ABSTRACT Passiflora cincinnata Mast. (caatinga passion fruit) has acidic fruits with a peculiar flavor, green color when ripe and a low percentage of abscission making it difficult to identify the point of harvest. In order to verify the harvest period in two populations of P.cincinnata, flowers were marked in anthesis and after six periods the fruits were harvested. This study evaluated fruit mass, seeds and pulp mass, fruit dimensions and shape, percentage of water, color and texture of skin, volume, color and pulp yield, pH, soluble solids (SS), titratable acidity ratio, polyphenol content, flavonoids and anthocyanins. The assay was designed in a completely randomized design in a factorial arrangement (2x6), with two populations (CPEF2220 and CBAF2334) and six harvest periods (20, 40, 60, 80, 100 and 120 days after anthesis - DAA) with four repetitions. There was a reduction in thickness (43.1%) and percentage of water in the skin (9.3%), pH (40.1%), ratio, polyphenols content and pulp luminosity (brightness). There were increases in pulp mass and volume, seed mass, pulp mass yield in relation to the fruit (72%), and SS titratable acidity (44.9%) in CPEF2220 and equality between populations in fruit shape, pulp color, thickness and skin color (luminosity and ºhue), pH and polyphenols. Although after 100 DAA there were higher yields, between 60 and 80 DAA it was possible to identify characteristics of SS, pH, titratable acidity, mass, volume and pulp yield related to ripe fruits, allowing harvesting after 60 DAA.

ABSTRACT This study aimed to evaluate the physico-chemical composition of native fruits of the Ceará coast at different development stages. The fruits of ‘guajiru’, ‘manipuçá’, ‘murici-pitanga’ and ‘murta’ were collected during the year 2014, and the following evaluations were made: total soluble solids, total titratable acidity, pH, total soluble solids and titratable acidity ratio. A completely randomized design was used, with 5 or 6 treatments, depending on the maturation stage and 4 replicates. For total soluble solids, ‘murta’ obtained a minimum of 2.6 °Brix in stage 1 and ‘manipuçá’ obtained maximum of 24.53 °Brix in stage 5. For the total titratable acidity, ‘guajiru’ showed minimum of 0.09% in stages 3 and 4, and ‘murici-pitanga’ showed maximum of 3.29% in stage 6. ‘Murici-pitanga’ had minimum pH of 3.44 in stage 5 and ‘guajiru’, maximum pH of 5.9 in stage 2. For total soluble solids and titratable acidity ratio, ‘murici-pitanga’ exhibited a minimum of 3.25 in stages 1 and 3, and ‘guajiru’ showed maximum of 141.11 in stage 4. It was concluded that ‘guajiru’ and ‘manipuçá’ fruits reached physiological maturity in stage 3, whereas ‘murici-pitanga’ and ‘murta’ fruits reached in stage 4; thus, these are the ideal stages for fruit harvest.

Surveys carried out in different microregions of Maranhão highlight papaya as one of the fruits with the postharvest losses estimates. In this context, this study aimed to analyze the efficiency of plastic packaging on postharvest conservation of Hawaii papaya to instruct the Maranhão retail market about viable alternatives to mitigate losses related to this fruit. The papayas were purchased from CEASA of São Luís and sent to the laboratory. Posteriorly, they were randomly separated into 65 groups of 2 units, and then, applying the coverings are made. The experimental design was completely randomized in a split-plot at 4x5 times, with four treatment control [(without packaging), plastic film (FP), hermetic-bag (SH), and perforated-bag (SP)] and five evaluation periods (3, 6, 9, 12, and 15 days of storage); four repetitions and 2-fruits per portion (tray). For the individual biometric characterization, was carried out the measuring of the longitudinal and transverse diameters, fresh mass, pulp yield, seed mass, firmness, and fruit mass loss. Furthermore, for chemical analysis, total soluble solids content, total titratable acidity, and pH were measured. It was found, at the end of the study, that the hermetic-bag is efficient for maintaining the loss of fresh mass, firmness, ripening, total soluble solids content, total titratable acidity, and pH, which are relevant attributes of quality for commercialization of the Hawaii papaya. Therefore, the use of the hermetic-bag is recommended to increase the postharvest shelf life of Hawaii papaya fruit under stored at room conditions and at least for 15 days.

Abstract Uvaia (Eugenia pyriformis Cambess) is a fruit tree native to the Atlantic Forest and that features peculiar aroma and flavor. Although this fruit is highly popular locally, its commercial farming is virtually nonexistent. In addition, limited studies on this fruit have been conducted. Therefore, the present study aimed to investigate the physical, chemical, and functional characteristics of two uvaia fruit populations grown in Salesópolis, SP, Brazil, in order to determine their potential for being consumed both in natura and processed. Uvaia fruits were evaluated as for skin color, whole fruit weight, longitudinal and transversal diameters, seed percentage, pulp yield, pulp firmness, pH, total soluble solids (TSS), total titratable acidity (TTA), TSS/TTA ratio, total soluble sugars, soluble and total pectins, total carotenoids, yellow flavonoids, total phenolic compounds, ascorbic acid, and in vitro antioxidant capacity (DPPH and ORAC assays). The total mineral content was also determined. Comparison among the two populations revealed that uvaia fruits showed significantly different firmness values, large fruits showing suitable characteristics for the fresh fruit market. However, small fruits were sweeter and richer in antioxidants, allowing the consumption of both natural and processed fruits. Thus, this native fruit denotes an important source of nutrients and bioactive compounds, especially iron.

Os atributos físicos e químicos da acerola podem sem influenciados por vários fatores: genótipo, localização do pomar, tratos culturais empregados nas plantas, índice pluviométrico, irrigação, exposição à luz solar, estádio de maturação dos frutos e época de colheita. O presente trabalho avaliou características químicas e físico-químicas de frutos de diferentes genótipos de aceroleira em duas épocas de colheita. A primeira época no período de fevereiro a março de 2014, e a segunda época de dezembro de 2014 a janeiro de 2015. Os materiais genéticos avaliados foram Olivier, BRS 237 - Roxinha, BRS 236 - Cereja, BRS 238 - Frutacor, BRS 235 - Apodi, Waldy – CATI 30 e Okinawa. O delineamento utilizado foi o inteiramente casualizado (DIC) em esquema fatorial, com 7 cultivares em 2 épocas de colheita, totalizando 14 tratamentos, e a repetição sendo 500 g por amostra de frutos maduros para cada genótipo de aceroleira representado por oito plantas em fase de produção e com oito anos de idade. Avaliaram-se os seguintes atributos físico-químicos: pH e sólidos solúveis (°Brix), e químicos: ácido ascórbico, e acidez titulável (expressa em g de ácido cítrico 100 g-1 de polpa). Também foi determinada a relação °Brix / Acidez titulável. Nas duas épocas de colheita avaliadas, a composição da acerola é mais influenciada pelo genótipo que pelas condições climáticas de precipitação e temperatura do ambiente. The genetic materials evaluated were Olivier, BRS 237 - Roxinha, BRS 236 - Cherry, BRS 238 - Frutacor, BRS 235 - Apodi, Waldy - CATI 30 and Okinawa. The design was a completely randomized design in a factorial scheme, with 7 cultivars in 2 seasons of harvest, totaling 14 treatments, and the repetition being 500 g per sample of mature fruits for each genotype of acerola represented by eight plants in production and eight years of age. The following physico-chemical attributes were evaluated: pH and soluble solids (° Brix), and chemicals: ascorbic acid, and titratable acidity (expressed in g of citric acid 100 g-1 of pulp). The ratio ° Brix / Titratable acidity was also determined. In the two evaluated harvest periods, the composition of the acerola is more influenced by the genotype than by the climatic conditions of precipitation and temperature of the environment. Twenty-one hot pepper genotypes comprising of local (15) and exotic (6) types (C. annuum, C. frutescens and C. chinense) were characterized for selected fruit traits after propagation in a glasshouse at the Makerere University Agricultural Research Institute Kabanyolo in Central Uganda using a completely randomized design with three replicates. Ripe fruits were harvested and analyzed; traits evaluated were all significantly different at P<0.05 with variations in quality attributes. The genotype OHA-B305-10 had the highest ascorbic acid content (128.86 mg/100 g) and is recommended for improvement of both local and exotic genotypes targeting the fresh market. Genotypes CAP0408-12 and UG2 WE0511-22, with highest total soluble solids (16.17 ºBrix) and dry matter content (28.59%), respectively should be used in improvements for industrial use or processing to products such as chilli powder or flakes. BRS-M205-04 with highest titratable acidity (1.04%) can be used in enhancing shelf life of genotypes with low titratable acids as well as for the fresh market. In spite of the intraspecific relationships among genotypes, significant differences were observed in their quantitative traits. These genotypes will, therefore, be useful in improving the quality of hot pepper fruit in Uganda.

Abstract Passiflora cincinnata Mast. or Caatinga passion fruit is widely cultivated in the northeastern semi-arid regions of Goiás, Minas Gerais, and Bahia. The system of cultivation and field management of the Passiflora species affects the physicochemical quality of its fruits. In this study, we evaluated the chemical and physico-chemical characteristics of the fruits of 2 progenies (CPEF2220 and CBAF2334) of P. cincinnata species using the vertical and horizontal trellis system. Fruits were collected from the plants at their physiological maturation stage and tested for the fruit skin color and texture and the pH, total soluble solids, titratable acidity, pulp acidity ratio, and the contents of flavonoids, anthocyanins, and polyphenols in the seedless fruit pulp. The experimental design was completely randomized in a 2 x 2 factorial scheme (progenies x conduction system) performed in 3 replications using 4 plants in each. The analysis of variance and the means were compared using the Tukey’s test at 5% probability. The results revealed that the CBAF2334 fruits presented with greener pigments and greater flavonoids. The fruits were characterized by their green color with some yellowish nuances and a low color saturation in both the progenies. The conduction system was not found to affect the physical and physicochemical characteristics as well as the anthocyanin and polyphenol contents of the studied species. The fruits of plants cultivated on vertical trellis presented with 56.73% more flavonoid content than those cultivated on horizontal trellis.

The umbuzeiro is a native Brazilian semi-arid plant with great agroindustrial potential. The characterization of the fruit, as well as the development or improvement of technologies for value aggregation are fundamental for its conservation, dissemination and culinary expansion. The objective was to characterize physically and chemically fruits of umbu and to define the access with greater commercial potential. A completely randomized design was used, with 10 replications, in a total of 4 accessions of umbuzeiro. The fruits were selected prioritizing uniformity of fruit size and maturation stage. Fruit peel color was analyzed; diameter and length; mass of the fruit, the bark, the pulp and the seed; firmness of the fruit, soluble solids contents; pH; titratable acidity and solids/acidity ratio. The values of the pulp yield and the technological index were determined. Significance was verified for all variables, except for soluble solids and pH. The average value of the titratable acidity was 1.3 mg of citric acid 100 mL-1 of juice. The diameter of the fruits varied between 4.0 and 4.5 cm. Fruit mass varied from 33.00 to 43.62 g and access to EPAMIG-C06 was the heaviest. The accesses EPAMIG-C06 and EPAMIG-C18 presented the highest technological index. Based on the results, it was concluded that the accesses present potential to the pulp industry due to the size and characteristics of the fruits. The umbu accesses under study presented small variation for solubility and pH. For in natura consumption and/or processing, the access EPAMIG-C06 stands out due to attributes of commercial interest.

ABSTRACTThe production of high quality fruits is a necessary factor for the adaptation and production of plant species with economic viability. Thus, an experiment was conducted from July 2012 to January 2013 to evaluate the fruit quality of the ‘Eva’ and ‘Princesa’ apple cultivars as a function of nitrogen fertilization in Petrolina, PE, Brazil. The experimental design consisted of randomized blocks, with treatments distributed in a factorial arrangement 2 x 4, corresponding to apple cultivars (Eva and Princesa) and nitrogen doses (40; 80; 120 and 160 kg of N ha-1), with four replications and three plants in each plot. The fruit characteristics, such as fruit mass, skin color (luminosity, chromaticity, and colour angle), size (width and length), pulp firmness, titratable acidity (TA), soluble solids (SS) and the SS/TA ratio, were recorded. Nitrogen doses do not affect fruit quality of studied apple cultivars. The fruit quality attributes are different between apple cultivars: fruit firmness, SS/TA ratio, fruit mass and fruit diameter are superior for Princesa cultivar, while the fruit length for Eva cultivar is superior.

ABSTRACT The aim of this study was to characterize and determine the quality index and the harvest maturity of Eugenia cibrata fruits. Fruits were harvested at 39, 41 and 43 days after sprouting and selected by the larger size. Fruits ripened on the plant until complete abscissions were considered standard for determining the quality index after harvest. Samples were analyzed at harvest day and at two days of storage at temperature of 26 ± 2 ° C and relative humidity of 85-90%. The following items were evaluated: firmness, number of seeds, longitudinal and transversal diameter, shape index, weight of seeds, pulp and fruit, titratable acidity (TA ), soluble solids (SS), ascorbic acid, TA / SS ratio and pulp yield. The experimental design was completely randomized in a split plot scheme in time, with additional treatment. E. cibrata fruit is a round berry with 0.98 shape index; mass of 24.28 g, green epicarp and white endocarp. The maturity stage identified as ideal for harvest occurred from 43 days after flower opening (anthesis). Fruits selected among those with larger sizes also reached physiological maturity and quality similar to those ripened on the plant. The quality index of E. cibrata is pH 2.88; soluble solids of 3.7%; titratable acidity of 3.38% in citric acid; ascorbic acid of 77.05 mg 100g-1, TA / SS ratio of 1.09 and pulp yield of 72.01%.

The number of studies on edible coatings that are used for extending the shelf life of fruits has steadily increased. For this purpose, it is necessary to choose raw materials with characteristics that maintain product quality. The objective of this study is to evaluate the effect of coatings of Chlorella sp. on the post-harvest conservation of ‘Tommy Atkins’ mango fruits. The experiment was conducted using a completely randomized design, and spray treatments (T) with 0%, 1%, 2%, 3%, or 4% of Chlorella sp. were applied to the fruits. After the treatments, the fruits were stored for 28 days (21 days at 10 °C and 42% relative humidity and 7 days at 25 °C and 42% relative humidity), and were analyzed on day 28. There was higher pulp firmness in fruits as the concentration of Chlorella sp. was increased, and the concentration of ascorbic acid was comparatively higher (22.17%) in fruits treated with 3% Chlorella sp. The percentage of soluble solids and the soluble solids/titratable acidity ratio were decreased as the coating concentrations were decreased. The use of Chlorella sp. at 1% and 2% allowed fruit maturation without compromising fruit quality attributes during the 28-day storage period.
