Abstract The evaluation of antioxidant potential of food has received much attention in recent years. Antioxidant compounds can scavenge free radicals and thereby can protect the human body from free radicals. This study was focused on the isolation of curcuminoids from the dried turmeric rhizome, and studying their antioxidant activity. The presence of curcuminoids was identified in turmeric sample by Nuclear Magnetic Resonance (NMR) analysis. Since neutral curcumin is known to be poorly soluble, the synthesis of curcumin-cyclodextrin and curcumin-phospholipid complexes was also performed. The antioxidant activity of isolated curcuminoids was assessed by two methods (ABTS and FRAP assay) and their scavenging activities were compared with those of prepared complexes. The ability to reduce ABTS radical cation decreased as follows: quercetin > trolox > curcuminoids > curcumin-cyclodextrin complex > curcumin-phospholipid complex. The reducing potential of tested samples in descending order was quercetin > trolox > curcumin-cyclodextrin complex > curcuminoids > curcumin-phospholipid complex.

Beer is one of the most consumed drinks around the world, containing a variety of compounds that offer both appreciated sensorial characteristics and health advantages. Important healthy compounds in beer are those with antioxidant properties that attenuate the content of free radicals produced as by-products in the human metabolism, exerting an appreciable effect against cancers or cardiovascular diseases. This work details a study of antioxidant compounds present in beer, focusing on the two main groups: phenols (including polyphenolic forms) and melanoidins, formed specifically during brewing as Maillard products. The fundaments of the most important methods to evaluate beer antioxidant activity, the main antioxidant compounds present in beer—especially those with healthy properties—and the new trends to increase beer antioxidant activity are also discussed.

The composition and content of individual phenolic compounds in various fruit wines and overall antioxidant properties of these fruit wines were studied. Phenolic compounds were separated by reverse phase (RP) HPLC techniques, and their content was determined by means of mass spectrometer (MS) with triple quadrupole (TQ) analyser, which recorded specific precursor-product transitions. Antioxidant activity was monitored by the following spectrophotometric methods: DPPH, FRAP and Folin-Ciocalteu assay, respectively. Four types of berries (raspberry, blackberry, chokeberry and blueberry), one type of pome (apple) and one type of stone fruit (cherries) were used for the production of fruit wines. Corresponding fruit wines were produced by microvinification with or without adding sugar into the must before fermentation. Increase in alcohol level was responsible for the increased content of phenolic compounds in fruit wine due to improved extraction conditions. Produced fruit wines were preserved by adding SO2 which interferes with the determination of antioxidant activity of phenolic compounds. In this case, the development of a correlation method based on FRAP assay was introduced. Fruit wines are a rich source of substances which show beneficial effects on human health. Depending on the fruit type, different antioxidant compounds were predominant in wine samples.

AbstractThe purpose of this study was to investigate the biological properties of an extract obtained from the waste of blueberry fruit. The study covered the optimization of extraction of antioxidants from blueberry pomace and the determination of antioxidant properties of the extract using HaCaT as the model organism. Research showed that the yield of antioxidants extraction from blueberry waste was dependent on the applied extraction conditions. Based on the mathematical models, the optimal conditions of extraction process in which the maximum quantity of antioxidant compounds is achieved from the waste mass unit, i.e., the relation of the waste mass to the volume of ethanol equal to 1:17.36, and process time equal to 1000 s. The obtained extract was characterized by high antioxidant activity, which was shaped by high content of polyphenols, mainly anthocyanins. Moreover, the extract showed a high ability to protect HaCaT cells from the occurrence of oxidative stress induced by H2O2. Cells treated with the extract and H2O2 generated a lower amount of ROS than cells treated with H2O2 only. The obtained results will be base of further studies on applying the extract in production of diet supplements and functional foods with increased antioxidant activity. Moreover, the main research material is blueberry pomace which is a troublesome waste material for juice producers. Consequently, according to a sustainable development idea, the study results will provide an opportunity to increase interest in the problem of rational use of the waste material to a certain extent.

Determination of antioxidant activity is one of the key elements for understanding the biological properties of a widely used spice onion (A. cepa). In contrast, physical properties help understand the textural quality of onion necessary for postharvest operations of sorting and grading in particular. Considering the physicochemical importance of onion, the present study focused on the determination of physical attributes and antioxidant content of the onion germplasm in Bangladesh using visual methods and 2,2-diphenyl-1-picrylhydrazyl (DPPH) assay, respectively. The five-onion germplasms (BARI Piaz-2, BARI Piaz-3, BARI Piaz-4, BARI Piaz-5, Faridpuri Vati) collected from selected onion growers of the Department of Agricultural Extension (DAE) of the southwestern part of Bangladesh were used as treatments for physicochemical analysis at the Horticulture laboratory of the Agrotechnology Discipline, Khulna University, Khulna, Bangladesh during the period from February to August 2019. The laboratory study was laid out in Completely Randomized Design (CRD) with three replications. Most of the physical characteristics of onion were highest in germplasm-1 than those of the other germplasm tested. The results showed that the DPPH free radicals were scavenged by all onion germplasm extracts in a concentration-dependent pattern. The highest IC50 value (238.10 ppm) was noticed in germplasm-3 and the lowest in germplasm-5 (161.29 ppm) with no statistical difference from germplasm-4 (172.41 ppm). The lower IC50 value indicating that onion germplasms-5 and -4 extracts were more potent in scavenging free radicals than the other onion germplasms. Thus, the low IC50 value facilitated the germplasm-5 and -4 to be enriched with antioxidant compounds significantly in higher amounts than the others. SAARC J. Agric., 19(1): 113-123 (2021)

The effect of bacteria (Bacillus clausii) addition on the culturability and antioxidant activity of resveratrol prepared by spray drying was studied in this work. Inulin and lactose were employed as carrying agents and their performance compared. Resveratrol microencapsulated in inulin showed the highest antioxidant activity (26%) against free radicals. The co-encapsulated materials (bacteria and resveratrol) in inulin and lactose showed similar activities (21%, and 23%, respectively) suggesting that part of resveratrol was absorbed by the bacteria. Particles showed a regular spherical morphology with smooth surfaces, and size in the micrometer range (2–25 μm). The absence of bacteria in the SEM micrographs and the culturability activity suggested the preservation of the organisms within the micro and co-microencapsulated particles. The present work proposes the preparation of a functional food with probiotic and antioxidant properties.

Curcumin, a hydrophobic polyphenol derived from rhizome (turmeric) of the herbCurcuma longa, have been shown to exhibit antioxidant, anticarcinogenic anti-inflammatory, antimicrobial and nephroprotective activities,et al. Among these, its potent antioxidant activity is worthwhile of special attention, because oxidative stress is involved in the pathogenesis of cancer, neurodegenerative diseases,et al. This review focuses on the ways that curcumin exerts its antioxidant activity, including direct chemical reaction with free radicals, chelation with metals ions which results in oxidative stress, regulation of antioxidant-related enzyme activity and gene expression. Meanwhile the disputed chemical antioxidant mechanism is also discussed.

Free radicals are one of the cause of various diseases. The use of synthetic antioxidant compounds could prevent the effect of the free radicals, however may cause adverse effects on the human body such as impaired liver, lung, intestinal and poisoning. Therefore antioxidant from natural resources needs to be developed. The purpose of this research was to determine the antioxidant activity and IC50 value of the ethanol extract of ganitri (Elaeocarpus ganitrus Roxbs.) leaves. Ganitri leaf ethanol extract activity test was carried out using DPPH method with vitamin C as a standard. Antioxidant activity was determined as a decreas in the absorbance of DPPH at 517 nm wavelength after an addition of the extract with the concentrations of 20, 40, 80, and 100 ppm. The antioxidant acitivity measurement of the ganitri leaf extract showed that the linier regression equation obtained was y = 0.3669x + 29.546, r = 0.4573 while the IC50 value was 54,12 ppm. Based on the result, it is concluded that the ethanol extract of ganitri (Elaeocarpus ganitrus Roxb.) leaf showed was categorized as strong antioxidant.

Peach is a medicinal plant which has many traditional applications uses against various diseases. In this study we have evaluated differences in tannins and flavonoids in the composition of flowers and peach leaves and their antioxidant properties. Antibacterial activity of the peach flower and leaf extract was investigated using Mycobacterium tuberculosis and E. coli by the disk diffusion method. Total fractions of flavonoids and tannins were obtained using ethanol and aqueous extraction, respectively. The antioxidant activity was evaluated using the adrenaline autooxidation test. The results have shown that the peach flower extract contains many flavonoids, tannins that probably account for better antimicrobial effects as compared with the peach leaf extract. This shows perspectives for the use of peach flowers for the treatment of many diseases, especially for tuberculosis, and other diseases associated with overproduction of free radicals.

Substances inhibiting or preventing oxidative damage in the target molecule are called antioxidants. It has been shown that antioxidants are substances that contribute to the prevention of a number of serious human diseases, and antioxidant activity is one of the important parameters for the quality of food products and ingredients. Phenolic compounds are of greatest importance for this review. It is now established that whole grain cereals contain a large number of bound polyphenols. It is known that cereals have high nutritional value, contain unsaturated fatty acids, basic mineral elements, proteins and β-glucans, and are also characterized by the presence of various chemical substances with antioxidant properties. In recent years, work has begun in some Western countries to study the content of antioxidants in various grains. In Russia, only a small amount of work has been devoted to the study of these important chemical compounds in grain crops. It should be noted that, although these species are considered to be one of the main components of human nutrition, research in the field of determining their antioxidant activity has not been sufficiently carried out. In order to attract the attention of plant growers, plant breeders, plant physiologists, geneticists and biotechnologists, we offer a review of current literature.

Antioxidant are compounds that are able to inactivate the development of the oxidation reactions of the molecules or neutralize free radicals. Mahogany bark (Swietenia mahagoni Jacq.) has properties as a medicinal plant. Through the phytochemical screening, the mahogany bark (Swietenia mahagoni Jacq.) contains antioxidant compounds such as alkaloids, saponins and phenolics. The aim of this study was to determine the presence of antioxsidant activity in the extract of mahogany bark (Swietenia mahagoni Jacq.). using the DPPH method with a concentration of 250 mg / L, 200 mg / L, 150 mg / L and 100 mg / L and Vitamin C p.a as a positive control. Each sample made three repetitions of the test. The test uses a UV-Vis Spectrophotometer. The result of the study showed that mahogany bark (Swietenia mahagoni Jacq.) showed antioxidant activity with the percentage of 21,50% at the concentration at 250 mg / LKeywords : Swietenia mahagoni Jacq., Antioxidant, Ethanol, DPPHABSTRAKAntioksidan ialah senyawa yang mampu menginaktivasi berkembangnya reaksi oksidasi molekul lain atau menetralisir radikal bebas. Kulit Batang Mahoni (Swietenia mahagoni Jacq.) memiliki khasiat sebagai tanaman obat. Melalui skrining fitokimia, Swietenia mahagoni Jacq. Mengandung senyawa antioksidan seperti alkaloid, saponin dan fenolik. Penelitian ini bertujuan untuk mengetahui adanya aktivitas antioksidan didalam ekstrak tanaman Kulit Batang Switenia mahagoni Jacq. menggunakan metode DPPH dengan konsentrasi 250 mg/L, 200 mg/L, 150 mg/L dan 100 mg/L dan Vitamin C p.a sebagai kontrol positif. Masing-masing sampel dibuat tiga kali pengulangan uji. Pengujian menggunakan alat Spektrofotometer UV-Vis. Hasil penelitian menunjukkan bahwa ekstrak Kulit Batang Swietenia mahagoni Jacq. memiliki aktivitas antioksidan dengan presentase sebesar 21,50% pada konsentrasi 250 mg/L Kata Kunci : Swietenia mahagoni Jacq., Antioksidan, Etanol, DPPH
