AbstractThe main purpose of this study was to determine the chemical composition of monofloral bee-collected pollen from the coffee (Coffea robusta) plant and its pellet morphology. According to the results coffee bee pollen (CBP) has a high nutritional value. It contains a large percentage of protein, reducing sugar, and lipid. Also, vitamins (B2 and E) and minerals (K, Ca, and P) were found in CBP. In addition, the results revealed that the total polyphenols content (TPC) was 10.62 mg GAE/g dry weight (DW) and antioxidant activity (AA) of CBP was 5.52 μmol TE/g DW. Some physical properties of CBP pellet were recorded such as moisture, relative diameter, sphericity, bulk density, and colour parameters. The pollen pellet exhibits shapes of colour from light to dark yellow. These results pointed out that CBP can be used as a remarkable source of compounds with antioxidant activity and health-protective capacity for humans.

Quality of raw materials, including quartz sand and quartzite, varies from one deposit to another. Furthermore, the material quality determines in which industrial branches it can be used after certain preparation processes. Potential applications of quartz raw materials are: in the construction and refractory industry, ceramics and glass industry, then in metallurgy, foundry and also in production of water treatment filters. Geological investigations of the central Serbia region, in the Rekovac municipality, resulted in identification of occurrence of quartz sand ("Ursula") and quartzite ("Velika Krusevica"). Preliminary laboratory tests and characterization of the quartz sand size fraction -0.63+0.1 mm confirmed the possibility of applying this size fraction in the construction materials industry, while the quartzite can be used in refractory, glass and metallurgy industries. After determining the geological reserve of quartz sand "Ursula" and quartzite "Velika Krusevica", detailed investigations are required. Quality conditions from the aspect of chemical composition and physical properties of quartz sand and quartzite are mostly clearly defined by a special standard for this purpose. On the other hand, there are also application areas where standards does not exist, but users define their quality conditions. This example is with the application of quartz sand in the production of water glass. Chemical composition as well is not always the determining factor for the application of quartz raw material. For example, for quartz sand used for sandblasting, grain form is essential. From the economic analysis point of view, the prices of quartz raw materials vary depending on their chemical and physical properties. After all, what needs to be pointed out is the fact that these raw materials are very widespread in nature and that their exploitation is quite simple. After the raw material is excavated, it is stored and further sieved, washed, dried and processed according to customer requirements. All of these processes are cheaper than preparing, for example, limestone, and significaly cheaper than preparation of metal ores.

Soy milk is one alternative to cow's milk for lactusa intolerance patients. The utilization of black soy less is attention and not as popular as yellow soybean because of the color that is less interesting. Another alternative in the processing of milk is the manufacture of milk powder. Processing of instant soy milk powder using foam-mat drying method required addition of filler material ie maltodextrin and Tween 80. With the addition of proper Tween 80 concentration expected to produce more stable milk powder. The general purpose of this research is to know the effect of Tween 80 concentration variation on physical properties, organoleptic properties and antioxidant activity of black soybean milk powder. Experimental method of experimental type using Completely Randomized Design (RAL) monofactor with Factor addition of Tween 80 concentration (0, 0,25, 0,5, 0,75 and 1 percent). The product analyzed physical properties (water absorption, moisture content, solubility and settling rate), organoleptic properties and antioxidant activity. The best result of antioxidant activity was 33,70% RSA at concentration 0,25%, water absorption 2,77 ml / g at concentration 0,25%, water content, 8,98% at concentration 0,25%, solubility 84,435% at a concentration of 0.75% and a precipitation rate of 10 s at a concentration of 0.25%. While the best organoleptic test is at concentration 0.25%. The conclusions of the research on black soybean milk powder with the addition of Tween 80 concentration showed a real difference for each test conducted where black soybean milk powder with the addition of Tween 80 0.25% concentration was the best treatment.

Tempe is a traditional food from Indonesian made from soybeans fermented with Rhizopus spp. Based on the fermentation time, tempeh is divided into fresh tempeh and semangit tempe. Purpose of this study to determine the difference in chemical composition between fresh tempe flour from germination soybean (SG) and non-germination (SNG) and semangit tempe flour made from germination soybean (TG) and non-germination (TNG). Stage of the research include soybean germination process for 24 hours, making fresh tempe (48 hours fermentation), making semangit tempeh (120 hours fermentation), the process of making fresh tempe flour and semangit tempe flour. Analysis carried out on all tempeh flour includes yield, proximate, crude fiber, antioxidants and isoflavones. The process of germination of soybean as a raw material and the addition of fermentation time had no significant effect (p> 0,05) on the nutritional component, but had a significant effect (p <0,05) on the isoflavone levels and antioxidant activity of fresh tempe flour and semangit tempe flour produced. TNG has the highest levels of isidlavone daidzein and genistein, which are 432,8 and 707,8 μg / g, respectively. TNG has the highest antioxidant capacity (IC50 value of 2109 ppm) which is significantly better than SG and SNG, but not significantly different from TG.

Black chokeberry (Aronia melanocarpa) fruits are among the richest sources of polyphenols and anthocyanins in plant kingdom and suitable raw material for production of functional foods. The popularity of chokeberries is not only due to their nutritional value but also to the constantly emerging evidence for their health-promoting effects. The current study presents detailed information about the content and composition of sugars, organic acids, and polyphenols in 23 aronia samples grown under the climatic conditions of Bulgaria, in 2016 and 2017. Sorbitol was found to be the main carbohydrate of fresh aronia fruits. Its content was in the range 6.5–13 g/100 g fresh weight (FW), representing 61%–68% of low-molecular-weight carbohydrates. Organic acids were represented by substantial amounts of quinic acid (average content 404.4 mg/100 g FW), malic acid (328.1 mg/100 g FW), and ascorbic acid (65.2 mg/100 g FW). Shikimic acid, citric acid, oxalic acid, and succinic acid were found as minor components. Chokeberries were particularly rich in proanthocyanidins, anthocyanins, and hydroxycinnamic acids. The total polyphenol content of aronia fruits varied between 1022 mg/100 g FW and 1795 mg/100 g FW and ORAC antioxidant activity from 109 µmol TE/g to 191 µmol TE/g FW. We also investigated the relationship between the chemical composition of berries and chemical compositions and antioxidant activity of aronia functional drinks—juices and nectars. The differences in the chemical composition of the fruits resulted in functional foods that differ significantly in their chemical composition and antioxidant activity. Additionally, we demonstrated that temperature of juice pressing and nectar extraction has a profound effect on the polyphenol content and composition of these products. This is very important since differences in the chemical composition of raw chokeberries and variation of technological parameters during processing could result in functional foods with different chemical composition, rendering different biological activity.

Cocoa nibs ( cacao L.) are the cocoa beans after being fermented, dried, broken into small pieces, and then toasted. The cocoa nib composition is primordial for producers, industry, and final consumers because it affects the final quality of the raw material and any derivative product. The chemical composition was analyzed using , , , and Scharrer-Kurschner methods. The results showed that the cocoa nibs studied were rich in lipids (44.02 ± 5.22%), followed by carbohydrates (25.30%), raw fiber (12.85 ± 3.67%), protein (10.73 ± 1.80%), and ash content (2.58 ± 0.15%). The fatty acid profile was determined by gas chromatography and showed the presence of , , and acids. The low moisture content (4.52 ± 0.12%) and total acidity (2.25 ± 0.45 NaOH 100 g-1) contributed to the low count of microorganisms, which may give cocoa nibs a longer shelf life. Additionally, it presented high antioxidant activity, with a total content of 843.45 ± 11.85 mg acid / 100 g extract and 89.42 ± 0.02% iron reducing power.

Green and red tea due to the strong antioxidant, anti-inflammatory, anti-microbial, anti-tumor features are an intensive object of research. This article explores the chemical composition and biological activity of green and red tea of different fermentation. The preparation of aqueous extracts was implemented in household conditions, and the extraction time of release of active compounds from raw material was evaluated. The antibacterial activity was evaluated by the method in vitro. The research has shown that green tea is rich in catechins and caffeine. Red tea provides rutin and gallic acid. Green tea extracts inhibited the growth of S. aureus ir B. cereus. On the basis of the research results on the antioxidant activity, teas can be arranged in the following sequence: green > white > Oolong > red.

Isosorbide (ISB), a nontoxic bio-based bicyclic diol composed from two fuzed furans, was incorporated into the preparation of flexible polyurethane foams (FPUFs) for use as a cell opener and to impart antioxidant properties to the resulting foam. A novel method for cell opening was designed based on the anticipated reversibility of the urethane linkages formed by ISB with isocyanate. FPUFs containing various amounts of ISB (up to 5 wt%) were successfully prepared without any noticeable deterioration in the appearance and physical properties of the resulting foams. The air permeability of these resulting FPUFs was increased and this could be further improved by thermal treatment at 160 °C. The urethane units based on ISB enabled cell window opening, as anticipated, through the reversible urethane linkage. The ISB-containing FPUFs also demonstrated better antioxidant activity by impeding discoloration. Thus, ISB, a nontoxic, bio-based diol, can be a valuable raw material (or additive) for eco-friendly FPUFs without seriously compromising the physical properties of these FPUFs.
