Consumers are increasingly aware of the consumption of natural health products. Husk Tomato fruit is a remarkable fruit in a modern survey. Therefore, this study aims to produce novel stirred probiotic yogurt (SPY) fortified with Husk Tomato Juice (HTJ). Chemical, microbiological, toxins, color, and viscosity characteristics for the new product were evaluated. Vitamins A, B1, B2, C, amino acid profile, and the effect of HTJ or SPY on the growth of some pathogens were assessed. Vitamin A and β-carotene for fresh stirred probiotic yogurt were also analyzed. On the other side, the control sample (with no fortification) and four treatments of SPY were produced with different ratios of Husk Tomato Juice T1, T2, T3, and T4 with (20, 30, 40, and 50% V/V) respectively. Apparent viscosity, color parameters, and pH values of fermented beverage samples were estimated. Data revealed that the juice had a considerable vitamin C ratio, representing about 32-38% of the recommended daily use. On the same line, Lysine, Leucine, Valine, Threonine, Tryptophan, and Isoleucine were the main essential amino acids in the juice. Also, the HTJ possessed diverse degrees of inhibition opposite to grow of some pathogenic bacteria and fungi. The counts of starter cultures of yogurt and Lb. casei as the probiotic strain increased during the storage period until 10 days, especially in T1, T2, and T3. The viable counts of pathogenic strains in the contaminated treatments decreased during storage periods compared with control. Furthermore, treatment samples had significantly lower L values and higher a & b values due to the orange color of the high ratio of β-carotene in HTJ compared to control samples. A healthy probiotic fruity beverage had been successfully produced. It has appropriate amounts of important vitamins.

Background: Thinking about something new that is important for consumer health is a great concern to all those interested in the dairy industry and its products. Husk Tomato is a promising nutritious fruit rich in minerals, vitamins, and antioxidant compounds. Aim: The objective of this study is to evaluate Husk Tomato Juice (HTJ) constituents, its antimicrobial activity and antioxidant properties. Then utilize it for producing stirred probiotic yogurt (SPY) as a novel fermented product. Methodology: The main components and sugars of fresh HTJ were analyzed using High Performance Liquid Chromatography (HPLC). Antioxidant activity by DDPH (2, 2-diphenyl-1picrylhydrazil) test as well as total phenolic compounds were also determined. Four treatments of SPY fortified with 20, 30, 40 and 50% (v/v) HTJ & Lb. casei FEGY9973 (as probiotic bacteria) were prepared and served as T1, T2, T3 and T4 respectively were compared against control without juice. Results: Data revealed that the main compounds of HTJ were Sinapic (8.170 µg/ml), Protocatechuic (6.344 µg/ml) and Cinnamic (4.660 µg/ml). Contents of Fe, Mg, Na and Ca were 1.766, 1.627, 7.436 and 12.14 mg/100 g. Antioxidant activity and total phenolic compounds of fresh HTJ were 68.88% and 319.15 ppm respectively. It was found that HTJ had powerful antimicrobial activity against both of Y. enterocolitica and Ent. faecalies. On the other hand, data revealed that the antioxidant activity of fresh SPY samples were significantly (p<0.05) higher 67.66, 76.93, 69.34 and 69.59% for T1, T2, T3 and T4 in order, compared to control sample (66.57%). While, appearance scores had no significant (p>0.05) for all samples in fresh, 5 and 10 days of storage. All treatment samples possessed acceptable sensory properties. Conclusion: It could be conducted that SPY fortified with 20 and 30% HTJ had been successfully produced as a healthy dairy product.

The study aims to standardize papaya – black grape blend fruit rollups in proportions of 70:30, 60:40, 50:50 with experimental Ezidri food dehydrator and to compare them with 50:50 of control cabinet dryer rollups. Experimental Ezidri 50:50 ratio rollups were accepted by taste panel judges compared to other ratios and control sample. The results revealed that moisture content, TSS, thickness, pH, vitamin C, β – carotene, L*, a* and b* color values of fruit rollups decrease while, titrable acidity and microbial counts increase in storage period to 10 weeks at room temperature. It was concluded that Ezidri papaya – black grape sample showed superior qualities than control sample (cabinet) during storage.

The present study was conducted to evaluate the influence of lactose hydrolysis by using two different strategies (by addition of β-galactosidase (HA-LACTASE™) before fermentation of camel milk to get hydrolyzed camel milk as substrate that included three levels of lactose-hydrolyzed milk (LHM) 25, 50 and 90% or together with the starter cultures during fermentation (co-hydrolysis)) on the microbiological, physicochemical and sensory properties of fermented camel during manufacturing and the storage period of 21 days at 5ºC. In general, the results showed a significant (P<0.05) reduction in fermentation time with an increase in the level of lactose hydrolysis. The co-hydrolysis fermented milk exhibited a significant (P<0.05) decrease in the fermentation time (279 min) in comparison to control treatment (452.5 min). After 6 h of the incubation period, the viable cell counts were more outstanding in the co-hydrolysis and LHM 90% fermented milk, about 1 log cycle higher than other treatments. The mean values of pH were a highly significant (P<0.05) dropped in co-hydrolysis and LHM 90% samples and reached to pH 4.6 in 6 hours, whereas the control, LHM 25 and 50% samples reached to the near of the same degree of pH in 8 hours of the fermentation process. Furthermore, the higher amount of exopolysaccharide (EPS) was found in co-hydrolysis fermented milk 262.3 mg/kg followed by LHM 90% 250.3 mg/kg, while control, LHM 25 and 50% treatments had the lowest amount of 178.3, 185.3 and 197.7 mg/kg, respectively. The higher amount of EPS in co-hydrolysis and LHM 90% treatments caused a concomitant increase of the apparent viscosity and a significant (P<0.05) decreased in susceptibility to syneresis in comparison to other treatments. Moreover, the co-hydrolysis fermented camel milk had significantly (P<0.05) higher ratings for all sensory characteristics and more liked than other treatments. Although the LHM 90% samples had a better rheological characteristic, the panelists rated as unacceptable because of the strong sweet taste. Results showed that the simultaneous addition of enzyme and starter together demonstrated to be a satisfactory strategy in making fermented camel milk with high quality in the texture and overall acceptability beside its beneficial properties as a functional dairy product.

The existing methods of disinfection of containers for fermented milk products proved to be ineffective. The present research featured an antimicrobial preparation based on silver, copper, and zinc nanoparticles as a disinfectant solution. The authors studied the properties of the antimicrobial in order to prove its effectiveness in processing containers to increase the shelf-life of fermented milk products. The size of the silver nanoparticles ranged from 1 to 10 nm. The nanoscale particles of copper were obtained by the method of electric explosion. It was established that the mass fraction of the active substance (active metals) in the antimicrobial was 50.1%; the mass fraction of water was 11.2%; the mass fraction of hydrogen peroxide was 1.0%. To assess the ability of the antimicrobial to increase shelf-life of fermented milk products, the authors analyzed the microbiological properties of cottage cheese. The 50-gram samples were packed in pre-treated polyethylene containers that had been cleaned with the antimicrobial. After that the samples were left for storage at minus 4 ± 1°C. The quality and the microbiological state of the cottage cheese was evaluated on days 3, 5, 7, 9, 11, and 13, which was justified by the experimental conditions and regulatory documentation. Eventually, it was established that the product contained no pathogenic bacteria, such as L. monocytogenes, Salmonella, E. coli, staphylococci, yeast, molds or any viable microbial cells. It was proved that the test sample retained its consumer properties for 13 days, while the control sample was found unusable by day 7. Thus, by using the antimicrobial, it was possible to increase the shelf life of the dairy product by more than 5 days.

The study was conducted to assess the effect of different waxing materials on the quality attributes of tomato fruits. A 2 x8 factorial experiment layout in complete randomized design with 16 treatment combinations and 3 replication was adopted.The materials that were used for the experiment are two (2) varieties of tomatoes (Pectomech and Power Rano) and seven(7) waxing material (shea butter, cassava starch, beeswax, and a combination of shea butter + cassava starch, shea butter + beeswax, cassava starch + beeswax, shea butter + cassava starch + beeswax) and a control. Results from the experiment indicated that all waxing treatments delayed the development of weight loss, firmness, pH, total soluble solids, and total titrable acidity. The results also suggested that edible wax coatings delayed the ripening process and colour development of tomato fruits during the storage period and extended the shelf life. However Beewax treatment and its combinations performed better than the other treatments. It was therefore recommended that locally produced wax such as Beewax, Shea butter, Cassava Starch treatments and their combinations could be a good technology for preserving the quality and extending the shelf life of fresh tomato fruit as well as maintaining the physical and chemical properties.

Chitosan is receiving increasing attention from the food industry for being a biodegradable, non-toxic, antimicrobial biopolymer able to extend the shelf life of, and preserve the quality of, fresh food. However, few studies have investigated the ability of chitosan-based coatings to allow the diffusion of bioactive compounds into the food matrix to improve its nutraceutical quality. This research is aimed at testing whether a hydrophilic molecule (tyrosol) could diffuse from the chitosan-tyrosol coating and cross the tomato peel. To this end, in vitro permeation tests using excised tomato peel and an in vivo application of chitosan-tyrosol coating on tomato fruit, followed by tyrosol quantification in intact fruit, peel and flesh during a seven-day storage at room temperature, were performed. Both approaches demonstrated the ability of tyrosol to permeate across the fruit peel. Along with a decreased tyrosol content in the peel, its concentration within the flesh was increased, indicating an active transfer of tyrosol into this tissue. This finding, together with the maintenance of constant tyrosol levels during the seven-day storage period, is very promising for the use of chitosan formulations to produce functional tomato fruit.

Современный рынок молочной продукции претерпевает существенные изменения, в основе которых лежит тенденция на удешевление продукции. Российские молочные продукты, произведенные из классического сырья по традиционным технологиям, зачастую подвергаются фальсификации продуктами с пониженными массовыми долями жира и белка, заменой молочных компонентов и живых заквасочных культур вследствие отсутствия системы идентификационных характеристик. Реформой технического регулирования, проведенной в Российской Федерации в 2000 году, правила идентификации как способ отнесения продукта к определенной группе продукции посредством сопоставления его характеристик с установленными были законодательно закреплены на федеральном уровне. В настоящее время идентификация служит неотъемлемой частью оценки (подтверждения) соответствия продукции и является главным средством борьбы с фальсификацией. Критериями идентификации выступают регламентированные показатели продукта. Технический регламент Таможенного союза 033/2013 «О безопасности молока и молочной продукции» включает понятие «национальный молочный продукт», однако критерии идентификации этой группы продукции отсутствуют. Целью исследования был поиск уникальных характеристик российских молочных продуктов для их идентификации среди аналогичной продукции. В качестве метода был применен ретроспективный анализ литературы с глубиной поиска до 1930-х гг. Установлено, что в качестве критериев идентификации молочных продуктов использовали не только сырьевой и технологический признаки, но и упаковку. Выявленные критерии будут положены в основу формирования системы идентификации российских молочных продуктов. The modern dairy market is undergoing significant changes, which are based on the trend towards cheaper products. Russian dairy products made from classical raw materials using traditional technologies are often falsified by products with reduced mass fractions of fat and protein, replacing dairy components and live starter cultures due to the lack of an identification system. The reform of technical regulation carried out in the Russian Federation in 2000, the identification rules as a way of classifying a product as a specific product group by comparing the characteristics with the established ones were legally fixed at the federal level. Currently, identification is an integral part of the assessment (confirmation) of product conformity and is the main means of combating falsification. Identification criteria are regulated product indicators. The technical regulation of the Customs Union 033/2013 «On the safety of milk and dairy products” includes such a concept as «national dairy product», however, there are no criteria for identifying this group of products. The aim of the research was to search for unique characteristics of Russian dairy products and classical technologies that distinguish them from similar products. As a method, a retrospective analysis of the literature with a search depth of up to the 1930s was used. It was established that not only raw and technological characteristics, but also packaging were used as criteria for identifying dairy products. The identified criteria will be the basis for the formation of an identification system for Russian dairy products.

The goal of this research is to evaluate the influence of the polyphenols extract of Polygonum multiflorum Thunb. root on the lipid oxidation, chemical properties and sensory characteristics of ground beef during frozen storage. Beef was ground in aqueous solutions of polyphenols extract at different concentrations: 830, 415, 277, 208 and 166 mg GAE/L, polyphenols solution/sample ratio is 1/20 (v/w). Then, the ground beef was stored for up to 100 days at -20±2oC. The best oxidation inhibitor for ground beef was at the highest polyphenols concentration of 830 mg GAE/L. All quality parameters (pH, PoV, MDA, color parameter and sensory evaluation) of the treated sample and of the control sample display significant differences (p<0.05) during storage period. For this reason, it was concluded that the polyphenols extract of Polygonum multiflorum Thunb. root could be used as an alternative source of natural antioxidant in beef processing.

Разработаны рецептуры хлебобулочных изделий на основе сухой подсырной деминерализованной сыворотки «Вимм-билль-данн» с добавлением тонкодисперсного порошка из яичной скорлупы механохимической обработки и растительных порошков из свеклы, клюквы и моркови после инфракрасной обработки. С помощью математического моделирования путем решения задач линейного программирования подобраны оптимальные соотношения ингредиентов рецептур, представленные в виде информационной матрицы для проектирования. Усовершенствована технология приготовления новых хлебобулочных изделий: просеянную сыворотку разводят водой в соотношении 1 : 10, добавляют измельченные овсяные хлопья и замачивают на 15 мин; в полученную смесь вводят ингредиенты: подготовленные дрожжи активированные, порошок ИК-сушки из растительных ингредиентов и порошок из яичной скорлупы, размягченное сливочное масло, просеянную муку с аскорбиновой кислотой; производят замешивание теста в течение 7–8 мин при увеличенной скорости до однородной консистенции; тесто оставляют для брожения на 35 мин, разделывают на шарики массой 50 г и ставят на расстойку на 20 мин, выпекают при температуре 180–200°С в течение 20 мин. Установлено, что ускоренная механическая обработка интенсифицирует процессы приготовления теста, сокращая их продолжительность, мин: брожения с 75 до 35, расстойки с 55 до 20, выпечки от 5 до 2 по сравнению с контрольным образцом. Потребление разработанных хлебобулочных изделий удовлетворяет от 10 до 15% суточной потребности организма в β-каротине, кальции и белке. Разработанные хлебобулочные изделия соответствуют требованиям ТР ТС 021/2011 и рекомендованы в качестве функциональных продуктов детского, диетического и геронтологического питания. Bakery products on the basis of the dry demineralized whey powder Wimm-Bill-Dann with addition of fine powder of an egg shell of mechanochemical processing and vegetable powders of infrared processing from beet, a cranberry and carrots are developed. With the help of mathematical modeling by solving problems of linear programming the optimal ratio of the ingredients of the formulations presented in the form of an information matrix for the design are selected. The technology of preparation of new bakery products is improved: the sifted serum is diluted with water in a ratio of 1 : 10, the crushed oat flakes are added and soaked for 15 min; the ingredients are introduced into the resulting mixture: prepared activated yeast, IR drying powder from plant ingredients and eggshell powder, softened butter, sifted flour with ascorbic acid; kneading the dough for 7–8 min at an increased speed to a homogeneous consistency; the dough is left to ferment for 35 min, cut into balls weighing 50 g and put on proofing for 20 min and bake at 180–200°C for 20 min. It was found that accelerated machining intensifies the dough preparation processes, reducing their duration, min: fermentation from 75 to 35, proofing from 55 to 20, baking from 5 to 2 compared to the control sample. The consumption of the developed bakery products meets from 10 to 15% of the daily needs of the body in β-carotene, calcium and protein. The developed bakery products conform to requirements of TR CU 021/2011 and are recommended as functional products of baby, dietary and gerontological food.

The subject of research – yogurt and pumpkin powder. The purpose of the study – to develop the technology of making yogurt with filler – pumpkin powder. Methods. Standard and practical research methods of dairy products were used. The qualitative indicators of the developed yogurt (sensorial indicators, viscosity, microbiological and toxicological indicators) during storage (15 days) were studied. The results of the study. Modern technologies of yogurt production include the use of various additives to improve the technological properties, as well as quality and texture characteristics. In this work, new technological solutions were developed in the formulations of yogurts without stabilizer with dietary fiber contained in pumpkin meal powder, the acceptability of new types of yogurts was evaluated. The dependence of a rheological indicator - the viscosity of the product depending on the amount of filler - in the storage process is analyzed. It was found that the largest increase in effective viscosity was observed in the sample with the introduction of pumpkin meal powder in the amount of 10 %, and the smallest – in the sample with the introduction of pumpkin meal powder in the amount of 5 %. This is due to the quantitative introduction of pumpkin meal powder into the formulation, which is a good sorbent that promotes a more even distribution of moisture between the particles of crushed plant material, which contributes to the formation of a denser clot. The influence of the filler – pumpkin meal powder on the microbiological parameters of yogurt during storage was determined. Studies of microbiological parameters of the control sample of yogurt classic and experimental samples with pumpkin meal powder during storage (15 days) indicate that the opportunistic and pathogenic microflora are within acceptable values. Toxicological studies have shown that safety indicators developed samples of yogurt with filler – pumpkin meal powder – meet the toxicological requirements for the type of product. Based on research, it is proven that yogurt with a natural filler – pumpkin meal powder retains high quality throughout the storage period. Scope of research results. The results of the research will be used to improve the technology of yogurt production at dairy plants.
