TRENDS OF DEVELOPMENT OF SCIENTIFIC FOUNDATIONS FOR DESIGNING FOODSTUFFS

Рассмотрены основные требования к науке о питании и новые подходы к усовершенствованию состава, свойств и технологий пищевых продуктов, обусловленные изменением пищевого статуса человека, к которому предъявляются более высокие критерии, учитывающие изменения экологии, условий и интенсивности труда, влияние стрессов на психоэмоциональное состояние человека. Установлено, что основные направления совершенствования биопотенциала и гигиенического статуса пищевых продуктов на этапе проектирования рецептурных решений базируются на привлечении новых нутрицевтиков, парафармацевтиков, эубиотиков из сырья природного происхождения или продуктов его глубокой переработки. Перспективным направлением в совершенствовании технологий и расширении ассортимента продуктов функционального назначения, направленного диетического, лечебного и профилактического действия, необходимых для организации биокорректирующего питания и ликвидации алиментарно-дефицитных состояний различных групп населения, является применение нейросетевых методов математического моделирования, которые позволят с высокой точностью получать значения выходных показателей качества пищевых систем в зависимости от варьирования исходных характеристик и параметров технологических процессов. The basic requirements for nutritional science and new approaches to improve the composition, properties and technologies of food products due to changes in the nutritional status of the person to which higher demands are placed, taking into account environmental changes, conditions and intensity of labour, the impact of stress on mental and emotional state, are considered. It is established that the main directions of improvement of the biopotential and the hygienic status of food products at the design stage prescription decisions are based on the attraction of new nutraceuticals and parapharmaceutics, eubiotikov from raw materials of natural origin or products of its deep processing. A promising direction in improving the technology and expanding the range of functional foods aimed diet, therapeutic and preventive actions needed for the organization of bio correction power and to eliminate the nutritional-deficient states of various groups population groups, is the application of neural network mathematical modeling methods, which allow with high accuracy to obtain values of output indicators of the quality of food systems, depending on the variation of initial characteristics and parameters of technological processes.

The paper deals with some theoretical approaches to determining the essence of the export potential, the features of its formation and development in the agri-food complex, the impact on the growth of competitiveness. This made it possible to clarify the definition of the export potential of the agri-food complex as an aggregate of competitive advantages. The specifics of the development of the export potential in the context of globalization and the development of international integration are revealed. The dynamics and structure of exports of food products and agricultural raw materials are analyzed; the physical capacity of the domestic markets of basic food products, the dynamics, and trends of its change are estimated. Excessive growth in the volume of production of agricultural products can lead to oversaturation of the domestic market, a decrease in the profitability of domestic producers, worsening the financial situation in the industry. Russia has a significant potential for integration into the world agri-food system. However, the main share of the export of the agri-food complex is made up of agricultural raw materials, primarily grains and oilseeds, which has an adverse effect on the structure of the complex and the rate of its development. The diversification of exports, the growth of exports of products with high added value will contribute to the sustainable development of agriculture and food industries. The development of the export potential of the Russian agri-food complex should be based not only on the active use of national competitive advantages but also on the formation of competitive advantages based on the international division of labor as well. The export-oriented strategy for the development of Russia's agri-food complex needs to be justified in the context of food security policy, which implies resolving the contradiction between national interests related to the saturation of domestic markets, and attitudes toward growing competitiveness in the world food markets, as well as the development and realization of the export potential.

The aim of the study is to determine the impact of foreign economic security of agricultural producers on the integration and stability of the EAEU. The positive and negative impact of exports and imports on economic growth in the industry and economy, which can pose threats to foreign economic security, is highlighted. Indices of gross added value of agricultural goods, structure of export and import of goods by purpose in dynamics for 2015-2019, changes of share of export and import of agricultural raw materials and food products were analyzed. A conclusion was made about similar trends in the EAEU member states in the dynamics of agricultural production, the growth of food exports, a decrease in imports, the impact of the export and import of agricultural raw materials and food products of the EAEU member states on the economic growth of the agricultural industry.

The purpose of the article is to analyze the indicators of foreign trade in agri-food products between Ukraine and Asian countries, to assess the potential of its development with taking into account latest trends in the world agricultural market. Research methods. Methods used: theoretical generalization - for characterizing the production and foreign trade of agri-food products in Asian countries, analysis and synthesis - for considering the dynamics and commodity structure of mutual agricultural trade between Ukraine and Asian countries, general studying an agricultural system of the region, comparative evaluation - for forming ratings of the largest exporters and importers of food among Asian countries, finding differences between domestic exports of agricultural products and imports of Asia, and vice versa, graphical and tabular - for optimizing the visual displaying of research results. Research results. The current export and import of agri-food products by Asian countries are considered, the main trade representatives of the region are identified, the crucial role of Asia in the formation of global food supply is analyzed, the current state of Ukraine's agricultural trade with Asian countries is studied, an overall assessment of its development potential was made, based on the latest trends in the global market and possible using of agreements on the functioning of free trade zones between the partners. Scientific novelty. Asian countries have been researched out separately as Ukraine's foreign trade partners in terms of agri-food products, including the most important players in exports and imports, analytical information has been provided taking into account the impact of the pandemic and the signing of a new interregional trade agreement. Practical significance. The provisions of the article are aimed at informing domestic exporters and importers of agricultural raw materials and ready food products about the possibilities of entering, consolidating and necessary purchases in Asian markets, as well as public authorities that directly influence decisions on international trade liberalization. The article is devoted to the assessment of the impact of the food industry of the Trans-Baikal territory on the food security of the region. A study based on the actual state of the industry showed that its development is impossible without improving the situation in agriculture. The presence of a large volume of products imported into the Trans-Baikal Territory indicates a strong dependence of its economy on external supplies. A partial solution of the problem is possible on condition of creation of agro-holdings in the region covering the full cycle production of food products from cultivation of raw materials to reception of final product.

Modern trends of agro-food provision are summarized with the systematization of the factors of external and internal environment, which affect the innovativeness of agro-food chains. The tendencies are highlighted and the transformational processes in the agrarian sector of Ukraine, which conditioned the destruction of eco- nomic relations and the breakdown of technological links of agro-food chains, the deterioration of the indices of safety and quality of agricultural raw materials and fi nal food products, are disclosed. The challenges for the functioning of dairy products chain are analyzed with the substantiation of the fact that the process of introduc- ing the complex of innovations and systemic methods of safety should cover all the actors involved, all the sec- tors and elements of production which ensure the safety and quality of agricultural raw materials and fi nal food products. It was proven that the trends of using innovations in the dairy farming should be the achievements in the fi eld of selecting cattle and fodder crops, modern technologies of forming and restoring the livestock to provide for the increase in its resistance and competitiveness. It was substantiated that it is an urgent issue for milk processing enterprises to implement technological innovations and to form long-term partnership relations with the suppliers of raw materials in order to diversify their product portfolio and offer quality and safe dairy products. It was substantiated that the functioning of agro-food chains will be conducted under the impact of environmental challenges which requires creating the conditions and prerequisites for a higher level of their flexibility to innovations, where the priority role should be attributed to state-private partnership in the elaboration and implementation of technologies.

The daily use of nutritious products is essential for optimal body function. This is particularly important for young children, seniors and people with disabilities, as they are considered to be the most vulnerable groups. Health status, age, human social and psychological condition are just some of the factors that determine the choice of specific forms of nutritional therapies to optimally promote recovery, the body's overall energy recovery and, as far as possible, physiological functions and improve the quality of life. The research work of the doctoral thesis “Development of food products for special medical purposes” was performed from November 2016 till April 2021. The research was performed in the laboratories of the Faculty of Food Technology of the Latvia University of Life Sciences and Technologies, in the laboratory of the Institute of Biology of University of Latvia, in the laboratory of FANEKS Ltd., in the Institute of Food Safety, Animal Health and Environment, BIOR and Natural food developer KEEFA Ltd. The aim of the dissertation is to develop food products from plant and animal origin raw materials for people with special dietary needs. Research hypothesis: using natural plant and animal origin raw materials, it is possible to create products that provide the recommended nutrients in food for special medical purposes. Based on the aim of the work and the proposed research hypothesis, the following research tasks should be performed: 1.to develop recipes for enteral tube feed products on the basis of plant and animal raw materials; 2.to develop recipes for texture modified products on the basis of plant and animal raw materials; 3.to develop the production technology of the newly created products, which would ensure the preservation of their nutritional value as much as possible; 4.examine and evaluate the impact of selected technologies on product quality and shelf life; 5.to evaluate the in vitro digestibility of the developed texture modified products. The doctoral thesis consists of three chapters. Chapter 1 provides information on the basic principles and commercially available products for special medical purposes, on bioavailability, the role of different nutrients, the biochemical composition of fruits and vegetables and the characteristics of the processing technologies used in the study. Chapter 2 describes the raw materials used in the thesis, the structure of experiments, the methods of analysis. Chapter 3 provides a summary of the results obtained in the study and a discussion to achieve the conclusions according to the hypothesis and the tasks. The chapter describes the development of recipes and technologies for the preparation of enteral tube feed products, assessing the impact of high-pressure and vacuum cooking on the developed product quality if fresh raw materials and semi-finished products are used. The evaluation of pasteurisation and sterilisation as a secondary processing step to obtain a safe product. The results of the development of texture modified products in the laboratory and industrial environment, the evaluation of the nutrients in newly developed products and the evaluation of the digestibility of industrially prepared products are summarised. Novelty of the work: •for the first time in Latvia, research has been conducted on the development of enteral tube feed products from plant and animal raw materials; •for the first time in Latvia, research has been carried out on the development of texture modified foods from plant and animal raw materials and the transfer of these products to industrial production. Economic significance of work: •the production of products for special medical purposes in Latvia could help to develop industry and agriculture, providing new jobs and stimulating the economy; •help alleviate the situation in the country regarding the shortage of medical and nursing staff and the provision of special meals in medical and care institutions; •expand the range of products available on the Latvian market with regionally known flavours, thus also improving the quality of life of patients. The doctoral thesis is written in Latvian and its volume is 120 pages, including 39 tables, 38 figures and 8 appendices. For the research 150 information sources have been analysed. The development of the dissertation was co-financed from the following projects. •Research program ‘Scientific Capacity Building LLU’ project A05-06 ‘Development of special dietary foods with high bioavailability’. •European Innovation Partnership for Agricultural Productivity and Sustainability Working Group Cooperation Project No 18-00-A01612-000006 ‘Development of medicinal food for patients of malnutrition/dysphagia, creating new, nationally significant product with a high added value’.

The article raises the problem of ensuring metrological traceability of the measurement results of indicators of quality and nutritional value for food products and food raw materials: water (moisture), nitrogen (protein, crude protein), fat, ash and carbohydrates. The problem under consideration can be solved by applying reference materials of food composition, traceable to state primary measurement standards GET 173-2017 and GET 176-2019 and primary reference measurement procedures (PRMP), for attestation of measurement procedures and accuracy checking of measurement results. The article discusses the results of the PRMP development of mass fraction of fat, ash and carbohydrates in food products and food raw materials, as well as mass fraction of crude fat (oil content) in oil crops seeds and products based on them. The paper also presents metrological characteristics of reference materials of composition of dry dairy products, grain-milk dry porridges for nutrition of babies, grain dry porridges for nutrition of babies, egg powder, freeze-dried meat products, animal feed. The results of the work allow for building a chain of metrological traceability from GET 173-2017, GET 176-2019 and PRMP to routine measurement procedures, thereby ensuring the uniformity of measurements of nutritional value of food products.

Abstract Agri-food systems include branching ramifications, which connect in the upstream the input suppliers with farmers, and downstream farmers, processors, retailers and consumers. In the last decades, at the level of the regions, food systems have undergone rapid transformation as a result of technological progress. The paper analyzes the changes made to the structure, behavior and performance of the agri-food system and the impact on farmers and consumers. Also, the role of agricultural research as a determinant factor of transformation of agri-food system is analyzed. The research objective is to develop technologies that cover the entire food chain (from farm to fork) and meet the specific requirements of consumers (from fork to farm) through scientific solutions in line with the principles of sustainable agriculture and ensuring the safety and food safety of the population.
