The aim of this study was to compare the physicochemical properties and antioxidant activity of five different pomegranate cultivars. Fruit mass ranged from 109.27 to 78.07 g. Peel thickness of the fruit was recorded from 5.05 to 2.70 mm. The pH, total soluble solids content, the titratable acidity content were within the range of 4.23 to 4.36, 20.00 (◦Brix) to 14.05 (◦Brix), 0.04 to 0.007 mg per 100 g of juice, respectively. Ascorbic acid content was from 4.73 to 1.98 mg per 100 g of juice. The amount of total phenolics in pomegranate cultivars was between 6.36 and 1.78 mg GAE/100 ml. The total flavonoids content also ranged between 4.93 to 2.24 mg GAE/100 ml. The level of antioxidant activity was varied from 86.77 % to 79.54 %. Reducing sugar content ranged between 5.81 to 1.72 mg/100g. Glucose content was found from 3.48 to 1.14 mg/100g. In total based on these results, the cultivar is the main parameter which influences the physic-chemical properties and antioxidant activity in pomegranates.

Reconstituted pomegranate juice (RPJ) was thermally treated with high-temperature pasteurisation (HTP) at 95°C and mild-temperature pasteurisation (MTP) at 80°C for 30 s respectively. As a comparison, the effect on physicochemical properties, including antioxidant activities and microbial inactivation was eavluated. Both MTP and HTP showed effective inactivation of microbial growth to negligible level with MTP taking almost half pasteurisation-time (-46.3%) as compared to HTP, indicating possible less energy usage. MTP and HTP treatment delivered insignificant difference in pH, titratable acidity, total soluble solids and colour changes (ΔE) based on Commission Internationale de l’Elcairage (CIE) colour system. A significantly higher CIE a values and reduction in L and b were obtained for MTP-juice indicating an increase in red tonalities due to increase in anthocyanin contents. As for antioxidant activity and extractability of bioactive compound, interestingly HTP delivered better results due to more phenols and anthocyanin were released during the heating, leading to further release of initially membrane‐bound phenols. These findings suggested that both HTP and MTP are able to meet the microbiological safety and comparable physicochemical qualities. Nonetheless, HTP has shown higher functional values due to higher extractability of antioxidant compounds.

The objective of this study was to compare the physico-chemical properties of 10 apple cultivars grown in mid hills of India. Fruit weight, volume, size, total soluble solids (T.S.S.), total sugars, titratable acidity and ascorbic acid content were measured in the cultivars Aurora, Brookfield, Braeburn, Galaxy, Azetec, Scarlet Gala, Marini Red, Jonagold, Royal Gala and Royal Delicious. The results showed significant differences in physico-chemical attributes of apple cultivars. Among all the cultivars the maximum fruit size (50.66 mm length, 74.73 mm diameter) and fruit weight (170.12 g) were observed in cv. Royal Delicious, while the minimum fruit size (40.52 mm length, 53.03 mm diameter) and weight (110.97 g) were measured in Azetec and Aurora, respectively. The highest volume (196.79 ml) of fruit was registered in Royal Delicious in comparison to the minimum (125.75 ml) in Aurora. The maximum T.S.S. (14.27 °B) and acidity (0.717%) was noticed in Scarlet Gala and Marini Red, respectively. While the minimum T.S.S. and acidity was observed in Marini Red (11.20 °B) and Azetec (0.186%). The ascorbic acid varied from 6.07 mg/100 g in Royal Gala to 9.86 mg/100 g in Braeburn, whereas the total sugar ranged 11.36% in Royal Gala to 7.06% in Jonagold.

This study aimed at evaluating the effect of two ripening agents (calcium carbide and kerosene fumes) on the physiochemical properties and sulphide/sulphur distribution of banana fruit. Freshly unripe banana fruit were treated with calcium carbide powder and kerosene fumes and ripened within 48 hrs. Fruit samples were also ripened naturally and served as control. The samples were analyzed for physicochemical properties and sulphur/suphate distribution (outer and inner). The result of physicochemical analysis revealed a significant (p<0.05) decrease in pH (5.43-4.75), total titratable acidity (TTA) (5.03-0.47%), moisture (75.87-67.13%), carbohydrate (11.14-5.09%) and vitamin C (0.27-0.002mg/100g) with an increase in total soluble solids (2.00-19.30oBrix) following ripening process. Amongst the ripened fruits, fruits ripened with calcium carbide had highest TTA (1.63%) and moisture (74.75%). Accelerated ripened banana fruits had low pH>5 and higher TSS than naturally ripened sample. The concentrations of sulphur/sulphide (0.29-1.85mg/kg) were below the limit of 50 mg/kg indicating that the fruits were still safe for consumption against health threats posed by high concentrations of sulphate/sulphide. This study therefore quantified the changes in physicochemical properties of artificially ripened banana fruits and their possible health hazards. The study is very useful particularly in relation to the health hazards associated with chemical treatment for banana ripening. This will be useful to banana fruit sellers as it may help to           optimise the ripening practices which may lead to reduce the safety and health concerns of the consumer.

The increased consumption of acerola in Brazil was triggered because it is considered as a functional food mainly for its high ascorbic acid content, but the fruit also has high nutritional value, high levels of phenolic compounds, total antioxidant activity, anthocyanins and carotenoids in its composition. The objective was to evaluate the chemical, physical-chemical and antioxidant activity of eight varieties of acerola tree. The acerolas used in the research were the harvest 2015, 8 varieties: BRS 235 - Apodi, Mirandópolis, Waldy - CATI 30, BRS 238 - Frutacor, Okinawa, BRS 236 - Cereja, Olivier and BRS 237 - Roxinha, from the Active Bank Germplasm APTA Regional Alta Paulista in Adamantina - SP. Avaluated the following attributes: pH, titratable acidity, soluble solids, reducing sugar, instrumental color, ascorbic acid, total phenolics, flavonoids and antioxidant activity. The design was completely randomized, 8 varieties and 3 replications of 20 fruits each. Acerola fruit of the analyzed varieties prove to be good sources of phenolic compounds and antioxidant activity, ensuring its excellent nutritional quality relative to combat free radicals. The variety BRS 236 - Cereja presents higher ascorbic acid content, antioxidant activity and phenolic compounds, and the lowest value for flavonoid, which was higher than the other cultivars, especially Olivier and Waldy CATI-30.

Importance of fruits as valuable food resources, attention has been paid in recent years to study their physicochemical properties. Therefore, this investigation was undertaken to measure the physicochemical properties of the sweet orange genotype available in Bangladesh. A total of 8 genotypes including 3 released varieties (BAU Malta-1, BAU Malta-3, and BARI Malta-1) and 5 lines (CS Jain-001, CS Jain-002, CS Jain-003, CS Ram-001, and Variegated Malta) were included in this trial. Maximum average fruit weight (286.00 g), fruit size in terms of length (92.00 mm), and diameter (82.00 mm), mesocarp thickness (10.00 mm), and width of epicarp equatorial area (76.00 mm) was recorded from CS Jain-001 while the maximum number of segment (28.00), the diameter of fruit axis (23.66 mm), juice content (41.44%), titratable acidity (0.99%) and TSS: TA (33.73) was recorded from BAU Malta-3. TSS and juice pH was recorded maximum of 10.21% and 4.48, respectively in BAU Malta-1. Sugar content was found to be as follows, reducing sugar was the maximum in CS Jain-001 (3.50 %) while the highest total sugar (4.68%) was recorded in BAU Malta-1. Variegated Malta produced the maximum (48.45 mg/100 ml juice) ascorbic acid while CS Jain-001 contained maximum (8.35 mg/100 ml juice) ß-carotene. Therefore, considering fruit quality, BAU Malta-3, BARI Malta-1 can be used as fresh fruit. However, considering the fruit size, CS Jain-001 and CS Jain-002 could be used as breeding material to develop a new sweet orange variety with higher yield potential.

ABSTRACT The family farming from the Borborema Territory-PB, Brazil, produces sweet oranges that supply the regional market. In this context, it is necessary to define standards of identity and quality, as well as to quantify the bioactive compounds in the fruit, in view of adding value and creating more competitive markets. This work sought to evaluate the quality, bioactive compounds and total antioxidant activity (TAA) of oranges from family farming. A 3x3 factorial completely randomized design was used, with three cultivars (Baía, Comum, Mimo-do-Céu) and three maturity stages (predominantly green, green/yellow, yellow), with 60 replications of 1 fruit for the physical evaluations, and 4 of 15 fruit for the others. The whole fruits were evaluated by color index, length, diameter, fresh weight and firmness. The juice was assessed for yield, pH, soluble solids (SS), titratable acidity (TA), SS/AT ratio, and ascorbic acid. Total extractable polyphenols (TEP) and ABTS•+ and DPPH• total antioxidant activity (TAA) were measured in the juice and albedo. The 'Baía' and 'Mimo-do-Céu' oranges presented quality parameters aligned with the CEAGESP standards. On average, the ascorbic acid content was higher than 45 mg 100 g-1, with ‘Mimo-do-Céu’ presenting the highest content (50.26 mg 100 g-1). During maturation, the firmness decreased, and the SS, TEP and TAA of the juice and the albedo increased. In general, the TEP content was about eight-fold higher in the albedo than juice, corresponding to the much higher TAA in this portion, thereby highlighting its higher functional potential, especially for ‘Baía’ orange.

Brazil is the third largest producer of fresh fruits in the world. Among fruits, berries such as strawberry, blueberry and blackberry can be highlighted for the benefits they provide to the body, owing to their presence of bioactive compound content. The phenolic compounds, especially anthocyanins and ascorbic acid, are examples of bioactive compounds that mainly function in the body as antioxidants. However, the processing steps that lead to the generation of derivatives from these fruits, are damaging to these compounds, often leading to their loss. Thus, the aim of this study was to physically and chemically characterize fresh berries (strawberry, blueberry and blackberry) and their jams, and also to quantify and to evaluate the antioxidant activity of bioactive compounds in berries and their jams. The following parameters were analyzed: moisture, ash, pH, titratable acidity, soluble solids, and color. The levels of total phenolic compounds, total anthocyanins, ascorbic acid content and antioxidant activity were measured. We concluded that there were significant differences in the chemical composition of berries and jams. There was also a significant loss of bioactive compounds due to processing, nevertheless these jams remain good sources of bioactive compounds, and are still considered important to promote some favorable health effects.

Amomum cardamomum is a local cardamom that grows widely and recently developed as and agroforestry crops in Indonesia. Its seeds, leaves and rhizomes are sources of essential oil. Essential oils from cardamom have many benefits for health and flavouring agent. The objectives of this study were to elucidate the yield, chemical composisition, physico-chemical properties, and antioxidant activities of leaves and rhizomes oils of cardamom were distillated using water-steam distillation for 4, 6, and 8 hours. The chemical composition were analyzed by GC-MS, physicochemical properties were analyzed used ISO standard and antioxidant activity were analyzed by DPPH method. The results showed that A. cardamomun oils yield between 0.06-0.33%. The main compound in the oils is 1,8-cineole with the highest percentage was obtained from cardamom rhizomes oil was distillated for 6 hours (60.63%). The results of each sample almost have the same quality with specific gravity between 0.899 – 0.909; refractive index between 1.476-1.478; optical rotation between (+)2.05⁰-(+)2.38⁰; miscibility in 70% alcohol between 1:7-1:9; and acid number between 0.49-0.69. The leaves and rhizomes oils of A. cardamomum showed potent antioxidant activity with the highest antioxidant were obtained from cardamom rhizomes oil were distillated for 8 hours with IC50: 0.039 g/ml.

ABSTRACT Mangaba is a widely-consumed fruit in the Northeast of Brazil, which is usually exploited through extractivism. This fruit is rich in various nutrients, especially in vitamin C, with pleasant taste and aroma. The lyophilization process transforms these fruits into amorphous powders, which must be analyzed regarding their properties and hygroscopic trend. Thus, the objective of this study was to characterize and evaluate the physico-chemical properties of adsorption isotherms of the lyophilized ‘mangaba’ pulp powder, with addition of maltodextrin (DE 20). The pH, titratable acidity, soluble solids, ascorbic acid and water activity were analyzed. Regarding the isotherms, the mathematical models of GAB, BET, Oswin, and Henderson were used at temperatures of 25, 30, 35 and 40 °C. The obtained powder presented pH of 3.14, titratable acidity of 1.95 mg of citric acid 100g-1 of powder, soluble solid contents of 99 ºBrix, ascorbic acid content of 55.97 mg 100g-1 and water activity of 0.16. Henderson was the mathematical model that best fitted the data of the adsorption isotherms at the four evaluated temperatures, with average errors ranging from 5.76 to 9.70% and R2 from 0.9974 to 0.9995.

The experiments were carried out to assess the quality of mango at different ripening stages. The two factor experiment was laid out in completely randomized design (CRD) with three replications. The experiment comprised four varieties, viz., V1: BAU Aam-1, V2: BAU Aam-6, V3: BAU Aam-7, V4: BAU Aam-8 and five ripening stages. Among the attributes total weight loss, dry matter content, total soluble solids (TSS), sugar content (total, reducing and non-reducing), disease incidence increased, while the moisture, vitamin C contents and titratable acidity decreased with the increase in duration of storage. Among the four varieties, BAU Aam-6 showed better results in relation to the most of the characters examined. Ripening stage-5 of mango fruit was observed to be the best among the five ripening stages in relation to the most of the chemical characters examined. Finally, it can be concluded that the results of this experiment will be useful with particular reference to quality control, preparation for transportation and marketing, and will also be beneficial for both the growers and consumers.J.
