Abstract In this chapter, the major breeding goals for each of the poultry products (eggs and meat) are discussed. An outline on how the breeding and selection methods have been developed appropriately on chicken meat (broiler) and chicken egg sectors was also presented.

Abstract Background Campylobacter jejuni is the leading cause of bacterial gastroenteritis worldwide and the main source of infection is contaminated chicken meat. Although this important human pathogen is an obligate microaerophile, it must survive atmospheric oxygen conditions to allow transmission from contaminated chicken meat to humans. It is becoming increasingly evident that formation of biofilm plays a key role in the survival of this organism for extended periods on poultry products. We have recently demonstrated a novel inducible model for the study of adherent C. jejuni biofilm formation under aerobic conditions. By taking advantage of supercoiling mediated gene regulation, incubation of C. jejuni with subinhibitory concentrations of the Gyrase B inhibitor novobiocin was shown to promote the consistent formation of metabolically active adherent biofilm. Results In this study, we implement this model in conjunction with the fluorescent markers: TAMRA (live cells) and SytoX (dead cells, eDNA) to develop a novel systematic high-content imaging approach and describe how it can be implemented to gain quantifiable information about the integrity and extracellular polymeric substance (EPS) composition of adherent C. jejuni biofilm in aerobic conditions. We show that this produces a model with a consistent, homogenous biofilm that can be induced and used to screen a range of inhibitors of biofilm adherence and matrix formation. Conclusions This model allows for the first time a high throughput analysis of C. jejuni biofilms which will be invaluable in enabling researchers to develop mechanisms to disrupt these biofilms and reduce the viability of these bacteria under aerobic conditions.

Background: Gastroenteritis caused by Salmonella spp. is mainly related to the consumption of undercooked chicken meat or raw poultry products. The objective of this study was to assess the occurrence of Salmonella spp. in chicken carcasses and giblets commercialized in Southern Chile (Valdivia city). Methodology: A total of 560 samples were collected from four supermarkets and one poultry products dealer, during two periods (autumn-winter and spring-summer periods), and analysed for Salmonella using standard bacteriological procedures. Results: Five out of 280 analyzed carcasses (1.8%) and one out of 280 (0.4%) chicken giblets were Salmonella positive. The isolation frequency of Salmonella spp. considering the total samples analyzed was 1.1%. Salmonella Enteritidis was the only serotype isolated. No significant differences (P > 0.05) in the isolation rates between the autumn-winter and spring-summer periods were found. Conclusion: Salmonella Enteritidis was isolated in low frequency from chicken carcasses and giblets commercialized in Southern Chile (Valdivia city); however, in spite of the low frequency of contaminated samples, this kind of food could be a potential vehicle of Salmonella infection to humans.

In this study, face-to-face surveys were conducted with 461 families in order to determine the consumption values of poultry products in Sivas city centre and the factors affecting them. 85.5% of the participants are in the age range of 18-54, which is considered as the active age group. The sum of high school and college graduates was found to be 68.7%. In terms of monthly food intake, the difference between the income groups was significant and the average monthly food intake was calculated as TL 595.44. In terms of the proportion of poultry products among monthly food expenditures, significant differences were determined among the income groups and the average of the participants was determined as 10.49%. The difference observed in the monthly income of the household income groups was significant, average monthly egg consumption is calculated as 34.47 Units/Month and annual egg consumption per person is calculated as 123.40 Units/year. The difference in monthly household chicken’s consumption values between income groups was found to be significant, monthly household average consumption of chicken meat is 4.13 Kg/Month, average monthly consumption of chicken meat per person is 14.89 Kg/Year. On the consumption of poultry meet, family income level, number of family members and occupational groups were effective, but these factors as well as education levels were effective on egg consumption.

Free-range chicken farming is a promising business, because the need for animal protein, especially chicken meat and eggs, is still quite high in the community. In order to meet these needs, of course, it must be balanced with an optimal maintenance process in order to produce chicken meat and eggs continuously. The problems in the field show that, the process of incubating chicken eggs is still carried out conventionally with a fairly small success rate, and the chicken egg incubator that has been made by one of the chicken breeders has very minimal technological touch, where the egg turning process is still using hands which is done regularly The unavailability of measuring and controlling the temperature and humidity of the incubator, the incandescent lamp used as a chicken egg heater still relies on a source of electricity from PLN, of course this will reduce the profit margin to be obtained. The service activity that will be carried out is the application of automatic chicken egg incubator technology with independent electrical energy sources in the form of solar power plant technology (PLTS) in the native chicken farmer business group in Sungai Ulin Village, Banjarbaru City. It is hoped that with this community service activity, the knowledge and interest of chicken breeders about the application of chicken egg incubator technology and PLTS technology will increase, so that it can save production costs and increase the amount of income.

This experiment was conducted to determine factors that influence the demand of spesial fishery product in Yogyakarta Spesial Region Province. This experiment was used freshwater catfish and tuna small fish as object of experiment. Factors involved in demand function of tuna small fish in Yogyakarta Special Region Province are own price, freshwater catfish price, rice price, soybean price, cooking oil price, chicken price, egg chicken price, goat meat price, income percapita, inhabitant of Yogyakarta Spesial Region Province, dummy variable (0=non crisis period, 1=crisis peeriod) and freshwater fish price. Factors were analyze demand function of freshwater catfish are own price, tuna small price, rice price, soybean price, cooking oil price, chicken price, egg chicken price, goat meat price, inhabitant Yogyakarta Spesial Region Province, income percapita, dummy variable (0=non crisis period, 1=crisis peeriod) and freshwater fish price The conclusion result taken out from this study may contribute fishers a contructive information to become a base of opinion on demand of fishery product in Yogyakarta Spesial Region Province.It use secondary time series datas, datas taken from the the fishery service statistic of the Yogyakarta Spesial Region Province and Biro of Statistic Center Yogyakarta Spesial Region Province, datas which are produced along the period 1980-2000. Analyze model applied here is the demand function expressed in ordinary least square (OLS) by natural logarithm (ln).The conclusion result shown that the function demand of tuna small fish was significantly influence by own price, freshwater catfish, and cooking oil price while freshwater fish, chicken meat price, chicken egg price, rice price, income percapita and dummy variabel are not influence demand function of tuna small fish significantly. Cross elasticity of freshwater catfish and cooking oil are positive so freshwater catfish and cooking oil are subtitute to tuna small fish.The conclusion result shown that the demand function of freshwater catfish was significantly influence by own price, tuna small fish price, chicken meat price, goat meat price and chicken egg price while the others factors i.e cooking oil price, soybean price, inhabitant Yogyakarta Spesial Region Province, income percapita and dummy variable are not significantly influence the demand function of freshwater catfish. Cross elasticity of chicken meat, goat meat, chicken egg, and tuna small fish are positive so chicken meat, goat meat, chicken egg, and tuna small fish are subtitute to freshwater catfish.

The study analyzes the trends in the Indian poultry products’ exports during the pre- and the post-WTO periods using the Hodrick-Prescott (HP) filtered data. The Simpson Diversity Index (SDI) was used to measure the export diversity, whereas the Revealed Comparative Advantage (RCA) and the Revealed Symmetric Comparative Advantage (RSCA) ratios assessed the competitiveness of poultry products in the international market. India has been highly competitive in the exports of hen-eggs-in-shell and eggs-dried, whereas India needs to maintain its competitive position with respect to eggs-liquid and live-ducks. India could not retain its competitive position in live chicken exports due to the rising production cost coupled with the onslaught of the Avian Influenza (AI) in the recent years. Spreading of the AI put a heavy toll on poultry exports, especially chicken meat and eggs-liquid due to a complete ban on Indian poultry products imposed by many of the importing countries. The SDI indicated that poultry products’ exports were more diversified during the post-WTO period. On the basis of the available data on the average ad-valorem applied duties faced by the Most Favoured Nations (MFN), the producers’ price in various countries for chicken meat and eggs (hen-egg-in shell) and shipping charges from India to various countries, the lucrative export destinations for such poultry products were identified.

The development of industrial production of poultry products is a permanently relevant task for all regions of Russia, including Perm Region, since chicken meat is a daily commodity of the population because of its reasonable price and high consumer properties. However, today there is no comprehensive scientific understanding of issues related to determining the competitiveness of poultry meat products, this scientific topic requires a study of the competitiveness of chicken meat products presented on the regional market. All this determines the relevance of the study. The purpose of the scientific research in the framework of this article is to assess the competitiveness of selected samples (brands) of chicken breasts sold on Perm market. When choosing the hypothesis of scientific research, the author dwelled on the assumption of insufficient coverage of the problem of increasing and calculating the competitiveness of poultry meat products in modern science. Achieving this goal the following tasks are carried out: consideration of the theoretical foundations of the competitiveness of chicken breasts; an examination of the quality of chicken breasts sold in Perm market; conducting market research on consumer preferences and determining the competitiveness of chicken breasts by value for money and using a comprehensive integrated indicator of competitiveness. The object of the research in this article are samples of chicken breast of various brands sold on Perm market. When assessing competitiveness, the selected samples were considered according to group and economic criteria, according to the “brand awareness” indicator, point scales were used. Also, in the study of chicken breast samples, organoleptic, aesthetic indicators and other criteria for competitiveness were evaluated. For the examination of chicken breast in Perm market, the breasts of the following manufacturers were purchased: JSC “PRODO Perm Poultry Factory”, LLC “Udmurt Poultry Factory”, CJSC Uralbroiler, CJSC Petelinskaya Poultry Factory, LLC Belgrankorm-Veliky Novgorod. As a result of the research, the quality was determined and the tested samples of chicken breasts were ranked, their competitiveness was calculated from the professional objective point of view of product consulting by taking into account the quality per unit of money paid, and the real state of competitiveness in this market segment was determined taking into account consumer requests.

AbstractA pandemic of Salmonella enterica serotype Enteritidis emerged in the 1980s due to contaminated poultry products. How Salmonella Enteritidis rapidly swept through continents remains a historical puzzle as the pathogen continues to cause outbreaks and poultry supply becomes globalized. We hypothesize that international trade of infected breeding stocks causes global spread of the pathogen. By integrating over 30,000 Salmonella Enteritidis genomes from 98 countries during 1949–2020 and international trade of live poultry from the 1980s to the late 2010s, we present multifaceted evidence that converges on a high likelihood, global scale, and extended protraction of Salmonella Enteritidis dissemination via centralized sourcing and international trade of breeding stocks. We discovered recent, genetically near-identical isolates from domestically raised poultry in North and South America. We obtained phylodynamic characteristics of global Salmonella Enteritidis populations that lend spatiotemporal support for its dispersal from centralized origins during the pandemic. We identified concordant patterns of international trade of breeding stocks and quantitatively established a driving role of the trade in the geographic dispersal of Salmonella Enteritidis, suggesting that the centralized origins were infected breeding stocks. Here we demonstrate the value of integrative and hypothesis-driven data mining in unravelling otherwise difficult-to-probe pathogen dissemination from hidden origins.

This research aims to identify and to analyze the variables which influenced the chicken egg demand in Magetan District and to know its elasticity. This research used descriptive and analytical method. The research location was chosen purposively in Magetan. By using 27 years time series data, this study applied Cobb Douglass demand functing with OLS method. The results showed that the price of chicken egg race, chicken meat price, rice price, population and income per capita have significant effect on chicken egg demand in Magetan District. Race egg price has inelastic elasticity since its value is negative (-0,280). Chicken meat price has subtitute elasticity since its value is positive (0,911). Rice price has complementary elasticity since its value is negative (-0,233). Income elasticity has a negative (-0,476) value means that chicken egg is an inferior good for Magetan District.

Staphylococcus aureus is gram-positive cocci that can cause foodborne illness which can be transmitted by chicken meat, both raw and undercooked; consumption of which may cause infection and/or toxicity in consumers. This current study was conducted for the detection of the prevalence of S. aureus in three types of poultry samples which included chicken meat, chicken eggs and droppings. Samples were aseptically collected from different rural and urban areas of 8 districts of Bangladesh in triplicate collection method which was conducted in the Centre for Excellence, Department of Microbiology, Primeasia University, Dhaka, Bangladesh to detect the Multi Drug-Resistant (MDR) S. aureus. Isolation was done by using 7.5% Sodium Chloride broth for enrichment and Mannitol salt agar after enriching samples in Buffer Peptone water. Antibiogram was done by using Kirby Bauer Method on Muller Hinton agar. The current study revealed 68% (17/25), 84% (21/25) and 52% (13/25) of S. aureus in chicken meat, eggs and dropping, respectively. Around 75.47% isolates (40/53) showed 100% similarity with S. aureus from the generated Dendrogram based on biochemical data. Cefixime (62.67%) showed the highest sensitivity against all of the isolates while Penicillin (86.62%) exhibited the highest resistance. Moreover, 59.62% of isolates were resistant to 5 or more drugs (Multidrug-Resistant). Poultry products such as meat and eggs were contaminated with drug-resistant S. aureus which can cause serious health effect to the consumer. The drug-resistant pathogen in droppings helps to indicate the spread of drug-resistant isolates in the environment. Therefore, proper sanitation measures should be taken to ensure the quality of the products during slaughtering, collecting eggs or disposing of poultry litter.
