This study was performed to investigate the quality of fresh wet noodles made from flour milling streams. The basic composition, texture properties, cooking characteristics, and moisture status were measured to evaluate the qualities of noodles. The results indicated that as storage time increased, the springiness of fresh wet noodles gradually decreased, but the hardness increased. Additionally, the cooking loss rate was increased obviously, and the water absorption rate generally decreased. The relaxation times T21 and T22, analyzed by low-field nuclear magnetic resonance, showed a downward trend that proton mobility became poor and bound water changed into intermediate water. Noodles made from reduction flour exhibited better quality. Compared to that with ambient temperature storage, the wet noodles under frozen storage showed better quality. The relaxation time T21, and T22 showed a positive correlation with noodle quality.

Abstract. The degree of cross-linking and curing is one of the most important values concerning the quality of cross-linked polyethylene (PE-X) and the functionality of adhesives and resin-based components. Up to now, the measurement of this property has mostly been time-consuming and usually destructive. Within the shown work the feasibility of single-sided nuclear magnetic resonance (NMR) for the non-destructive determination of the degree of cross-linking and curing as process monitoring was investigated. First results indicate the possibility of distinguishing between PE-X samples with different degrees of cross-linking. The homogeneity of the samples and the curing kinetics of adhesives can also be monitored. The measurements show good agreement with reference tests (wet chemical analysis, differential scanning calorimetry, dielectric analysis). Furthermore, the influence of sample temperature on the characteristic relaxation times can be observed.

The consumption of healthy and nutritive food (rich in proteins and low in cholesterol and lipid contents) is a preferred factor with the contemporary consumers. In addition, natural alternatives are requested to replace the additives used up to now but recently banned. To reach the above given condition, phyto-additives represent a good alternative. The aim of this study was to examine the physicochemical properties and amino acid composition of rabbit meat after the enrichment of rabbit diet with oregano, sage, and Eleutherococcus senticosus extracts, and to make a comparison with the commercial product XTRACT and control samples (without plant extracts). The addition of oregano and sage extracts as well as El. senticosus in the rabbit diet positively influenced the physicochemical properties of rabbit meat by increasing its energy value (P < 0.05 – sage). Supplementing rabbits feed with oregano and sage extracts led to an improvement on the amino acid composition (P < 0.01; P < 0.001 – serine). These findings are also supported by the good health state of rabbits. Outgoing from these results, the diet enriched with the plant extracts is beneficial for the health state of rabbits involving the nutritional quality of rabbit meat in connection with consumers.

AbstractNumerous chemically synthesized compounds are widely used in oral hygiene products. However, due to their potential risk, there is a need to improve the safety and quality of dental care by seeking alternative control agents such as those naturally found in plant materials. Here we assessed antibacterial potentials of extracts from 100 species of Korean native plants against Streptococcus mutans on cariogenesis. Among those, extracts from five plants (Arctii Fructus, Caryopteris incana, Aralia continentalis, Symplocarpus renifolius, and Lamium amplexicaule) showed a growth inhibition of S. mutans. The five extracts were further individually evaluated for their minimal inhibitory concentration and minimal bactericidal concentration. Interestingly, a synergistic antibacterial activity was observed with the combination of sodium fluoride and the plant extracts. To determine the anti-biofilm activity of plant extracts, S. mutans was treated with increasing concentrations of the extracts in the range from 1250 to 3750 µg/mL. When S. mutans was grown in the defined biofilm medium containing the individual extracts of 47 species, the biofilm amount markedly decreased compared to that of a negative control. Notably, the extract of S. renifolius significantly downregulated the gtf and spaP genes for synthesis of glucan and adhesive proteins in S. mutans, and L. amplexicaule decreased the expression of gtfD gene. Therefore, these results demonstrate that the five plant extracts modulate survival and pathogenesis of S. mutans by growth inhibition and downregulation of the gene(s) implicated in biofilm formation.

As sementes são eficientes meios de disseminação e transmissão de patógenos e, frequentemente, introduzem novos focos de infecção em áreas isentas. A utilização de extratos de plantas com propriedades antimicrobianas são alternativas ecológicas e promissoras para substituir a proteção promovida pela aplicação de fungicidas. Assim, objetivou-se avaliar o efeito dos extratos de alamanda (Allamanda blanchetti L.) e melão-de-são-caetano (Momordica charantia L.) sobre a micoflora e a germinação de sementes de Caesalpinia ferrea. Para tanto, utilizaram-se lotes de sementes coletados em diferentes municípios paraibanos (Areia, Bananeiras, Conde e Remígio), os quais foram submetidos aos testes de sanidade e de germinação. Os tratamentos fitossanitários consistiram de Testemunha; Fungicida dicarboximida (240 g.100 kg-1) e extratos A. blanchetti e M. charantia nas concentrações de 10, 100, 500 e 1000 ppm. Constataram-se os fungos Aspergillus flavus, A. niger, Cladosporium sp., R. stolonifer, Penicillium sp. e Nigrospora sp. nas sementes de C. ferrea. Os extratos de A. blanchetti e M. charantia nas concentrações de 500 e 1000 ppm reduziram a incidência de fungos. As maiores concentrações (500 e 1000 ppm) de ambos os extratos promoveram o aumento no percentual e na velocidade de germinação (IVG), bem como no comprimento das plântulas de C. ferrea.Palavras-chave: Patologia de sementes; micoflora; controle alternativo; germinação. AbstractSanitary quality of Caesalpinia ferrea seeds: incidence of fungi, control and effects on physiological quality with the use of plant extracts. Objectives: The aim of this research was to optimize the parameters for the vacuum impregnation of aloe vera into dried yacon (Smallanthus sonchifolius Poepp. & Endl.) flakes. Methodology: A surface response methodology was use to evaluate the product optimization. Matrix engineering, using a vacuum impregnation technique, was employed to incorporate components with physiological activity into the pores present in the yacon flakes. An orange pulp yacon was used as the starting material and Aloe Gold Seal-Natural 200X (AGS) was used for the impregnate solution. A solution of 15 g/100 ml Natural aloe 200X Gold Seal-yacon was used to impregnate yacon samples measuring 40 mm in diameter and 5 mm thick. The results show an average impregnation of 0.0721 m3 of solution/ m3 fresh fruit and an effective porosity of 18.97%; the amount of aloe vera incorporated in the food matrix was between 22.5 and 54.6 mg/100g sample. Optimized parameters were identified as 451.777 mbar and 22.0711 minutes. Results: From the results, it is concluded that yacon is an excellent raw material for vacuum impregnation of  aloe vera.
