Influence of selenium source on the performance, feathering and meat quality of broilers

SummaryThe following trial was conducted to investigate the effects of Se source (inorganic sodium selenite (SS) versus organic use Sel-Plex® (SP; Alltech Inc, Nicholasville, KY, USA)) on the performance, feathering and meat quality of 900, one-day-old male broilers over a 42 day growing period. Pens (n = 20) were randomly assigned to either: Diet A (no Se; negative control), Diet B as for diet A plus 0.3 mg/kg SS (positive control), Diet C as for diet A plus 0.2 mg/kg SP, Diet D as for diet A plus 0.3 mg/kg SP and Diet E as for diet A plus 0.4 mg/kg SP. From day 1 to 28, significant (P < 0.05) treatment effects were seen for feed intake and FCR, with values for the negative control being higher than for the diets containing Se. The best FCR was recorded for the diet containing 0.4 mg/kg SP. Breast meat yield for birds fed the negative control were lower than those fed selenite or SP supplemented diets (P < 0.05). Feather measurements on d 14, 28 and 42 of age showed that, although scores became poorer with age (4.9 at 14 d, 4.6 at 28 d and 3.6 at 42 d), they were unaffected (P > 0.05) by dietary Se inclusion. Numeric trends in favour of SP were seen in cooking losses in meat chilled for 24 hours and seven days. Cooking losses in meat frozen for seven days were significantly influenced by Se inclusion, whereby values for birds fed 0.3 and 0.4 mg/kg SP were significantly lower than values for birds fed inorganic selenite (P < 0.05). Tissue Se concentrations were highest for the SP diets. Meat oxidation from the birds fed SP was lower than for the birds fed no Se or SS. The results demonstrated that SP may be more advantageous in improving certain variables of performance and meat quality compared to inorganic sources of Se.

Qualitative characteristics of breast meat of broilers fed diets supplemented with different concentrations (0; 0.3 and 0.5mg kg-1) of selenium in the form of selenomethionine and sodium selenite were analyzed. A total of 1050 one-day-old male Cobb broiler chicks were arranged factorially at random to five treatments (two concentrations x two sources + control diet without addition of selenium) with 7 replications of thirty birds each and received an isonitrogenous and isocaloric diets in all phases according to their ages (1-21, 22-35, and 36-42 days). At 42 days of age, TBARS (thiobarbituric acid reactive substances) after storage at 4ºC for one, seven and 15 days and also after 30 days under freezing temperatures (-15°C), color (CIELab), water holding capacity, cooking loss, shear force, pH and selenium concentration were determined in slaughtered birds breast meat. Results indicated that the use of selenomethionine provides less lightness and lower oxidation in chicken breast meat stored up to 15 days at 4°C. There was a positive effect of dietary different sources and levels of selenium on breast meat quality of broilers. It was observed a linear effect of dietary selenium levels on the amount of selenium deposited in the muscle, and the organic source (selenomethionine) is more effective than inorganic one (sodium selenite) for broiler meat conservation.

Selenium (Se) is able to transform from inorganic to organic forms via many bacterial species. This feature is being considered for delivering more bioavailable selenium compounds such as selenocysteine and selenomethionine for human and animal diet. This study investigated the effects of bacterial selenoprotein versus inorganic Se on the carcass characteristics, breast meat selenium content, antioxidant status, and meat quality of broiler chickens. One hundred and eighty chicks were randomly allotted to five treatments of a basal diet supplemented with no Se, sodium selenite, Enterobacter cloacae Selenium (ADS1-Se), Klebsiella pneumoniae-Selenium (ADS2-Se), and Stenotrophomonas maltophilia-Selenium (ADS18-Se). The results showed that bacterial selenoprotein has the ability to deposit more Se in the breast meat compared to sodium selenite. Both Se sources reduced breast meat drip loss, cooking loss, shear force, and 2-thiobarbituric acid reactive substances (TBARS) significantly. It also increased total antioxidant (TAC) and glutathione peroxidase (GSH-Px) in comparison with the negative control. The highest activity of (GSH-Px), catalase (CAT), and superoxide dismutase (SOD) was found in bacterial selenoprotein. In conclusion, bacterial selenoprotein is more efficient than sodium selenite in increasing the breast meat Se deposition and oxidative capacity of broiler chickens. Therefore, it can be effectively used to produce Se-rich meat as a functional food.

Abstract This study investigated the effects of encapsulated citral (CIT) and cinnamaldehyde (CIN) on growth performance, intestinal morphology and meat quality in broilers. A total of 320 0-day-age male broilers (Cobb 500) were allocated 32 pens with 8 pens per treatment. The treatments included: 1) Corn-wheat-SBM basal diet (negative control); 2) basal diet with 30 ppm avilamycin premix (positive control); 3) basal diet with 50 ppm encapsulated CIT and CIN (CCL); 4) basal diet with 100 ppm encapsulated CIT and CIN (CCH). There were no significant differences between treatments in growth performance (P &gt; 0.05) at each feeding stage. Additionally, birds had similar relative organ weights of heart, liver, spleen and bursa (P &gt; 0.05). The higher ratios of villus height to crypt depth (VCR; P ≤ 0.05) were detected in broilers fed either CCL or CCH, with an average being 14.67 and 15.13 in the duodenum, and 15.13 and 13.58 in the jejunum, respectively. Regarding meat quality, a higher pH value (pH = 6.21) in the breast was observed in 24-h post mortem chickens fed CCL (P ≤ 0.05). No significant differences of pH were detected in the breast in 96-h post mortem birds. The breast color (redness, yellowness, and lightness) in either 24-h or 96-h post mortem chickens was not significantly different among treatments (P &gt; 0.05). No change in purge loss (%) was observed in the breast after 48 h. The severity of white striping (WS) or woody meat (WB) was higher in the positive control (WS = 0.58; WB = 0.15) than in other treatments (P ≤ 0.05). In conclusion, dietary treatment with encapsulated CIT and CIN improved gut morphology and meat quality of broilers by increasing VCR in the small intestine and reducing the severity of WS/WB in the breast, respectively, without affecting growth performance.

Effect of partial substitution of crushed soybean by different portions of rape seed on yield and chicken breast quality (nutritive and technological) was investigated in the paper. ROSS 308 hybrids were used for investigations. Control group (K) was fed with standard mixture and experimental groups with mixture in which crushed soybean partially substituted by 10% (O1), 15% (O2) and 20% (O3) extruded rape seed (EZUR). Rape seed was extruded with corn germ in ratio 50:50. It was concluded that there are no significant differences in breast meat yield between control and experimental groups (P > 0.05). The changes in chicken meal had no influence (P > 0.05) on nutritive quality of breast meat (the contents on protein, connective tissue protein, free fat and total ash). Additionally was found that the technological quality of breast meat of the control and experimental groups averagely corresponds to "normal" meat quality considering the parameters and criteria for quality determination (pHu, L*, water holding capacity).

A total of 150 broiler chicks were used to determine the impact of dietary cinnamon bark powder (CBP; Cinnamomum verum) on breast meat quality, growth performance, and carcass characteristics of birds under coccidiosis, as one of the protozoan parasitic diseases. A total of 5 replicates of birds received 1 of the following 6 groups for 34 days: control groups (1 and 2) received a basal diet without the addition of CBP or salinomycin; group 3 received a basal diet with 0.066 g salinomycin; groups 4–6 were given a basal diet supplemented with 2, 4, and 6 g CBP/kg feed, respectively. On day 21, 4 × 104/100 µL of Eimeria tenella oocysts/bird were challenged, except for the negative control (NC). At the end of the experimental trial, five birds/group were sampled for carcass characteristics and breast attributes. Overall, emeriosis negatively affects slaughter body mass, carcass yield, and the majority of carcass characteristics in birds, and cinnamon can mitigate these effects. Cinnamon groups, particularly at the 2 g level, alleviated the negative effect on performance caused by coccidia infestation to the same or greater extent as the negative control and salinomycin treatment groups. Furthermore, when compared with the other experimental groups, the addition of cinnamon improved some physicochemical properties with some affecting meat quality, such as decreasing MFI and increasing toughness in cinnamon-treated groups. In summary, it can be concluded that CBP can enhance the shelf life, carcass, and quality of birds’ meat by maximizing the productive performance efficiency and breast meat productivity of birds under coccidiosis infestation. Further research is required to investigate the use of cinnamon to optimize the quality of meat and the productivity of both healthy and diseased broilers.

: In chick hatcheries, males of laying hybrids are considered to be “waste” and the majority of these males are killed just after hatching. On the other hand, the interest of consumers in products from alternative systems (organic, free-range) is increasing. The idea was to evaluate the meat quality of these males when they have access to free range because there is not such a study available. The aim of this study was to compare the physical and sensory quality of the meat of layer males with fast-growing broilers at the same age when they had both access to free range and when they were fed to 49 and 90 days of age. Slow-growing ISABROWN (IB) layer males and fast-growing Ross 308 (RS) chickens were kept in free-range conditions to evaluate carcass and meat quality at 49 days and 90 days of age. Live weight, carcass yield, breast meat yield and the proportion of abdominal fat were significantly higher (<I>P</I> < 0.001) in RS at both ages. The proportions of fat in the breast meat were significantly lower (<I>P</I> < 0.01) in IB at both ages. The value of pH 24 h was significantly higher in IB and the meat was darker (<I>P</I> < 0.001) in these chickens. The overall acceptability was significantly better (<I>P</I> < 0.01) in IB at 90 days of age. The laying males are acceptable for an alternative system of poultry meat production from the aspect of meat quality. The quality was comparable or even higher in comparison with fast-growing chickens.

A study evaluated the effects of limestone sources with different solubility on the efficacy of two phytases in broilers. A 2×5 factorial arrangement was employed with two commercial limestone sources and five diet treatments; a positive control (PC) diet with 7.2 g/kg P and 9.6 g/kg Ca, and a negative control diet containing reductions of 1.87 g/kg available P, 1.99 g/kg Ca and 0.4 g/kg Na, supplemented with either Buttiauxella phytase (PhyB) or Escherichia coli phytase (PhyE) at 500 or 1000 FTU/kg diet. The two limestone sources were feed-grade commercial products with different particle sizes and solubility (fast-soluble (FS) 100%; slow-soluble (SS) 26% soluble after 30 minutes at pH 3) containing similar levels of Ca. Diets were fed to one-day-old Ross 308 males (n=2,400) with 30 birds/pen and eight pens/treatment in two phases (starter 0-10 d and grower 10-21 d). On d 21, ileal digesta was collected from 12 birds/pen to determine apparent ileal digestibility (AID) of P and Ca, and myo-inositol hexakisphosphate (IP6) disappearance, and tibias from four birds/pen for ash determination. The SS limestone improved body weight gain (BWG), feed intake (FI) and FCR vs FS limestone in starter/grower phases (P<0.05), and improved AID of P (P<0.05) and IP6 disappearance (P<0.05) at d 21. There was an interaction between limestone and phytase on BWG, FI and FCR in the grower phase (P≤0.05) whereby FS (vs SS) limestone reduced BWG at either dose of PhyE, but only at 500 FTU/kg of PhyB. At an equivalent dose, PhyB had higher BWG and feed intake than PhyE (P<0.05). At 1000 FTU/kg, performance was equivalent (BWG and FI) or superior (FCR) to the PC, PhyB produced greater tibia ash, AID of P and IP6 disappearance (P<0.05). The findings showed that the effects of limestone particle size on phytase efficacy varied with phytase source and dose.

The aim of this study was to evaluate the effect of Tenebrio molitor larvae meal supplementation in chicken diets on the chemical composition and sensory quality of meat. The experiment was conducted on 120 Ross 308 male broilers from day 12 to day 38 of their age. Broilers were divided into three equal groups with 5 replicates per treatment. The two experimental groups received feed mixtures containing 2% (TM2; n = 40) and 5% (TM5; n = 40), respectively of yellow mealworm (Tenebrio molitor L.) meal. The third group (TM0; n = 40) was control, receiving 0% of mealworms in diet. The addition of mealworm meal to diets in this trial do not worsen the chemical composition or sensory characteristics of the thigh meat of broilers. The control chickens had a higher live weight (P < 0.05) compared to the experimental groups at the end of the trial. The lowest live weight and feed intake was determined in group TM2 (P < 0.05). The highest feed intake (P < 0.05) was found in the control group. The breast meat from the control group was rated better (P < 0.05) in flavour compared to the groups receiving 2% and 5% of yellow mealworms. The primary requirement for the use of any ingredient in feed is that it does not adversely affect food safety and quality. In our study, the inclusion of 2% and 5% mealworm meal in the broiler’s diet had no influence on meat quality.

There is a growing demand by the modern consumer for meat containing less fat and lower levels of saturated fatty acids, which are considered to increase the risk of coronary heart disease. In southern Italy, the Gentile di Puglia breed is one of the most common on farms, and the light lambs are often consumed. The study evaluates the effect of a diet containing extruded linseed (Linum usitatissimum) on growth performances, carcass traits, and meat quality in Gentile di Puglia light lambs. Thirty-six male lambs are weaned at about 20 days of age, and divided into three groups—each group is either fed a control diet (C), a diet containing 3% extruded linseed (L), or a diet containing 3% extruded linseed and 0.6% oregano (Origanum vulgare) (L + O). The lambs’ growth performances and the slaughtering and dissection data did not differ between groups. Dietary treatments have no significant effect on the quality and chemical composition of Longissimus lumborum (Ll). The mount of linoleic acid in Ll meat is significantly higher in the L group, and this positively affected the total content of n-3 Polyunsaturated Fatty Acid, as well as the n-6/n-3 ratio. The good results obtained concerning the sensory traits meet the requirements of the market’s consumer.
