Visitor Perceptions of Food Safety and Sociodemographic Determinants in Barbados, West Indies

ABSTRACT In Barbados, tourism is a significant pillar of the economy; however, there has been no research to document the food safety concerns of tourists. Therefore, the purpose of this study was to survey visitors' perceptions of food safety to understand their concerns, influences, and experiences with foodborne illness. A descriptive cross-sectional quantitative survey was conducted among 398 tourists, using stratified random sampling. Visitors were surveyed at two departure ports, the Grantley Adams International Airport (GAIA) (n = 240) and the Bridgetown Cruise Terminal (BCT) (n = 158). Descriptive statistics included frequency distributions. Cross tabulations were performed to determine associations among key variables, and logistic regression analyses were used to report predictor variables at a significance level of P ≤ 0.05. In both surveys (GAIA and BCT), most respondents had a positive perception of food safety (75.8 and 99.4%) and a low frequency of foodborne illness (6.0 and 0.6%), respectively. Most visitors perceived the likelihood of acquiring food poisoning as a result of eating food from local retailers as “not common,” and more visitors were “not concerned” about food hazards than concerned. Significant associations (P ≤ 0.05) were found among sociodemographic parameters such as age, gender, ethnicity, and education and three variables of risk perception. The findings in this study can be used to guide risk communication and food safety and risk management within the hospitality industry, and they add to the body of knowledge surrounding consumer risk perceptions.

Aging leads to psychological losses and various physical changes that, associated with body-stereotyped patterns imposed by society, can cause disturbances in the body image perception (BIP) in the elderly. The aim of this study was to evaluate BIP in older adults living in the city of Campina Grande / PB and its relationship with different anthropometric and body composition indicators. This cross-sectional study was carried out with older adults of both sexes enrolled in the Family Health Strategy of Campina Grande, PB. BIP was considered as a dependent variable and body mass index (BMI), waist circumference (WC), triceps skinfold (TSF), and arm fat area (AFA) as independent variables. The association between BIP and anthropometric indicators was verified using the Pearson chi-square test (X²), simple and multiple logistic regression, with significance level of p <0.05. Overall, 420 older adults were interviewed (68.1% women), of whom 409 reported their actual body image perception. Regarding the perception of idealized body image, 11 individuals did not respond and 230 were satisfied, since 179 desired another silhouette. Individuals with BMI indicative of overweight / obesity were more likely of showing body image dissatisfaction compared to those with normal weight. Subjects with excessive TSF showed greater body image dissatisfaction in relation to those with normal weight. Women were more likely of showing body image dissatisfaction. Thus, it was observed that variables BMI, TSF and sex were independently associated with body image satisfaction.

There has been extensive media coverage of the Pacific Northwest outbreak of foodborne illness caused by Escherichia coli O157:H7 in 1993 and continuing smaller incidences of both E. coli and salmonella transmission by food. An increase in consumer awareness and knowledge of microbial food safety was expected as a result. A telephone survey of Oregon food preparers (using a random-digit-dialing household sample) in December 1995 and January 1996 revealed that knowledge about foodborne illness was greater than in previous studies. Of the 100 respondents, 88% named appropriate foods as being at high risk for food poisoning. Salmonella contamination was recognized as a problem in food by 99%, E. coli by 100%, but campylobacter by only 7%. Major foods which have been associated with salmonella were named correctly by 90% and with E. coli by 87%. Although raw or rare meats or fish were rarely eaten or ordered by respondents, hamburgers were frequently requested to be cooked to “medium” doneness. Many said they would thoroughly cook food contaminated with bacteria to make it safe to eat (56% for salmonella and 59% for E. coli) but 40% responded that the foods either couldn't be made safe to eat or that they didn't know of a way. Respondents in general could not identify specific groups of people especially at risk for foodborne illness. Educational efforts should focus on risk groups and ways that consumers can prevent foodborne illness.

ABSTRACT Objective: to analyze the association between violence in childhood and increase in the Body Mass Index among adolescents. Method: a cross-sectional study, conducted with 136 adolescents aged from 10 to 19 years old, monitored by a Multiprofessional Residency Program in Adolescents' Health, in health units from the municipality of Divinópolis-MG. The anthropometric assessment was conducted from March to June 2018; and information was collected referring to the socioeconomic level, demographic factors, food consumption, and physical activity of the participants. The variable related to violence in childhood was composed of five groups, obtained from a factorial analysis. Multiple regression models were used to identify the variables associated with the increase in Body Mass Index, with a significance level of 5%. Results: the prevalence of excess weight was 31.8%. The adolescents participating in the study consumed soft drinks (66.2%) and industrialized food products (66.9%) every week and ate in front of the TV every day (54.4%). The most prevalent type of abuse was emotional neglect, which affected 100% of the sample under study. An association was evidenced of physical neglect in childhood and intake of industrialized food products with the increase in the Body Mass Index z-score. Conclusion: violence in childhood and the consumption of industrialized food products were associated to the increase in Body Mass Index among adolescents. Investments in public policies for comprehensive promotion of health and protection of children and adolescents are imperious.

CONTEXT AND OBJECTIVE: Increasing obesity is starting to occur among Brazilians. The aim of this study was to investigate the weight and length of children under two years of age in relation to sociodemographic variables and according to whether they were breastfed. DESIGN AND SETTING: Cross-sectional randomized study conducted in 2004-2005, based on the declaration of live births (SINASC) in Campinas, Brazil. METHODS: 2,857 mothers of newborns were interviewed and answered a questionnaire seeking socioeconomic and breastfeeding information. The newborns' weights and lengths were measured at the end of the interviews and the body mass index was calculated. Percentiles (< 15 and > 85) and Z-scores (< -1 and > +1) were used for classification based on the new growth charts recommended by WHO (2006). The log-rank test, multiple linear regression and binomial test (Z) were used. The statistical significance level used was 5%. RESULTS: The predominant social level was class C. The median for exclusive breastfeeding was 90 days; 61.25% of the children were between P15 and P85 for body mass index and 61.12% for length, respectively. Children whose mothers studied for nine to eleven years and children whose mothers were unemployed presented lower weight. Children whose mothers worked in health-related professions presented lower length when correlated with breastfeeding. CONCLUSION: The breastfeeding, maternal schooling and maternal occupation levels had an influence on nutrition status and indicated that obesity is occurring in early childhood among the infants living in the municipality.

Although survey results measuring the safety of consumers' food handling and risky food consumption practices have been published for over 20 years, evaluation of trends is impossible because the designs of published studies are not comparable. The Food Safety Surveys used comparable methods to interview U.S. adults by telephone in 1988, 1993, 2001, 2006, and 2010 about food handling (i.e., cross-contamination prevention) and risky consumption practices (eating raw or undercooked foods from animals) and perceived risk from foodborne illness. Sample sizes ranged from 1,620 to 4,547. Responses were analyzed descriptively, and four indices measuring meat, chicken, and egg cross-contamination, fish cross-contamination, risky consumption, and risk perceptions were analyzed using generalized linear models. The extent of media coverage of food safety issues was also examined. We found a substantial improvement in food handling and consumption practices and an increase in perceived risk from foodborne illness between 1993 and 1998. All indices were stable or declined between 1998 and 2006. Between 2006 and 2010, the two safe food handling practice indices increased significantly, but risk perceptions did not change, and safe consumption declined. Women had safer food handling and consumption practices than men. The oldest and youngest respondents and those with the highest education had the least safe food handling behaviors. Changes in safety of practices over the survey years are consistent with the change in the number of media stories about food safety in the periods between surveys. This finding suggests that increased media attention to food safety issues may raise awareness of food safety hazards and increase vigilance in food handling by consumers.

Summary Objective: To determine overweight and obesity prevalence in preschool children from public education, and to determine their relation to food consumption. Method: Cross-sectional study with children aged between 2 and 5 years, of both sexes, enrolled at municipal day care centers. Socioeconomic, demographic and anthropometric data were collected, in order to calculate the body mass index (BMI) for age. Data on food consumption were assessed using a Food Frequency Questionnaire. χ2 test, Kruskal-Wallis test, Student's t-test and Pearson's correlation were used at a significance level of 5%. Results: Of 548 children, 52% were male, with mean age of 4.2 years old. Most families had incomes between 1 and 2 minimum wages (59.7%), in addition to 10 years (mothers) of education. Anthropometric parameters did not differ significantly between sexes. According to the BMI-for-age, it was found that most of children were well-nourished (85.2%), 8.2% had the risk of becoming overweight, and 4.2% were overweight. The most consumed foods were: rice (100%), beans (99.4%), bread (98.5%), fruit (98.5%), red meat (97.1%), butter and margarine (95.4%), biscuits, cakes and sweet pies (94.1%), dairy products (94.1%), chocolate milk (91.7%), and soft drinks (90.2%). Consumed foods that were strongly correlated (r > 0.7) to the risk of/excess weight were, as follows: bread; biscuits, cakes, sweet pies; dairy products; chocolate milk; sausages. Conclusion: There was low prevalence of overweight and absence of obesity among the population assessed. The risk of overweight was greater among girls. Data from the study showed deviations in food consumption.

Background: Nowadays, obesity is one of the biggest public health problems. Obesity is an excessive accumulation of fat that can occur when fat-producing foods, such as carbohydrates or sugar, are over-consumed. Sucrose is a type of carbohydrate contained in food and is a medium for bacterial growth. Therefore, the consumption of sucrose can increase the risk of dental caries. Purpose: This study aims to analyse the correlation between carbohydrate intake and dental caries in obese individuals. Methods: This study was an observational analytic study with a cross-sectional design. In this study, 50 participants aged 18–40 were selected from an obese community in Jakarta using a quota sampling technique. The carbohydrate intake was assessed using the food frequency questionnaire (FFQ), the body fat percentage was measured with the bioelectrical impedance analysis method, and the dental caries index was assessed using the decayed, missing and filled teeth (DMF-T) index. The data obtained were tested with a simple linear regression statistical test at a significance level of 5%. Results: The results showed that the average carbohydrate daily intake value of obese individuals was 1209.84 g, while the average value of the DMF-T index for obese individuals was 7.98. The results of the statistical tests revealed that there was a strong and positive correlation between carbohydrate intake and the DMF-T index. The effect of carbohydrate intake on the DMF-T index was 50.98%. Conclusion: A positive correlation means that the larger the carbohydrate intake, the higher the DMF-T index. Hence, controlling carbohydrate intake can prevent dental caries.

Menguatnya  daya beli konsumen berdampak pada penjualan notebook atau laptop. Penggunaan  laptop juga menjadi sesuatu yang fenomenal di perguruan tinggi, termasuk dalam lingkungan STIKes Cirebon mulai dari kalangan dosen, karyawan dan terutama mahasiswa. Perilaku penggunaan laptop yang kurang baik dapat menimbulkan keluhan kesehatan pada pengguna. Berdasarkan hasil penelitian didapat bahwa mahasiswa  reguler program studi kesehatan masyarakat STIKes Cirebon mayoritas memiliki keluhan disetiap bagian tubuhnya yaitu pada musculoskeletal dan pada mata. Tujuan penelitian ini untuk mengetahui hubungan antara perilaku penggunaan laptop dengan keluhan kesehatan akibat penggunaan laptop pada mahasiswa reguler program studi kesehatan masyarakat STIKes Cirebon Tahun 2015. Metode pengumpulan data dilakukan dengan wawancara menggunakan instrument penelitian berupa kuesioner. Rancangan penelitian menggunakan desain cross sectional, dengan populasi dan sampel seluruh  mahasiswa reguler program studi kesehatan masyarakat tingkat I-IV STIKes Cirebon Tahun 2015 sebanyak 65 responden. Data dianalisis secara statistik menggunakan uji chi square pada tingkat kemaknaan 5% (0,05). Hasil penelitian ini menunjukan tidak ada hubungan yang bermakna antara ukuran laptop dengan keluhan kesehatan yang dirasakan akibat penggunaan laptop (Pvalue = 0,961), tidak ada hubungan yang bermakna antara durasi penggunaan laptop dengan keluhan kesehatan yang dirasakan akibat penggunaan laptop (Pvalue = 0,782), tidak ada hubungan yang bermaknaantara frekuensi penggunaan laptop dengan keluhan kesehatan yang dirasakan akibat penggunaan laptop (Pvalue = 0,065), ada hubungan yang bermakna antara antara posisi tubuh saat menggunakan laptop dengan keluhan kesehatan yang dirasakan akibat penggunaan laptop (Pvalue = 0,002).Kata Kunci          : Ukuran, durasi dan frekuensi penggunaan laptop ABSTRACT The strengthening of consumer purchasing power affects the sales of notebook or laptop. The use of laptops also be something phenomenal in college, including Cirebon STIKes environments ranging from the faculty, staff and especially students. Laptop usage behavior can cause adverse health complaints on the user. Based on the results of the study found that regular students of public health studies program STIKes Cirebon majority of complaints every part of his body is in musculoskeletal and eyes. The purpose of this study was to determine the relationship between the behavior of the use of a laptop with health complaints as a result of the use of laptops in the regular students of public health studies program STIKes Cirebon 2015. Method of data collection is done with the interview using a research instrument in the form of a questionnaire. The study design was cross-sectional design, with a sample of the entire student population and the regular program of public health studies I-IV level STIKes Cirebon in 2015 as many as 65 respondents. Data were statistically analyzed using chi square test at 5% significance level (0.05). Results of this study showed no significant relationship between the size of a laptop with the perceived health complaints as a result of the use of a laptop (pvalue = 0.961), there was no significant association between duration of use of a laptop with the perceived health complaints as a result of the use of a laptop (pvalue = 0.782), not No significant association between the frequency of the use of a laptop with the perceived health complaints due to the use of a laptop (pvalue = 0.065), there was a significant correlation between the position of the body when using a laptop with perceived health complaints due to the use of a laptop (pvalue = 0.002).Keywords             : Size, duration, frequencythe use of laptops

Purpose The purpose of this paper is to assess level of food safety knowledge and self-reported practices among Lebanese food handlers in Lebanese households and to identify the association between knowledge/practices and socio-demographic characteristics. Design/methodology/approach A cross-sectional study was conducted among 1,500 participants from different gender, age, area of residence, income, marital status and education. They completed a questionnaire of six questions about demographics, and 26 questions related to knowledge and self-reported practices in terms of food handling, storage, usage of kitchen facilities and personal hygiene subgroups. SPSS v23 was used for statistical analyses. Student t-test and analysis of variance were conducted. Significance level of 0.05 was used. Findings On average, participants scored 55.6±16.3, 51.3±25.7, 67.4±19.3 and 89.1±16.3 on food handling, storage, usage of kitchen facilities and personal hygiene, respectively, whereas the passing (score above 50 percent) rates were 64.5, 69.9, 90.5 and 99.1, respectively, for the different subgroups. Gender had significant (p<0.05) effect on food handling and personal hygiene; age, marital status and education had significant (p<0.05) effect on handling, usage of kitchen facilities and personal hygiene; area of residence had significant (p<0.05) effect on storage, handling and usage of kitchen facilities; income had significant (p<0.05) effect on handling and usage of kitchen facilities. Overall mean food safety knowledge and self-reported practices score was 63.8±12.6; passing rate was 86.2; gender, age, area of residence, education, marital status and income had significant (p<0.05) effect. Food safety self-reported practices and knowledge scores were significantly (p<0.001) related to a weak to moderate correlation coefficient (R=0.34). Practical implications The results confirm the need for ongoing educational initiatives to improve the relatively low food safety knowledge and practices among the Lebanese food handlers in Lebanese households. Originality/value No study has determined the food safety knowledge and self-reported practices of Lebanese food handlers in Lebanese households before.

Introduction: Psychological stress activate two axes: Hypothalamic- Pituitary-Adrenal axis and Sympathoadrenal axis leading to production of cortisol and catecholamines.Autonomic disturbances in the body can be evaluated by estimating heart rate variability.Study Design: Cross sectional study. Setting: Islamic International Medical College. Period:June 2014 to December 2014. Materials and Methods: Subjects were labeled as stress andcontrol on basis of DASS questionnaire proforma. Morning Cortisol level of all the subjectswas measured by quantitative ELISA method. Heart rate variability recording of all the subjectswas done. Results: Low frequency in absolute and normalized unit and low to high frequencyratio was significantly higher in stressed group, compared to control (p≤ .05, p ≤ .001, pp ≤.001 respectively). High frequency in normalized was significantly lower in stressed subjects,compared to control (p ≤ .001). Cortisol level was significantly higher in the stressed group incomparison with control (p ≤ .05). Conclusion: Stress can lead to increase morning cortisollevel and can cause autonomic disturbances which can be evaluated by measuring heart ratevariability.
