Hydroponic ginseng (HG) is cultivated using only nutrients and water under constant environmental conditions and is more beneficial than soil-cultured ginseng (SG). This study aimed to determine the physicochemical properties, antioxidant activity, and sensory properties of HG-supplemented yogurt to develop high-value yogurt. HG (0.1%, 0.5%, and 1.0%) was added to yogurt formulations and fermented with a 0.1% starter. Antioxidant activities were determined using the 2,2-diphenyl-1-picryl-hydrazyl (DPPH), 2-azinobis-(3-ethylbenzothiazoline-6-sulfonic acid) diammonium salt, reducing power, and ferric reducing antioxidant power assays. Semi-trained panelists performed a quantitative descriptive analysis for sensory evaluation. The number of starter cells increased more rapidly in ginseng extract-fortified yogurt than in the control group, shortening fermentation time. Regarding antioxidant assays, all HG extract-fortified yogurts showed higher antioxidant activity than the control group. In particular, the HG (0.5%) group showed better results than the SG group in the DPPH and reducing power assays, although the difference was not significant. The sensory scores of color, flavor, texture, taste, and overall acceptance of 0.5% HG-supplemented yogurt did not differ significantly from those of non-supplemented yogurt (control). This suggests that HG can be used in high-value dairy products as a supplement with bioactive properties for health in the food industry.

Objective: This study was examined to in vitro antioxidant activity and Total Phenol and Flavonoids content analysis of methanolic root extract of Eleutherococcus senticosus (Siberian ginseng). Methods: 1,1-dephenyl-2-picryl-hydrazyl free radical scavenging and FRAP assay propose that antioxidant activity of methanol root extract because of reducing capacity of the antioxidant against oxidative effects of reactive oxygen species. Results: Scavenging activity of Siberian ginseng root RC50 value was shown 713.42±11.55 µg/ml and reducing power 0.13±0.01 mmol/g was investigated. In addition, total phenol 12.6±1.13 mg GAE/g DW and total flavonoids 9.8±0.20 mg QE/g DW were recorded. Conclusion: Although all tests were performed in vitro assay, these results recommend that Siberian ginseng root may be a good source of antioxidant ingrediant.

Effect of Fermentation on Antioxidant Activities and Betacyanin Content of Functional Beverages from Dragon Fruit and BeetrootKombucha is a traditional beverage prepared by fermenting polyphenol-rich tea using a consortium of bacteria and yeast (SCOBY). Dragon fruit and beetroot contain a significantly high amount of polyphenols and betacyanin as antioxidants which are beneficial in reducing the risk of cardiovascular disease, cancer, and the body's natural degeneration related to the early-aging process. This study aims to determine changes in antioxidant activity and levels of betacyanin from fermented dragon fruit and beetroot as functional drinks during different fermentation times. The results showed that there was a correlation between fermentation time and antioxidant activity in its ability to counteract free radicals, ferric reducing antioxidant power (FRAP), and the levels of betacyanin produced. Longer fermentation time caused an increase in free radical inhibition and reduction of iron ions but reduced the levels of betacyanin. The optimum value of free radical inhibitory activity (DPPH) was obtained in the 12-day fermented dragon fruit drink with an inhibitory value of 80.76%, ability to reduce iron ions by 197.94 µg ascorbic acid mL-1, and betacyanin level of 0.055 mg L-1Keywords: antioxidants, dragon fruit, betacyanin, beetroot, functional beverages ABSTRAKKombucha merupakan minuman tradisional hasil olahan fermentasi teh yang kaya polifenol dengan konsorsium bakteri dan yeast (SCOBY). Buah naga dan umbi bit memiliki polifenol dan senyawa betasianin yang cukup tinggi sebagai antioksidan yang bermanfaat dalam menurunkan risiko penyakit kardiovaskular, penyakit kanker dan degenerasi alami tubuh terkait proses penuaan dini. Penelitian ini bertujuan untuk mengetahui perubahan aktivitas antioksidan dan kadar betasianin dari fermentasi buah naga maupun umbi bit sebagai minuman fungsional selama waktu fermentasi yang berbeda. Hasil penelitian menunjukkan bahwa adanya korelasi antara waktu fermentasi terhadap aktivitas antioksidan dalam kemampuannya menangkal radikal bebas, kemampuan mereduksi ion besi (FRAP), dan kadar betasianin yang dihasilkan. Semakin lama waktu fermentasi menyebabkan peningkatan penghambatan radikal bebas dan reduksi ion besi, namun menurunkan kadar betasianin. Nilai aktivitas penghambatan radikal bebas (DPPH) optimum diperoleh dari minuman fermentasi buah naga selama waktu fermentasi 12 hari dengan nilai penghambatan sebesar 80,76%, kemampuannya dalam mereduksi ion besi sebesar 197,94 µg asam askorbat mL–1, dan kadar betasianin sebesar 0,055 mg L–1

Samples of three types of honey: polyfloral (PH), linden (LH) and acacia (AH,) without and with addition of dried cherries (40%) were analyzed before and after three months of storage. The total phenol (TPh), flavonoid (TFd) and anthocyanin (TAn) contents, antioxidant activities and sensory properties of honeys with and without the addition of dry cherries were evaluated. TPh and TFd increased with addition of dried cherries to the honey, while enriched honeys showed high TAn. The LH sample with dried cherries showed the highest anthocyanins content (41.41mgCGE/100g). The antioxidant activity increased with addition of dried cherries in honey in the DPPH? test and reducing power. The PH and enriched PH exibited the best antiradical activity compared to LH and AH. The EC50 DPPH values were: 23.81 for PH and 24.19 mg/mL for PH, while the EC50 DPPH were: 1.16 mg/mL for PH40 and 1.18 mg/mL for PH40s. RP0.5 values were: 57.00 mg/mL for PH40 and 56.00 mg/ml for PH40s, while RP0.5 were: 15.05 mg/mL for PH40 and 15.18 mg/mL for PH40s. The statistical analysis showed that TPh, TFd and TAn, and antioxidant activity of honeys and enriched honeys showed significant correlation. Sensory analysis of honey with dried cherries, before and after storage, indicated very good sensory characteristics.

Rheum emodiWall has been reported to possess protective effect in many inflammatory diseases and oxidative stress-related injuries. This study aims to investigate antioxidant power of stilbenoids fromR. emodiand then explore the material basis for its antioxidant potential. The most abundant stilbenoid piceatannol-4′-O-β-D-glucopyranoside (PICG) and its aglycon piceatannol (PICE) were isolated fromR. emodirhizome. Using well-accepted antioxidant chemicals as reference, antioxidant activity of these stilbenoids was examined by measuring DPPH and superoxide anion radical scavenging, ferric reducing power, and inhibition of lipid peroxidationin vitro. Both PICG and PICE displayed promising antioxidant activity in all the four assays. Comparisons among the tested compounds indicated that PICE has the most potent antioxidant activity and the presence of 3′-hydroxyl group may enhance antioxidant activity of stilbenoids. The antioxidative effect of PICE at the cellular level was further demonstrated on the model of hydrogen-peroxide-induced H9c2 rat cardiomyoblasts injury. Taking into account the rapidin vivometabolic transformation of PICG into PICE it can be inferred that the most abundant stilbenoid PICG may be an important constituent responsible for the antioxidant potential ofR. emodiand promising to be developed as an antioxidant agent for supplementary or therapeutic use.

The occurrence of chronic diseases is rapidly growing worldwide. Diet and nutrition are significant aspects in the promotion and maintenance of good quality health throughout the whole life span. Overproduction of liberated radicals occurred due to physiological and biochemical changes in our body and then can cause oxidative damage to biocompounds of human body (e.g. lipids, proteins, DNA). Medicinal plant based products exert beneficial properties such as antioxidant, anticancer, hypoglycemic and hypolipidaemic activities so their utilization is increased recently. This study includes preliminary phytochemical screening and quantification of phenol and flavonoid of Costus pictus aqueous (CPAQ) and methanolic (CPME) extracts. DPPH, FRAP, Fe3+ reducing power, and superoxide scavenging assay were used for the estimation of antioxidant potential of leaf extracts CPAQ and CPME. CPME gave the elevated amount of phenol and flavonoid content and antioxidant activities. The antioxidant activity of Costus pictus extracts significantly correlated (P less than 0.05) with the phenolic content. Ascorbic acid used as standard compound and showed maximum antioxidant power in this study.

Panax ginseng Meyer is used as a medicinal plant. The aim of this study was to ferment hydroponic ginseng with Lactococcus lactis KC24 and confirm its antioxidant activity and inhibitory effect on nitric oxide (NO) production. Flavonoid and phenol contents in fermented ginseng extracts were measured. Antioxidant activity was measured by DPPH, ABTS, reducing power, FRAP and β-carotene assays. Additionally, inhibitory effects on NO production and toxicity of the fermented extract were determined using RAW 264.7 cells. Phenol and flavonoid contents increased as the fermentation time increased, and the contents were higher in hydroponic ginseng than in soil-cultivated ginseng. The DPPH assay revealed that the antioxidant activity of the 24 h fermented extract significantly increased from 32.57% to 41% (p < 0.05). The increase in antioxidant activity may be affected by an increase in phenol and flavonoid contents. At 1 mg/mL solid content, the 24 h fermented hydroponic ginseng extract inhibited NO production from 9.87 ± 0.06 μM to 1.62 ± 0.26 μM. In conclusion, the increase in antioxidant activity affects the inhibition of NO production, suggesting that fermented hydroponic ginseng may be used in the industries of functional food and pharmaceutical industry as a functional material with anti-inflammatory effects.

This research was designed to compare the potency and duration effect of Java ginseng and Korean ginseng root extract administration on sexual behavior of male mice. It was done experimentally on male mice (strain BALB, aged 8–10 weeks, weighed 25–35 g). Thirty eight mice were grouped to 4 (four) groups: First group was treated with solvent (as positive control), 2nd group was treated ethynilestradiol (EE2) (as negative control), 3rdgroup was treated with Java ginseng root extract, and 4th group was treated with Korean ginseng root extract. All groups were administered with EE2 0.56 mg/20 g bw/day for 9 days as pretreatment to decrease the testosteron level. After pretreatment, each group divided to 3 subgroups (each would receive treatment for 9, 18, and 27 days). Ethynilestradiol 0.56 mg/20 g bw/day was administered along treatment to keep testosterone level low, except to positive control group. Java ginseng and Korean ginseng root extract (equal with 1.4 mg ginseng root powder/ 20 g bw/day) and EE2 were administered orally. The level of testosterone after pretreatment was measured by RIA (radioimmuoassay) and changes in libido were determined by libido test. After the last treatment, 1 male mouse kept singly in individual cage. Libido test was carried out for 20 minutes. All of these activities during test recorded by handycam. The mice were observed for time from the introduction of female into the cage of male upto the first mount (mounting latency/ ML) and for the number of mounts (mounting frequency/MF). The results indicated that at low testosterone level, Java ginseng root extract administration at the dose equal with 1.4 mg ginseng root powder/20 g bw/day shortened mounting latency and increased mounting frequency but Korean ginseng extract root at the same dose gave negative effects. Duration of administration of both Java and Korean ginseng root extract didn’t give effect on libido.

Tricholoma anatolicum H.H. Doğan & Intini is known as the most prized mushroom species in Feke region of Turkey. This mushroom species is collected from Cedar (Cedrus libani) forests and therefore is named as Cedar mushroom in this region. It is collected and consumed by local collectors and also exported to Far East countries such as Japan by exporting companies. Therefore, it is important to investigate the nutritional and medical importance of this species. The aim of this study is to reveal the antioxidant activity of methanol extract in different concentrations (1, 2 and 4 mg/mL) of T. anatolicum H.H. Doğan & Intini collected from Feke district of Adana province of Turkey in 2015. In this study, it was determined that total phenolic content of this mushroom was 56 mg/kg. 2,2-diphenyl-1-picrylhydrazyl (DPPH), nitric oxide (NO) and reducing power (RP) activities given in trolox (µM) and ferric-reducing antioxidant power (FRAP) given in FeSO4 (µM) were found as 449, 180, 337 and 2 at the highest concentration (4 mg/mL), respectively. As a result, it could be suggested that methanol extract of T. anatolicum H.H. Doğan & Intini has significantly antioxidant activity.

Clausena indica (Datz.) Oliv fruit pericarps (CIOPs) is an important agro-industrial by-product rich in active components. In this article, the effects of traditional and green deep eutectic solvents (DESs) on the high-performance liquid chromatography (HPLC) characterization, antioxidant activities, and α-glucosidase-inhibitory activity of phenolic extracts from CIOPs were investigated for the first time. The results showed that ChCl-Gly and Bet-CA had higher extraction efficiency for the total phenolic content (TPC, 64.14–64.83 mg GAE/g DW) and total flavonoid content (TFC, 47.83–48.11 mg RE/g DW) compared with the traditional solvents (water, methanol, and ethyl acetate). LC-Q-Orbitrap-MS/MS was adopted to identify the phenolic compositions of the CIOPs extracts. HPLC-diode array detection (HPLC-DAD) results indicated that arbutin, (–)-epigallocatechin, chlorogenic acid, procyanidin B1, (+)-catechin, and (–)-epicatechin were the major components for all extracts, especially for deep eutectic solvents (DESs). In addition, ChCl-Xyl and ChCl-Gly extracts showed higher antioxidant activities against 2,2-diphenyl-1-picrylhydrazyl (DPPH•), 2,2′-azino-bis (3-ethylbenzothiazoline-6-sulphonic acid (ABTS+•), ferric reducing antioxidant power (FRAP), reducing power (RP), and cupric ion reducing antioxidant capacity (CUPRAC) than extracts extracted by other solvents. A strong α-glucosidase-inhibiting activity (IC50, 156.25-291.11 μg/ml) was found in three DESs extracts. Furthermore, in silico analysis of the major phenolics in the CIOPs extracts was carried out to explore their interactions with α-glucosidase. Multivariate analysis was carried out to determine the key factors affecting the antioxidant activity and α-glucosidase-inhibiting activity. In short, DES can be taken as a promising solvent for valorization and recovery of bioactive compounds from agro-industrial by-products. The results verified that CIOPs can be used as a prospective source rich in bio-active compounds applied in the food and pharmacy industries.

Verbena officinalis Linn is a traditionally known medicinal plant which is used against a number of diseases including inflammatory conditions. In this study its antioxidant activity (reducing powers, 2, 2-diphenyl-1-picrylhydrazyl (DPPH) scavenging activities), ferric reduction activity potential (FRAP), total flavonoid concentration and antimicrobial activities of 80%, 90%, 100% methanol and chloroform extracts of V. officinalis Linn root and 90% and100% methanol leaf extracts were determined. Its antioxidant activity increases with increase in amount of extract (10% to 40%v/v). Total flavonoid content (TFC) varied from 73.32±0.002 mgQE/100g of dry weight (90% methanol) to 42.39±0.032 mgQE/100g dry weight (chloroform), 2,2-diphenyl-1-picrylhydrazyl (DPPH), radical scavenging activity (%) was varied between 87.39% (90% methanol) to 45.57% (chloroform) while Ferric reducing antioxidant power was observed between 372.93±0.04 mgAAE/100 g extract (90% methanol) to 129.41±0.026 mgAAE/100 g chloroform in the root extract. The methanolic extract of the leaf showed less antioxidant activity than the methanolic extract of the root. Crude extracts of V. officinalis root showed various degree of antimicrobial activity towards drug resistance microbial pathogens. Growth inhibition tests against bacterial pathogens demonstrated concentration dependence. Moreover, gram positive bacteria were more susceptible to V. officinalis root extract when compared to gram negative bacteria. In general V. officinalis root and leave extracts possess strong antioxidant and antimicrobial activities.
