Abstract Today, scientific schools have been formed to improve the recipe and technology of mayonnaise. In the present study, a byproduct of an oilseed source, namely sesame cake, containing unique antioxidant compounds, such as lignans, is studied as a biologically active additive that can be used in the place of starch and synthetic antioxidants in mayonnaise. Sesame seed purchased from local markets. Sesamol standard was obtained from Sigma Chemical Company (USA). The experimental results have shown that regarding the taste, color, mouthfeel, and overall acceptability, the samples containing 10% sesame cake powder obtained the highest score. It is therefore recommended to use sesame cake powder at the concentration of 8-10% in mayonnaise formulation. The findings of this research could be useful for food industries to improve their products qualitatively.

The authors developed composition and innovative technology of a new specialized product in the form of a biologically active additive to normalize metabolic processes in the case of the musculoskeletal system damage. They obtained specialized product through innovative tableting technology providing high consumer properties, components preservation and its active principles. The technological solutions innovativeness enables to separate composition ingredients considering its chemical and pharmacological incompatibility, and to deliver it sequentially to various sections of the gastrointestinal tract at a given speed. Glucosamine sulfate as a part of the vitamin and mineral complex combining with minerals (micro- and macro-nutrients) – manganese sulfate, calcium hydroxyapatate, cholecoleceferol, zinc and magnesium oxides – have unidirectional functional properties related to the metabolism correction in case of the musculoskeletal system damage. Clinical investigations confirmed the vitamin and mineral complex effectiveness. The diet for children 8- 14 years old has included one capsule of the specialized product additionally three times a day. Children (3-7 years old) with the long tubular bones fracture have received one capsule twice a day. Authors tested the recipe and technological production parameters at the enterprises of the company “Artlife” under the conditions of international and domestic standards including GMP and guaranteeing the quality indicators and competitiveness stability.

The perishable herb ginger (Zingiber officinale) possesses natural aroma and different biologically active components which are beneficial for our health. This can be dried for preservation in pick season for shelf-life increment. This study studied the analysis of the chemical composition, moisture sorption isotherm, dehydration kinetics of ginger for preservation. Air drying was carried out using a cabinet dryer at different temperatures and thickness. According to the sorption isotherm study, monolayer moisture content (MMC) is higher as per Guggenheim-Anderson-DeBoer (GAB) equation compared to the Brunauer-Emmett-Teller (BET) equation. Drying rate increased with the increase in temperature at constant thickness while the adverse result was found with the increase in thickness at a constant temperature. Then, powder-based drinks were prepared by using five different percentages of ginger. The preferences of consumers were measured by statistical analysis of the scores obtained from the response of organoleptic taste panel. The sample containing 1.84% ginger powder was considered the best in overall acceptability

Due to renewed interest in the cultivation and production of Italian Cannabis sativa L., we proposed a multi-methodological approach to explore chemically and biologically both the essential oil and the aromatic water of this plant. We reported the chemical composition in terms of cannabinoid content, volatile component, phenolic and flavonoid pattern, and color characteristics. Then, we demonstrated the ethnopharmacological relevance of this plant cultivated in Italy as a source of antioxidant compounds toward a large panel of enzymes (pancreatic lipase, α-amylase, α-glucosidase, and cholinesterases) and selected clinically relevant, multidrug-sensible, and multidrug-resistant microbial strains (Staphylococcus aureus, Helicobacter pylori, Candida, and Malassezia spp.), evaluating the cytotoxic effects against normal and malignant cell lines. Preliminary in vivo cytotoxicity was also performed on Galleria mellonella larvae. The results corroborate the use of this natural product as a rich source of important biologically active molecules with particular emphasis on the role exerted by naringenin, one of the most important secondary metabolites.

Bee products, including propolis, are a valuable source of biologically active substances. The most natural way to introduce propolis in the diet seems to be its addition to honey. The aim of this study was to analyze the effect of honey enrichment with propolis on the content of selected bioactive compounds, antioxidant potential, as well as sensory and qualitative characteristics of honey. On the basis of the obtained results, it was stated that the addition of propolis extract to honey contributed to a significant increase in the content of polyphenolic compounds, including flavonoids and phenolic acids, among which chrysin, pinocembrin, p-coumaric, and ferulic acid reached the highest level. The increase of antioxidant, antiradical, and reduction in activity of enriched honey was observed as a result of increasing addition of propolis extract. However, the enrichment of honey with propolis contributed to deterioration of the sensory properties. The changes in color, smell, texture, and taste were observed. The addition of propolis to honey had no significant effect on 5-hydroxymethylfurfural (HMF) and sugar content, and specific conductivity. On the other hand, a significant increase in free acidity and content of substances insoluble in water was observed. The obtained results indicate that honey supplemented with propolis extract can be an excellent source of antioxidant compounds, nevertheless, the amount of additive used is strongly dependent on changes in sensory characteristics and consumer acceptability.

Antioxidants of natural origin which are based on agroprocessing waste appear as substance with high performance properties. They have complicated structure and contain a complex of biologically active compounds. This is why research of the above is particularly relevant in current competitive market. When working with plant raw materials and isolation of valuable compounds, the urgent issue is the choice of the method (extraction method) and extractant, which will ensure a maximum release of chemically active compounds. Known solvents such as methanol, ethanol, hexane, diethyl ether, and mixtures thereof are usually used for recovery. The purpose of this research was to study the effect of selected nonpolar solvents on the phytochemical composition and the antioxidant capacity of Prunus armeniaca L. Extracts were obtained using ethanol, silicone, propan-2-ol, and mixtures of ethanol silicone and propan-2-ol with silicone. In the obtained extracts, identification of the sequestered chemically active compounds was carried out by means of chromatography, mass spectrometry, and IR and UV spectrometry, and the extracts were evaluated on antioxidant properties. Various extracts showed varying degrees of antioxidant activity in various test systems, depending on the concentration. Since various antioxidant compounds have different mechanisms of action, several methods have been used to evaluate the effectiveness of antioxidant extracts. The results showed that the test solvents play an important role in the extraction of the plant material into the component composition, as well as the antioxidant ability of Prunus armeniaca L.

Plants have been intensively used as sources of biologically active compounds. Recently, the attention was directed to spelt (Triticum aestivum ssp. spelta) as a promising source of antioxidant compounds. In the present study, the antioxidant activity and total phenolic content of Triticum spelta glycerin extracts were determined. Three different extraction techniques were performed – conventional, microwave- and ultrasound- assisted extractions. Best polyphenol content and antioxidant activity were resulted when heat reflux extraction was applied. Moreover, nourishing and regenerating cream (NRC) formulation was prepared by incorporating 1 % glycerin spelt extract. The physicochemical stability of this formulation was assessed as well as sensory and skin penetration caracteristics.The cosmetic preparation exhibited good emulsion and colour stability at all temperature tested (-10 °C; 25 °C and 40 °C) during 90 days. 85 % of volunteers assessed the skin penetration of NRC as good. The same percentage claimed pleasant odor caracteristic after application on skin. Based on these results it can be concluded that spelt is a promissing source of biologically active substances with various applications.
