The purpose of the research was to study the effectiveness of the use of rations for freshly calved cows during the increasing the milk yield period with the use of new mineral granulated complexes produced by Uralchem LLC. The results of research on the replacement of the mineral part of the vitamin and mineral premix in the rations of lactating cows with the mineral granular complex developed according to two recipes have been presented in the article. Research has shown that cows of the 1st and 2nd experimental groups during the experiment period gave more milk than their herdmates from the control group by 70,8 (P ≥ 0,95) and 106,2 kg (P ≥ 0,95). Due to the higher milk yield of animals that consumed the granulated complex, the yield of milk fat was greater than that of the control analogues by 3,21 (P ≥ 0,95) and 5,17 kg (P ≥ 0,95), protein by 2,70 and 4,30 kg (P ≥ 0,95). The milk yield of cows of the 1st and 2nd experimental groups for 305 days of lactation was higher than in the control group, respectively, by 205,3 (P ≥ 0,95) and 296,8 kg (P ≥ 0,95). In the milk of cows that consumed the granulated complex, there was a tendency for a higher content of dry matter (0,09 and 0,16 %), lactose (0,01 and 0,06 %), nonfat milk solids (0,09 and 0,07 %), ash (0,05 and 0,05 %) in comparison with analogues from the control group. A similar trend has been established between groups of cows in terms of milk density, acidity and rennet coagulability. The revenue from the sale of milk produced from cows of the 1st and 2nd experimental groups was more than in the control group for the experimental period (120 days) by 2074,6 and 3344,0 rubles and for the 305 days of lactation by 7055,4 and 9950,6 rubles.

The seasonal variability of the physicochemical parameters of milk of both ordinary goats and goats producers of a biosimilar human lactoferrin has been established. The average values of the mass fraction of fat, protein, lactose, nonfat milk solids, density index in the second and third quarters were lower than in the first and fourth quarters. At the same time, the difference between the spring-summer and autumn-winter periods in the mass fraction of fat was 25%. In the mass fraction of protein, lactose, nonfat milk solids, density it was 5–7%. Comparative analysis of milk from goats-producers of a biosimilar human lactoferrin of various lactations revealed a number of changes in the physicochemical composition of raw materials in comparison with non-transgenic animals: an increase in the mass fraction of protein by 4–6% (P˂0.05), of lactose by 2–6 (P˂0.05), nonfat milk solids by 1–6, density by 2–5% (P˂0.05), freezing temperature by 5 and a decrease in the mass fraction of fat by 5–8% (P˂0, 05). At the same time, the indicators of active and titratable acidity of milk were similar in all groups of animals. At the same time, the concentration of human lactoferrin in the milk of producers of the second and third lactation had almost identical seasonal changes in the increase and decrease in the synthesis of lactoferrin in the mammary gland during the year: in the first quarter – 2.88 and 2.97 g/l, in the second – 4.76 and 4.63, in the third – 7.44 and 7.55 and in the fourth – 7.97 and 6.72 with an average annual value of 5.84 and 5.72 g/l, respectively.

The values of freezing point, titratable and active acidities, conductivity, water activity, humidity, nonfat milk solids the of samples of market bioyoghurt were analyzed. They significantly differ from the same row milk indicators. So, they demonstrated lower values of freezing point, active acidity, water activity, humidity, and increased values of titratable acidity and conductivity, and nonfat milk solids. A large dispersion of the studied products’ properties was found for each manufacturer production as well as between producers. Yoghurts with Bifidobacterium that were produced at the Brest region had the highest values of рН, nonfat milk solids and lowest values of freezing point and humidity. This fact evidences the manufacturer has a well-established technological process for the production of bioyogurt and traceability of raw milk supply. The boundaries of the confidence intervals of physical and chemical properties both by individual manufacturers and jointly were determined. A close relationship between conductivity and freezing point in bioyoghurts of some manufacturers has been found. The dynamics of their changes in last years is traced.

The current research described the effect of neurotropic and metabolic non-hormonal biologically active medicine Nanovulin-VRKh © on the milk yield amount and the milk quality. Two cow groups were under study: the experimental and the control groups, each including four cows. The results showed that two of the neurotropic and metabolic Nanovulin-VRKh injections made 12 and 24 hours after the insemination did not effect the body thermoregulation of cows. Administration of the Nanovulin-VRKh contributes to stable fat formation in cow milk. Increased content of protein, nonfat milk solids, stable fat formation in milk were due to Nanovulin-VRKh administration. It was also established that, in the milk of experimental animals were administered the Nanovulin-VRKh, the pronounced effect of the drug on the protein, fat and nonfat milk solids content was observed, and the prolonged effect on these indices was reported during the fourth milking. Introduction of Cuprum aqua-chelate into the drug did not has toxic effect on the animal body and therefore would not effect the human health through the dairy products.

Studied level of milk production and milk quality of Holstein breed depending on origin and linear conditioning animals. Found that the largest average daily milk production of cow enough adult Danish, German and Hungarian origin surpassed the requirements of the standard breed at 7.9; 8.8 and 6.9 kg or 32.5; 29.7 and 35.1%. Their daughter exceeded breed standard at 9.2; 8.8 and 11.1 kg or 36.1; 36.0 and 40.5%, respectively.On the content of fat in milk breed standard (3.6%) match only imported cows and their daughter of Danish and German breeding. However, the import of cows from the Danish, German and Hungarian origin protein content in milk was below the standard of the breed to 0.2; 0.4 and 0.2%; animals first generation on this indicator inferior requirement standard 0.1, respectively; 0.5 and 0.8%. The fat content in the milk turned out to be higher in imported cows and their daughters Starbuck line 352790.79 (3.6 and 3.7%). On the content of protein in milk cows imported lines have supremacy Bella 1667366.74 (3.1%). Moderately high content of this component in milk observed in cows patriotic line generation Eleveyshn 1491007.65 (3.2%). The most nutritious milk from cows imported turned out to line Cheef 1427381.62 (61.2 kcal/100 g). They also differed with significant content of nonfat milk solids (8.42%). Starbuck’s daughter 352790.79 surpassed their mothers on the content of the skimmed milk residue (8.45%) is water.High in lactose different imported cows lines Cheef 1427381.62 and Bella 1667366.74 (4.63%). in turn, the only daughter of the Starbuck 352790.79 line proved to be the best on the content of milk sugar.The data obtained is cut off the opportunity to conduct breeding work to improve desired traits.
