Makaroni pada umumnya terbuat dari tepung terigu, namun untuk mengurangi impor bahan baku tepung terigu diperlukan bahan baku lokal pengganti tepung terigu. Tepung cassava dapat digunakan sebagai pengganti tepung terigu. Penambahan tepung biji nangka diperlukan untuk memperbaiki kandungan gizi pada makaroni. Ekstrak daun kelor sebagai pengganti air dan pewarna alami. Gum xanthan ditambahkan untuk memperbaiki karakteristik makaroni. Penelitian ini bertujuan mengetahui pengaruh proporsi tepung cassava dan tepung biji nangka serta konsentrasi gum xanthan dan penambahan ekstrak kelor sebagai pengganti air dan perwarna alami terhadap karakteristik makaroni yang dihasilkan, sehingga makaroni yang dihasilkan berkualitas baik dan disukai konsumen. Hasil penelitian menunjukkan makaroni tepung cassava dan tepung biji nangka (70:30) dan konsentrasi gum xanthan 2% merupakan perlakuan terbaik dengan nilai kadar air 10,776%, kadar abu 1,680%, kadar pati 65,781%, kadar protein 5,430%, kadar amilosa 19,741%, serat kasar 3,745%, aktivitas antioksidan 10,530%, cooking loss 2,691%, daya rehidrasi 102,676%, serta uji organoleptik yang menunjukkan nilai warna 3,96, aroma 3,04, rasa 3,32, dan tekstur 3,64.

Permasalahan yang muncul pada pembuatan mutiara pati dengan bahan baku pati garut adalah perbedaan gelatinisasi, yaitu perbedaan kebutuhan air dan panas untuk gelatinisasi. Penelitian ini bertujuan untuk menghasilkan mutiara pati dengan bahan baku pati garut serta untuk menentukan kadar air adonan yang tepat sehingga dihasilkan mutiara pati garut rehidrasi dengan sifat fisik dan tingkat kesukaan yang disukai panelis.Dalam penelitian ini dilakukan pembuatan mutiara pati garut rehidrasi dengan variasi kadar air adonan 45 %, 47.5 % dan 50 %. Analisa yang dilakukan yaitu solid loss, total cooking loss, tekstur, swelling index serta uji kesukaan.Hasil penelitian menunjukkan bahwa makin kecil kadar air adonan, maka solid loss kecil, total cooking loss kecil, tekstur makin keras dan makin disukai panelis. Mutiara pati garut rehidrasi yang disukai panelis adalah mutiara pati garut dengan kadar air adonan 45 % dengan nilai solid loss 1,46 % bk, total cooking loss 1,74 % bk, tekstur 3,95 N, deformasi 45,08 %.

ABSTRAKPenelitian ini bertujuan untuk mengetahui pengaruh penambahan minyak buah merah (MBM) pada pakan terhadap kualitas fisik daging ayam broiler. Seratus ekor ayam broiler umur sehari (DOC) ditempatkan pada lima kelompok perlakuan pakan yang berbeda, yaitu: P1 (pakan kontrol/tanpa penambahan minyak), P2 (2% MBM), P3 (4% MBM), P4 (6% MBM) dan P5 (6% Minyak kelapa sawit). Setiap kelompok perlakuan terdiri dari empat ulangan masing-masing dengan lima ekor. Ayam broiler dipelihara selama 35 hari. Rancangan yang digunakan adalah Rancangan Acak Lengkap (RAL) dengan analisis variansi pola searah dan diuji lanjut dengan Duncan’s New Multiple Range Test (DMRT). Hasil penelitian menunjukkan bahwa semua variable yang diamati menunjukkan adanya pengaruh nyata (P<0,05) terhadap perlakuan yang diberikan. Dari hasil penelitian ini dapat disimpulkan bahwa penggunaan minyak buah merah (MBM) dalam pakan mampu memberikan pengaruh terhadap pH Daging, Daya Ikat Air (DIA), susut masak dan keempukan daging ayam broiler.Kata kunci : daging ayam broiler, daya ikat air, keempukan daging, pH daging, susut masakABSTRACT The experiment was conducted to study the effect of red fruit oil (RFO) onphysical quality  of broiler chicken. One hundred day old chicken (DOC) were placed in four groups of different treatments, of from levels of RFO (P1 (diet without addition of RFO), P2 (2% RFO), P3 (4% RFO) and P4 (6% RFO) and P5 (6% Palm oil)). The treatment group consisted of fivereplications with five birds each. Broiler chickens were reared for 35 days. Statistical analysis used Completely Randomized Design (CRD) and followed by Duncan’s New Multiple Range Test (DMRT). The results showed that the pH value, moisture content, water holding capacity, and cooking loss was significant differences. It could be concluded that the addition of red fruit oil in the diet give effect  of broiler chicken meat.Keywords: broiler meat, cooking loss, moisture content, pH value, water holding capacity

Effects of different levels of wheat flour as dietary fiber on the quality of fresh and preserved beef meatballs during storage were explored in this study. Ground beef (Batter) samples were divided into four treatment groups and treated with different level of wheat flour as T1 (control, 0%), T2 (5%), T3 (10%) and T4 (15%). Proximate analysis (dry matter, ash, ether extract and crude fat), sensory tests (color, flavor, tenderness, juiciness, overall acceptability), biochemical analysis (free fatty acids, Thiobarbutiric acid values and peroxide value) and microbiological examination were carried out as responses at the interval of 0, 30 and 60 days during storage at -200C. The experimental design was a 4 × 3 factorial in Completely Randomized Design replicated three times per cell. DM content was increased significantly (p<0.05) with the advancement of storage intervals. CP and EE content of all the treatments were decreased significantly (p<0.05) among the different treatment groups. FFA and TBARs values were differed significantly (p<0.05) at different treatment levels. PVs were decreased significantly (p<0.05) at different treatment levels. Color, cooking loss and overall acceptability were differed significantly (p<0.05) at different treatment levels. Raw and cooked pH were increased significantly (p<0.05) at different treatment levels. The juiciness at different treatment levels were decreased significantly(p<0.05).TVC (logCFU/g), TCC (logCFU/g) and TYMC (logCFU/g) were differed significantly (p<0.05) at different treatment levels. In conclusions, meatballs having 5% wheat flour was better in terms of color, odor, tenderness, juiciness and overall acceptability, cooking loss and microbial qualities.Bang. J. Anim. The objective of this study was to evaluate the influence of different ageing times before deboning (deboning time) and ageing times after deboning (holding time) on the quality (sensory attributes and texture) and cooking loss of chicken breast marinated, cooked and frozen using a continuous process.The following3² experimental design was used (3 deboning times: zero, 6 and 12 hours; and 3 holding times: zero, 12 and 24 hours). Brine absorption, chicken breast pH and cooking loss were evaluated, a sensory analysis was carried out and the shear force was determined. The deboning and holding times did not significantly influence brine absorption and pH, but did significantly influence cooking loss, where the lowest value obtained was a mean of 19.72% for deboning times of 6 or 12 hours and a holding time of 24 hours. A deboning time of 6 hours was sufficient to improve tenderness as measured by a sensory analysis and shear force determination.

<p>The research was aimed to observe the effect of antemortem injection dose of crude papain, muscle part and its interaction on physical and organoleptic qualities post production laying hen meat. The sample used were the breast and thighs from 20 hens on average age 82 weeks. Completely Randomized Design (CRD) used Factorial Pattern 4 x 2. Factor A consisted A1: without papain (control); A2: 1 mg papain/ kg BW; A3: 2 mg papain/ kg BW and A4: 3 mg papain/ kg BW, factor B consisted B1: breast muscle and B2: thigh muscle. The datas were analyzed by Analysis of Variance and continued by Duncan's Multiple Range Test. The results showed that injection of crude papain dose gave highly significant difference (P&lt;0.01) to all variables except tensile strength (P&lt;0.05). Body parts gave highly significant difference (P&lt;0.01) on shear force, tensile strength, WHC, cooking loss, organoleptic (shear force, texture and juice), and hedonic (P&lt;0.05). The interaction was found between injection of crude papain dose and body part on WHC, organoleptic and hedonic (P&lt;0.01), cooking loss (P&lt;0.05). Dose of 3 mg/kg WB in thigh and breast meat has the best quality and the organoleptic quality of the combination of papain injection of 3 mg/kg WB in breast meat and 2 mg/kg WB in thigh meat has the best quality.</p><p>Keywords: antemortem injection, crude papain, physical and organoleptic quality, post production<br />laying hen meat</p>
