The influence of different types of milking units on milk quality and safety

The article highlights comparative research results of milk quality indices obtained from the milking in specialized milking halls with such milking units as «Parallel», «Carousel» or in stalls with the milking unit «Molokoprovid». The fat and protein mass fraction, dry matter and fat-free dry matter, density, titratable and active acidity, heat resistance and freezing point have been determined according to the accepted techniques. The electrical conductivity of milk has been determined by using the analytical device MD-20 MAS-D-TEC. The total amount of milk bacteria has been determined by reductase reduction test and by seeding method in Petri dish. The milk quality has been investigated by the fermentation and rennet fermentation tests. The higher indices of the fat mass fraction, the protein mass fraction and the dry substance concentration of milk, obtained in specialized milking halls, have been established. This is not statistically significant. Milk, obtained from the milking unit «Molokoprovid», has higher index of titratable acidity, lower thermal stability in comparison with milk, obtained from specialized milking halls with milking units «Parallel» and «Carousel». It has been determined that there is the bacteria insemination increase in milk received from milking cows in stalls in comparison with milk, obtained from milking in specialized halls. Milk, obtained from the milking unit «Carousel», indicates the subclinical form of mastitis in cows or «Carousel» operation violationif there is in 1,8 mS/cm conductivity increase above average index 4,6 mS/cm. The purpose of research – is to analyze modern methods and tools for determining milk quality indicators. Research methods. Comparative studies of methods and means for determining milk quality indicators. The «Milkotester» milk quality analyzer of the «Master Eco» model is intended for measurement of mass fraction of fat, protein, dry skimmed milk residue, added water, freezing point, milk temperature, milk density. Approbation of a modern device for assessing the quality of milk "Milkotester" model "Master Eco" is carried out during the determination of the above indicators of milk quality on a dairy farm in comparison with standardized methods for determining indicators that characterize the quality of milk. Repeated measurements - 10. Research results. Testing of the «Milkotester» milk quality analyzer of the «Master Eco» model was performed in comparison with standardized methods. It is established that the device operates with an error when measuring the mass fraction of fat in milk ± 0,03 %, which meets the requirements of regulatory documentation for the device ± 0,1 %, the mass fraction of protein - ± 0,04 % and ± 0,1 %, respectively, mass fraction of dry matter - ± 0,04 % and ± 0,1 %, density - ± 0,1 kg/m3 and ± 0,3 kg/m3, added water - ± 2,3 % and ± 3,0 %, freezing points ± 0,002 °C and ± 0,005 °C, milk temperatures – ± 0,1 ° C and ± 1,0 ° C, respectively. The duration of determining the quality of milk of one sample by the device is 1,5 minutes. Conclusions. According to research, it is established that there is a constant improvement of methods and tools for assessing the quality of milk. In recent years, foreign companies have developed electronic devices for assessing the quality of milk. Some electronic milk quality analyzers have been developed in Ukraine as well. One of the most modern devices for assessing the quality of European-level milk "Milkotester" Bulgarian production provides a technological process for measuring the mass fraction of fat, protein, dry matter, added water, freezing point, milk temperature, milk density. The error in measuring the indicators that characterize the quality of milk meets the requirements of regulatory documentation for the device. In the market of Ukraine the electronic device "Charm Peel Plate" of the American production which is intended for definition of bacterial contamination of milk is offered.

The article presents the results of studies of protein composition and nutritional milk value of Ukrainian Black-and-White dairy cows with different genotypes of kappa-casein. It was found that the milk of cows with the BB genotype contained more total protein by 0.41 and 0.28 %, the mass fraction of protein (Pro Total) – by 0.37 and 0.25 %, with a probable advantage over the protein content (casein) – by 0.46 and 0.29 % (p≤0.001) and the total amount of casein and globulin – by 0.39 and 0.27 % (p≤0.001) against analogs with genotypes AA and AB. There are differences in the chemical composition and physicochemical properties of milk. In particular, the difference in mass fractions of lactose and dry matter in milk between cows with the genotype BB and AA and AB was respectively 0.16 % (p≤0.001) and 0.11 % (p≤0.01) and 0.64 % (p≤0.001) and 0.37 % (p≤0.01). No less valuable in terms of mass fraction of dry matter was the milk of cows with genotype AB, in which the growth of this indicator against animals with genotype AA was at the level of 0.28 % with a statistically significant difference between them (p≤0.01). Freezing point and density as marker criteria that characterizing the presence of falsification were practically unchanged and did not exceed the permissible norms and amounted to 0.551–0.553 °С and 1028.04–1028.45 kg/m3. The content of somatic cells in the milk of cows of different genotypes of kappa-casein was within the permissible level according to the state standard, which indicates the absence of mastitis. Cows with genotype AA had an increased level of titrated acidity and concentration of free hydrogen ions (p≤0.01 – p≤0.001) against analogs with genotypes AB and BB. However, in general, the hydrogen pH of the milk of cows of all groups had a weakly acidic environment, the values of which ranged from 6.66 units. pH in cows with genotype BB up to 6.71 units. pH – in animals with genotype AA.

The study assessed the changes in the quality and physical and chemical parameters of apples of four cultivars (‘Gala’, ‘Idared’, ‘Topaz’, ‘Red Prince’) subjected to mechanical vibration during transport under model conditions and after storage (shelf-life). Quality changes in apples were evaluated based on skin and flesh colour, total soluble solids, dry matter, firmness, titratable acidity, pH value, total polyphenol content, and antioxidant capacity. The vibration applied at a frequency of 28 Hz caused changes in the above parameters, which were visible also after storage and depended on the cultivar, but often did not show any clear trend or direction or were not statistically significant. The values of the total colour difference factor ΔE showed considerable variations in the skin colour but only small variations in the flesh colour of individual cultivars. Vibration resulted in a decrease in firmness. Variations in dry matter, total soluble solids, pH, and titratable acidity were small, often insignificant. Mechanical vibration and storage led to an increase in the polyphenol content and antioxidant capacity of all studied cultivars. The greatest stability of quality parameters, relatively high content of bioactive compounds, and antioxidant capacity were observed for ‘Red Prince’. The lowest quality parameters were noted for ‘Gala’. The analysed cultivars continued to show a high level of antioxidant capacity after treatment, which allows the conclusion that they remain a good source of bioactive compounds after transport and short-term storage.

Авторами статьи впервые разработана технология производства соков прямого отжима и высокой концентрации из плодов бузины садовой и дикорастущей, собранных на территории Беларуси. Сок прямого отжима получали при помощи ферментации с последующей фильтрацией. Концентрированный сок был получен из сока прямого отжима и экстрагирования выжимок. Для максимального извлечения сока после дробления при ферментативной обработке была использована температура 50 °С в течение 240 мин, количество ферментного препарата составляло 400 см/т. Были исследованы органолептические и физико-химические показатели сока прямого отжима и сока концентрированного: массовая доля сухих веществ, aктивная кислотность (рН), массовая доля пектиновых веществ, cодержание антоцианов, белка, массовая доля органических кислот. Исследованы показатели безопасности продукции, впервые определен состав аминокислот (качество и количество) в концентрированном соке бузины. Установлено, что совокупность физико-химических показателей позволяет отнести сок прямого отжима из бузины к профилактическим напиткам. В состав сока бузины высокой концентрации входят 18 аминокислот в количестве 4,84 г/100 мл. Незаменимых аминокислот выявлено 7 в количестве 1,51 г/100 мл. Также сок суммарно содержит фенолы в соотношении 42,95 мг-экв галловой кислоты/г сухого вещества и большое количество гидролизованных танинов. При этом большинство полифенольных соединений избежали разрушения в процессе концентрации. The authors of the article developed for the first time a technological process for the production of direct-squeezed juice and concentrated juice from the fruits of garden and wild elderberry growing in the Republic of Belarus. Direct-squeezed juice was obtained by fermentation followed by filtration. Concentrated juice was obtained by processing direct-squeezed juice and extracting the marc. For maximum juice extraction after crushing during enzymatic treatment, a temperature of 50 °C was used for 240 min, the dose of the enzyme preparation was 400 cm/t. Direct-squeezed juice and concentrated juice were studied by organoleptic and physicochemical parameters: mass fraction of solids, active acidity (pH), mass fraction of pectin substances, content of anthocyanins, protein, mass fraction of organic acids. The product safety indicators were studied, the qualitative and quantitative composition of amino acids in concentrated elderberry juice was first determined. It has been established that by the combination of physicochemical parameters, direct squeezed juice from elderberry can be considered a preventive drink. The composition of concentrated elderberry juice includes 18 amino acids, in the amount of 4.84 g/100 ml. 7 essential amino acids were detected in the amount of 1.51 g/100 ml. The concentrated juice contained phenols in the quantity of 42.95 mEq gallic acid / gram dry matter and a large number of hydrolyzed tannins. Most polyphenolic compounds were preserved after the juice concentration.

The values of freezing point, titratable and active acidities, conductivity, water activity, humidity, nonfat milk solids the of samples of market bioyoghurt were analyzed. They significantly differ from the same row milk indicators. So, they demonstrated lower values of freezing point, active acidity, water activity, humidity, and increased values of titratable acidity and conductivity, and nonfat milk solids. A large dispersion of the studied products’ properties was found for each manufacturer production as well as between producers. Yoghurts with Bifidobacterium that were produced at the Brest region had the highest values of рН, nonfat milk solids and lowest values of freezing point and humidity. This fact evidences the manufacturer has a well-established technological process for the production of bioyogurt and traceability of raw milk supply. The boundaries of the confidence intervals of physical and chemical properties both by individual manufacturers and jointly were determined. A close relationship between conductivity and freezing point in bioyoghurts of some manufacturers has been found. The dynamics of their changes in last years is traced.

Изучено влияние технологических приемов на качество муки. Определяли качество зерна озимой мягкой пшеницы Краснодарская 57 по ГОСТ 93532016. При определенной технологической схеме 78м двухсортном выходе муки было получено 70 муки 1го сорта и 8 муки 2го сорта. Качество муки соответствует ГОСТ Р 521892003. Мука 1го и 2го сортов обладает пресным вкусом, запахом, свойственным пшеничной муке массовая доля влаги 14,7 (1й сорт) и 13,5 (2й сорт). Наличие минеральной примеси, зараженность вредителями не установлены. Содержание металломагнитной примеси 0,041 мг (1й сорт) и 0,048 мг (2й сорт), что соответствует стандарту. Массовая доля золы в пересчете на сухое вещество составила не более 0,69 для муки 1го сорта и 0,70 для муки 2го сорта, белизна у. е. прибора РЗБПЛ 52,4 (1й сорт) и 30,0 (2й сорт). Качество сырой клейковины для муки 1го и 2го сортов составляет 70,0 и 78,0 у. е. прибора ИДК1 (I группа) соответственно. Определены также крупность помола остаток на сите 2,0 1,9 и 2,2, число падения 200 и 182 с, массовая доля сырой клейковины 30,3 и 26,6, содержание протеина 13,2 и 12,5 для муки 1го и 2го сорта соответственно. Цвет белый для муки 1го сорта и белый с желтоватым оттенком для муки 2го сорта. По органолептическим и физикохимическим показателям пшеничные отруби соответствовали ГОСТ 716966. В результате гидротермической обработки зерна с применением холодного кондиционирования и отволаживанием в течение 4 ч выход сырой клейковины вследствие повышения водопоглотительной способности белков увеличился с 25 до 26,6. Одновременно наблюдалось ослабление клейковины, возрастание ее растяжимости. При отволаживании зерна в течение 6 и 8 ч происходило некоторое увеличение выхода сырой клейковины, : 27,9 и 30,3 соответственно. Качество клейковины составило 70 у. е. прибора ИДК1, что соответствует I группе качества. Выход муки при 4часовом отволаживании составил 64, при 6часовом увеличился до 66. Высокий показатель общего выхода муки 78 был установлен при 8часовом отволаживании. Холодное кондиционирование способствовало улучшению мукомольных и хлебопекарных свойств зерна, увеличению выхода сортовой муки при меньших затратах электроэнергии. The influence of technological methods on the quality of flour has been studied. The quality of winter wheat Krasnodarskaya 57 was determined according to GOST 93532016. At a certain technological scheme with a seventyeight percent twograde flour yield was obtained 70 flour 1st grade and 8 flour 2nd grade. The quality of flour corresponds to GOST R 521892003. Flour of the first and second grades has a fresh taste, the smell characteristic of wheat flour, the mass fraction of moisture 14,7 (1st grade) and 13,5 (2nd grade). The presence of mineral impurities, pest contamination has not been established. The content of metallomagnetic impurities was found to be 0,041 mg (1st grade) and 0,048 mg (2nd grade), which corresponds to the standard. Mass fraction of ash in terms of dry matter was no more than 0,69 for first grade flour and 0,70 for flour of the second grade, whiteness conditional units of the device RZBPL 52,4 (1st grade) and 30,0 (2nd grade). The quality of wet gluten for flour of 1st and 2nd grades is 70,0 and 78,0 units of the device IDK1 (I group) respectively. Were also defined the particle size of grinding the residue on the sieve 2,0 1,9 and 2,2, the falling number 200 and 182 seconds, the mass fraction of wet gluten 30,3 and 26,6, protein content 13,2 and 12,5 for flour 1st and 2nd grade, respectively. The color is white for the flour 1st grade and the white with a yellowish tinge for the flour of the 2nd grade. By organoleptic and physicochemical indicators, wheat bran complied with GOST 716966. As a result of hydrothermal grain treatment with the use of cold conditioning and softening for 4 hours, the yield of raw gluten due to an increase in the waterabsorbing ability of proteins increased from 25 to 26,6. At the same time, a weakening of the gluten was observed, an increase in its extensibility. When softening grain for 6 and 8 hours there is some increase in the yield of wet gluten, : of 27,9 and 30,3 respectively. The quality of gluten was 70 units of the device IDK1, which corresponds to the quality group I. The yield of flour with fourhour softening was 64, with sixhour increased to 66. High total yield of flour of 78 was set when the eighthour softening. Cold conditioning contributed to the improvement of the milling and baking properties of grain, increasing the yield of highgrade flour with less power consumption.

Purpose: to study the effect of feeding lactating cows with a feed additive enriched with a biocomplex of free L-amino acids of plant origin on the indicators of functional homeostasis, productivity and quality characteristics of milk.Materials and methods. Research and production tests were carried out on the basis of the OS "Streletskaya" branch of the Federal State Budgetary Scientific Institution "Federal Research Center of Legumes and Groats". To conduct scientific and production tests, 2 groups of cows of 3-4 lactation were formed, 70 heads each. The groups were formed on the principle of analogous pairs.The cows of the experimental group, starting from the second day after calving, in the morning, once a day, received a granulated feed additive "ZEO-AMINO" (Russia) fraction 0.2-0.7 mm at the rate of 2% of the dry matter of the ration daily for the first 100 days lactation. Experimental animals were monitored daily. Clinical examination of animals was carried out with obligatory control of the general condition, thermometry, counting of respiratory movements and rumen contractions, assessment of the udder condition. The productivity of cows was determined according to the results of control milking. Morphological and biochemical blood tests were performed.Results. It was revealed that the daily use of a granular feed additive of fraction 0.2-0.7 mm, starting from the second day after calving, once a day at the rate of 2% of the dry matter of the diet during the first 100 days of lactation, contributes to an increase in the average daily milk yield of cows on average by 15.9%; by 7 months lactation, an increase in the average daily milk yield was established by an average of 18.3%. It was found that feeding the supplement to cows after calving due to better absorption of nitrogen in the diet and accumulation of proteins in the animal's body allows partially neutralizing the negative consequences of negative energy balance after calving, and contributes to a more intensive recovery of live weight loss, which is reliably confirmed by indicators of animal productivity. The results of a biochemical blood test suggest that the use of a feed supplement in obtaining milk has a positive effect on the assimilation of the diet, metabolism and assimilation processes in the body, activates a number of vital functions during the normal course of physiological processes and ensuring functional homeostasis, which ultimately determines increasing the milk production of animals. Analysis of the quality indicators of milk allows us to conclude that the mass fraction of fat when feeding the additive increased by an average of 0.12 abs. %; the mass fraction of protein increased by an average of 0.22 abs.%.Conclusion. To increase milk productivity, reduce the negative effects of negative energy balance after calving, and more intensively restore body weight loss, as well as increase the efficiency of using feed proteins and normalize metabolic processes, it is recommended that daily use of the feed granulated dietary supplement "ZEO-AMINO" fraction in the diets of dairy cows 0.2-0.7 mm at the rate of 2% of the dry matter of the diet, starting from the second day after calving, once a day during the first 100 days of lactation.

Abstract The purpose of this study was to investigate the microbiological (number of viable lactic acid bacteria and bifidobacteria), physicochemical (dry matter, protein and fat contents, titratable acidity, and pH), and sensory characteristics (appearance of coagulum, taste and aroma, structure at cutting, color, and consistency at shattering) of probiotic Bulgarian yoghurts obtained by ultrafiltration of goat’s milk. These yoghurts were obtained using volume reduction ratios of 2 and 3 with the probiotic starters MZ2f, MZ2f + Bifidobacterium bifidum BB – 87, and MZ2f + Lactobacillus acidophilus LAB – 8. The increase in the level of the concentration by ultrafiltration led to an increase in the dry matter, protein and fat contents of the yoghurts, in the number of lactic acid bacteria and titratable acidity, and to a decrease in the pH. The twofold concentration by ultrafiltration resulted in a higher number of lactic acid bacteria in comparison with yoghurts made without ultrafiltration, and with better sensory characteristics compared to yoghurts without and with threefold ultrafiltration. The higher number of viable cells and better sensory characteristics were obtained for yoghurts with MZ2f + Bifidobacterium bifidum BB – 87 and MZ2f + Lactobacillus acidophilus LAB – 8 in comparison with MZ2f alone.

Abstract. Numerical simulations were carried out in a high-resolution two-dimensional framework to increase our understanding of aerosol indirect effects in mixed-phase stratiform clouds. Aerosol characteristics explored include insoluble particle type, soluble mass fraction, influence of aerosol-induced freezing point depression and influence of aerosol number concentration. Simulations were analyzed with a focus on the processes related to liquid phase microphysics, and ice formation was limited to droplet freezing. Of the aerosol properties investigated, aerosol insoluble mass type and its associated freezing efficiency was found to be most relevant to cloud lifetime. Secondary effects from aerosol soluble mass fraction and number concentration also alter cloud characteristics and lifetime. These alterations occur via various mechanisms, including changes to the amount of nucleated ice, influence on liquid phase precipitation and ice riming rates, and changes to liquid droplet nucleation and growth rates. Alteration of the aerosol properties in simulations with identical initial and boundary conditions results in large variability in simulated cloud thickness and lifetime, ranging from rapid and complete glaciation of liquid to the production of long-lived, thick stratiform mixed-phase cloud.

In this research, the effects of three different holding periods (6, 12 and 24 hours) prior to storage on the quality attributes of Starking Delicious apples were investigated during storage of 8 months at 0.5 ± 1.0 ºC. Changes in weight loss, flesh firmness, pH values, soluble dry matter amount, titratable acidity values, ascorbic acid contents, and total and reducing sugar content were determined. According to the results, the holding period showed statistically significant changes in the quality attributes of the apples (p < 0.05).
