ASSESSMENT OF THE QUALITY AND SAFETY OF SAUCES INDUSTRIAL PRODUCTION

Проведена органолептическая оценка качества и экспертиза физико-химических показателей отобранных по ГОСТ 31755–2012 образцов соусов промышленного производства Heinz чесночный (образец 1) и Mr. Ricco сырный (образец 2). Установлено, что наилучшим является соус марки Heinz чесночный (образец 1; 23,74 балла). Физико-химические показатели исследованных образцов соусов оценивали по критериям: массовая доля жира – методом центрифугирования; массовая доля влаги – ускоренным методом; кислотность – в пересчете на уксусную кислоту; стойкость эмульсии. Расчет показателя влажности проводили согласно п. 4.3 ГОСТ 31762–2012. Влажность соусов составила, %: (40,99 ± 0,01) образец 1 и (60,20 ± 0,01) образец 2. По содержанию влаги образцы соответствуют требованиям ГОСТ. Установлено, что образцы 1 и 2 обладают оптимальной кислотностью: (0,934 ± 0,01) и (0,326 ± 0,01)% соответственно. Образцы 1 и 2 имеют массовую долю жира (58,67 ± 0,03) и (19,48 ± 0,03)% соответственно, что отвечает требованиям ГОСТ 31755–2012, а также маркировке на этикетке. Выявлено, что исследованные образцы соусов 1 и 2 соответствуют требованиям ГОСТ и допустимым уровням показателей безопасности ТР ТС 024/2011. Organoleptic quality assessment and examination of physicochemical parameters of samples of industrial sauces selected according to GOST (State Standard) 31755–2012 were conducted: Heinz Garlic (sample 1) and Mr. Ricco Cheese (sample 2). It is established that the best is the Garlick Heinz brands sauce (sample 1; 23,74 points). The physicochemical parameters of the sauces were investigated by the following criteria: determination of the mass fraction of fat by centrifugation; determination of the mass fraction of moisture by the accelerated method; determination of acidity in terms of acetic acid; determination of emulsion stability. The calculation of the moisture index was carried out in accordance with clause 4.3 of GOST 31762–2012. The humidity of sauces was, %: (40,99 ± 0,01) sample 1 and (60,2 ± 0,01) sample 2. According to the moisture content of 40,99%, the samples meet the requirements of GOST. It has been established that samples 1 and 2 have the optimum acidity (0,934 ± 0,01) and (0,326 ± 0,01)%, respectively, which has a positive effect on taste. It has also been established that samples 1 and 2 have a fat mass fraction of (58,67 ± 0,03) and (19,48 ± 0,03)%, respectively, which meets the requirements of GOST 31755–2012, as well as labeling. As a result of the study it has been established that the samples do not exceed permissible limits of the requirements specified in the regulatory documents and meet the requirements of GOST 31755–2012 and Technical Regulations of the Customs Union 024/2011.

Aim. Creation of a technology for the production of ham from beef and poultry meat for heroic nutrition. Material and Methods. The production and research of the control and experimental samples was carried out according to generally accepted methods in accordance with the normative and technical documentation. Sampling and preparation of samples for laboratory research was carried out according to a unified methodology in accordance with the requirements of GOST R 51447-99 (ISO 3100-1-91). Determination of organoleptic characteristics was carried out according to the requirements of GOST 9959-91; GOST R 53159-2008; GOST R 53161-2008. The mass fraction of fat was determined according to GOST 23042-86; protein – according to GOST 25011-81; energy value and iron content – by calculation method. Results. A ham recipe for herodietic nutrition was developed and optimized. The results of the analysis showed that the products are characterized by high organoleptic characteristics. The use of lactulose in the formulation in combination with ascorbic acid had a positive effect on the color formation of the finished product. The inclusion of low-calorie meat sources (beef and broiler chicken fillets) in the formulation made it possible to reduce the mass fraction of fat by 6.6% and increase the mass fraction of protein by 5.5% in the finished product. Conclusion. The new product expands the range of ham products for the elderly consumer category.

The quality and safety of frozen culinary products fabricated using the Sous-Vide technology were studied. The developed technology helps to preserve the structure of the product, its taste and aroma, and also saves a more delicate and juicy consistency. The object of the research was culinary products - frozen cutlets made from the Azov bull. Based on the results of the study of a complex of microbiological, organoleptic, physicochemical parameters, the shelf life of culinary products was established, during which the high quality and microbiological safety of the product is guaranteed.

The article highlights comparative research results of milk quality indices obtained from the milking in specialized milking halls with such milking units as «Parallel», «Carousel» or in stalls with the milking unit «Molokoprovid». The fat and protein mass fraction, dry matter and fat-free dry matter, density, titratable and active acidity, heat resistance and freezing point have been determined according to the accepted techniques. The electrical conductivity of milk has been determined by using the analytical device MD-20 MAS-D-TEC. The total amount of milk bacteria has been determined by reductase reduction test and by seeding method in Petri dish. The milk quality has been investigated by the fermentation and rennet fermentation tests. The higher indices of the fat mass fraction, the protein mass fraction and the dry substance concentration of milk, obtained in specialized milking halls, have been established. This is not statistically significant. Milk, obtained from the milking unit «Molokoprovid», has higher index of titratable acidity, lower thermal stability in comparison with milk, obtained from specialized milking halls with milking units «Parallel» and «Carousel». It has been determined that there is the bacteria insemination increase in milk received from milking cows in stalls in comparison with milk, obtained from milking in specialized halls. Milk, obtained from the milking unit «Carousel», indicates the subclinical form of mastitis in cows or «Carousel» operation violationif there is in 1,8 mS/cm conductivity increase above average index 4,6 mS/cm. The paper purpose is the effectiveness estimation in the technological equipment use, taking into account its reliability and productivity for defective transmission units of buses. The problem consists in the determination of time to be spent on repair of bus transmission units taking into account technological equipment reliability. In the paper there is used a probabilistic method for the prediction bus transmission units, and also a method of the dynamics of averages which allow ensuring minimum of costs for units downtime during repair and equipment cost. The need for repair of transmission units (gear box) arises on an average after 650 hours, the average productivity of the bench makes 4.2 bus / hour. The bench fails on the average after 4600 hours of work, the average time of the bench makes 2 hours. In such a way the solution of the problem specified allows analyzing the necessity of time decrease for transmission unit repair to avoid long downtimes of buses in repair areas without negative impact upon high repair quality and safety during the further operation.

Статья посвящена изучению сопутствующей патологии, у женщин репродуктивного возраста, обращающихся в стационар с жалобами на нарушения менструального цикла (НМЦ). Актуальность данной тематики не вызывает сомнения, так как с каждым годом в России и во всем мире регистрируется все большее количество случаев НМЦ. По мнению ряда авторов, данные нарушения могут составлять до 50% всех патологий женской половой сферы. Большой интерес представляет и изучение ряда сопутствующих заболеваний, которые могут отягощать течение НМЦ или наоборот, приводить к их развитию. Целью работы стал анализ разнообразной сопутствующей патологии при НМЦ, с выявлением основных причин нарушений менструального цикла у женщин фертильного возраста. Объектами исследования стали 300 пациенток, с диагнозом НМЦ, которые были разделены на 3 группы, в зависимости от уровня лечебного учреждения, где они проходили обследование - по 100 пациенток: проходивших обследование в больнице скорой медицинской помощи, обследующиеся в женской консультации и проходящие лечение сопутствующей онкопатологии в областном онкологическом диспансере. В дальнейшем проводилась дополнительное деление в каждой группе на 2 подгруппы, в зависимости от того был ли НМЦ впервые выявленным или повторно выявленным. В самой работе проводился подробный анализ сопутствующей патологии у женщин в зависимости от группы и их возраста. Определялись не только «пораженные» системы органов, но и проводился углубленный анализ по нозологиям. Работа интересна еще и тем, что в ней у всех пациенток на протяжении исследования определялся уровень стресса и наличие возможных депрессивных состояний. Определение наиболее вероятных причин НМЦ стало завершающим этапом исследования. Полученные данные могут приблизить практикующих акушеров-гинекологов к более полному пониманию различных нарушений менструального цикла, что в целом, положительно скажется на качестве и эффективности оказываемой медицинской помощи The article is devoted to the study of concomitant pathology in women of reproductive age who go to the hospital with complaints of menstrual irregularities (NMC). The relevance of this topic is beyond doubt, since every year in Russia and around the world an increasing number of cases of NMC are registered. According to a number of authors, these violations can account for up to 50% of all pathologies of the female genital area. Of great interest is the study of a number of concomitant diseases that can aggravate the course of NMC or, conversely, lead to their development. The aim of the work was to analyze a variety of concomitant pathologies in NMC, with the identification of the main causes of menstrual irregularities in women of fertile age. The objects of the study were 300 patients diagnosed with NMC, who were divided into 3 groups, depending on the level of the medical institution where they were examined - 100 patients each: who were examined in an emergency hospital, examined in an antenatal clinic and undergoing treatment for concomitant oncopathology in the regional oncological dispensary. Subsequently, an additional division was carried out in each group into 2 subgroups, depending on whether the NMC was newly detected or re-identified. In the work itself, a detailed analysis of comorbidities in women was carried out, depending on the group and their age. Not only the "affected" organ systems were identified, but an in-depth analysis of nosologies was also carried out. The work is also interesting in that during the study the level of stress and the presence of possible depressive states were determined in all patients. Determination of the most probable causes of NMC was the final stage of the study. The data obtained can bring practicing obstetricians and gynecologists closer to a more complete understanding of various menstrual irregularities, which, in general, will have a positive effect on the quality and effectiveness of medical care

In this work, which is related to the current European Parliament Regulation on restrictions affecting refrigeration, four new three-component refrigerants have been proposed; all were created using low Global Warming Potential(GWP) synthetic and natural refrigerants. The considered mixtures consisted of R32, R41, R161, R152a, R1234ze (E), R1234yf, R1243zf, and RE170. These mixtures were theoretically tested with a 10% step in mass fraction using a triangular design. The analysis covered two theoretical cooling cycles at evaporating temperatures of 0 and −30 °C, and a 30 °C constant condensing temperature. The final stage of the work was the determination of the best mixture compositions by thermodynamic and operational parameters. R1234yf–R152a–RE170 with a weight share of 0.1/0.5/0.4 was determined to be the optimal mixture for potentially replacing the existing refrigerants.
