(1) Background: The COVID–19 pandemic and the imposition of strict but necessary measures to prevent the spread of the new coronavirus have been, and still are, major stress factors for adults, children, and adolescents. Stress harms human health as it creates free radicals in the human body. According to various recent studies, volatile oils from various aromatic plants have a high content of antioxidants and antimicrobial compounds. An external supply of antioxidants is required to destroy these free radicals. The main purpose of this paper is to create a yoghurt with high antioxidant capacity, using only raw materials from Romania; (2) Methods: The bioactive components used to enrich the cow milk yoghurt were extracted as volatile oils out of four aromatic plants: basil, mint, lavender and fennel. Initially, the compounds were extracted to determine the antioxidant capacity, and subsequently, the antioxidant activity of the yoghurt was determined. The 2,2-diphenyl-1-picrylhy-drazyl (DPPH) method was used to determine the antioxidant activity; (3) Results: The results show that cow milk yoghurt enhanced with volatile oils of basil, lavender, mint and fennel, encapsulated in sodium alginate has an antioxidant and antimicrobial effect as a staple food with multiple effects in increasing the body’s immunity. The antioxidant activity proved to be considerably higher than the control sample. The highest antioxidant activity was obtained on the first day of the analysis, decreasing onwards to measurements taken on days 10 and 20. The cow milk yoghurt enriched with volatile basil oil obtained the best results; (4) Conclusions: The paper shows that yoghurts with a high antioxidant capacity were obtained, using only raw materials from Romania. A healthy diet, compliance with safety conditions and finding appropriate and safe methods to increase the body’s immunity is a good alternative to a major transition through harder times, such as pandemics. The creation of food products that include natural antioxidant compounds combines both the current great possibility of developing food production in Romania and the prevention and reduction of the effects caused by pandemic stress in the human body.

the analysis of results of biochemical research concerning antioxidant activity of medicinal raw materials, with use of a method of inhibition of autooxidation of adrenaline in vitro is carried out. The mechanism of formation of free radicals and their sources is considered. A brief overview of the action of free radicals on the human body and cells is given. For the first time, depending on the biological characteristics, the antioxidant activity of plants in areas characterized by different anthropogenic loads was studied: an increase in the anthropogenic load was accompanied by a decrease in the antioxidant activity of plants.

The predominance of synthetic and genetically modified foods in the diet of a modern person often leads to disruption of natural metabolic processes and the accumulation of toxic free radicals in the body, which provokes the development of various diseases. Natural antioxidants from medicinal plants can help maintain health and stop the processes of peroxidation. In our opinion, Аstragalus onobrychis can become a promising source of natural antioxidants. The aim of this study was to establish the antioxidant activity in extracts from the herb Astragalus onobrychis. In order to obtain objective and reliable results during our research, we used two methods: the method of titrimetry and spectrophotometry of free radicals. The titrimetric method is based on the chemical interaction between an oxidizing agent (potassium permanganate) and natural antioxidants present in extracts from plant raw materials, since they exhibit the properties of reducing agents. The spectrophotometric method makes it possible to assess the value of antioxidant activity and the duration of the reaction by assessing the interaction of 2,2-diphenyl-1-picrylhydrazil with plant antioxidants. To establish the relationship between the antioxidant activity and the presence of phenolic compounds in the plant, the content of flavonoids and hydroxycinnamic acids in the herb Astragalus onobrychis was determined. As a result of the studies, the total antioxidant activity of extracts from the herb Astragalus onobrychis was established and it was revealed that its value depends on the type of extractant used, since this factor is associated with the content of various groups of natural antioxidants in the extraction. The data obtained indicate the prospects of using the herb Astragalus onobrychis as a source of natural antioxidants.

The presence of these ingredients helps to improve many physiological processes in the body, as well as to increase its immune status. The high efficiency of ultrasonic effects on various technological processes was confirmed by numerous studies. Ultrasonic extraction was carried out at t = 20 ? and an ultrasonic wave frequency of 22 kHz. As a result of the research, it was found that the equilibrium state is achieved within 15 minutes with ultrasound exposure. Natural raw materials, their chemical composition and the influence on the human body were studied in the work to develop new beverages recipes. The selected ingredients in a certain quantitative ratio made it possible to obtain beverages with improved bio-corrective properties, which allows satisfying the daily requirement of the human body for biologically active substances. Ultrasonic exposure has a positive effect on the organoleptic characteristics of the beverage and the aftertaste, as proved by the comparative organoleptic evaluation of the samples. The functional properties of the beverages developed were confirmed experimentally. The following was determined in the beverages: macronutrients content, antioxidant activity, vitamin C content, shelf life duration. The ultrasonic extraction method application in the technology of beverages manufacturing allows: to reduce the preparation time by half, to reduce the amount of raw materials by 15%, to increase the content of macronutrients by 45%, to increase the content of vitamin C by 35%, to increase the antioxidant activity by 45-50%, to increase storage stability by 50-60%, to improve organoleptic characteristics. The results obtained prove the intensifying effect of ultrasonic exposure in the production of functional beverages.

Food raw materials and products contain inhibitors of oxidation reactions, both in the lipidic phase and the aqueous phase. The most important inhibitors are phenolic antioxidants. During food processing and storage, concentrations of antioxidants in the two phases reach an equilibrium. Phenolics react with lipidic free radicals, being converted into antioxidant free radicals, quinones, polymers and copolymers. Some degradation products possess an antioxidant activity, too. The relative antioxidant activity decreases with decreasing concentration of oxygen in the system and with increasing temperature. Antioxidants are more rapidly decomposed in surface layers. Health aspects of antioxidant degradation products are often neglected as the safety of antioxidant degradation products is mostly unknown.

The selected ingredients in a certain quantitative ratio made it possible to obtain drinks with improved bio-corrective properties, which allows satisfying the daily requirement of the human body for biologically active substances. Ultrasonic exposure has a positive effect on the organoleptic characteristics of the drink and the aftertaste, as evidenced by the comparative organoleptic evaluation of the samples. The functional properties of the developed drinks have been confirmed experimentally. In the drinks, the following were determined: the content of macronutrients, antioxidant activity, the content of vitamin C, the duration of the shelf life. The use of the method of ultrasonic extraction in the technology of preparing drinks allows one: to reduce the preparation time by half, to reduce the amount of raw materials by 15 %, to increase the content of macronutrients by 45 %, to increase the content of vitamin C by 35 %, to increase the antioxidant activity by 45-50 %, increase stability during storage by 50 – 60 %, increase organoleptic characteristics. The results obtained prove the intensifying effect of ultrasonic exposure in the production of functional drinks.

Sargassum sp. adalah salah satu jenis rumput laut paling banyak di Indonesia dan memiliki manfaat sebagai antioksidan, obat penyakit jantung, stroke, dll. Penelitian ini bertujuan untuk menentukan kandungan antioksidan fraksi etil asetat dari ekstrak metanol Sargassum sp. Sampel diambil dari Pantai Sundak, Gunung Kidul, Yogyakarta. Metode yang digunakan adalah eksploratif diskriptif. Sampel dikeringkan dalam suhu ruangan selama 7 hari dan dimaserasi dengan pelarut metanol, lalu dievaporasi dengan rotary evaporator. Ekstrak metanol di fraksinasi menggunakan etil asetat. Pengujian aktivitas antioksidan dilakukan dengan menggunakan 2 metode, yaitu metode penangkapan radikal bebas DPPH dan total kapasitas antioksidan fosfomolibdat. Vitamin C digunakan digunakan sebagai standar penangkapan radikal bebas DPPH dan total kapasitas antioksidan fosfomolibdat. Kadar total fenolat diuji menggunakan larutan Folin-Ciocalteu dengan standar asam galat. Hasil penelitian menunjukkan bahwa kadar total fenolat fraksi etil asetat Sargassum sp. sebesar 64,42 mg GAE/g sampel. Aktivitas antioksidan dengan metode penangkapan radikal bebas DPPH memiliki nilai IC50 1.289 ppm, vitamin C memiliki IC50 sebesar 122,71 ppm, sedangkan total kapasitas antioksidan adalah 39,52 mg AAE/g sampel. Kesimpulannya, yaitu kandungan aktivitas antioksidan fraksi etil asetat dari ekstrak metanol Sargassum sp. dengan metode penangkapan radikal bebas DPPH diduga sangat lemah dan kandungan aktivitas antioksidan dengan menggunakan metode fosfomolibdat diduga tinggi.  Sargassum sp. is one of the many types of seaweed in Indonesia and has benefits as an antioxidant, a drug for heart disease, stroke, etc. This study aims to determine the antioxidant content of ethyl acetate fraction of methanol extract of Sargassum sp. Samples were taken from Sundak, Gunung Kidul, Yogyakarta. The method used is descriptive explorative. Samples were dried at room temperature for 7 days and macerated with methanol, then evaporated at a rotary evaporator. The methanol extract fractionation using ethyl acetate. Testing the antioxidant activity using two methods, the method of catching free radicals DPPH and total antioxidant capacity fosfomolibdat. Vitamin C is used as a standard arrest DPPH free radical and total antioxidant capacity fosfomolibdat. Levels of total phenolics were tested using the Folin-Ciocalteu solution with gallic acid standard. The results showed that levels of total phenolic fraction of ethyl acetate Sargassum sp. amounting to 64,42 mg GAE/g sample. The antioxidant activity with catching free radicals DPPH methods have IC50 values 1.289 ppm, vitamin C has an IC50 of 122,71 ppm, while the total antioxidant capacity was 39,52 mg AAE/g sample. In conclusion, the content of the antioxidant activity of ethyl acetate fraction of methanol extract of Sargassum sp. with catching free radicals DPPH methods allegedly extremely weak and the content of the antioxidant activity using methods fosfomolibdat predictably high.

Oxidative Stress is the primary cause of most of the diseases currently in the world. The human body is prone to many illnesses out of which oxidative stress plays a significant role in the causation of those. The Stress in the body releases free radicals and these free radicals react with the cell organelle and cause denaturation and break down. The generated free radicals should be fought to eliminate and prevent toxic effects. Many drugs are known to fight free radicals. Most of them had been scientifically evaluated and published for their activity too. The investigations say that antioxidant activity of the herbs does not similarly reflect . There were differences in activity and significant deviations in the results that are shown in comparison to and . Thus, there is an urgent necessity to investigate the antioxidant activity of herbs to make sure that the activity resembles and to find any variations when compared to activity. This research protocol was framed out to screen for the antioxidant activity of the ethanol extracts of the Indigofera leaves by estimating the serum parameters and correlating the results with the human body. Out of the values overall, the were the ones that are significant participants in fighting the free radicals and in boosting the immune system. The ethanol extract successfully prevented the breakdown of the cellular structure of the liver cells, thereby protecting it and replenishing the enzyme levels by destroying the free radicals that are generated due to DMH.

The data from literature shows that frozen vegetal products preserve their nutritional qualities for a long time. Fruits have a high content of substances with antioxidant capacity in the body. There are many recent studies demonstrating the importance of antioxidant substances in neutralizing free radicals in the human body. In this study there were analysed phenolic compounds and flavonoids in eight different species of fruits, belonging to three families. The antioxidant capacity of the extracts was evaluated by: CUPRAC assay, ABTS method and FRAP method. Our results show that the studied fruits represent rich sources of compounds with antioxidant capacity.

Nigeria is blessed with a rich source of aromatic flora, many of which have not been previously investigated for their chemical constituents and biological potentials. This flora constitutes a rich source of potential spices or flavoring, ingredients of formulae intended for pharmaceutical administration, and for perfumery. Interestingly, essential oil constituents such as 1,8-cineole, precocene, 6,10,14-trimethylpentadecan-2-one, eugenol, β-caryophyllene, α-pinene, α-terpineol and even hitherto uncommon compounds such as zerumbone and rare terpenoid esters have been isolated and characterized from these plants. In addition, some of the studied volatile oils have exhibited biological activities of importance such as antimicrobial and cytotoxicity. The majority of these aromatic plants occur either as perennial or annual herbs which are suitable for cultivation purposes in herbal gardens, traditional medicinal centers, parks, research institutes and forest reserves. This paper presents a review of some of the endemic aromatic and medicinal plants of Nigeria with a view to ascertaining their suitability as raw materials for the pharmaceutical and perfumery applications.

Anti-aging cosmetics are often sought after in order to slow down the aging process. Free radicals are one of the main causes of skin aging, and therefore antioxidants are used in anti-aging cosmetics. The aim of this study was to investigate which method is the most suitable for determining the antioxidant capacity of these products. Having samples extracted, the antioxidant capacity of the extracts obtained was determined by the following spectrophotometric methods: DPPH, Folin-Ciocalteu, FRAP, the ABTS method and the ferroion chelation method with ferrosine. The antioxidant capacity of the samples varied depending on the extract type and the method used. DPPH and ferroion chelation measurements with ferrosine were carried out in the part of the spectrum where plant pigments absorb. These pigments are often found in anti-aging products affecting these methods measurement results. The Folin-Ciocalteu method is suitable for researching the antioxidant capacity of hydrophilic extracts, but not lipophilic ones, where turbidity and the formation of a gelled ring occur. The FRAP method revealed similar results for all the samples and proved to be less sensitive than the others. The ABTS method for both types of extracts has proven to be the most suitable and sensitive method for determining the antioxidant capacity of anti-aging products.
