One type of beans that can be used as a source of protein is the black bean (Phaseolus vulgaris. L); because it has a sufficiently high protein content of 16.6%, it has the potential to be developed into protein concentrate. This study aimed to characterize the physicochemical characteristics of black bean protein concentrate based on heating time. An experiment was carried out and arranged in a Completely Randomized Design, with four levels of treatments, i.e. heating time of 15 minutes, 30 minutes, 45 minutes, and 60 minutes. The observed variables were yield, bulk density, water absorption, protein content, moisture content, and ash content. The results showed that the yield value was 7.66 - 12.11%, bulk density 0.78 - 0.81 g/mL, water absorption 1.84 - 1.97%, protein content 71.39 - 76.00%, moisture content 11.85 - 12.94% and ash content 3.30 - 3.57%.

To evaluate DNA fragmentation and GMO quantification during soya bean protein concentrate and isolate preparation, genetically modified soya bean event GTS 40-3-2 (Roundup Ready TM soya bean, RRS) was blended with conventional soya beans at mass percentages of 0.9%, 2%, 3%, 5% and 10%. Qualitative PCR and real-time PCR were used to monitor the taxon-specific lectin and exogenous cp4 epsps target levels in all of the main products and by-products, which has practical significance for RRS labelling threshold and traceability. Along the preparation chain, the majority of DNA was distributed in main products, and the DNA degradation was noticed. From a holistic perspective, the lectin target degraded more than cp4 epsps target during both of the two soya bean proteins preparations. Therefore, the transgenic contents in the final protein products were higher than the actual mass percentages of RRS in raw materials. Our results are beneficial to the improvement of GMO labelling legislation and the protection of consumer rights.

1. Four groups of six rabbits were given purified diets in which the dietary variables were protein source (isolated soya-bean protein or cow's-milk protein) with or without saponin supplementation (10 g/kg).2. Rabbits given soya-based diets showed significantly lower serum concentrations of triglyceride and cholesterol (P < 0·01). The latter changes were confined to the cholesterol fractions of β-lipoproteins.3. These changes in serum cholesterol were associated with a significantly increased excretion of acid and neutral sterols in animals given soya-bean protein.4. There was no evidence to suggest that the effect of dietary protein source on serum lipids and the excretion of total and individual sterols was influenced by saponin supplementation.5. These results do not support the hypothesis that the hypocholesterolaemia associated with plant proteins is due to the presence of saponins.

The effects of amount and type of dietary fish proteins on plasma and liver cholesterol concentrations were evaluated in female rats. The isonitrogenous diets used contained 10 g cholesterol/kg and were carefully balanced for residual fat, cholesterol, Ca, Mg and P in the protein preparations. Cod meal, soya-bean protein or casein was incorporated into the diets as the only source of dietary protein a t three levels: either 24,48 or 72 g N/kg diet. Extra protein was added to the diet at the expense of the glucose component. In a second experiment soya-bean protein, casein, cod meal, whiting meal or plaice meal was added to the diet at a level of 24 g N/kg. When compared with casein, cod meal and soya-bean protein decreased plasma and liver cholesterol concentrations. A further cholesterol-lowering effect was achieved by increasing the proportion of either soya-bean protein or cod meal in the diet. Substitution of casein for glucose did not influence plasma and liver cholesterol concentrations. Plaice meal in the diet produced lower group mean plasma cholesterol concentrations than did whiting meal. In rats fed on the diet containing plaice meal, liver cholesterol concentrations were significantly lower than those in their counterparts fed on either cod meal or whiting meal. The present study demonstrates that different fish proteins in the diet have different effects on cholesterol metabolism and that the cholesterol-influencing properties of cod meal can be enhanced by the incorporation of higher proportions of this protein in the diet.

1. The effect of the soya-bean protein isolate and casein, both given 200 g/kg diet for 3–4 weeks, on serum cholesterol was compared in male rats.2. Soya-bean protein exerted a hypocholesteraemic effect only in a cholesterol-free low-fat (10 g maize oil/kg) diet, when the lowering action appeared independent of the strain of the rat or the feeding pattern. The results obtained with diets containing cholesterol or higher levels of fats or both showed no definite pattern of response.3. Although the decrease in serum cholesterol appeared greater in α-lipoprotiens than in β-lipoproteins, the proportion of the former to total cholesterol remained almost unchanged. The concentration of serum apo A-I was significantly lower in rats given the vegetable protein.4. Rats given soya-bean protein excreted significantly more neutral sterols.5. The serum amino acid pattern did not reflect the difference in dietary protein. Addition of cholesterol to the diets modified the serum aminogarm, the decrease in threonine being most marked in both protein groups.6. This study shows that the hypocholesteraemic action of soya-bean protein is easily modified by the type of diet.

Soy protein concentrate improves nutrient utilization and growth performance compared to soybean meal, and diets with a low crude protein (CP) level decreases diarrhoea. The objectives were to (1) test a low CP diet based on different soy products, and (2) to test a very-low CP diet (15.1%) with amino acids (AA) on diarrhoea and productivity. A total of 5,635 weaned pigs (~28 days), were assigned to five dietary treatments; PC (positive control): Standard CP levels (192, 189, 191 g/kg CP) with 2500 ppm ZnO; NC (negative control): Same as PC without ZnO; SP (Soy protein concentrate): Low CP levels (176, 174, 191 g/kg CP); SB (Soybean meal): Low CP levels (177, 176, 191 g/kg CP); and XLA (X-low CP + AA): Very low CP levels (154, 151, 191 g/kg CP) with AA. The PC and XLA diets reduced diarrhoea by 41 and 61%, respectively, compared to the NC group, while no difference between SB and SP were observed. The XLA diet reduced feed intake and daily gain compared with PC and NC, where SP, SB, and XLA had a poorer feed conversion compared with PC. Conclusively, the SP and SB low-protein diets did not reduce diarrhoea or growth performance, whereas the XLA diet decreased both diarrhoea and performance.

Two experiments were conducted to evaluate the involvement of dietary protein and short-term chilling on the incidence of diarrhea and on transit time of digesta in pigs weaned at 3–4 wk of age. The three protein sources used were buttermilk powder (BMP), soybean meal (SBM) or pea protein concentrate (PPC), which provided 85% of the dietary protein. In exp. 1, 72 pigs were exposed to a 16 °C decrease in ambient temperature for 8 h on day 4 of a 9-day feeding trial; 72 pigs were not chilled. The pigs on the PPC diet gained less (539 g) (P < 0.05) than pigs on BMP (1183 g) or SBM (952 g) although intakes were similar. Neither diet nor chilling affected fecal moisture content or the incidence of diarrhea. The PPC ration increased (P < 0.05) transit time (slowed rate of passage) on day 8. Chilling on day 4 decreased (P < 0.05) transit time (18.7 vs. 25.6 h) on that day. Neither protein source nor chilling caused differences in total or coliform bacteria isolated from fecal samples on blood agar or MacConkey's agar. In exp. 2, eight chilled and nine control pigs were euthanized and the quantity of three markers in six segments of the gastrointestinal tract was determined. The PPC diet passed more slowly than the other diets. In chilled pigs, the chromic oxide front was closer to the anus, indicating an increased rate of passage. It was concluded that the severity of the cold exposure was not suffficient to induce diarrhea and that there was no interaction between the effects of chilling and of dietary protein. There was, however, a tendency for chilling to increase the rate of passage of digesta which could have an additive effect on the severity of nutritional diarrhea.
