Tuna loin waste called “tetelan” is a waste of tuna loin processing, consisting of red meat and some white meat. “Tetelan” is fish meat that sticks to the bone or unused meat because of its ununiform size. This loin waste contains high protein but smells fishy. To reduce the fishy smells, “tetelan” tuna was processed to surimi kamaboko due to the steaming process and spices' addition to improving the texture properties of kamaboko carrageenan was added while surimi was processed. The research objective was to determine the effect of carrageenan concentrations on the chemical and organoleptic properties of kamaboko “tetelan” tuna. The research used an experimental method, with a single treatment named concentration of carrageenan and sago starch consisted of 3 levels of carrageenan concentration 1.0, 1.5, and 2.0%. Kamaboko was analyzed chemically involved moisture, ash, fat and protein content, and organoleptic involved aroma, taste and texture. Organoleptic test data (aroma, taste, texture) were analyzed using the Friedman test followed by multiple comparison tests. Meanwhile, the chemical data were analyzed using a Completely Randomized Design. Data analysis showed that the concentration of carrageenan and sago starch did not significantly affect the taste, aroma, and texture of kamaboko. The treatment applied significantly influenced the ash content of kamaboko. Kamaboko “tetelan” tuna showed a high protein content above the kamaboko protein quality standard. Keywords: Carrageenan; chemistry; organoleptic.   ABSTRAK Limbah hasil pengolahan tuna loin berupa tetelan ikan yang terdiri dari jenis daging merah dan sebagian daging ikan putih. Tetelan berupa daging ikan yang menempel pada tulang ikan atau daging ikan yang tidak dapat dimanfaatkan karena sayatannya yang tidak merata. Daging ikan tuna mengandung protein tinggi tetapi memiliki kelemahan berbau amis, sehingga kurang disukai konsumen. Pemanfaatan tetelan ikan tuna sebagai bahan baku surimi untuk diolah menjadi kamaboko diharapkan dapat mengurangi bau amis karena adanya proses pengukusan dan penambahan bumbu. Penambahan konsentrasi karagenan bertujuan untuk meningkatkan sifat tekstur kamaboko. Tujuan penelitian untuk mengetahui pengaruh konsentrasi karagenan terhadap sifat kimia dan organoleptik kamaboko tetelan ikan tuna. Penelitian menggunakan metode eksperimen, dengan perlakuan tunggal konsentrasi karagenan terdiri dari tiga taraf yaitu konsentrasi karagenan 1,0, 1,5, dan 2%. Kamaboko di analisa kimia (kadar air, abu, lemak dan protein) serta organoleptik (aroma, rasa dan tekstur). Data uji organoleptik (aroma, rasa, tekstur) dianalisis mengggunakan uji Friedman dilanjutkan dengan uji perbandingan berganda. Sedangkan data kimia dianalisis dengan rancangan acak lengkap. Hasil uji Friedman menunjukkan perlakuan konsentrasi karagenan tidak berpengaruh nyata terhadap rasa, aroma dan tekstur kamaboko, sedangkan perlakuan hanya berpengaruh terhadap kadar abu kamaboko. Tetapi kadar protein kamaboko surimi tetelan tuna tinggi di atas standar mutu kamaboko. Kata kunci: Karagenan; organoleptik; sifat-sifat kimia.

The aim of this study was to determine the concentration of tuna fish that can produce shredded which has good quality. The method used in this study was a completely randomized design (RAL) with 3 treatments and 3 replications. The treatments in this study were A1 (375 g of skipjack meat) A2 (250 g of skipjack meat) and A3 (125 g of skipjack meat). The results of this study resulted that A3 treatment with a concentration of 125 g of skipjack fish meat provided good quality fish with a water content of 7,17%, ash content of 2,72% and protein content of 33,22%.

Snakehead fish one species of freshwater having high protein content. In addition snakehead fish has a lot of meat and white so that it can be processed into products such as nuggets. The addition of carrot flour nuggets in processing aims to increase the nutritional value and reduce the use of a binder such as flour. This research uses the method developed consists of two phases,  in the first making carrot flour and the second phase of making nuggets snakehead fish with formulation flour carrot (20g , 30g, 40g) , tapioca flour ( 80g , 90g, 70g) and wheat flour (50g, 30g, 40g). Data analysis using a completely randomized design (CRD) with three time test. The results snakehead fish nuggets are a high protein content from 16.03 to 24.7% and and favored by the panel both in terms of taste, color, aroma and texture. Keyword : snakehead fish, nugget, carrot

Chemical Composition and Sensoric Value of Tuna Fish Sticks (Thunnus sp.) with Addition of Mangrove Flour (Bruguiera gymnorrhiza)ABSTRACT         This study aims to determine the effect of the addition of mangrove flour to sensory properties and water content and protein content of tuna sticks. This study used a Completely Randomized Design (CRD) with a combination of the use of fish meat and mangrove flour (from total stick ingredients) in a row: 50: 0% (I50M0), 45: 5% (I45M5), 40:10% (I40M10), and 35:15% (I35M15). The results showed the addition of mangrove flour with different concentrations significantly affected the sensory properties of color, aroma, texture, appearance and water content and protein content of tuna sticks but did not significantly affect the taste sensory attributes. The sensory attributes of color, aroma, texture, appearance, water content and protein content obtained the highest average values were 7.08, 6.07, 7.03, 6.6, 9.52 respectively and 14.58 while the sensory attributes of taste obtained the highest average values around 6.71. The combination of the use of fish meat and mangrove flour on the color and aroma sensory attributes of the I35M15 treatment is preferred while the sensory attributes of the texture, taste, and appearance of I40M10 are preferred. Keywords: Bruguiera gymnorrhiza, mangroves, sensoric, Thunnus sp., tuna sticks.ABSTRAKPenelitian ini bertujuan untuk mengetahui pengaruh penambahan tepung mangrove terhadap sifat sensorik dan komposisi kimia stik ikan. Penelitian ini menggunakan Rancangan Acak Lengkap (RAL) dengan kombinasi penggunaan daging ikan dan tepung mangrove (dari total bahan stik) berturut-turut:50:0 % (I50M0), 45:5 % (I45M5), 40:10 % (I40M10), dan 35:15 % (I35M15). Hasil penelitian menunjukkan penambahan tepung mangrove dengan konsentrasi yang berbeda berpengaruh nyata terhadap sifat sensorik warna, aroma, tekstur, kenampakan dan kadar air serta kadar protein stik tuna namun tidak berpengaruh nyata pada atribut sensorik rasa.  Nilai rerata tertinggi pada atribut sensorik warna, aroma, tekstur, kenampakan, kadar air  dan kadar protein berturut-turut yaitu 7.08, 6.07, 7.03, 6.6, 9.52 dan 14.58 sedangkan pada atribut sensorik rasa diperoleh nilai rerata tertinggi sekitar 6,71. Kombinasi penggunaan daging ikan dan tepung mangrove pada atribut sensorik warna dan aroma perlakuan I35M15 lebih disukai sedangkan pada atribut sensorik tekstur, rasa dan kenampakan I40M10 lebih disukai dibandingkan pada perlakuan I35M15.Kata kunci: Bruguiera gymnorrhiz, mangrove, sensorik, stik tuna, Thunnus sp.

Potential content of Hg content in waters has exceeded the standard quality standard that can thwart the fish farming activities. For further research of Hg analysis on water and meat of catfish at KJA Danau Sipin in 2016, research with model looking for solution to solve contamination of mercury (Hg) content in water and catfish meat (Pangasionodon hypopthalmus) with technical use of azolla (azolla microphilla) as phytoremediation to decrease Hg of water to prevent Hg from entering fish body. The research activities will be conducted month (July - September 2017) covering the preparation, implementation of research, and data analysis. Research conducted around KJA fish cultivation in the waters of Sipin Lake Jambi. The design of this research is Completely Randomized Design with azolla density level as treatment. The results of the analysis and observation show that the azolla density gives no significant effect on the content of mercury (Hg) in water, fish meat and Azolla plant. The higher the density of the azolla plant will be the higher the mercury absorbed and further impact on the decrease of Hg levels in the water. Keyword : Absorption, Mercury, Azolla, KJA ABSTRAKPotensi kandungan kandungan Hg pada perairan telah melebihi dari standar baku mutu yang dapat menggagalkan kegiatan budidaya ikan. Untuk penelitian lanjutan dari analisis Hg pada air dan daging ikan patin di KJA Danau Sipin tahun 2016, dilakukan penelitian dengan model  mencari solusi mengatasi pencemaran kandungan merkuri (Hg) pada air dan daging ikan patin (Pangasionodon hypopthalmus) dengan teknis pemanfaatan  azolla (azolla microphilla) sebagai  fitoremediasi untuk penurunan Hg air guna mencegah Hg masuk kedalam tubuh ikan. Kegiatan penelitian akan dilaksanakan bulan (Juli - September 2017) yang meliputi persiapan, pelaksanaan penelitian, dan analisis data. Penelitian dilaksanakan disekitar KJA budidaya ikan  di perairan danau Sipin Kota Jambi. Rancangan penelitian yang digunakan ini adalah Rancangan Acak Lengkap dengan tingkat kepadatan azolla sebagai perlakuan. Hasil analisis dan pengamatan menunjukkan bahwa kepadatan azolla memberikan pengaruh berbeda tidak nyata tehadap kandungan merkuri (Hg) didalam air, daging ikan dan tumbuhan Azolla. Semakin tinggi tingkat kepadatan tanaman azolla akan semakin tinggi merkuri yang diserap dan selanjutnya berdampak terhadap penurunan kadar Hg didalam air. Keyword :  Penyerapan, Merkuri, Azolla, KJA

      Brownies merupakan cake coklat yang terbuat dari tepung terigu, lemak, telur, gula pasir dan coklat. Metode pemasakan brownies ada dua yaitu pemanggangan dan pengukusan. Penelitian ini menggunakan tepung jewawut dan tepung maizena agar dihasilkan brownies kukus bebas gluten. Penelitian ini bertujuan untuk mengetahui formulasi tepung yang memiliki kadar protein tertinggi pada brownies dan untuk mengetahui lama pengukusan yang optimal sehingga menghasilkan brownies kukus tepung jewawut dan tepung jagung yang paling disukai. Penelitian ini menggunakan Rancangan Acak Lengkap (RAL) dengan dua faktorial yaitu faktor pertama ratio tepung jewawut dan tepung jagung (50:50, 40:60 dan 30:70), sedangkan faktor kedua lama pengukusan (30 menit, 40 menit dan 50 menit). Hasil penelitian menunjukkan Brownies kukus tepung jewawut dan tepung jagung dengan ratio 50:50 dan lama pengukusan 50 menit merupakan ratio yang terbaik karena memiliki kadar protein paling tinggi yaitu 5.828%.  Pada perlakuan ini menghasilkan 19.967% kadar air, 1.585% kadar abu, 1.786% gula total, serta uji organoleptik terhadap warna 3.590 (coklat gelap), tekstur 3.340 (lembut), flavor jewawut 2.855 (sedikit terasa) dan kesukaan keseluruhan 3.285 (disukai). Kata kunci : Brownies, tepung jewawut, tepung jagung, kadar protein.  ABSTRACT      Brownies is chocolate cakes made from flour, fat, eggs, sugar and chocolate. There are two methods of cooking brownies namely roasting and steaming. This study uses millet flour and maizena flour to produced gluten free steamed brownies. This study aims to determine the best of flour formulated which has highest protein content in steamed brownies and to knew the optimal steaming time that produced the most favored  of  steamed brownies millet flour and  corn flour. This study used a completely randomized design (CRD) with two factorials, the first factor is ratio of millet flour and corn flour (50:50, 40:60 and 30:70), while the second factor was the duration of steaming process (30, 40 and 50 minutes). The result of the study showed steamed flour of millet flour and corn flour with ratio of 50:50 and with steamed process duration 50 minutes is the best ratio because it had the highest protein content of 5.828%.  In this treatment yielded 19.97% moisture content, 1.585% ash content, 1.786% total sugar and organoleptic test is 3.590 (dark chocolate) colors, 3.340 (soft) texture, 2.855 (slightly felt) millet flavors and 3.285 (preferred) overall preferences. Keywords :  Brownies, millet flour, corn flour, protein content

Maggot black soldier fly (Hermetia illucens) is a protein source of feed which is highly favored by poultry, especially ducks and chickens. However, it is feared that the provision of live maggot in ducks will affect the organoleptic quality of the egg, especially its taste and aroma. Therefore this study aims to determine the organoleptic quality of duck eggs fed Hermetia illucens maggot feeds in a living state. The study used 120 alabio ducks which were placed in a postal cage. The design used was a completely randomized design, each treatment using six replications. Each replication is taken egg sample to be tested panelists. The panelists used were 67 panelists who were somewhat trained. The data obtained were analyzed of variance and Duncan's multiple range test. The treatments that were tried consisted of P1: low protein rations without live maggot, P2: low protein rations with live maggot administration 40 g/bird/day, P3: high protein rations without live maggot administration, and P4: high protein rations with live maggot administration 40g/bird/day. The results showed that the treatment affected the texture, flavor, and aroma of boiled eggs. Ducks fed with high protein ration coupled with the provision of live maggot 40 g/bird/day produce softer textures, tastes quite good, and aroma more fishy. Keywords: Maggot, duck eggs, organoleptics

This study aims to determine the quality of jackfruit seed juice drinks with the addition of red ginger and to determine the level of acceptance of panelists on jackfruit seed juice drinks. Parameters observed included water content, protein content, carbohydrate content and organoleptic including color, taste, aroma and texture. This study used a Completely Randomized Design (CRD) consisting of one factor, namely the concentration of red ginger juice with four treatments, namely: 0%, 6%, 12%, 18%, each repeated three times. The results showed that jackfruit seed juice drink with the addition of 18% red ginger was the best treatment from the results of organoleptic tests. The proximate test results showed that the best treatment was 3.13% water content in 12% ginger treatment, 2.17% protein in 18% red ginger treatment and 95.61 carbohydrate in 18% red ginger treatment.

Cookies is one type of populer biscuits. The basic ingredients of cookies are generally wheat flour. The availability of wheat flour in Indonesia is dependent on imports. To overcome this, the substitute of wheat flour is needed. Alternative materials can from tubers one of them is a black potato. The objective of this research were to substitute wheat flour with black potato starch for cookie manufacture and to analyze chemical composition and physical properties of cookies. The design used was Completely Randomized Design (CRD) with flour flour treatment: black potatoes are 100%, 90%: 10%, 80%: 20%, 70%: 30%, 60%: 40%, and 50%: 50%. The addition of black potato starch cause a decrease in water content, protein content, fat content and increased ash content of cookies. The addition of potato starch up to 30% produces the preferred cookies that accepted by panelists.Key words: Coleus tuberosus, cookies, wheat flourABSTRAKCookies (kue kering) merupakan salah satu jenis biskuit yang banyak disukai oleh masyarakat dari berbagai kalangan. Bahan dasar pembuatan cookies umumnya adalah tepung terigu. Ketersediaan tepung terigu di Indonesia masih tergantung pada impor. Untuk mengatasi hal tersebut maka diperlukan bahan alternatif pengganti terigu. Bahan alternatif bisa berasal dari umbi-umbian salah satunya adalah kentang hitam. Penelitian ini bertujuan untuk mensubstitusi tepung terigu dengan tepung kentang hitam pada pembuatan cookies serta menganalisa komposisi kimia dan sifat fisik cookies tersebut. Rancangan yang digunakan adalah Rancangan Acak Lengkap (RAL) dengan perlakuan tepung terigu tepung : kentang hitam yaitu 100%, 90% : 10%, 80% : 20%, 70% : 30%, 60% : 40%, dan 50% : 50%. Penelitian ini dilakukan di laboratorium pengolahan pangan dan laboratorium kimia dan biokimia pangan Fatepa Universitas Mataram. Penambahan tepung kentang hitam menyebabkan penurunan kadar air, kadar protein, kadar lemak dan peningkatan kadar abu cookies.Penambahan tepung kentang sampai 30% menghasilkan cookies yang disukai panelis.Kata kunci: cookies, kentang hitam, tepung terigu

The need to seek for alternative feed materials with nutritional and medicinal values to support livestock growth necessitated this study. Forty-five unsexed rabbits crosses (Chinchilla × Newzealand white) 5- 6 weeks old with average weight of 720g were used in a 10- week feeding trial to evaluate the performance of growing rabbits fed on varying levels of dried okra leaves. The rabbits were assigned into five treatment groups containing dried okra leaves (DOL) at 0%, 2.5%, 5%, 7.5% and 10% inclusion levels for dietary treatments (T1, T2, T3, T4 and T5) respectively. Each treatment consisted of 9 rabbits and replicated thrice with each replicate consisting of 3 rabbits in a completely randomized design. Data collected were subjected to one-way analysis of variance (ANOVA). Results indicated that daily feed intake was significantly (P<0.05) largest in rabbits fed 5.00% inclusion level of dried okra leaves (84.57g) and least in rabbits fed 0.00% level of inclusion of dried okra leaves (72.12g). Feed efficiency (FE) was poorest (P<0.05) in rabbits fed 10.00% DOL (0.15%) and best (0.20%) in rabbits fed 2.50% dried okra leaves. It was concluded that okra leaves can be included in diets for growing rabbits and 2.50% level of dried okra leaves inclusion is recommended for adoption by farmers to maximize profit.

This study aims to determine the effect of steamed potatoes and green bean flour on the characteristics of flakes, and to know the right ratio of steamed potatoes and green bean flour which produced flakes with the best characteristics. The was used in this research completely randomized design with the treatment ratio of steamed potatoes and green bean flour, which consists of 6 levels such as: 35% : 65%, 40% : 60%, 45% : 55%, 50% : 50%, 55% : 45%, 60% : 40%. The treatment was repeated 3 times to obtained 18 units of the experiment. The data were analysed by variance analysis  and if the treatment had an effect on the variable then continued with Duncan test. The result showed steamed potatoes and green bean flour ratio had a significant effect on water content, ash content, fat content, protein content, carbohydrate content, color (hedonic), aroma (hedonic), texture (hedonic and scoring), taste (hedonic) and overall acceptance (hedonic). Ratio of 35% steamed potatoes and 65% green bean flour produced flakes with the best characteristics, with 2.41 % water content, 4.57 % ash content, 19.16% protein content, 10.20% fat content, 63.66% carbohydrate content, color liked, aroma liked, texture crunchy and liked, taste netral and overall acceptance rather liked.
