Natural products are essential components in the human diet providing vital micronutrients such as vitamins (A, B, C, E) and minerals (calcium, potassium, sodium etc.) that are essential for proper growth and development as well as playing other roles in normal body function or metabolism. The aim of this study is to evaluate the proximate and micronutrient composition of some selected plant samples: pawpaw, carrots, turmeric and coconut. The proximate and micronutrient composition of the different fruits evaluation was carried out using methods. Results obtained shows that carrot have the highest moisture content of 84.1%, pawpaw have the highest fiber content of 23.8%, crude protein content of 12.8% and ash content of 9.6%. Coconuts have the highest fat content of 43.0% and the highest carbohydrate content was recorded in turmeric (68.59%). Highest vitamin C content was recorded in pawpaw 60.3 mg, while coconut have the highest zinc (8.0 mg), copper (4.2 mg) and iron (21.3 mg) content. Carrots have the highest sodium content of 84.0 mg. These fruits are cheap and rich in several micronutrients thus consuming them often will help reduce micronutrient malnutrition. They can also be processed into various forms domestically and on industrial scale for juices, soups, etc and can also be used to complement other foods to improve both nutrient and sensory attribute.

The objective of the present study was to determine grain feed quality of different broad bean cultivars and lines. For this purpose, Eleven different cultivars and five lines (Emiralem, Histal, Sorgun, Kitik 2003, Sakiz, Eresen 87, Sevil, Reina Mora, Filiz 99, Salkim, Luz De, Otonoto, Seher, EU 4446, Canakkale, Antalya, EU319) were used as the plant material. Experiments were conducted in randomized blocks design with three replications. Effects of genotypes on grain feed quality were found to be highly significant (P≤0.01) Current findings revealed that crude oil content between 0.62 - 1.58%, crude ash content between 1.89 - 3.30%, crude protein content varied between 22.30 - 32.14%, acid detergent fiber (ADF) content between 7.45 - 14.94% and neutral detergent fiber (NDF) content between 16.08 - 28.05%. Seher, EU 4446, Canakkale, Antalya, Filiz 99 and Histal were found to be prominent for hight crude protein and crude oil, thus these genotypes were recommended for animal feeding.

The study aims at determining the physicochemical, proximate composition and the total viable count of Staphylococcus aureus in ‘Nono’ and yoghurt samples in Kaduna, Nigeria.Three hundred and eighty-four (384) fermented milk samples (Nono and yoghurt) were obtained from different selling points and were evaluated for the occurrence of S. aureus. The physicochemical and proximate analyses (pH, total titratable acidity, moisture content, ash content, protein content, and fat content) were determined. The results of the analyses showed that Nono had pH range of 3.56-3.61, total titratable acidity: 0.71-1.72, moisture content: 82.23-83.87%, ash content: 0.30-0.31%, crude protein content: 1.50-1.61%, crude fat content: 0.35-0.38 %. For yoghurt, the pH ranged from 3.76 -3.82, total titratable acidity: 1.10 -1.15, moisture content: 77.76-80.06%, ash content: 0.68- 0.70%, crude protein content: 3.40-3.45% and crude fat content: 1.76-1.79% from all the study areas. One hundred and four of the total samples were contaminated with S. aureus. Out of the 104 isolates of S. aureus that were isolated and identified, 88 were coagulase positive S.aureus. The Microgen Staph ID kit (Oxoid) was used to further confirm the characteristics of the 60 isolates of the coagulase positive S. aureus. The kit confirmed 43 isolates as S. aureus, the results indicated the presence of S. aureus in the milk samples which is of public health importance, as this can contribute to food-borne intoxication which can lead to food poisoning. There is a need for proper pasteurisation of raw milk to help eradicate S. aureus infection before human consumption.

SUMMARYWheat was planted at different altitudes in the Ethiopian highlands. Increased altitude led to a lower neutral detergent fibre (NDF) content and a higher in vitro organic matter digestibility (IVOMD) of the leaf blades, leaf sheaths and stems. The varieties tested did not differ in NDF content, however, because of the improved NDF digestibility of all three straw fractions. The semi-dwarf varieties had a higher IVOMD than the standard tall wheats. The local durum wheat variety showed a much higher sodium content and a more favourable Na:K ratio. Undersowing with an equal mixture of Trifolium ruepellianum (Fres.) and Trifolium steudneri (Schwf.) led to a small reduction in straw yield but increased the crude protein content of the crop residues from 2.3 to 7.1% and the IVOMD from 44 to 51% as compared to the sole wheat stand.

In the present study effect of processing treatments viz. blanching and germination on the proximate composition of Pennisetum glaucum (pearl millet) was studied. Proximate composition was analysed by the standard methods determined according to Association of Official Analytical Chemists. Results indicated that moisture content increased significantly after processing treatments. Blanching resulted in non significant increase in ash content of pearl millet grains. The crude protein content of unprocessed pearl millet was 11.55%. The crude protein content of blanched pearl millet grains was 11.27%. Crude protein content of germinated grains was found to be 12.38% as in comparison to 11.55% in unprocessed and 11.27 in blanching treatment. Crude fat content of unprocessed (control), blanched and germinated pearl millet grains were 5.36, 5.09 and 4.55%, respectively. Fiber content increased significantly after blanching and germination processing treatments. Processing treatments not only effect the nutritional composition of pearl millet but also contribute towards enhancement of shelf life.

Ladino clover grown alone and in mixture with timothy and smooth bromegrass was cut two, four and six times per season to a height of [Formula: see text] and 3 inches. Forage harvested in 1955 and 1956 from a seeding made in 1954 at the Experimental Farm, Lennoxville, Quebec, was chemically analysed.Ladino clover contained more K but less N-free extract and Ca when grown alone than when associated with a grass. Bromegrass had a higher content of crude protein, ash, P and K, and a lower content of N-free extract than timothy.Height of cutting failed to modify the chemical composition of the grasses. In the clover, close cutting reduced the fat and K contents and increased the ash content.The crude protein content increased and the crude fibre and N-free extract contents decreased in both forage fractions with increasing cutting frequencies. Fat was highest in the clover cut four times and in the grasses cut four and six times. The ash content in the clover was not significantly altered by cutting frequency but tended to decrease with increasing maturity in the grasses. The Ca content was lowest in the clover cut six times and in the grasses cut twice. In both forage fractions, the P and K contents were higher with either four or six cuttings than with two cuttings.

The present study was undertaken to study the evaluate the effect of processing of Chhattisgarh local paddy variety to flaked rice (Poha) on proximate, functional and chemical characteristics. In the proximate analysis, change in crude fat content from paddy 3.20% to 0.96% for thick and 1.00% for thin flaked rice. The change in Crude fiber content from paddy to flaked rice was found to be 2.00% to 1.85% for thick and 1.79 for thin flaked rice. Similarly, change in crude protein content from paddy to flaked rice was found to be 4.23% to 4.04% for thick and 3.76 for thin flaked rice and change in ash content from paddy to flaked rice was found to be 1.00% to 1.35% for thick and 1.24% for thin flaked rice. Chemical properties, show that amylose content from paddy to flaked rice 19.27% to 18.19% for thick and 18.26% for thin flaked rice. Similarly, change in starch content from paddy to flaked rice 74.15% to 73.89% for thick and 73.47% for thin flaked rice. Functional properties, show that Water absorbing index (WAI) from paddy to flaked rice 2.19 g/g to 5.18 g/g for thick and 5.05 g/g for thin flaked rice. Similarly, water solubility index (WSI)  from paddy to flaked rice 3.25% to 4.86 for thick and 5.09% for thin flaked rice.

Kudzu (Pueraria lobata) has become a pervasive weed in the southeast US. It has been receiving much attention recently and a study was initiated to evaluate the plant as an alternative food and feed source. Kudzu vines were sectioned into; 0-25, 25-50, 50-75 and 75-100 cm and analysed for acid detergent fiber (ADF), neutral detergent fiber (NDF), ash and crude protein content. Leaf ash content of kudzu increased while stem ash content decreased as the vine was sampled from the growing tip. Stem NDF increased from 44.4% at the 0-25 cm section to 57.83% at the 75-100 cm section of the vine, while leaf NDF declined from 52.23 to 39.01% for the same sections. The trend was reversed for ADF in the kudzu leaf and stem. Crude protein content of kudzu ranged from 18.45% at the 0-25 cm section for leaves to 7.42% for stem sections at 75-100 cm. The high crude protein content of kudzu as well as its abundance in the Southeast makes it a good feed source and a potential food source. However, further studies are needed to determine the vitamin content and digestion coefficient to ascertain its suitability as a food and feed source.
