The mainstream of healthy nutrition during the new coronavirus pandemic is adequate and balanced nutrition based on strengthening human immunity. The authors consider the main aspects of developing theory and practice of adequate nutrition using innovative biotechnologies. Based on the St. Petersburg startup GASTROMAN.LAB there was developed new line of Bio-products enriched with probiotic cultures of microorganisms, biologically active substances of plants and prebiotics that was implemented using modern technological methods of food engineering. The recipes of original meat products of the Petersburg cuisine were used as basis for new developed recipes of bio-culinary products.

Purpose. To study and evaluate the use of vitamins and products enriched with biologically active substances by the residents of St. Petersburg. The study was conducted with the use of the questionnaire survey method of 1200 Petersburgers. Results. A third of residents (35.5 per cent) never used enriched food products in nutrition. The majority of St. Petersburgers (59.3%) when cooking do not use iodized salt or do it rarely. While the use of salt increases with the age. Inclusion of vitamins in the diet fails to be widely distributed among the citizens: monthly they are used by only 20.3% of citizen, 2 times a year - 28.2% and only during illness - 17.7%. One third of the population (33.8 percent) never takes vitamins in the form of tablets, syrups, solutions, etc. Conclusion. The analysis indicates the need to improve the nutrition of Petersburgers to reduce risk factors for diseases by improving health literacy in organized units for healthy nutrition on the base of Health Centers or clinics in St. Petersburg.

Introduction. Antioxidant system is one of the main cellular mechanisms of adaptation. It is able to neutralize the destructive effect of free radicals, both external and internal. Functional products, especially of meat origin, can provide necessary antioxidant properties. Some types of plant raw materials possess a high content of polyphenol complexes with antioxidant properties. Therefore, introduction of phytonutrients into the composition of meat products can help to expand the range of foods with an antioxidant effect. Daurian rosehip is rich in biologically active substances and can increase their safety during processing. The research objective was to study the possibility of immobilization of Daurian rosehip antioxidants by protein-lipid inclusion. Study objects and methods. The research featured fruits of Daurian rosehip, its aqueous alcoholic extract, and protein-lipid complex. Results and discussion. The article presents experimental data on the chemical composition of Daurian rosehip. The optimal method with the best antioxidant results was a microwave phytoextraction by an aqueous alcoholic solution at a power of 800 W for 6–7 min. The antioxidants were immobilized by including the protein-lipid complex into the gel. The experiment demonstrated excellent functional and technological characteristics of the resulting system. Conclusion. The research revealed the optimal modes of microwave extraction of biologically active substances of Daurian rosehip. The rosehip extract was included into the protein-lipid complex and immobilized antioxidants, thus increasing their efficiency.

Abstract Drone brood homogenate and compositions based on it are gaining popularity as functional food products and biologically active food additives. It has antioxidant, androgenic, anabolic, sedative, antidepressant, immunotropic, cosmetic and other properties. Royal jelly and drone brood have a pronounced biological activity, as they contain a large amount of decenoic acids, sulfhydryl groups, proteins, peptides and other biologically active substances. The possibility of expanding the spectrum of biological activity determines the relevance of developing a product containing a composition of drone brood and royal jelly. A significant superiority of the safety of biologically active substances in adsorbed drone brood and royal jelly in comparison with lyophilized ones was shown, which indicates the preferred method of stabilizing the combined product. The purpose of the work was to compare two technological methods for preparing a combined product. The first method consisted in the joint adsorption of royal jelly and drone brood, and the second - in separate adsorption and drying, followed by joint dry granulation of the components. It is shown that the differences in the physicochemical characteristics of products obtained by different methods are insignificant. The composition has intermediate values of physicochemical indicators between drone brood and royal jelly.

The article is devoted to the analysis of the state and dynamics of scientific developments in the field of creating products for life and health, based on hydrogels from uronate polysaccharides (HUP). The article is reflected the results of the global scientific research monitoring and their changes in the field of technologies for the creation and use of HUP. The results of a retrospective analysis of existing technologies based on poorly studied in the field of food technologies uronic acids, as glucuronic, idouronic, hyaluronic were presented. The study showed, that nowadays the industry of products with their content is acquiring market traits, although it has insufficient scientific substantiation. Development segments with widely used uronate polysaccharides – pectins and alginates – according to the types of hydrogels (swollen hydrogel, cross-linked hydrogel, xerogel) were developed. The article presents examples and identified the required properties of substances intended for immobilization or encapsulation in the hydrogel matrix of uronate polysaccharides. The basic principles of uronate polysaccharides crosslinking chains in the hydrogel phase are determined. Possible methods of biologically active substances (BAS) retention in the matrix of uronate polysaccharides to reduce the risk of premature oxidation, destruction, decomposition, decomposition, evaporation were described. The search for information allowed us to identify key technological areas for the development of scientific research on the creation and use of HUP to improve people's lives and health. The archives of the world's leading publications in the field of food chemistry, biotechnology, food engineering, chemistry of new materials, food polymers and hydrocolloids were analyzed. The authors used in their work the resources of the Science Direct search system, which made it possible to determine the most promising and modern lines of development of HUP technologies and products based on them. The analysis of technologies has shown that existing innovative technologies are formed on “basic” technologies for producing solutions of high-molecular compounds under various conditions. Active modernization is carried out in the direction of creating products with immobilized biologically active substances, as well as in attempts to compose a composition with other polysaccharides and/or peptide components. The article notes that existing technologies allow developing other technologies with the help of which it is possible to expand the field of HUP application.

Introduction. This article considers the ways to optimize the motherwort tincture formulation while reducing the content of ethyl alcohol in the finished product. Qualitative and quantitative tincture test items depending on extraction method used and extractant concentration have been studied.Aim. To study the possibility of reducing the content of ethyl alcohol in motherwort tincture.Materials and methods. Comparison of quantitative and qualitative test items of tincture samples prepared by percolation, maceration, fractional maceration, modified fractional maceration is carried out. Quantitative comparative test items: dry residue, ethyl alcohol content, microbiological purity, quantitation, qualitative reactions – the presence of phenolic compounds, flavonoids in the samples (qualitative reactions, HPLC), iridoids (TLC) was used.Results and discussion. The developed method of modified fractional maceration consists in extracting herb materials with a more concentrated extractant (in the study, 80 %, 60 %, 40 % ethyl alcohol), then the subsequent extraction of herb materials with purified water. Comparison of the presence of different classes of biologically active substances in tinctures obtained by different technological methods and in infusions is carried out.Conclusion. It has been established that the most rational method is to obtain a tincture by modified fractional maceration method with ethyl alcohol content NLT 35 % in the finished product. The obtained results can be used in pharmaceutical industry for drug production by extractive methods, as well as for studies on technology optimization for obtaining extractive drugs from medicinal herb materials.

Research is devoted to the problem of efficient use of the herbs of Salsola collina Pall. Studied and analyzed the known technological methods of processing and to obtain standardized extractive complexes. Had developed an effective method of obtaining the liquid extract. The parameters of the extraction process and the proposed complex extractant, allowing a high degree of depletion of plant material for the various groups of biologically active substances, and get the finished product with desired properties.

The identification of the diversity of microscopic fungi of lithobiont communities of the Argentine Islands in specimens collected during the 22nd Ukrainian Antarctic Expedition was the purpose of this work. Samples of rock, soil, mosses and lichens of rock micro-habitats of “Crustose lichen sub-formation and fruticose lichen and moss cushion sub-formation” were used in the work. These samples were used for extracting and cultivation of filamentous fungi on dense nutrient media. Determination of physiological and biochemical characteristics and identification of yeast-like fungi were performed using a microbiological analyser ‘Vitek-2’ (‘Bio Merieux’, France). Cultivation of microorganisms was carried out at temperatures from +2 to +37 °C. In results cultures of microscopic fungi of Zygomycota (Mucor circinelloides), Ascomycota (species of the genera cf. Tlielebolus, Talaromyces), representatives of the Anamorphic fungi group (Geomyces pannorum, species of the genera Alternaria, Acremonium, Aspergillus, Penicillium, and Cladosporium) were isolated from Antarctic samples. Microscopic fungi Penicillium spp. were dominated after the frequency in the studied samples (54.5%). Rhodotorula rubra and Candida sp. among isolated yeast fungi, and dark pigmented fungi represented by Aureobasidium pulhdans and Exophiala spp. were identified. The biological properties of a number of isolated fungi (the potential ability to synthesise important biologically active substances: melanins, carotenoids, lipids) are characterised. Mycobiota of rock communities of Argentine Islands is rich on filamentous and yeast fungi similarly to other regions of Antarctica. A number of fungi investigated are potentially able to synthesise biologically active substances. The dark pigmented species of the genera Cladosporium, Exophiala, Aureobasidium pulhdans, capable of melanin synthesis; ‘red’ yeast Rhodotorula rubra (carotenoid producers and resistant to toxic metals); Mucor circinelloides and Geomyces pannorum, lipid producers, are among these fungi. Yeast-like fungi assimilated a wide range of carbohydrates, which will allow them to be further used for cultivation in laboratory and process conditions. The collection of technologically promising strains of microorganisms, part of the Culture Collection of Fungi at Taras Shevchenko National University of Kyiv (Ukraine), is updated with isolated species (strains) of filamentous fungi and yeast – potential producers of biologically active substances, obtained within this study.
