three fractions obtained as a result of hydrolysis of smoked sprat heads (under temperature of 130oC and presser of 0.25 MPa) – fat, protein water-soluble, and protein-and-mineral ones. Waste from sprat production of two fish canning complexes of the Kaliningrad Region - “RosCon” and “Kolkhoz for the Motherland” - was used as raw material. Hydrolysis was carried out in an aqueous medium in two ways - with preliminary separation of fat and without this operation. The protein fraction was sublimated and its quantitative and qualitative indices were examined - mass yield, solubility, chemical composition and molecular fractional composition of the obtained peptide fractions were determined. The output of sublimated protein fractions is practically independent of the type of raw material and the method of pre-treatment and is 6.47.9% of the mass of raw materials. The chemical composition of protein fractions varies widely in terms of fat (1.4–8.3%), minerals (9.8–13.4%) and proteins (72.1–80.2%). The solubility of the peptide fractions ranged from 91-98%. The molecular weight assessment results showed a high content of a low molecular weight fraction of peptides with an MM of less than 10 kDa in all experimental samples (about 38%). This indicates a high digestibility and biological value of the obtained peptide compositions. One of the technological innovations nowadays is the development of industrial processing of agricultural raw material, manufacturing process leading to lower risks – «Low/No/Reduced» and «Better-for-you». This may be done by light processing of raw materials and use of traditional technologies, i.e. fermentation of craft beverages by natural symbiotic cultures Oryzamycesindichiand Medusomycesgisevi (kombucha). The recent years saw a worldwide interest to a horticultural crop called Hippophaerhamnoides (sea-buckthorn) as it is eco-friendly and healthful. Its fruits have a special smell and taste, are reach in carotene, carotenoids, tocopherols, ascorbic acids, polyphenols. The composition is the reason why it is used for foodstuff, i.e. pastry, dairy products, unclarified juice. Production of beverages fermented by natural symbiotic cultures and local orchard products is a new direction in Russia. The supplies are limited which means that the research is relevant. The aim of the research is to study the possibility of usage ofjuice of Hippophaerhamnoides fruits in the new technology of soft drinks production fermented by Oryzamycesindichi and Medusomycesgisevi. A single nutritious substrate for Oryzamycesindichi and Medusomycesgisevi symbiotic cultures cultivation was proved impossible to be produced. Still the possibility to replace polyphenols of the Medusomycesgisevi by those of the sea-buckthorn juice must be analyzed.Sea-buckthorn juice added in a culture medium fermented by Oryzamycesindichi and Medusomycesgisevi symbiotic cultures increases biosynthetic activity of acidforming bacteria. This tangibly improves organoleptic properties of the fermented soft beverages produced. Besides, the technology of Oryzamycesindichi and Medusomycesgisevi production presupposes no clarification which makes the process of the Hippophaerhamnoides use significantly easier. The research helped to identify that the sea-buckthorn juice used in a must fermented by Medusomycesgisevi has many advantages. Namely more comprehensive utilization of carbohydrate, a higher level of reduction of organic acids, and decrease of the time of technological process (24 hours less).

Nowadays flowers and fruits of various types of hawthorn are widely used as cardiotonic drugs in Russian Federation. In our opinion a promising species for harvesting raw materials is Quebec hawthorn (Crataegus submollis Sarg., Rosaceae). Quebec hawthorn is successfully cultivated on the territory of the Russian Federation and is characterized by rapid growth and high yield in comparison with wild species. An additional point is that one of the possible types of raw materials are hawthorn leaves widely used abroad. Quebec hawthorn leaves contain flavonoids, among which there is a hyperoside. The maximum of the absorption curve of the extract solution of Quebec hawthorn leaves with an aluminum chloride solution of 412 nm. We have developed a quantification method for determination the total flavonoids in the Quebec hawthorn leaves calculated as hyperoside. It was established that the optimum extraction solvent for this raw material is 70% ethanol. The level of content and dynamics of accumulation of the total flavonoids in the Quebec hawthorn leaves during the growing season of 2017 was studied. The maximum content of total flavonoids in the Quebec hawthorn leaves (3.12 ± 0.05% calculated on hyperoside) is observed in May, during plant flowering. The liquid extract based on Quebec hawthorn leaves possesses moderate antidepressant activity. For this reason, leaves of Quebec hawthorn leaves are promising medicinal plant raw materials.

One of the most important problems of the population's nutrition is the high caloric content of flour confectionery products, due to their oversaturation with carbohydrate and fat components. This trend leads to micronutrient deficiencies, and later to metabolic problems and deteriorating health. In recent years, there has been an expansion of the range of waffles, improving technology through the wider introduction of various ingredients of plant origin. Crustilian is a crunchy product or component of a dish that has a crispy texture (waffles, cereal breads) or a surface (a crust of bread or potato balls with a fried crust). Crustilian is also used as a layer for cakes or desserts, which usually consists of waffle crumbs, chopped nuts and melted dark chocolate. There are still many variations for making crustilians. The range of applications of crustilian in the manufacture of sweet dishes is extremely wide. The nutritional value of crustilians is determined by the composition of raw materials and can be significantly increased due to the rational selection of components, the introduction of enrichments in the recipe, as well as technological processing, which increases their digestibility. Improving the technology of crucifers waffles by increasing their nutrient density will expand the range of products with functional ingredients, and enrichment of the micronutrient composition due to valuable plant raw materials will improve the nutritional value and organoleptic characteristics of the finished product. A line of crustilians with a high content of biologically active compounds has been developed due to the introduction of superfoods such as flax seeds, sesame seeds, sunflower and walnuts and peanuts into the product formulation. It is established that the use of peanuts and walnuts, in the composition, makes the dough less crispy and more fatty. The presence of flax and sesame does not reduce the crunchiness of the finished product, which is characteristic of crustilians, but, on the contrary, slightly increases this figure. It is proved that the index of nutritional density of crustilian made according to the developed recipe in comparison with the prototype is characterized by an increase in the index of nutritional density in three times, while the mass fraction of the macronutrients increases from 1.26 to 2.5 times, depending on the micronutrient. increases only 1.1 times.
