AbstractNitrate is a chemical compound naturally present in fruits and vegetables. This study aims at assessing the nitrate levels and health risks arising from high consumption of fruits and vegetables in Bangladesh. Sixteen species of fruits and vegetables were examined for nitrates using High-Performance Liquid Chromatography with Photo Diode Array (PDA) detector. Ward’s hierarchical cluster analysis was carried out to identify the cluster of tested fruits and vegetables for the nitrate contents. A point estimate of the daily intake was applied to find the health risks that arise due to elevated levels of nitrate in fruits and vegetables. The results show that root and tuber vegetables accumulate significantly higher levels of nitrate in comparison to fruits and fruit vegetables (P < 0.05). In cluster analysis, the nitrate accumulation of fruits and vegetables show four clear clusters contributing to 29.54%, 7.17%, 4.42%, and 58.57% of the total nitrate content in the entire sample. The risk assessment of the Estimated Daily Intake (EDI) and Health Risk Index (HRI) of almost all the tested samples was in the acceptable range, except for radish, thereby indicating the acceptance of risk due to nitrate intake in Bangladesh. As nitrate may have had risk factor for health, during cultivation and storing the product should be properly monitored.

Aegean Sea albacore (T. alalunga), fresh or processed, is marketed locally in Greece or exported, mainly to Japan, Italy, Spain, and France. To provide information for consumers and biomonitoring programs and assess the potential human health risks, concentrations of mercury (Hg), cadmium (Cd) and lead (Pb) were determined in albacore edible muscle samples from two fishing grounds of the Aegean Sea, Greece via graphite furnace atomic absorption spectrometry (GF-AAS). Of the 82 individuals, 28 contained Cd and three contained Pb above the permissible limits set by the European Union (0.1 mg kg−1 wet wt and 0.3 mg kg−1 wet wt, respectively). None of the samples contained mercury above the limit (1.0 mg kg−1 wet wt). Potential health risks to human via dietary intake of albacore were estimated by the total target hazard quotients (TTHQs), which indicated that the consumers could acquire health problems due to consumption of Aegean Sea albacore. Thus consequently, concentrations of toxic heavy metals in albacore, especially mercury, must be monitored regularly and comprehensively with respect to consumer health.

The present study was conducted to assess the contamination and health risk due to the presence of pesticides in fruits and vegetables. A total of six vegetable samples, 3 fruit samples, 7 soil samples, and 6 water samples were collected from three different sampling points. High-performance liquid chromatography using acetonitrile and water solvent system was employed for the quantitative and qualitative analysis. The pesticides having the highest health risk in vegetables were Bifenthrin and Difenoconazole as their health risk index was found to be exceeding the cut off value of 1. Imidacloprid was found in all vegetable samples but had no associated health risk, as all the health risk indices for imidacloprid were below the cut off value of 1. The pesticide Glyphosate detected in only one sample had no health risk associated with it. Health risks in fruits were the highest for Amamectin, Bifenthrin, and Difenoconazole and were crossing the threshold limit of 1. The results reveal the health risk indices of Bifenthrin and Difenoconazole range from 7.8 to 12.46 in vegetables and from 2.704 to 30.454 in fruits, hence, posing a serious threat to human health. Amamectin, although detected in only fruit and water samples, had the highest health risk of 30.454. Imidacloprid and Glyphosate found in every fruit sample had no associated health risk. The results revealed the presence of pesticides in water, soil, fruit, and vegetable samples. Consumers utilizing these vegetables and fruits are under potential health risks due to the presence of pesticides in soil and water. Practical Applications. In this study, an analytical method for detecting pesticides in a variety of environmental matrices including fruits, vegetables, water, and the soil is presented and the health risk associated with the presence of pesticides in a wide range of fruits and vegetables is assessed. It is highly significant because in developing countries agricultural activities contribute majorly toward the total gross domestic product and pesticides are extensively used to control, prevent, devastate, and diminish any harmful pest that destroys crops.

Long duration spaceflight poses potential health risks to astronauts during flight and re-adaptation after return to Earth. There is an emerging need for NASA to provide successful and reliable therapeutics for long duration missions when capability for medical intervention will be limited. Clinically relevant, human placenta-derived therapeutic stromal cells (PLX-PAD) are a promising therapeutic alternative. We found that treatment of adult female mice with PLX-PAD near the onset of simulated weightlessness by hindlimb unloading (HU, 30 d) was well-tolerated and partially mitigated decrements caused by HU. Specifically, PLX-PAD treatment rescued HU-induced thymic atrophy, and mitigated HU-induced changes in percentages of circulating neutrophils, but did not rescue changes in the percentages of lymphocytes, monocytes, natural killer (NK) cells, T-cells and splenic atrophy. Further, PLX-PAD partially mitigated HU effects on the expression of select cytokines in the hippocampus. In contrast, PLX-PAD failed to protect bone and muscle from HU-induced effects, suggesting that the mechanisms which regulate the structure of these mechanosensitive tissues in response to disuse are discrete from those that regulate the immune- and central nervous system (CNS). These findings support the therapeutic potential of placenta-derived stromal cells for select physiological deficits during simulated spaceflight. Multiple countermeasures are likely needed for comprehensive protection from the deleterious effects of prolonged spaceflight.

Abstract Purpose Fermented soybean foods (FSF) is popularly consumed in the South-East Asian countries. Bacillus species, a predominant microorganism present in these foods, have demonstrated beneficial and deleterious impacts on human health. These microorganisms produce bioactive compounds during fermentation that have beneficial impacts in improving human health. However, the health risks associated with FSF, food pathogens, biogenic amines (BAs) production, and late-onset anaphylaxis, remain a concern. The purpose of this review is to present an in-depth analysis of positive and negative impacts as a result of consumption of FSF along with the measures to alleviate health risks for human consumption. Methods This review was composed by scrutinizing contemporary literature of peer-reviewed publications related to Bacillus and FSF. Based on the results from academic journals, this review paper was categorized into FSF, role of Bacillus species in these foods, process of fermentation, beneficial, and adverse influence of these foods along with methods to improve food safety. Special emphasis was given to the potential benefits of bioactive compounds released during fermentation of soybean by Bacillus species. Results The nutritional and functional properties of FSF are well-appreciated, due to the release of peptides and mucilage, which have shown health benefits: in managing cardiac disease, gastric disease, cancer, allergies, hepatic disease, obesity, immune disorders, and especially microbial infections due to the presence of probiotic property, which is a potential alternative to antibiotics. Efficient interventions were established to mitigate pitfalls like the techniques to reduce BAs and food pathogens and by using a defined starter culture to improve the safety and quality of these foods. Conclusion Despite some of the detrimental effects produced by these foods, potential health benefits have been observed. Therefore, soybean foods fermented by Bacillus can be a promising food by integrating effective measures for maintaining safety and quality for human consumption. Further, in vivo analysis on the activity and dietary interventions of bioactive compounds among animal models and human volunteers are yet to be achieved which is essential to commercialize them for safe consumption by humans, especially immunocompromised patients.

AbstractChemical contamination of foods pose a significant risk to consumers. A source of this risk is due to the consumption of products contaminated with heavy metals such as cadmium (Cd) and lead (Pb). The aim of the study was to research the levels of Cd and Pb contamination of selected species of vegetables and fruits in the form of fresh, frozen, dried and processed products. The goal was to verify which of these food groups was more contaminated with heavy metals. The study covered 370 samples of fruits and vegetables including apples, pears, grapes, raspberries, strawberries, cranberries, as well as beetroots, celeries, carrots and tomatoes. The content of Cd and Pb was determined by atomic absorption spectrometry. Quantitative results were analyzed using statistical models: analysis of variance, outlier analysis, post-hoc multiple comparison Tukey test. The tests showed that the levels of Cd and Pb concentration in samples of fresh, processed, frozen and dried fruits and vegetables varied substantially. The highest concentrations were recorded in dried products. Several fruit and vegetable samples exceeded the maximum permissible concentrations of Cd and Pb. The contamination of these products could be a significant source of consumer exposure to heavy metals when these products are a part of the diet.
