Effect of processing methods on consumer’s acceptability and proximate composition of yellow croaker was investigated. The experiment was completely randomized design where the treatments were the various processing methods employed. 12kg frozen yellow croaker fish were purchased, cut into chunks, divided into 4 groups of 3kg each, each group was salted and then subjected to different processing methods including: sun drying, deep- frying, solar drying and smoking. After processing, the products were subjected to organoleptic assessment using hedonic scale while the proximate composition was determined using standard experimental procedures.  The result of this study indicates that the odour and flavour of smoked fish product were significantly (p < 0.01) preferred by consumers above other products. Solar dried fish product had highest percentage crude protein followed by smoked fish product while smoked fish product had the highest crude ash. This study suggests that it is better to process yellow croaker by solar drying and smoking so as to get good nutrients.

Microbial Dasyatis sp. (stingray fish) was a popular fish in Indonesia. Commonly, this fish is processed into smoked fish and perishable products. Therefore, it needs a preservation method through the handling process. Wet salting was considered as an efficient and inexpensive preservation method. This study aimed to determine the effect of brine concentration on the physicochemical and microbial quality of Dasyatis sp. The research used a Completely Randomized Design with factor of brine concentration (i.e. 10%, 20% and 30%). The statistical analysis consists of variance analysis (ANOVA) and followed by LSD or DMRT test (α=5%). The fish sample was soaked in brine solution at different concentrations for one hour. Total crude protein, physicochemical (total volatile basic nitrogen/TVB-N, tri-methyl amine/TMA, and pH), and (total plate count/TPC) were analyzed. The results showed that the brine concentration effect of physicochemical and microbiological of Dasyatis sp (p<0.05). The best treatment was obtained at the application of 10% brine concentration, which had physicochemical parameters as follows: 6.92 pH, 6.110 mgN/100g TVB-N, 5.520 mgN/100g TMA, 16.78 % protein, and 0.537x105 CFU/ml TPC.

The effects of smoking processes on the sensory and proximate components of two species of shrimp were evaluated. Sixty specimens of each species were distributed in a completely randomized design, with two treatments (T1 = hot smoking and T2 = liquid smoking), and fresh shrimps samples were used as control (T3). The sensory characteristics were evaluated using the 9 point hedonic scale and the acceptance index. The centesimal composition was evaluated based on 100 g from each treatment and the fresh samples. The data were submitted to one-way ANOVA and Tukey's test. The results of sensory analysis showed significant variations (p <0.05) for the attributes analyzed among the species, whereas among the smoking processes there was no significance (p >0,05). The acceptance rate was above 70% for amazonian prawn and 80% for white shrimp, regardless of the smoking method. The proximate analysis showed significant differences between the two smoking processes, hot and liquid, with moderet values of lipids, between 0.27% and 1.51%, and high protein values, of 24.61% 24.13%, for white shrimp and amazonian prawn, respectively. The smoking processes altered the sensory and chemical profile of the prawns, causing good acceptance and adequate nutritional constitution for smoked fish.

The experiment was conducted to study the comparison on biomass production of fodder germplasm. Para (Brachiaria mutica Stapf.), German (Echinochloa crusgalli L.) and Dhal (Hymenachne pseudointerrupta C. Muell) grasses were cultivated in a completely randomized design (CRD). The whole area was divided into nine plots. The area of each unit plot was 6 m x 6 m. Number of cuttings were 16,000 /hectare where Plant to Plant distance was 16 cm and row and raw distance was 16 cm. Equal amount of organic and chemical fertilizer were applied in all cutting. The fodders were first harvested after 60 days of planting, second and third after successive 60 days of re-growth. The findings of the study showed that fresh biomass (p<0.01) and dry biomass yield (p<0.05) of three fodder germplasm differed significantly. Crude protein and organic matter yield were significant (p<0.01) only in the second cutting. German grass was showed significantly higher in CP and OM yield (p<0.01) at second cutting than other grasses. However, no significant effect on plant height was observed among three grasses. From the above findings it may be concluded that among the three fodder germplasm, German fodder showed best result in respect of biomass production. The effects of various processing methods on the proximate composition and dieting ofAmaranthus hybridusandAmaranthus cruentusfrom West Cameroon were investigated in this study. Both amaranths leaves were subjected to same treatments (sun-dried and unsliced, sliced and cooked), milled, and analysed for their mineral and proximate composition. Thirty-SixWistaralbino rats of 21 to 24 days old were distributed in six groups and fed for 14 days with 10% protein based diets named D0 (protein-free diet), DI (egg white as reference protein), DII (sun-dried and unslicedA. hybridus), DIII (cooked and slicedA. hybridus), DIV (sun-dried and unslicedA. cruentus), and DV (cooked and slicedA. cruentus). The protein bioavailability and haematological and biochemical parameters were assessed in rats. The results showed that K, P, Mg, Zn, and Fe had the higher content in both samples regardless of processing method. The sun-dried and unslicedA. cruentuscontained the highest value of crude protein 32.22 g/100 g DM (dry matter) while the highest crude lipid, 3.80 and 2.58%, was observed, respectively, in sun-dried and unslicedA. hybridusand cooked and slicedA. cruentus. Cooked and slicedA. hybridusandA. cruentuscontained high crude fiber of 14 and 12.18%, respectively. Rats fed with diet DIII revealed the best protein bioavailability and haematological parameters whereas 100% mortality rate was recorded with group fed with diet DIV. From this study, it is evident that cooked and slicedA. hybridusandA. cruentuscould play a role in weight reduction regimes.

A irrigação é usada para conter os efeitos da sazonalidade de produção garantindo maior intensificação dos sistemas de produção a pasto, assim, contribuindo para o aumento da produção e do valor bromatológico das gramíneas. Dessa forma, objetivou-se com esse trabalho avaliar o valor bromatológico de gramíneas tropicais cultivadas em condições de ambiente protegido, submetidas a diferentes tensões de água no solo. Foram realizados três experimentos com as gramíneas Mombaça, Marandu e Tifton 85, onde cada qual, foi conduzida em um esquema de parcelas subdivididas, tendo nas parcelas os níveis do fator tensão de água no solo (20, 40, 50, 60 e 70 kPa) e nas subparcelas níveis 1º, 2º e 3º do fator corte, em um delineamento inteiramente casualizado com cinco repetições. Nas tensões de água no solo de 20 (Mombaça) e 50 kPa (Marandu e Tifton 85) as gramíneas expressaram seu máximo de valor nutritivo. Os maiores teores de PB foram obtidos nas gramíneas Mombaça e Tifton 85. Para as variáveis FDN e FDA o fator tensão de água no solo não foi significativo.Palavras-chave: proteína bruta, fibra, irrigação, forrageiras. BROMATOLOGY OF TROPICAL GRASSES UNDER DIFFERENT SOIL WATER TENSIONS IN PROTECTED ENVIRONMENT ABSTRACT:The irrigation is used to contain the effects of seasonality of production, ensuring a greater intensification of pasture production systems, thus contributing to the increase of production and the bromatological value of grasses. Thus, the objective of this work was to evaluate the nutritive value of tropical grasses grown under protected environment conditions, subject to different soil water stresses. Three experiments, using Mombasa, Marandu and Tifton 85 grasses under a protected environment were carried out and each one was conducted in a subdivided plots scheme, with the levels of soil water tension factor (20, 40, 50, 60 and 70 kPa) and in the subplots levels 1, 2 and 3 of the cut factor, in a completely randomized design with five replicationss. At soil water stresses of 20 (Mombasa) and 50 kPa (Marandu and Tifton 85) the grasses expressed their maximum nutritive value. The highest CP levels were obtained in the Mombasa and Tifton 85 grasses. For the NDF and ADF variables, the soil water stress factor was not significant.Keywords: crude protein, fiber, irrigation, forages.

This study aimed to determine the effect of different processing methods on the proximate composition and anti-nutritional factors of Dolichos lablab beans (Lablab purpureus) of Kenya. The seeds of KAT/DL-2 variety,sourced from Kenya Agricultural Livestock and Research Organisation, Katumani Dryland Research Station were sorted, then subjected to different processing methods (soaking, cooking and germination). The samples were analysed for proximate composition, tannins, phytates and trypsin inhibitory activity. The results showed a significant increase (2.0%) in crude protein content for germinated lablab beans while carbohydrates content was high in cooked samples. The variety KAT/DL-2 had high levels of phytates; 723.6 mg/100g and tannins 330.3mg/100g and trypsin inhibitor activity 1.3mg/100g. Cooking achieved the highest reduction of anti-nutrients with 88% reduction in TIU. The results revealed that the anti-nutrients in lablab beans can be reduced using different methods of processing. However, there is need to investigate the effect of combined methods on the nutrients and anti-nutrients.

The objective of this study is to evaluate the influence of five feed restriction programs (FRP) on broiler performance and carcass yield. 425 Cobb 500® broilers were distributed in a completely randomized design with five FRPs and five replicates with 17 broilers. The FRPs were: Program 1 (P1): consumption ad libitum (AL) of control diet from 14 to 42 days; P2: quantitative restriction (QTR) of 10% of AL consumption from 14 to 28 days and AL consumption from 29 to 42 days; P3: AL consumption from 14 to 28 days and QTR from 29 to 42 days; P4: qualitative restriction (QLR) of 10% of the level of crude protein and essential amino acids from 14 to 28 days and AL consumption from 29 to 42 days; and P5: AL consumption from 14 to 28 days and QLR from 29 to 42 days. The broilers of the AL treatment gained more weight (p≤0.01), but had a similar FCR (P>0.05) compared to broilers submitted to QTR from 29 to 42 days. In addition, broilers fed QTR from 14 to 28 days presented a lower FI and a better FCR (p≤0.01) in relation to broilers fed QLR of 14 to 28 (P4) and 29 to 42 days (P5). The broilers fed QTR of 14 to 28 days diet presented a similar FCR as broilers fed AL. The 10% reduction in AL consumption of 14 to 28 d is a viable economical alternative to feed broilers up to 42 days of age.

The objective of this experiment was to determine the effects of feeding rabbits with Maxigrain® (M) enzyme supplemented Gliricidia sepium leaf meal (GLM) on their physiology, performance characteristics, and nutrients digestibility. Twenty weaned rabbits of mixed sexes, 5-6 weeks old, were randomly allotted to five dietary treatments including 0 g M which was soybean without M (control) and GLM supplemented with M at 50, 100, 150 and 200 g M per kilogramme of GLM. There were four rabbits per treatment and one rabbit as replicate in a completely randomized design. There were no significant (p > 0.05) treatment effects in all physiological and performance indices as well as those of crude fat, fibre and NFE digestibilities. There were variations (p < 0.05) due to the treatment effects on dry matter, crude protein and ash digestiblities. This implies that the feeding of soft faeces directly from the caecum called coprophagy mechanism in rabbits has its concomitant nutritional benefits. This advantageous benefit can enable rabbit to effectively and efficiently utilize forage or forage-based diet with or without enzyme supplementation.

The objective was to evaluate milk production, N2-fixation and N transfer, forage yield and composition (under two cutting intervals) in a silvopastoral system (SPS) with Leucaena leucocephala-Megathyrsus maximus and M. maximus-monoculture (MMM) with crossbred cows in a completely randomized design. Forage yield in the SPS was 6490 and 6907 kg DM ha−1 for cutting intervals (CI) of 35 and 50 days. Forage yield for the MMM was 7284 and 10,843 kg DM ha−1, and forage crude protein (CP) was 29.0% and 26.1% for L. leucocephala, harvested at 35 and 50 days, respectively. CP for the associated M. maximus was 9.9% and 7.8% for CI 35 and 50 days, respectively, and for MMM was 7.4% and 8.4%, harvested at 35 and 50 days. Milk production was 4.7 kg cow−1 day−1 for cows grazing MMM and 7.4 kg cow−1 day−1 under SPS. Nitrogen fixation in L. leucocephala (%Ndfa) was estimated to be 89% and 95%, at 35 and 50 days, with an N2 transfer to the associated grass of 34.3% and 52.9%. SPS has the potential to fix and transfer important amounts of N2 to the associated grass, and increase forage CP content and milk production.

This study aimed to assess the fermentation profile, losses and chemical composition of the silages of five sorghum cultivars. A completely randomized design with five replicates was used. The experimental treatments were represented by five sorghum cultivars (Sorghum bicolor (L). Moench): 'BRS Ponta Negra' , 'BRS 610', 'BRS 655', 'BRS 800' and 'BRS 810'. There was variation (P<0.05) for the pH in the cultivars studied, with highest result of pH by 'BRS 610'. The average percentages of lactic acid, acetic acid and propionic acid, differed (P<0.05) among the cultivars, ranging from 32.9 to 59.5, 19.8 to 39.8, and 0.0 to 1.3g kg-1, respectively. The dry matter recovery varied among cultivars (P<0.05), allowing the identification of BRS Ponta Negra, and 'BRS 810' silages, as those which recovered the lowest dry matter, with values of 757.1 and 776.1g kg-1, respectively. There were differences (P<0.05) for dry matter, crude protein, ether extract, neutral detergent fiber, non-fibrous carbohydrates and total carbohydrates contents among the cultivars. It was concluded that, despite the morphological and chemical differences among cultivars, the resulting silages had good fermentation profile.
