Lahat is one of the Robusta coffee production centers in South Sumatra. The coffee beansproduced by this district are often used as raw material in the coffee shop in Palembang because of thedistinctive taste and aroma that coffee lovers love. Coffee shops opens new opportunities for Robustacoffee farming. This study aims to analyze the flow of the supply chain and the added value of Lahatcoffee beans used by coffee shop. This research was conducted through a survey of four coffee shops inPalembang. The results showed that there are two supply chain lines, (1) coffee farmers - collectors -retailers - market traders - consumers; (2) coffee farmers - processors - coffee shops - consumers. Thesecond pattern is better and more profitable than the first pattern because the quality of the coffeeproduced is higher. The average added value obtained from processing one kilogram of coffee cherriesinto ground coffee is Rp. 158,132.94, coffee bean into green bean is Rp. 427,798.55, and green beaninto a cup of coffee is Rp. 1,029,269.00. This value indicates that processing the coffee cherries intopowder and processing the selected coffee cherries in coffee shop are profitable.

Organic cheeses are value added products that provide small dairy farmers with a viable source of income and has the potential to revitalize farms, provide new jobs, and develop new cheese varieties with unique flavours for consumers to experience. Production of hard organic cheese must comply with organic standards and regulations of organic production. Whole organic milk that does not contain residues of pesticides, hormones and antibiotics represents a quality raw material for hard organic cheese with added value. Together with the existing, producers develop and create new technologies and new branded products which are more original and recognizable. The goal of any technology is obtaining technologically reproducible protocol and constant uniform quality of the cheese with desired properties. In this paper some variables which influence quality of organic hard cheese were investigated. Tested samples of hard organic cheese from different production time showed consistent quality and obtained parameters followed the standards of full-fat hard cheeses.

This study models the purchasing behavior of specialty coffee by 114 coffee shops across 15 cities in nine states in Mexico. Simple and multilevel mixed-effects logistic models are tested. Our models extend the framework used in prior research. We model the purchase of specialty coffee as a function of: (a) material attributes, (b) symbolic attributes, (c) coffee shop characteristics, (d) profile of the coffee shop’s owner, and (e) socio-economic variables of the cities where the coffee shops were located. Overall, our results are consistent with expectations developed from the coffee literature. That is, the likelihood of purchasing specialty coffee increases when: coffee’s aroma drives the purchase, coffee purchased is from the state of Oaxaca, the coffee shop has a value-added business model, the coffee shop is diversified selling both ground coffee and coffee drinks, the coffee shop owner’s knowledge on coffee supply chain activities is high, and the coffee shop is located in a city with a higher education index. In contrast, the likelihood of purchasing specialty coffee decreases when a coffee professional tastes the coffee before the purchase, when coffee shops are not given the opportunity to roast their own coffee, and in coffee shops located in larger cities. Overall, our research suggests that the specialty coffee niche in Mexico has some elements required for this segment to transition from a supply chain approach to a value-based supply chain approach. This might be particularly beneficial for smallholder coffee growers, who despite several constraints contribute to the sustainability of coffee supply chains.

The objective of this research were to determine the supply chain of robusta coffee the added value of each element of the robusta coffee supply chain, and to make alternative policy recommendations to increase the added value of farmers in the Munduk Temu Village, Pupuan, Tabanan. This research was conducted from April to June 2018. This study used a survey method with questionnaire, and used the Hayami method to determine the value added of each element of the supply chain. Alternative recommendations were determined by using the AHP method. There are 3 patterns of robusta coffee supply chain in Munduk Temu, Pupuan, Tabanan : pattern I farmers - processing factories - traders, patterns II farmers - brokers - processing factories - traders, and patterns III farmers - middlemen - collectors - processing factories - traders. The flow goods from farmer and end at the trader, while the money and information flow from traders and end at the farmer. The added value in supply chain pattern I was Rp.4,066/Kg Ose, Rp.4,540/Kg Ose on chain pattern II, and Rp.2,322/Kg Ose for chain pattern III. The value received by each element of the supply chain was Rp.422/Kg Ose for chain I farmers, Rp.446/Kg Ose for chain II farmers and Rp. 451/Kg Ose for chain III, Rp.450/Kg Ose for chain II middleman, Rp.903/Kg Ose for chain III middleman, Rp. 2,944/Kg Ose for processing mills, and Rp.700/Kg Ose for traders. Alternative recommendations for increasing the added value of robusta coffee by using AHP analysis showed that the criteria of post-harvest processing with alternative dry-processing methods and indicators ose coffee were the priorities that play an important role in increasing the added value of robusta coffee at the farm level. Coffee is a superior commodity in Temanggung Regency. Post-harvest processing affects the quality of a coffee product. The Robusta Temanggung Coffee Geographical Indication Standard governs the standard of processing. This research aims to analyze the attitude of robusta coffee farmers towards GIs based coffee processing standards. The study uses a descriptive method. The respondents were 80 robusta coffee farmers in Temanggung Regency. Questionnaires are structured using a Likert scale. The data collection using random sampling techniques.  The data analysis using the scoring method. The results showed that farmers had a good attitude towards GIs-based coffee processing standards, agreeing to GIs based sorting, drying, and storage processes. Farmers have not been motivated to measure coffee bean water content according to GIs standards due to facility constraints. Intensive education, motivation, facilities, and mentoring are required for farmers to implement GIs-based coffee processing standards.

This study aims to analyze the flow pattern of supply chain of jackfruits, supply chain performance, supply chain efficiency, and calculate the added value products of Jackfruits chip in Panda Alami Agroindustry.  This study is conducted purposely in Panda Alami Agroindustry in Gedong Tataan Sub-district of Pesawaran District. The data is collected in Februari 2017, performance measurements are made by comparing measurement indicators with FoodSCOR Card indicators.  Efficiency calculations are performed using a software deap 2.1, the calculation of value added is done by Hayami added value method.  The result showed that the flow pattern starting from the farmers as the main raw material supplier.  The performance of the supplier of Panda Alami Agroindustry was good, based on compared value of FoodSCOR card. Efficiency measurements indicated that only 37.5 percent of supply chain actors were already efficient for DMU farmers’ category, and 100 percent efficient for retail and agroindustry category.  The calculation of the added value of jackfruits chips of Panda Alami Agroindustry showed positive value, it meant that agroindustry was feasible to be developed.Key words: added value, agroindustry, efficiency, farmers, jackfruits, performance

The value added is the value of a product that occurs due to different stages of activity conducted on the product. Cooperative Of Coffee Producers Margamulya(CCPM) is one of the producers of java preanger arabica coffee which performs the stages of activity causing transformation of product form, start from cherry to green bean with PT Taman Delta Indonesia as marketing channel. Therefore interesting to be studied a) coffee supply chain of PKPM; and b) The difference of value added that occurs between the farmers who do and do not do the processing of horn skin. The method used in this research was qualitative method by using value added analysis. The result show that in KPKM’s supply chain, with PT Taman Delta Indonesia as marketing channel, KPKM’s source of raw material are members that supply cherry and processer members that supply horn skin. The value added that obtained by members that sell cherry to KPKM’s are Rp4.558,00. The value added that obtained by processer members that sell horn skin to KPKM’s are Rp5.036,74. Members who do the processing of horn skin before selling to KPKM get higher profits because in addition to profit that gained from selling cherry, processer members get value added due to product transformation.Keywords : java preanger arabica coffee, value added, supply chain

The Philippine coffee industry is beset by a multitude of problems: declining land area planted to coffee, poor quality of coffee beans due to poor farm practices, and low productivity of coffee farmers who are unable to earn enough commensurate to their hard labor. As a result, Philippine coffee bean production has been on a decline for over a decade, in spite of the increasing local demand for coffee. In this paper, we illustrate how the different challenges faced by the Philippine coffee industry are closely interlinked, but are inadequately addressed by the fragmented efforts undertaken by government and the private sector. Utilizing a single-case (embedded) study research design, we demonstrate that a holistic and collaborative approach that targets critical leverage points in the coffee supply chain might be a viable approach to address the systemic nature of the problem. The case of Bote Central, particularly its Kape’t Buhay Program, highlights the importance of having a mechanism that effectively coordinates the efforts of the various players in the coffee supply chain towards a clear and compelling goal.

Abstrac The accounting system is a tool used to organize or collect, collect, and conduct information regarding all company transactions, where employees, company activities, materials and machines can be integrated in such a way that supervision can be carried out. This study aims to find out how to analyze information systems and internal control of raw material supplies at the Ledokan Coffee shop in Binangun Blitar. The data used are qualitative data in the form of some basic analysis from field interviews. The results showed that the Ledokan Coffee Shop has good supply chain management capabilities as evidenced by the existence of suppliers who have long-term cooperative relationships with them. Data yang digunakan adalah data kualitatif berupa beberapa analisis yang mendasar dari wawancara dilapangan. Hasil penelitian menunjukkan bahwa Kedai Kopi Ledokan memiliki kemampuan supply chain management yang baik yang dibuktikan dengan adanya pemasok yang memiliki hubungan kerjasama jangka panjang dengan mereka. In palm oil supply chain (POSC) the smallholder farmers sell their fresh fruit bunch (FFB) to Palm Oil Mills through traders. Palm Oil Mills convert the FFB into crude palm oil (CPO). CPO is sold to the refinery, who converts CPO into frying oil and sends the product to the distributors. The distributors subsequently sell them to the consumers. Each member of the POSC will try to optimize its added value. The aim of this paper is to develop an added value formulation as a function of risk, investment and technology levels of each of the POSC member. To facilitate fair distribution of rewards a concept of added value utility based on rsk, investment and technology level was introduced. To optimize the added value distribution between the members the concept of stakeholder dialogue was used. The selling prices were negotiated between the actors until each reached a satisfactory value, which was ruled by the levels of optimum added value utility. This research is important because the developed model can facilitate a better formula to calculate the fair distribution of added values, therefore ensure its sustainability and improve the total supply chain added value.Keywords:Utility, Value Added, Palm Oil Supply Chain, Exponential FunctionAbstrakPada suatu rantai pasok agroindustri minyak sawit (RPMS), petani menjual tandan buah segar (TBS) ke pabrik CPO melalui pedagang/pemasok. Pabrik CPO merubah TBS menjadi CPO. CPO dijual ke refinery (pabrik minyak goreng), yang merubah CPO menjadi minyak goreng, dan menjualnya melalui distributor kepada para konsumen. Setiap anggota RPMS akan berusaha untuk mengoptimumkan nilai tambahnya masing-masing. Tujuan penulisan makalah ini adalah menyusun formula perhitungan nilai tambah RPMS yang dipengaruhi oleh tingkat risiko, tingkat investasi dan tingkat teknologi yang terkait dengan masingmasing pelaku rantai pasok. Untuk mengusahakan distribusi yang adil dari imbalan maka digunakan pendekatan stakeholder dialogue. Harga jual dinegosiasikan diantara para pelaku RPMS sampai didapat suatu nilai yang memuaskan semua pihak, yang ditentukan berdasarkan utilitas nilai tambah yang optimum. Penelitian ini penting karena model yang dikembangkan dapat memfasilitasi formula yang lebih baik untuk menghitung distribusi nillia tambah yang adil, sehingga akan dicapai keberlangsungan usaha dan meningkatnya nilai tambah total dari RPMS.Kata kunci: Utilitas, Nilai Tambah, Rantai Pasok Minyak Sawit, Fungsi Eksponensial.

ABSTRACTAgroindustry is an agriculture based industry that has an important role in economic growth in Indonesia. One of the agricultural subsector is horticultural crops, namely onion. The need for onion consumption in Indonesia has always increased. In the Bengkulu city there is a company engaged in the industry of fried onions are "UD. Safari Bawang Goreng". This research is done with consideration of the company has long standing, big enough company, and produce about 336 kg/day. Fried onions are processed products that are processed from the main source of raw material is onion. The processed onion comes from Brebes Java. To know the process can be done by the method of observation, and participation. Processed red onion products produce added value that can be analyzed by Hayami method. The process of onion processing into fried onions consists of several stages, namely the provision of raw materials, onion gaebage, sorting, slicing onion, affixing onion with flour, frying, pressing, packaging. The process of onion treatment into fried onions is called value added. The added value obtained in this study amounted to Rp 9549.65 / Kg BB.Keywords: Fried Onion, Hayami Method, Added Value.
