Cooking Up Energy: A Culinary Education Program for Children with Parent Outreach

Objectives: Culinary interventions show promise in preventing obesity. The Cooking Up Energy (CUE) program aimed to improve weight status and attitudes held about healthy foods, as well as increase cooking self-efficacy and frequency of meal preparation, in children 6-12 years of age. Methods: We provided 10 one-hour long culinary and nutrition education sessions. We took pre- and post-program surveys along with height, weight, and waist circumference measurements. We invited parents to 2 evening sessions. We analyzed results for the entire group, and a subgroup of children who were overweight or obese at baseline. Results: We analyzed matched data (N = 65; 52% female; >60% minority; 43% overweight or obese). Mean BMI percentile and BMI z-score did not change significantly following program completion. However, BMI z-score in those who were overweight or obese, remained favorably constant, rather than rising. We found an increase in participation in meal preparation for all meals, along with robust attendance and favorable program evaluations. Participant cooking self-efficacy and attitudes remained largely unchanged. Conclusion: Favorable results for several factors were evident; however, they did not reach statistical significance. The program holds promise in influencing food-related behaviors that can buffer obesity risk in children; however these findings warrant further investigation.

Abstract Background Brief scales to measure parental self-efficacy (PSE) in relation to children’s obesogenic behaviours have not been developed and validated using more rigorous methodology such as invariance testing, limiting their generalisability to sub-groups. This study aimed to assess the construct validity and measurement invariance of brief PSE scales for children’s intake of vegetables, soft drinks, and sweets, and physical activity. Methods Parents (n = 242) of five-to-seven-year-old children in disadvantaged and culturally diverse settings in Sweden responded to a questionnaire in Swedish with 12 items assessing PSE in relation to healthy and unhealthy behaviours. Construct validity was assessed with confirmatory factor analysis, invariance testing compared the scales by groups of parental sex, education, and child weight status. Criterion validity was evaluated using objective measures of children’s physical activity and semi-objective measures of diet. Results Two-factor models showed moderate to excellent fit to the data. Invariance was supported across all groups for healthy behaviour scales. Unhealthy behaviour scales were invariant for all groups except parental education where partial metric invariance was supported. Scales were significantly correlated with physical activity and diet. Conclusion This study provides preliminary evidence for the validity of brief PSE scales and invariance across groups suggesting their utility for research and clinical management of weight-related behaviours.

Abstract Background Since the start of the COVID-19 outbreak, the Belgian government has implemented various infection prevention and control measures. This study assessed the extent to which the general population in Belgium adhered to these measures, and which determinants were associated with adherence. Methods We undertook an internet survey among a sample of the Belgian population, representative for sex, age, socio-economic status and province. The questionnaire included various demographic, socio-economic and health-related questions, and also drew upon the Protection Motivation Theory as a theoretical framework to measure levels of perceived severity, vulnerability, perceived usefulness of the measures (response efficacy), perceived personal capacity to adhere (self-efficacy), and past and future adherence. Data were collected in Dutch and French, the main languages of Belgium. Results Our study was carried out in September 2020, and the number of respondents was 2008. On average, respondents provided high scores for each of the measures in place in September in terms of response efficacy (range of 3.54–4.32 on 1 to 5 Likert-scale), self-efficacy (range of 3.00–4.00), past adherence (4.00–4.68) and future adherence (3.99–4.61). The measure that overall received the highest scores was wearing a face mask in public spaces, while ‘the social bubble of 5’ generally received the lowest scores. There was a statistically significant relationship between response efficacy and self-efficacy on the one hand and (past and future) adherence on the other hand, in a multivariate model corrected for confounders. Vulnerability and severity did not show statistical significance. Conclusion Risk communication regarding COVID-19 should place a stronger emphasis on helping people understand why implemented measures are useful and how they can be put into practice, more than on increasing fear appeals.

This research aims to study the direct and indirect influence of self-efficacy on organizational citizenship behavior transmitted through employee engagement, organizational commitment and job satisfaction, and to examine employee engagement, organizational commitment and job satisfaction as partial or full mediators. The study samples were 400 employees in the automobile parts manufacturing industry. The study instruments used by previous researchers were applied and back translation was conducted on all questionnaire items. Content validity and reliability was then tested prior to using them for data collection. Direct and indirect influences and mediators were analyzed with the Hayes Model 81 using the PROCESS Program. Results revealed that self-efficacy had a direct influence on organizational citizenship behavior with statistical significance, with an indirect influence transmitted through employee engagement, organizational commitment and job satisfaction. Employee engagement, organizational commitment and job satisfaction functioned as partial mediators between self-efficacy and organizational citizenship behavior with statistical significance. The model was based on the theory of self-efficacy to express organizational citizenship behavior. However, the study results showed that employee engagement, organizational commitment and job satisfaction play roles as mediators in transmission of effective organizational citizenship behavior. Therefore, these mediators are important factors that can accurately explain organizational citizenship behavior.

Purpose The purpose of the study was to evaluate a 12-week cooking education class on cooking confidence, dietary habits, weight status, and laboratory data among veterans with prediabetes and diabetes. Methods The sample for this study included 75 veterans within the Overton Brooks Veteran Affairs Medical Center who completed the 12-week class in an in-person group setting in Shreveport, Louisiana, or via Clinical Video Telehealth (CVT) in Longview, Texas. Veterans were referred to the Healthy Teaching Kitchen by their primary care provider or primary care dietitian. Enrollment in the class was on a volunteer basis. The cooking and nutrition education classes included topics such as carbohydrate counting, safety and sanitation, meal planning, and creating budget-friendly recipes. Participants completed 2 questionnaires for assessment of healthy dietary habits and confidence related to cooking. Changes in body weight, lipid panel, and hemoglobin A1C were assessed. Differences in class settings were tested via independent samples t tests. Paired samples t tests were completed to compare changes in mean laboratory results, weight, and questionnaire responses. Results Subjects lost a mean 2.91 ± 5.8 lbs ( P < .001). There was no significant difference in percent change in laboratory data and weight between subjects participating via CVT and subjects in the live class. Overall, there was significant improvement in the confidence questionnaire ratings and Healthy Habits Questionnaire responses. Conclusions Cooking and nutrition education can increase cooking confidence and dietary quality. These results provide support for the need for further research on the long-term effects of nutrition cooking education and for the benefits of using CVT software to provide education to remote facilities.

This research aimed to determine whether completers, non-completers, and non-starters of community-based offending behavior programs could be differentiated by their levels of internal “treatment readiness.” The Corrections Victoria Treatment Readiness Questionnaire (CVTRQ) measures offenders’ Attitudes and Motivation, Emotional Reactions, Offending Beliefs, and Efficacy which, according to the Multifactor Offender Readiness Model (MORM), are internal dimensions of an offender’s readiness to engage with treatment. Participants were offenders who had been court-mandated to attend a community-based cognitive skills offending behavior program. There were no significant differences between groups in respect of the CVTRQ total score. After controlling for risk of reconviction, however, the Self Efficacy construct differentiated program non-starters from program completers, while the Emotional Reactions construct differentiated program non-completers from program completers. In conclusion, the CVTRQ failed to differentiate program completion groups with the same success as elsewhere.

Introduction. English for Specific Purposes focuses on teaching and learning subject specific knowledge which includes specific language skills that particular learners need for a specific purpose. Self-efficacy is determined by subjective beliefs about one?s own abilities, which also applies to the academic setting of studying English for Specific Purposes. Academic self-efficacy represents the conviction of students about their own abilities to successfully fulfil academic tasks at designated levels. The goal of this research is to examine the degree of academic self-efficacy of medical students who learn English for Specific purposes at the Faculty of Medicine of the University of Novi Sad, with respect to their gender, year of study, grade achieved in the previous course in English, and the length of learning English before enrolling in the Faculty. Material and Methods. The study included 58 medical students. The researchers used the College Academic Self-Efficacy Scale questionnaire developed by Owen and Froman (1988) to assess academic self-efficacy. Results. Three significant factors were identified: general self-competence, communication with the professor, and attendance at lectures, with general self-competence being the most significant factor. Considering the independent variables, only the grade showed statistical significance. Establishing the grade as such a significant predictor can be explained by the fact that good grades and a high grade point average are presented as very desirable outcomes. However, a good grade does not necessarily mean having better knowledge or correct use of language. Conclusion. Further research into this topic is necessary, with expanding the number of participants, study programs and variables.

This single case study is a qualitative inquiry into the cultivation of doctoral candidates and graduates on their efficacy as leaders in using inquiry as to approach problems of practice in daily work. The study examined a doctoral program in educational leadership at one large public university in California, USA. The case study methods included artifact analysis, an examination of field notes, and semi-structured one-on-one phone interviews. The data analysis of all sources revealed three themes related to participants’ leader self-efficacy in using scholarly inquiry on problems of practice in the field. Findings indicate that the participants grew in their leader self-efficacy, transformed, and confident in their sense of self as an educational scholar-practitioner to enact change. As a result of their experience in a Carnegie Project on the Education Doctorate (CPED) program, graduate participants also highlight the focus on inquiry processes to solve problems of practice as vital to educational leadership. Conclusions highlight considerations for similar programs when evaluating how they prepare graduates to impact education beyond coursework. Further research should emphasize how programs are addressing problems of practice for social justice to impact educational leaders in the field upon program completion.

Background: Nutrition education is defined as instruction or training intended to lead to acquired nutrition-related knowledge and/or nutrition-related skills and be provided in individual. It is also demonstrably capable of improving dietary behaviour and nutrition status on its own.Methods: A prospective observational study was conducted in the urban and rural ICDS projects of Bhopal district, Madhya Pradesh from July 2014 to June 2015. Three types of instruments were used: NIPCCD Suposhan Guide, a structured questionnaire and anthropometric measurements including weight, height and MUAC. Data was entered into Microsoft Excel and was analyzed by using EPI Info version 7.Results: As per Z score 7.9% children had normal weight (Z score above -1SD), 31.7% had mild underweight (Z score between -1SD to -2SD), 40.7% had moderate underweight (Z score between -2SD to -3SD) and 19.6% had severe underweight (Z score below -3SD). Reduction in moderate underweight was from 39.2% to 33.9% and in severe underweight it was from 19.3% to 15.2% in urban area. In the rural area reduction in moderate underweight was from 44.1% to 36.6% and in the severe underweight group it was from 20.4% to 9.7%.Conclusions: In our nutrition education intervention we found that a well planned, short, simple, focused and based on locally available food items delivered with little empathy can do a lot even in weaker sections of the society.

Abstract Background Improving children's weight status through nutrition education (NE) for mothers about using pulses in complementary feeding has been demonstrated in pilot studies, but no effect on stunting was reported. The aim of the study was to evaluate the effectiveness of a 9-month pulse-nutrition education program on mothers' knowledge, attitude, and practices (KAP) towards pulses, as well as its impact on children's dietary diversity, and nutritional status. The NE was delivered by Health Extension Workers (HEWs). Methods A cluster randomized study was employed for the community-based interventional study. Twelve randomly selected villages in Sidama Zone, Southern Ethiopia were included in the study. A total of 772 mother-child pairs involved in the study; where 386 mother-child pairs in the intervention group received additional messages about pulse-cereal complementary food, and 386 pairs (the control) received only routine health education for 9 months. A survey on mothers’ KAP and anthropometric measurements of the children were taken at baseline, midline, and endline. Results At baseline and endline, maternal KAP and the dietary diversity score of the children (mean age at endline 18.8 ± 2.9 mo) were assessed. Results : Intervention mothers’ KAP improved ( p <0.001) at midline and endline compared to that of the control group, as did frequency of pulse consumption and DDS among children. At 9 months, the prevalence of stunting, wasting, and underweight was significantly reduced in the intervention group compared to the control group ( p =0.001). Conclusions NE delivered by HEWs improved KAP of mothers regarding pulse consumption and dietary diversity of children led to improved nutritional status of the children. Training HEWs on the use of pulses for CF may be an effective way to improve the health of children in Ethiopian communities.

Bentuk keluarga di Indonesia cukup beragam, namun secara garis besar bentuk keluarga tersebut dibagi menjadi nuclear family dan extended family. Kedua bentuk keluarga ini memiliki perbedaan mendasar dari anggota keluarga yang ada dalam keluarga tersebut, dimana keduanya mampu menimbulkan dinamika yang berbeda  khususnya dari ketersediaan dukungan sosial dan berdampak terhadap Parenting Self-Efficacy (PSE) ayah. Penelitian ini bertunjuan untuk mengetahui apakah ada perbedaan PSE ayah pada nuclear dan extended family yang diukur dengan menggunakan Fathering Self-Efficacy Scale (FSES), dimana desain penelitian yang digunakan adalah penelitian kuantitatif. Teknik sampling dalam penelitian ini adalah snowball dengan jumlah subjek sebesar 200 orang dan data yang didapatkan dari subjek dianalisis dengan menggunakan uji Mann Whitney. Hasil penelitian menunjukkan nilai Z= -1.273 dan p=0.216 (p>0.05) sehingga dapat diketahui bahwa tidak terdapat perbedaan yang signifikan terhadap PSE ayah pada nuclear dan extended family.  Kata Kunci: Parenting Self-Efficacy,  nuclear family, extended family There are a lot of family form in Indonesia, but the outline of that form devides into nuclear family and extended family. The basic difference of both of them is family member who existing in and causes a different dynamic spesifically the availibilty of social support, so at the end of the day it will affect on father’s Parenting Self-Efficacy (PSE). The aim of this study is identying the differences of PSE level between father in nuclear family and extended family by using a Fathering Self-Efficacy Scale (FSES) with  quantitative as a research design. Snowball is a sampling technique with 200 subjects and the data is analyzed by using Mann Whitney test. The result shows Z score=-1.273 and p=0.216 (p>0.05), therefore there is no significant differences of PSE level between father in nuclear and extended family. Keywords:  PSE, nuclear family, extended family
