Рассмотрены перспективы получения пищевых волокон (ПВ) из вторичных продуктов АПК. Приведены результаты анализа опубликованных исследований о перспективах получения ПВ, проявляющих детоксикационную и адсорбционную активность, с целью обогащения ими продуктов питания. Рассмотрены современные технологические решения получения ПВ из продуктов переработки сахарной свеклы и яблок. Признано целесообразным дальнейшее проведение научно-экспериментальных разработок новых технологий получения ПВ из растительного сырья с применением электромагнитного поля крайне низких и сверхвысоких частот. The prospects of obtaining dietary fibers (DF) from secondary products of agriculture are considered. Results of the analysis of sources on the prospects of receiving the DF showing detoxification and adsorption activity for the purpose of enrichment of food by them are given. Modern technology solutions of receiving DF from products of processing of sugar beet and apples are given. Further carrying out scientific and experimental developments of new technologies of receiving DF from vegetable raw materials with application of the electromagnetic field of extremely low and ultrahigh frequencies is perspective.

Rakiura Maori (a tribe of indigenous people in New Zealand) continue a centuries-old customary use of Sooty Shearwater (Puffinus griseus, titi, muttonbird) chicks from islands adjacent to Rakiura (Stewart Island). Some muttonbirders pluck chicks by hand, while others have recently changed to a plucking machine. We compared traditional and modern processing methods to see if new technology stands to increase the efficiency, size and cost effectiveness of harvest. On average, chicks were plucked 6 seconds quicker with a machine, which could potentially increase the catch by up to 4%. Innovation by using wax rather than water to remove down left after plucking saved muttonbirders 29–97 minutes per day, potentially allowing up to a 15% increase in the number of chicks harvested. Both wax and plucking machines increased costs, which led to a modest financial gain from using wax, but a net loss from using a plucking machine. Modern technologies have been introduced mainly for convenience and to ease labour in this customary use of wildlife. New technology may erode traditional skills, but does not necessarily pose a risk to the sustainability of a resource. Financial investment in harvest technologies might provide an incentive to increase harvest levels, but could equally provide an incentive to manage for sustainable use. Preservation lobbies are not justified in presuming that new technologies will always threaten wildlife traditionally used by indigenous people.

The article presents the results of author scientific research dealing with the use of saponins, biologically active substances in food and cosmetics technology. The problems of their formation in plants, the chemical nature and the features are considered, biological and physico-chemical properties of saponins are studied. By their nature, saponins are divided into steroid and triterpene, differing by glycoside part of a molecule, thus, with different biological and chemical properties, but they are all capable to develop foam in aqueous solutions, and this feature is the origin of their name. The name originated from the word «Sapo», which means soap. It should be noted that at present saponins are not studied fully as other biologically active substances (BAS), although they are of interest and relevance. In the course of scientific work, about 20 species of saponin-containing plant material, both steroid and triterpene ones, were selected and analyzed for the determination of saponins. The selection of raw materials with the highest content was performed for their further use in cosmetics and as the surfactants in the production of emulsion food products. The following research methods were used in the work: qualitative reactions to the presence of saponins, foaming, saponin extraction, the release from dry aqueous extract of both steroid and triterpin ones. Разработана технология получения СО2экстрактов с повышенным выходом СО2экстрактивных веществ после предварительной обработки зернового и орехового сырья электромагнитным полем низкой частоты (ЭМП НЧ) 28,36 Гц. Растительное сырье семена амаранта, винограда, расторопши пятнистой, ростки пшеницы, арахис, миндаль, ядра фисташковых и ореха грецкого подвергли измельчению в крупку размером 2 3 мм для дальнейшей обработки на вальцевом станке (d 0,2 мм). Измельченное сырье помещали в радиопрозрачный короб и трижды подвергали воздействию ЭМП НЧ по 20 мин с перерывом по 30 мин. Обработанное электромагнитным полем сырье заключили в сетчатую кассету и загрузили внутрь СО2экстрактора, работающего в докритическом режиме при давлении 6,5 МПа и температуре 22С. Продолжительность процесса экстракции сырья, ч: орехового 4,0 зернового 2,5. Установлено увеличение выхода биокомпонентов в экстракт из орехов и зерна, подвергнутых воздействию электромагнитных волн, по сравнению с контрольными образцами без обработки ЭМП НЧ. Выход СО2экстрактивных веществ из сырья до обработки и после обработки ЭМП НЧ составил, : арахис 8,0 и 14,1 орех грецкий 10,2 и 16,3 семена амаранта 4,7 и 5,4 семена винограда 6,0 и 6,5 соответственно. Концентрация фенольных веществ в экстрактах повысилась на 15, витаминов С и Р на 6,2 и 7,0 соответственно. Применение электромагнитного излучения НЧ привело к сокращению продолжительности экстракции из зернового и орехового сырья в 1,2 раза. A technology has been developed for producing CO2 extracts with an increased yield of CO2 extractives after preliminary processing of grain and nut raw materials with a low frequency electromagnetic field (LF EMF) of 28,36 Hz. Vegetable raw materials amaranth seeds, grapes, milk thistle, wheat germ, peanuts, almonds, pistachio kernels and walnuts kernels were crushed into a grain size of 2 3 mm for further processing on a roller machine (d 0,2 mm). The crushed raw material was placed in a radiotransparent box and exposed to LF EMF three times for 20 min with a break of 30 min. The raw material processed by the electromagnetic field was enclosed in a mesh cassette and loaded inside a CO2 extractor operating in a subcritical mode at a pressure of 6,5 MPa and a temperature of 22C. The duration of the extraction process of raw materials, h: nut 4,0 grain 2,5. An increase in the yield of biocomponents in the extract from nuts and grains exposed to electromagnetic waves was established compared with the control samples without processing the LF EMF. The yield of СО2 extractive substances from the raw materials before and after the treatment of LF EMF was, : peanuts 8,0 and 14,1 walnut 10,2 and 16,3 amaranth seeds 4,7 and 5,4 grape seeds 6,0 and 6,5, respectively. The concentration of phenolic substances in the extracts increased by 15, vitamins C and P by 6,2 and 7,0, respectively. The use of electromagnetic radiation of low frequency led to a reduction in the duration of extraction from grain and nut raw materials by 1,2 times.

In the article, based on analysis of the market of dry breakfasts in Ukraine and calculations of the assortment of instant and quick-cooked cereals, which are implemented in trading networks of Odessa and Odessa region, it was established that studied supermarkets can not provide stable, complete and wide assortment of products to fully meet needs of consumers. This means that it is necessary to carry out various measures in the field of forming domestic assortment of instant and quick-cooked cereals and improving its structure. Purpose of work was to develop strategy for launching a new product on the market, namely instant and quick-cooked cereals, on the basis of assortment analysis, mapping of strategic groups and construction of differentiation scale to enhance competition and create useful product advertising. With help of strategic group cards it was discovered that domestic products are poorly represented in such segments as a wide assortment at low prices and average latitude of assortment at low prices, therefore these segments can be considered as strategic for domestic instant and quick-cooked cereals producers. Based on construction of differentiation scale by trademarks of instant and quick-cooked cereals, it has been established that strategy of promotion in creating useful advertising to increase the competition of new products by means of differentiation can become emotional and social motives that are not used or very little used by competitors: originality, fashion, trendset, morality, sexual attractiveness, fear, revenge, status, socialization, self-realization, freedom, invovement, co-creation.  Obtained results indicate that market for consumption of instant and quick-cooked cereals in Ukraine is sufficiently "young", demand for this kind of products is constantly growing, therefore the development and implementation into production of high-quality instant and quick-cooked cereals and expansion of its range is very relevant. The article also proposes and improves the technology of production of cereal extrudates with high nutritional value based on different kinds of cereal crops and vegetable raw materials. A substantial expansion of the range of products of instant and fast cereals in the form of flakes, muesli, granola, couscous based on a mixture of extruded flour and grains of extrudates has been proposed.

New technologies are using natural fibres in composites materials in the industry. It is still often natural fibres in modern buildings, chemists, airports, sport and automotive. Using for construction pieces and their better properties than steel or traditional materials. New forward science and technic are recycled or decrease waste. The problem for central Europe is a waste of agricultural, invention relates to an epoxy resin filled with an organo-inorganic filler of natural origin, production especially plants and sheep wool as well as other usable wastes such as old textiles. New applications are in new construction types and industries finding cheaper materials. There is available modern technology for injection moulding granulate polypropylene with filler from sheep wool and plant fibres. For example, to make furniture or building cladding. This could reduce waste production, pollution of nature and emissions in the production of these products from new raw materials. The work presents the possibilities of using new polymer-based materials contain sheep wool as filler. The paper deals with the evaluation of the mechanical properties of the effect of the addition of sheep wool in a concentration of 3% to selected types of thermosetting matrices. In the experiments, the modulus of elasticity, tensile strength, ductility and deformation work were built on the sample set. The results are statistically processed and document the possibilities of adjusting the mechanical properties of composites with sheep wool.

The article presents the results of investigating how the intensity of aerating the medium effects on the cultivation process and the metabolic activity of alcoholic yeast Saccharomyces cerevisiae, strain U-563, in the modern technology of alcohol and baking yeast from molasses. The chemical and technological parameters of media at the aerobic and anaerobic stages of the process, the level of accumulation of the major and secondary products of yeast metabolism, and their enzymatic activity have been determined by methods commonly employed in science and in the practice of alcohol biotechnology. The objects of research were the yeast Saccharomyces cerevisiae, molasses wort, the medium in the process of yeast cultivation, and fermented wash. It has been established that two factors are the most important in the accumulation of alcoholic yeast biomass: the intensity of aerating the medium, and the staged introduction of the substrate during biomass cultivation. The more aerated the medium, the more intensively secondary metabolites of yeast Saccharomyces cerevisiae are formed (glycerol, aldehydes, higher alcohols, volatile acids, and esters) – both at the yeast generation stage and during anaerobic fermentation. When yeast Saccharomyces cerevisiae is grown in a gradient-continuous manner in a battery of series-connected apparatuses, with undiluted substrate (molasses) added by degrees, yeast biosynthesis is significantly enhanced compared to the traditional homogeneous-continuous method. The results obtained indicate the active metabolism of carbohydrates in the Krebs cycle, when the medium is intensively aerated. Besides, the results reveal the high reactivity of aldehydes and esters that results in their transformation into other compounds, and in a great decrease in their amount at the anaerobic stage of the process. However, a progressive increase is observed in glycerol, higher alcohols, and volatile acids, starting from the first yeast generator and up to the last fermentation apparatus, irrespective of the level of aerating the medium during yeast cultivation. These findings can be effectively used to manufacture food, technical, and fuel ethanol industrially from sugar-based raw materials in the course of co-production of alcohol and baking yeast.

One of the ways to address the food quality issues facing the industry is the development of standardized and certified methods related to the conduct of in-depth studies of biochemical indicators of quality and safety of meat and meat products. The world laboratory practice in the field of food quality and safety shows a constant expansion of the list of controlled indicators of food raw materials and products. An important feature of the modern period in the development of biomedical and biotechnological research is the introduction of a whole complex of postgenomic technologies, which are based on a systematic approach to the study of the functioning of the mammalian proteome in various physiological and pathological conditions, including the formation and development of alimentary-dependent pathologies. In this regard, the problem of multilateral study of food products, in particular their identification, is the most relevant, because the modern technology of their production has undergone significant changes and requires the development of “gentle “ processing modes. They concern raw materials and auxiliary materials used at all stages of production. This and new technologies of production of protein products from plant raw materials, as well as the introduction of food raw materials and food additives of artificial origin and the excess introduction of additives of plant and animal origin can cause falsification of products, as well as affect the health of the consumer. Food quality assessment includes the control of components of finished products. It is most difficult to determine the proportion of muscle protein in multi-component meat products that have undergone heat treatment. Therefore, in practice, when assessing the quality of food products, there is a need to identify its real composition in accordance with the declared normative documents. Currently, a promising area of research in the field of determining the composition of finished food is the selection of biomarkers of various components. Therefore, it is important to develop a methodology for the identification of biochemical changes in food raw materials under the influence of technological factors using modern research methods. This paper provides an overview of the protein and peptide analysis methodology, including the latest technologies that are becoming increasingly important.

The appliance of many new technologies brought many benefits to modern society. Modern life is, generally, easier, faster and risen at the much higher level. The speed of modern technology use is such that it is almost impossible to have a complete view-only the benefits of modern technologies are noted. Mobile phones, laptops, tablets, drones, Internet, Facebook, Skype, 5 G network and many other examples of new technology application have lots of benefits. But, have these technologies started to be used with taking into account the potential by bad consequences that they can have? Can all potential by bad effects and consequences of modern technology use be predicted, analyzed and prevented? The main goal of this paper was to confirm and present that the increase of digital violence caused by usage of modern technologies and to show factors that are included in children protection from digital violence in Serbia. Research presented in this paper were realized by the author of the paper as longitudinal research for several years in several elementary and secondary schools in Nib, so as some research from world prove that increased use of modern technologies inevitably leads to digital violence, primarily among school age children. The paper also presents the role of different instruments in digital violence prevention and sanction in Serbia. Digital violence indeed presents a bad consequence of modern technologies and must be treated in appropriate pedagogical and legal way.

Living in a global world, we cannot limit supply chain to only one, two, or even three countries. Hence, supply chain manager’s key function now is to continuously reduce the time of goods flow and minimize the number of chain links making the chain more efficient and cost effective. The article outlines key components of the concept of supply chain management. We regard the management concept itself as planning, management and supply chain development on every stage of creation of goods and services: from raw materials supply to an end user service maintenance. We should streamline supply chain management to exclude all barriers, which different stakeholders may face during the flow. SCM-concept helps control the work of existing processing lines in the supply chain management system, create optimal planning what and when we should deliver, taking into account possible limits of capacity and access to raw materials. Currently, the motor vehicles do the major domestic transportation. Motor transport development is one of the most important aspects of effective economy development. In cross border transportation the share of freight transportation is growing compared to other means of transport. However, domestic motor transport and fuel quality have considerable mismatch of environment properties that lag far behind global requirements. Transport companies inside supply chain have moved beyond conventional services, at the same time they have higher market consolidation, integration, and collaboration with different agents that give new demands to transportation in logistics. The article identifies basic methods of supply chain management. We analyzed impact of modern technologies on logistics and supply chain management: 3D printing, radio frequency identification, unmanned aerial vehicles, connected and autonomous vehicles, and augmented reality. Modern technologies provide small and medium enterprises opportunities to use innovative tools to obtain data-driven analytics, visualization, and processing of cargo. In order to make supply chain management efficient, we should use new technologies, modern devices, and tangible assets of high quality.

The article describes the state of museums in the past, the impact of monotonous activities in the country on the number of visitors, as well as the introduction of new technologies and their impact on museums. The importance of using new technologies in the provision of their services, quickly focused on the modern period of museums that are among the top 10 world-famous museums, is emphasized. Virtual tours in 3D format of several foreign and patronymic museums and exhibitions with the use of modern technologies and augmented virtual reality indicate that the museum's attendance is increasing both online and offline. The situation in our country shows that significant work needs to be done to increase the number of visitors to museums, including the use of new technologies, good advertising, various promotions. This idea can be confirmed by the results of a survey on the use of augmented reality and virtual reality technologies in the museum in our country. The desire of a total of 179 participants to visit the museum confirms the need to develop this area. In the near future, people's visits to museums may change, their situation shows that the industry needs to be developed in the future, there is a great opportunity to deliver art to people previously unavailable, people who do not have the opportunity to travel and visit famous museums have online access to the world's best collections. Strict restrictions due to the pandemic have increased people's interest in listening to virtual tours of museums, which, among other things, is due to the fact that the museums themselves are beginning to quickly direct visitors to online tours.
