Ultrasound is sound waves with above the human hearing range frequency that is approximately 20 kHz. Application of power ultrasound in combination with other food processing methods including drying, is considered to be an emerging and promising technology. The use of novel non-thermal technologies, such as power ultrasound, is suitable to facilitate the drying of heat sensitive food materials. Ultrasound enhance heat and mas transfer which result in faster moisture removal during drying due to heating, vibration and synergistic effects. These effects could lead to product quality preservation in terms of color, texture, vitamin C and antioxidants content, by the use of milder drying conditions, and in some cases can promote better energy efficiency. In this article, after a brief review on the history of ultrasonic drying, different methods are categorized and combinations of ultrasound with novel drying methods and their effects on phytochemicals are discussed with the focus on the recently published articles. Studies showed that the quality of ultrasonically dried products was usually higher than conventionally dried products. However, the effect of ultrasonic drying on the texture and nutritional value of the products should be further investigated.

Abstract Beluntas leaves are medicinal plants with pharmacological effects, such as antioxidant, antidiarrheal, antidiabetic, and antibacterial. Drying is one of the processes before the beluntas leaves are consumed. However, drying could degrade the quality of beluntas leaves. This research aims to investigate the impact of drying conditions on the physical qualities of dried beluntas leaves. Beluntas leaves with a moisture content of 83-90% were dried using drying methods, namely the greenhouse effect dryer (ERK), cabinet dryer (CD) at 40, 50, 60, and 70°C, and freeze dryer (FD) at 35, 45, and 55°C. The physical parameters measured were moisture content, color, shrinkage, rehydration ratio, and bulk density. The results showed that the final moisture content of the dried beluntas leaves were 8.40; 4.92-10.70; 4.73-6.77%w.b for ERK, CD, and FD, respectively. Page’s model was suitable for explaining the changes in moisture ratio during the drying process (R 2 = 0.9934 − 0.9999). The freeze-drying method can preserve the leaves’ color and obtain the lowest moisture content with a low drying temperature compared to other methods. Freeze-dried beluntas leaves also exhibited the highest rehydration ratio, which was 2.03 – 2.25.

This study was conducted to assess the effect of drying methods and pre-treatments on nutritional content and sensory quality of dried fish. The experiment was conducted in factorial arrangement of 2×3×2 with two drying methods (sun and oven drying), three fish species (tilapia, cat fish and carp) and two preservatives treatment (garlic and ginger juice) laid out in Completely Randomized Design (CRD). Fresh fillets were analysed for their nutritional value and sensory quality. The compositions of the fresh fillets were 6.50-7.59% for ash, 74.20-76.67% for protein, 8.06-9.09% for fat and 8.47-9.12% for total carbohydrates. Drying reduced the moisture contents from 74.74-75.81% to between 7.76-8.25%, making it safe for storage. The ash content changed from 7.11 to 7.34 and from 6.50% to 6.34% for cat fish and tilapia, respectively, with statistical significance whereas no change was observed in carp with 7.60% because of drying. Drying method had no difference in ash and protein contents while increase in fat from 7.75 to 9.44% and a decrease in carbohydrate from 9.37 to 8.13% were observed in sun dried samples than that of oven dried fillets. This study showed that nutritional values of dry fish did not statistically changed during storage period of 3 months.

Ultrasonics or ultrasound refers to sound waves beyond the audible range of the human ear. The normal human hearing range is 16-16,000 cycles per second. The accepted terminology for one cycle per second is the Hertz (or Hz), and hence the hearing range is expressed as 16 Hz to 16kHz. Ultrasound is normally considered to lie approximately in the range of 15kHz to 10 MHz, that is, 15 x 103 to 10000 x 103 cycles per second, with acoustic wavelengths of 10 to 0.01 cm. Like any sound wave, ultrasound is propagated through a medium in alternating cycles of compression and stretching or rarefaction. These produce certain effects in the medium that can be usefully exploited. One such application is in the field of synthetic organic chemistry, first reported by Richards and Loomis (1927) and designated sonochemistry. The most appealing feature of sonochemistry is its ability to enhance reaction rates, often to remarkably high levels under environmentally benign conditions. Despite this potential, economic considerations have precluded the use of sonochemical processes. It is noteworthy, however, that a change in perspective appears to be emerging, as evidenced by the fact that a pilot plant is currently being funded by a French company to sonochemically oxidize cyclohexanol to cyclohexanone, and developmental work is underway in Germany to produce 4 tons of Grignard reagent per year (Ondrey et al., 1996). A number of books and reviews covering mostly the chemical aspects of sonochemistry have appeared over the years, for example, Suslick, 1988, 198, 1990a,b; Ley and Low, 1989; Mason, 1986, 1990a,b, 1991; Mason and Lorime 1989; Price, 1992; Bremner, 1994; Low, 1995; Luche, 1998. A recent review Thompson and Doraiswamy (1999) covers both the chemical and engineering aspects of sonochemistry and another by Keil and Swamy (1999) examines the present state of our understanding of sonoreactor design. Sonochemical enhancement of reaction rates is caused by a phenomenon called cavitation. Therefore, we largely confine the treatment in this chapter to the chemical and reaction engineering (scale-up) aspects of cavitation and its associated effects (see Shah et al., 1999, for a detailed treatment). An alternative means of achieving the same result is by mimicking the ultrasonic effect by inducing “hydrodynamic cavitation.”

In recent years, the demand for control of sound power and radiation patterns in personal messaging, calls, automotive entertainment, and gaming has brought a new interest in the audio world. The aim of this paper is to investigate the feasibility of producing the sound waves in the audible range and directing them in the desired listening zone by electrostatic micro-speakers. Therefore, a capacitive circular micro-plate has been modeled as an electrostatic micro-speaker. Then a Bessel panel array has been developed using a number of these plates arranged in a square array. The equations governing the vibrations of the micro-speaker’s diaphragm, as well as radiation pattern of the sound waves, have been introduced and solved. The results have shown that the Micro-Electro Mechanical Systems (MEMS) electrostatic diaphragms have the capability of producing the directional sound in the human hearing range. Moreover, we have investigated the effect of different excitation frequencies, radii size and the number of the diaphragms as well as the inter-element spacing on the sound radiation pattern of the Bessel panel array.

Ultrasound is sound whose frequency is above the human hearing range. It is nowadays widely used for the evaluation of a patient’s internal organs. Ultrasound waves are transmitted into the human body by an instrument called the transducer. Inside the body the sound waves are reflected and scattered differently by the different tissues and organs. The reflected sound waves are used by the computer to form an image of the internal structures and tissues. After a short overview of the history of probiotics, the author presents the development of human intestinal microflora based on the newest genetic data and the microbiological features of main probiotics. The indications of probiotic administration have been defined and extended in recent years. The author reviews significant results of probiotic treatment in some gastrointestinal diseases based on meta-analytical data. Probiotics are useful in preventing and treating diarrhoea caused by antibiotics and Clostridium difficile caused diarrhoea. In the treatment of Helicobacter pylori infection, preparations containing certain Lactobacillus,Bifidobacterium strains or Saccaromyces boulardii could enhance by 5–10% the rate of successful eradication and reduce the incidence and severity of the side effects. Some symptoms of irritable bowel syndrome and thus the quality of life can be improved by probiotics. Their beneficial effect in ulcerative colitis was proven, while in Crohn’s disease has not yet been defined. The use of probiotics is not included in guidelines, with the exception of the Maastricht IV/Florence consensus. For each disease it is advisable to use probiotics containing strains only with proven beneficial effect. The efficiency of preparations containing mixed strains has not yet been properly investigated. The author reviews the rare but potentially serious side effects of probiotics. In Hungary, there are many probiotic preparations available which can be purchased in pharmacies without prescription: their use is more empirical than evidence-based. The European Food Safety Authority has recently rejected claims for probiotics to be classed as medicines given the lack of convincing evidence on the effects of probiotics on human health and well-being. The interdisciplinary field of person-environment relations has, from its origins, addressed the transactional relationship between human behavior and the built environment. This body of knowledge has been based upon qualitative and quantitative assessment of phenomena in the “real world.” This knowledge base has been instrumental in advancing the quality of real, physical environments globally at various scales of inquiry and with myriad user/client constituencies. By contrast, scant attention has been devoted to using simulation as a means to examine and represent person-environment transactions and how what is learned can be applied. The present discussion posits that press-competency theory, with related aspects drawn from functionalist-evolutionary theory, can together function to help us learn of how the medium of film can yield further insights to person-environment (P-E) transactions in the real world. Sampling, combined with extemporary behavior setting analysis, provide the basis for this analysis of healthcare settings as expressed throughout the history of cinema. This method can be of significant aid in examining P-E transactions across diverse historical periods, building types and places, healthcare and otherwise, otherwise logistically, geographically, or temporally unattainable in real time and space.

Аннотация. В статье анализируется качество переводов рассказов В.Шукшина, осуществленных в середине 70-х годов С. Наматбаевым. Переводоведческий анализ вывил многочисленные стилевые расхождения между оригиналом и переводом. При переводе одного из лучших рассказов Шукшина «Чудик» искажения стиля не передали психологические тонкости рассказа. При переводе рассказа «Дядя Ермолай» философский аспект рассказа выпал, так как переводчик исказил жанровую специфику. Перевод рассказа «Два письма» оказался более качественным по сравнению с предыдущими. Переводчик рассказа «Два письма» сумел приблизиться к оригиналу, расшифровать его основную тональность, воспроизвести атмосферу напряженных поисков истины героем рассказа Николаем Иванычем. Этот перевод оказался более качественно выполненным по сравнению с предыдущим рассказом «Дядя Ермолай». Причину переводческого успеха можно объяснить, прежде всего, доступностью содержания рассказа, да и сам герой не столь сложная и глубокая личность, как повествователь в рассказе о дяде Ермолае. В целом, переводы С.Наматбаева являются своеобраз- ным этапом в переводческом деле. В настоящее время необходимо более полное и глубокое восприятие творчества В.Шукшина и создания новых адекватных переводов. Ключевые слова: качество переводов, стилевые расхождения, психологические тонкости, философский аспект, этапом. Аннотация. The quality of translation of the Shukshins stories is analyzed in the Middle 70- years. By S.Namatbaev. The translation analysis had idenh hed numerous style discrepancies between the original and the translation. The psychological feature of the compasihion were not be hansfered by the translation one the bestand famous story by. V.Shukshin due to distorhion of the style. By the translation of the story “The uncle Ermolai” had full a phisichal aspect of the story, because the translator had distorted the genre specifics. The translation of the stories “Two letters” was wade more qualitative comparated with another stories. Generally, the Namatbaevs translation are a sui generis stage in the translatiobs. We need currently more total and profound perception of the creation by V.Shukshin. The create of the new adeavate translation is the main task. The head of the theory and history of Russian literature department. V. Shukshin’s stories and problems of translation them into Kyrgyz language. This article is analysed the quality of translation of V. Shukshin’s stories, which were written in 70 th with S. Namatbaev. Translation analyse deduced many stylistic variations between translated version and original. There is a misrepresentation, was not transmitted psychological subtleties of the story in translation of one of the best V. Shuk- shin’s story “Wierdo”. Metaphysical dimension is disappeared in translation of the story “Uncle Ermolai”, since translator destort the genre specificity. The translation of the story “Two letters” has been more qualitative in comparison with previous translations. In common, S. Namatbaev’s translation is a genius stage in translation. It needs more full and deep comprehension of S. Shukshin’s work and to establish new suitable translation.
