Antioksidan dan antibakteri sangat bermanfaat bagi kesehatan tubuh manusia karena mampu menangkal radikal bebas, mencegah penuaan dini, dan mengontrol terjadinya pembusukan makanan. Aktivitas antioksidan dan antibakteri dapat ditemukan dalam biji- bijian, akar dan daun seperti daun Kari (Murayya koeginii). Berdasarkan uji fitokimia, ekstrak daun kari mengandung senyawa flavonoid, steroid, dan fenolik. Selain itu, ekstrak daun kari mengandung caryophyllene, Phytol, Pyrazine dan vitamin E yang dapat berfungsi sebagai antioksidan dan antibakteri. Penelitian ini bertujuan menentukan aktivitas antibakteri dan antioksidan serta pengaruh lama penyimpanan denga aktivitas antioksidan dari ekstrak daun kari. Pengujian antibakteri menggunakan metode difusi dan aktivitas antioksidan menggunakan metode DPPH dengan konsentrasi 25 ppm, 50 ppm dan 100 ppm dengan waktu penyimpanan hari ke 14, 28 dan 42. Berdasarkan hasil penelitian diperoleh ekstrak daun kari mampu menghambat pertumbuhan bakteri Salmonella typhi, Escherichia coli, Staphylococcus aeureus, dan Staphylococcus epidermidis pada konsentrasi 10%, 20% dan 40%. Daya hambat pertumbuhan bakteri yang baik ditemukan pada konsentrasi 40% dan pada konsentrasi 10% masih memiliki daya hambat antibakteri. Ekstrak daun kari memiliki daya hambat antibakteri yang lebih peka terhadap bakteri gram negatif dibandingkan dengan bakteri gram positif. Aktivitas antioksidan dari ekstrak daun kari sangat kuat meskipun waktu penyimpanan bertambah. Aktivitas antiokasidan yang paling baik dijumpai pada waktu penyimpanan hari ke 14. Semakin lama waktu penyimpanan ekstrak daun kari maka nilai IC 50 semakin bertambah.   Antioxidants and antibacterials are very beneficial for the health of the human body since they can ward off free radicals, prevent premature aging, and control the occurrence of food spoilage. Antioxidant and antibacterial activity can be found in seeds, roots and leaves such as Kari leaves (Murayya koenigii). Based on phytochemical test, curry leaf extract contained flavonoids, steroids, and phenolic compounds. In addition, curry leaf extract contained Caryophyllene, Phytol, Pyrazine and vitamin E which can function as antioxidants and antibacterial. This study aimed to determine the antibacterial and antioxidant activity and the effect of storage time on the antioxidant activity of curry leaf extract. Antibacterial test was conducted using the diffusion method and antioxidant activity using the DPPH method with a concentration of 25 ppm, 50 ppm and 100 ppm with a storage time of days 14, 28 and 42. Based on the research results, curry leaves extract was able to inhibit the growth of Salmonella typhi, Escherichia coli, Staphylococcus aeureus, and Staphylococcus epidermidis at concentrations of 10%, 20% and 40%. The good inhibitory growth of bacteria found at a concentration of 40% and at a concentration of 10% still had antibacterial inhibition. Curry leaf extract had antibacterial inhibition that was more sensitive to gram negative bacteria compared to gram positive bacteria. The antioxidant activity of curry leaf extract was very strong even though the storage time increased. The best antioxidant activity was found at the time of storage on the 14th day. The longer the storage time for curry leaf extract, the higher the IC 50 value.

<p>Penelitian ini merupakan lanjutan dari penelitian sebelumnya tentang produksi asam galat dari limbah kulit buah lokal di Lombok. Limbah kulit buah lokal yang digunakan yaitu kulit buah kepundung (<em>Baccaurea racemosa</em> Muell.Arg), kulit buah juwet (<em>Syzygium cumini</em>), dan kulit buah manggis (<em>Garcinia mangostana</em>). Pada penelitian ini dilakukan pengujian asam galat yang dihasilkan, untuk mengetahui aktivitas antioksidan dan antibakteri. Pengujian sifat antioksidan dilakukan dengan menggunakan metode DPPH, sedangkan aktivitas antibakteri diuji dengan menggunakan metode difusi agar pada bakteri <em>Escherichia coli</em> dan <em>Staphylococcus aureus</em>. Hasil penelitian menunjukkan bahwa asam galat dari ketiga kulit buah memiliki aktivitas antioksidan. Asam galat dari kulit buah kepundung, kulit buah juwet dan kulit buah manggis memiliki IC<sub>50</sub> masing-masing sebesar 5.95; 5,96; dan 5,92 ppm. Berbeda dengan kemampuan sebagai antioksidan, asam galat resistan terhadap bakteri <em>Escherichia coli</em> dan <em>Staphylococcus aureus </em>yang menunjukkan bahwa asam galat tidak memiliki aktivitas sebagai antibakteri.</p><p><strong>Antibacterial and antioxidant activity of gallic acid from peel local fruit which produced by tannase. </strong>This research is a continuation of the previous research about the gallic acid production from peel fruit local in Lombok. The local fruit waste<em> </em>used<em> </em>are<em> kepundung rind (Baccaurea racemosa</em> Muell.Arg)<em>, juwet rind </em>(<em>Syzygium cumini</em>) <em>and mangosteen rind </em>(<em>Garcinia mangostana</em>)<em>. </em>In this research, the produced Gallic acid was tested to determine its antioxidant and antibacterial activity. The antioxidant test conducted by DPPH method, meanwhile, the antibacterial activity was performed by agar diffusion method to bacteria <em>Escherichia coli</em> and <em>Staphylococcus aureus</em>. The results show that the produce gallic acid from those three rind provide antioxidant activity. Gallic acid from kepundung rind, juwet rind, and mangosteen rind have IC<sub>50</sub> values of 5,95; 5,96; and 5,92,  respectively. Gallic acid not showed inhibitory actions against the growth of Escherichia coli and Staphylococcus aureus. This result show that gallic acid from local fruit waste did not provide an antibacterial activity.</p>

The Simargaolgaol (Aglaonema modestum Schott ex Engl) plant is a plant that grows wild in Barus District, Central Tapanuli, North Sumatra which is used by the community as a medicinal plant. This study aims to determine the antibacterial activity of n-hexane, ethyl acetate and ethanol extracts from Simargaolgaol leaves against Escherichia coli and Salmonella typhi bacteria. The antibacterial activity test of Simargaolgaol leaves was carried out using the disc diffusion method. The results of antibacterial activity showed that the highest inhibitory power of Simargaolgaol leaf extract was ethanol extract (polar), ethyl acetate extract (semi polar) and n-hexane extract (non polar). The inhibitory power of ethanol extract, ethyl acetate, and n-hexane against Escherichia coli bacteria was 13.1 mm (strong); 9.7 mm (medium); 8.0 mm (medium) and for Salmonella typhi bacteria respectively 11.2 mm (strong); 10.7 mm (strong) and 9.3 mm (medium). With the concentration of the extract in the diameter is 10%. Based on this, it can be concluded that Simargaolgaol leaf extract has potential as an antibacterial. ABSTRACT               Sponge Callyspongia aerizusa contain potential bioactive compound that can be utilized in the health sector. Extract of sea sponge Callyspongia aerizusa, can hamper the growth of Salmonella typhi bacteria, Streptococcus pyogenes, Shigella and Staphylococcus epidermidis. The aim of this study was to test the antibacterial activity against Escherichia coli and Staphylococcus aureus bacteria and identify the type of symbionic bacteria of Callyspongia aerizusa sponge based on their physiological and biochemical characteristics. The method of testing the antibacterial activity was agar diffusion method (Kirby and Baurer diffusion disc). There were three bacterial isolates namely T1, T2, and T3 isolates. The result showed that T1, T2, and T3bacterial isolates had antibacterial activity against Escherichia coli and Staphylococcus aureus test bacteria. Based on the biochemical test, T2bacterial isolates were identified as Bronchothrix bacteria and T1and T3 bacterial identified as Desulfotomaculum. Keywords: Callyspongia aerizusa, Antibacterial activity, symbiont bacteria, Biochemical Identification   ABSTRAKSpons Callyspongia aerizusa memiliki kandungan senyawa bioaktif potensial yang dapat dimanfaatkan dibidang kesehatan. Ekstrak spons laut Callyspongia aerizusa dapat menghambat pertumbuhan bakteri Salmonella typhi, Streptococcus pyogenes, Shigella dan Staphylococcus epidermidis. Penelitian ini bertujuan untuk menguji aktivitas antibakteri dari bakteri simbion spons Callyspongia aerizusa terhadap bakteri Escherichia coli dan Staphylococcuc aureus dan mengidentifikasi jenis bakteri simbion spons Callyspongia aerizusa berdasarkan karakteristik fisiologis dan biokimianya. Metode pengujian aktivitas antibakteri yang digunakan yaitu metode difusi agar (disc diffusion Kirby and Baurer). Terdapat tiga isolat bakteri yaitu isolat T1, T2, dan T3. Hasil penelitian menunjukan bahwa isolat bakteri T1, T2, dan T3 memiliki aktivitas antibakteri terhadap bakteri uji Escherichia coli dan Staphylococcuc aureus. Berdasarkan uji biokima, isolat bakteri T2 diduga sebagai bakteri Brochothrix dan  isolat bakteri T1 dan T3 diduga sebagai bakteri Desulfotomaculum.Kata kunci: Callyspongia aerizusa, Aktivitas antibakteri, Bakteri simbion, Identifikasi Biokimia

Jackfruit leaves (Artocarpus heterophyllus Lamk.) have health benefits as an antimicrobial. The leaves contain flavonoids, tannins, saponins which act as antimicrobials. The purpose of this study was to study the potential antibacterial activity of ethanol extract of jackfruit leaves (Artocarpus heterophyllus Lamk.) On the bacteria Staphylococcus aureus, Escherichia coli, Staphylococcus epidermidis, and Salmonella typhi. This research conducted with an experimental method that included the collection and processing of samples, the examination of the simplicia characterization and phytochemical screening. The concentration of jackfruit leaf ethanol extract. Used was at a concentration of 500 mg mL, 400 mg/mL, 300 mg/mL, 200 mg/mL, 100 mg/mL, 100 mg/mL, 50 mg/mL , 25 mg/mL, 10 mg/mL 30 mg/ml chloramphenicol and blanks. Using the disk diffusion method to measure the clear zone against the bacteria Staphylococcus aureus, Escherichia coli, Staphylococcus epidermidis, and Salmonella typhi. Antimicrobial inhibition of ethanol extract of jackfruit leaves against Staphylococcus aureus bacteria at a concentration of 500 mg/mL has a strong antibacterial inhibition with a diameter of 10.8 mm. The bacteria Escherichia coli, Staphylococcus epidermidis, and Salmonella typhi at a concentration of 500 mg/mL have inhibitory power, 9.2 mm, 9.6 mm, and 8.8 mm in the medium category. Positive control chloramphenicol has powerful antibacterial inhibition with an inhibition zone diameter of 28.6 mm.

The metabolism of spoilage organism in the seafood is a major cause of fish spoilage. Lipid oxidation leads to production of intermediate peroxides causing bad odor and offflavour producing compounds. Hence, based on the hurdle technology method and applications of nanotechnology, the inhibitory effects of copper oxide nanoparticles coupled with vitamin-E (CuONPs+VE) was investigated with the aim of controlling the oxidative cell damage in seafood by estimating Reacting Oxygen Species (ROS) using 2’,7’- dichlorodihydrofluorescein diacetate (DCF) and preventing microbial spoilage by studying the cell viability using MTT assay in the present study. The MTT assay reveals that the CuONPs+VE inhibited the metabolic activity of spoilage bacteria which was confirmed from the inhibition percentage values against the test organisms. The CuONPs+VE exposed Escherichia coli reduced upto 86 ± 0.57% after enumerating the CFU in a Plate Count Agar media. Salmonella sp and Shigella sp exhibited 89 ± 1.04% and 85 ± 0.25% respectively. The qualitative inhibitory effect of Nanometal vitamin complex against three test bacteria, were evaluated by agar diffusion method. Among the four different concentrations of Nanometal vitamin complex, the higher concentration (4X – 40μg/ml) exhibited maximum inhibitory effects in terms of zone of clearance. Against Escherichia coli, 12.3 ± 1.25mm of inhibitory zones were found evident. Salmonella sp showed 15.6 ± 0.57mm of inhibitory zones and Shigella sp revealed the inhibition zone of about 16.6 ± 1.04mm. The anti-oxidative defence mechanisms operating in the cells for scavenging of ROS was performed using DCF. The cells which are pre-incubated with CuONPs+VE and then exposed to H2O2 show insignificant green emission indicating a clear advantage of the nanoparticle form of vitamin-E (CuONPs+VE) in preventing oxidative cell death.

Cow’s milk containing pathogenic bacteria is an important threat to the consumers. The objectives of the present study were to identify the bacterial agents of public health importance in milk samples (n=35) of different locations and to determine their sensitivity to different antibiotics. The milk samples were collected and transported aseptically and subsequently allowed for culture in bacteriological media, Gram’s staining and biochemical tests for the identification of bacterial species. The bacteria identified were Staphylococcus aureus, Escherichia coli and Salmonella typhi, and their prevalence, in case of vendor milk specimens (n=28), were 96.43%, 53.57% and 35.71% respectively, and of brand milk specimens (n=7), were 42.86 %, 28.57% and 0%, respectively. This suggests that cautionary measures should be taken for quality milk production and consumption. The antibiotic sensitivity test was done by disc diffusion method and the average inhibition zones, in case of Staphylococcus aureus, were 32 mm for oxytetracycline, 26 mm for amoxicillin, 35 mm for ciprofloxacin, 27 mm for cefotaxime, 30 mm for ceftriaxone, 30 mm for azithromycin, and 26 mm for erythromycin; in case of Escherichia coli, were 5 mm for oxytetracycline, 9 mm for amoxicillin, 22 mm for ciprofloxacin, 30 mm for cefotaxime, 31 mm for ceftriaxone, 15 mm for azithromycin, and 0 mm for erythromycin; in case of Salmonella typhi., were 25 mm for oxytetracycline, 24 mm for amoxicillin, 38 mm for ciprofloxacin, 31 mm for cefotaxime, 34 mm for ceftriaxone, 24 mm for azithromycin, and 0 mm for erythromycin. Therefore, ciprofloxacin and ceftriaxone may be the antibiotics of first choice, and cefotaxime and azithromycin may be the second choice among the test antibiotics for the treatment of illness caused by these bacteria.Asian J. Abstract The study aimed to evaluate the antimicrobial activity, antioxidant, toxicity and phytochemical screening of the Red Propolis Alagoas. Antimicrobial activity was evaluated by disk diffusion method. Determination of antioxidant activity was performed using the DPPH assay (1.1-diphenyl-2-picrylhydrazyl), FTC (ferric thiocyanate) and determination of phenolic compounds by Follin method. Toxicity was performed by the method of Artemia salina and cytotoxicity by MTT method. The phytochemical screening for the detection of allelochemicals was performed. The ethanol extract of propolis of Alagoas showed significant results for antimicrobial activity, and inhibitory activity for Staphylococcus aureus and Candida krusei. The antioxidant activity of the FTC method was 80% to 108.3% hydrogen peroxide kidnapping, the DPPH method showed an EC50 3.97 mg/mL, the content of total phenolic compounds was determined by calibration curve gallic acid, resulting from 0.0005 mg/100 g of gallic acid equivalent. The extract was non-toxic by A. salina method. The propolis extract showed high activity with a higher percentage than 75% inhibition of tumor cells OVCAR-8, SF-295 and HCT116. Chemical constituents were observed as flavonones, xanthones, flavonols, and Chalcones Auronas, Catechins and leucoanthocyanidins. It is concluded that the extract can be tested is considered a potential source of bioactive metabolites.

Dillenia serrata Thunb.is a member of the Dillenia clan which is endemic to Sulawesi. D. serrata fruit is a seasonal fruit and can be used as a cooking ingredient as a sour taste, raw material for several food products such as candied fruit and syrup, and has the potential to be processed into chips and jam. Traditionally, the leaves and bark of D. serrata are also used by the local community as a sprue medicine, fever, wound medicine, treating swelling or inflammation and treating vomiting of blood. It is believed that there are still many untapped benefits from this plant. This study was conducted to determine the effectiveness of D. serrata fruit extract as an antimicrobial that causes disease in humans, and to determine its effectiveness as an antioxidant. The antioxidant test was carried out using the DPPH method while the antimicrobial test was carried out by the agar diffusion method (Kirby-Bauer). The ripe Dillenia fruit was extracted using methanol, the extract was then diluted in various concentrations for the DPPH test The results showed that the D. serrata extract had the ability as an antioxidant. The antioxidant activity of fresh fruit extracts was higher than that of dried fruit extracts. D. serrata extract is effective in inhibiting the growth of Pseudomonas aeruginosa, Staphylococcus aureus, and Streptococcus mutans bacteria.

Cocoa pod extract ((Theobroma cacao L.) has antioxidant and antimicrobial activity that has the potential as a natural food preservative. However, in its use the cocoa fruit skin extract has a disadvantage because the short shelf time and its application to food are limited, efforts are needed to prevent damage and extend shelf life, one of the efforts that can be done is by encapsulating the extract.This study aims to determine the antibacterial activity and antioxidant encapsulation of cocoa peel extract, this study begins with the extraction of cocoa pods with ethanol solvent by comparing cocoa pods : solvent 1: 4 The skin of cacao cocoa fruit used is yellow harvested cocoa fruit, then chopped and dried to form flour.The sample is extracted by maceration with ethanol solvent Antioxidant test is done by DPPH method, while antibacterial test is carried out by the well diffusion method. This study used a completely randomized design method (CRD) with 5 treatments using a maltodextrin concentration of 20% (M1); 30% (M2); 40% (M3); 50% (M4) and 60% (M5). The results showed that the treatment gave the highest yield in the treatment of 60% maltodextrin concentration (M5), while the highest antioxidant activity was obtained in the treatment of 20% maltodextrin (M1) with IC50 75.98 µg / mL and the treatment with the lowest antioxidant activity was obtained at treatment of 60% maltodextrin concentration (M5) with IC50 value 114.89 µg / mL. While for the antimicrobial activity also obtained with the same results, namely treatment of 20% (M1) obtained a higher inhibition diameter compared to treatment at 30%; 40%; 50% and 60% for all types of bacteria. The inhibition diameter in the treatment of the concentration of maltodextrin 20% (M1) for E. coli bacteria is between 4.12 mm - 10.95 mm, Salmonella sp is 2.85 mm - 8 , 25 mm and for Staphylococcusaureus of 5.15 mm - 13.90 mm and the lowest inhibition diameter was obtained in the treatment of 60% maltodextrin concentration (M5) for E. coli bacteria of between 2.0 mm - 4.79 mm, Salmonella sp of 1.15 mm - 4.35 mm and for Staphylococcusaureusat 2.76 mm - 5.17 mm.This study concluded that the encapsulation of cocoa peel extract using 20% maltodextrin had the highest antioxidant and antimicrobial activity when compared with other treatments namely 30% concentration; 40%; 50% and 60% but for the treatment of 20% and 30% there is no difference. Ethanol extract of cocoa pods can be made in the form of encapsulates which are very likely to be used as natural preservatives.
