An ω-3 fatty acid enriched chia diet: Influence on egg fatty acid composition, cholesterol and oil content

Twenty-four Issa Brown laying hens were fed for 4 wk for the purpose of comparing a control diet with a diet containing 30% whole chia (Salvia hispanica L.) seeds. Egg weight and production, cholesterol content, total fat content, and fatty acid composition of the yolks were determined weekly. Sensory evaluation was conducted on eggs from the final week of the trial. Egg production was significantly (P < 0.05) greater for the control, although individual egg weights were not significantly different. No statistically significant difference (P < 0.05) in yolk fat content was found between treatments. Saturated palmitic fatty acid content of yolks was significantly (P < 0.05) less with the chia diet, with a 35% difference found at the end of the trial. Polyunsaturated, ω-3 α-linolenic fatty acid was significantly greater (P < 0.05) in yolks from the chia diet, and increased from 0 to 14.7% by the end of the trial. Chia improved the saturated:polyunsaturated fatty acid ratio in the yolks, compared to the control diet. No significant differences (P < 0.05) in taste preferences or off-flavors were found between eggs from both treatments. Key words: Egg yolk, chia, ω-3 α-linolenic fatty acid, cholesterol, flavor

We have previously demonstrated that the lungs of fetuses of alloxan-diabetic rabbits are functionally immature when compared with controls. In this study we have examined pulmonary lavage fluid from fetuses of diabetic and control does for the presence of a surfactant inhibitor, cholesterol content, and phosphatidylcholine (lecithin) fatty acid content. When lavage fluids from fetuses of control and diabetic does were mixed and examined on the surface balance, the measured surfactant content corresponded to the arithmetic average of the surfactant content of the individual fluids, thus ruling out the presence of an excess of a surfactant inhibitor. We were able to demonstrate inhibition of surfactant function when exogenous cholesterol was added to lavage samples, but cholesterol content of lavage fluid from fetuses of diabetic and control does was not significantly different. Finally, the fatty acid composition of surfactant phosphatidylcholine was not different between the two groups. These studies indicate that mechanisms other than the presence of a surfactant inhibitor or altered fatty acid composition must explain the functional immaturity seen in offspring of the diabetic pregnancy.

AbstractThe objective of this study was to determine the relationships between intramuscular fat, cholesterol contents and fatty acid composition in the muscles of different animal species. Intramuscular fat, cholesterol and fatty acid composition in 207 muscle samples from 129 animals of different species (pigs, beef cattle, farmed red deer, horses and geese) were determined and analysed. The obtained results indicated unequal relations between intramuscular fat and cholesterol contents and fatty acid proportions in the muscles of different animal species. The increase of intramuscular fat content resulted in higher monounsaturated and lower polyunsaturated fatty acid contents in most muscles of meat producing animals. In all the species higher fatness did not show any increase in cholesterol content and also cholesterol contents were lower as fat increased in m. semimembranosus of pigs and m. pectoralis profundus of horses. The cholesterol content positively correlated with saturated and monounsaturated fatty acids in the longissimus muscle with the lowest fat content found in red deer and beef cattle, whereas the correlations between these measures were negative in m. pectoralis profundus of horses and the breast of goose containing high fat levels. Negative correlations between polyunsaturated fatty acids and cholesterol content were found in the longissimus muscle of red deer and cattle, whereas these correlations in goose breast and horse meat were positive.

Enhancing the n-3 polyunsaturated fatty acid (PUFA) content of beef is important in view of the generally saturated nature of fatty acids in ruminant meats and the negative effect this can have on human health. This study examined the effects of different sources of dietary n-3 PUFA on the performance of steers and the fatty acid composition of m. longissimus thoracis muscle and associated subcutaneous adipose tissue. Animals were fed ad libitum on grass silage plus one of four concentrates (60:40 forage:concentrate on a DM basis) containing differing sources of lipid: Megalac (16:0), lightly bruised whole linseed (18:3n-3), fish oil (20:5n-3 and 22:6n-3) and a mixture of linseed and fish oil (1:1, on an oil basis). Diets were formulated so that total dietary oil intake was 6 %, approximately half of which was from the experimental test oil. Linseed feeding not only increased the levels of 18:3n-3 in muscle phospholipid from 9·5 to 19 mg/100 g muscle but also enhanced the synthesis of 20:5n-3, the level of which increased from 10 to 15 mg/100 g muscle. Linseed also increased the proportion of 18:3n-3 in muscle neutral lipid and in adipose tissue lipids by a factor of 1·64 and 1·75 respectively. Fish oil feeding doubled the proportion of 20:5n-3 and 22:6n-3 in muscle phospholipids. The proportion of 18:1 trans in muscle neutral lipid was higher on the n-3 PUFA diets than the control diet, 0·04 and 0·02 respectively. Despite the implied modification to rumen metabolism, lipid source did not affect feed intake, growth rate, cold carcass weight or carcass fatness, but carcass conformation score was higher on fish oil treatments (P<0·05). However, total muscle fatty acid content was not different between treatments and ranged from 3·5–4·3 % of tissue weight. The increase in n-3 PUFA in the meat produced by feeding linseed or fish oil lowered the n-6:n-3 ratio but had little effect on the P:S ratio.

The aim of the study was to investigate the effect of diet and sex on fat content, fatty acid composition and cholesterol content of dried pork neck. There were 12 barrows and 12 gilts separated in 4 groups regarding different nutritive supplement. The first group was fed basic ratio with supplement of linseed, the second with canola, the third with canola and vitamin E and the forth group without nutritive supplement (control group). All 24 samples of dried neck were analyzed in laboratory. There was no effect of nutritive supplement on fat and cholesterol content. Diet with linseed resulted in higher ?-linolenic fatty acid content in dried neck. Canola diet resulted in higher oleic and linoleic acid contents. Barrows dried necks were fattier than gilts, but there were no difference in cholesterol content. Gilts had more polyunsaturated fatty acids and less saturated fatty acids than barrows.

Fatty acid composition was measured in lipid extracted from adipose tissue and muscle collected at slaughter from 6 groups of crossbred cattle of about 2 years of age, grain-finished in a feedlot. The cattle ranged in biological type from late to early maturing. They were progeny of the following crosses: Charolais x (Simmental.Hereford), Simmental x (Simmental.Hereford), Charolais x (Jersey.Hereford), Hereford x Hereford, Hereford x (Jersey.Hereford), Jersey x Hereford. The fat content of muscle from the leanest late-maturing cross was 5.2% rising to 10.4% in the fattest early-maturing cross. There was no significant difference in the fatty acid composition of subcutaneous fat between the 6 crosses, but there was in the concentration of some of the fatty acids of intramuscular lipid. The latter was due on one hand to the increased deposition of neutral lipid in early-maturing animals and on the other to a higher proportion of polyunsaturated fatty acids in membrane phospholipid in late-maturing animals. The proportions of the monounsaturated fatty acids palmitoleic (C16:l) and oleic (C18:l) were higher in the early-maturing Jersey x Hereford crosses than in straight-bred Herefords or the other crosses, but only in the C16:l values was there a significant difference between breeds. There was also a significant difference between breeds in the sum of monounsaturates and the sum of polyunsaturates in intramuscular fat. The Jersey crosses had the highest level of monounsaturates and the lowest level of polyunsaturates. Intramuscular phospholipid was examined in the 2 breeds that were the most divergent in terms of intramuscular fat content, the Charolais x (Simmental.Hereford) and the Jersey x Hereford. The latter had significantly higher C16:l values and significantly lower C18:2 and polyunsaturate fatty acid values. The experiment demonstrated that breed differences occurred in fatty acid composition of muscle total lipid and phospholipid. The differences are of significance in human health and in identifying maturity breed-types of cattle.

Red meats are often criticized as unhealthy based on their perceived high-fat content and saturated fatty acid composition. Uncertainties about the fatty acid composition and trans-fatty acid contents may discourage consumers to eat red meat, especially those living with non-communicable diseases such as cardiovascular diseases, hypertension and obesity (e.g. the metabolic syndrome). Previous studies have investigated the factors that influence the fat content and fatty acid composition of red meats, including the effects of species, age, nutrition, sex, production systems and growth promotants in animals, but the trans-fatty acid content of red meat has not been well studied to date. The purpose of this chapter is to review the fat content and fatty acid composition of red meats, with specific reference to its cis/trans-fatty acid content. Representative samples of beef sirloin steaks (n = 60) and lamb loin chops (n = 80) (the lumbar part of the longissimus dorsi muscle) were collected from carcasses from several randomly selected abattoirs in the Gauteng region of South Africa for proximate and fatty acid analyses. Results from this study confirm that the intramuscular fat content of red meats is low compared to most fat-containing processed foods. The lean component of beef and lamb contain a trivial proportion of TFA’s, consisting of vaccenic acid, rumenic acid and conjugated linoleic acid (CLA) isomers. The CLA’s in red meat are beneficial due to their antioxidant and anti-carcinogenic properties, so they should not strictly be considered in the TFA definition. This means that the TFA’s in red meats are negligible and pose no harm to human health. Labelling of red meats should be improved to convey this information to consumers.

Soybean is a valuable protein and oilseed crop ranked among the most significant of the major crops. Field experiments were carried out in 2016–2019 in South-East Poland. The influence of soybean cultivars (Aldana, Annushka), nitrogen fertilizer (0, 30, 60 kg∙ha−1 N) and inoculation with B. japonicum (control, HiStick® Soy, Nitragina) on the content of fatty acids (FA) in soybean seeds was investigated in a three-factorial experiment. This study confirms the genetic determinants of fatty acid composition in soybean seeds and their differential accumulation levels for C16:0, C16:1, C18:1n9, C18:2, C18:3, and C20:0 as well saturated (SFA), monounsaturated (MUFA), and polyunsaturated (PUFA) fatty acids. Increasing the rate from 30 to 60 kg ha−1 N did not produce the expected changes, suggesting the use of only a “starter” rate of 30 kg ha−1 N. Inoculation of soybean seeds with a strain of Bradyrhizobium japonicum (HiStick® Soy, BASF, Littlehampton, UK and Nitragina, Institute of Soil Science and Plant Cultivation–State Research Institute, Puławy, Poland) is recommended as it will cause a decrease in SFA and C16:0 acid levels. This is considered nutritionally beneficial as its contribution to total fatty acids determines the hypercholesterolemic index, and it is the third most accumulated fatty acid in soybean seeds. The interaction of cultivars and inoculation formulation on fatty acid content of soybean seeds was demonstrated. An increase in the value of C16:0 content resulted in a decrease in the accumulation of C18:1, C18:2, and C18:3 acids. The content of each decreased by almost one unit for every 1% increase in C16:0 content. The dominant effect of weather conditions on the FA profile and C18:2n6/C18:3n3 ratio was demonstrated. This suggests a need for further evaluation of the genetic progress of soybean cultivars with respect to fatty acid composition and content under varying habitat conditions.

Salinity is a known factor in shaping population dynamics and community structure through direct and indirect effects on aquatic ecosystems. Salinity changes further influence food webs through competition and predation. The responses of Moina macrocopa (Cladocera) collected from Setiu Wetland lagoon (Terengganu) was evaluated through manipulative laboratory experiments to understand the ability of M. macrocopa to tolerate high salinity stress. Specifically, the fatty acid composition, growth, survival, and reproduction of this cladocerans species was examined. Sodium chloride (NaCl) as used in the treatments water with the concentration 0, 4, 6, 8, 12, and 15 salinity. Fatty acid levels were determined using Gas Chromatography and Mass Spectrophotometry (GC-MS). The results indicated that optimal conditions produced the highest fatty acid content, especially the polyunsaturated fatty acid content, such as EPA (eicosapentaenoic acid), ALA (alpha-linoleic acid), ARA (arachidonic acid), and DHA (docosahexaenoic acid). Furthermore, M. macrocopa survival was best at salinity 0, with a percentage of 98%, whereas the opposite occurred at salinity 15, with approximately 20% of viable animals surviving. Besides, M. macrocopa also showed the highest reproduction rate at salinity 0 (e.g., average initial age of reproduction, 4.33 ± 0.58 days) compared with other salinities level. Interestingly, the difference in growth at different salinities was not evident, an unusual finding when considering adverse effects such as osmoregulation pressure on the organism. Based on the results, we conclude that M. macrocopa can only tolerate salinity below salinity 8 and cannot withstand stressful environmental conditions associated with salinities above 8.
