Low consumption of vegetables due to unavailability and unscrupulous application of chemicals and pesticides leads to malnutrition and chronic diseases. In this regards, microgreens technology could be a boon to mankind because they are grown in chemicals and pesticides free environment and offer functional food along with proper nutrient supply. But a little knowledge has been developed about the consumption period from harvesting, because being perishable in nature their bioactive substances and antioxidant activity get deteriorate. Therefore, the goal of this study was to explore the best consumption period of microgreens for obtaining the maximum bioactive substances (such as chlorophyll, ß-carotene and lycopene), vitamin C and the activity of 1,1-diphenyl-2-picrylhydrazyl (DPPH). The experiment revealed that after 1st day of harvest the microgreens of four tested varieties (mustard, leaf mustard, radish and cabbage) showed the maximum bioactive substances such as total chlorophyll (8.22, 10.28, 7.62 and 7.63mg/100g respectively), ß-carotene (2.41, 2.88, 2.11 and 2.06 mg/100g respectively), lycopene (4.37, 5.24, 4.91 and 4.44mg/100g respectively), vitamin C (16.23, 13.17, 8.57 and 8.03mg/100g, respectively) and the activity of DPPH (0.75, 1.20, 2.90 and 3.57μg/ml respectively) whereas these substances deteriorated significantly on 3rd or 5th day of harvest. Considering all, it can be concluded that consumption of microgreens immediately after harvesting was the best time getting ample amount of bioactive substances, vitamin C and antioxidant (DPPH) activity.J. Lentils have been part of human diet from ancient times. This chapter focuses on the nutritional composition, presence of bioactive substances, antioxidants and health rendering properties of lentils. Recent definitions have considered lentils as a prophylactic and therapeutic functional food due to its considerable content of essential macronutrients, namely functional proteins and carbohydrates, and essential micronutrients, as well as bioactive phytochemicals such as phytates and polyphenols. Indeed, the presence of an impressive arsenal of secondary metabolites, minerals and bioactive constituents in lentils have shown to be promising contributors in the management and prevention of several human chronic diseases, attributed to their anticarcinogenic, hypoglycemic, hypocholesterolemic and blood-pressure lowering properties.

Due to its nutritional, health-promoting and taste-related values, new cultivars are introduced every year. The aim of the study was to assess the biological value of Polish and Bulgarian cultivars of pepper grown in moderate climate conditions and collected at different degrees of maturity. Ascorbic acid, carotenoids, polyphenols, chlorophyll a, chlorophyll b, total chlorophyll and antioxidant activity (DPPH) were determined in air-dried fruit. The investigation included five Polish cultivars: Roberta, Marta Polka, Etiuda, Trapez, and Cyklon and five Bulgarian cultivars: Bulgarski Ratung, Sivriya, Kurtovska Kapiya, Delikates, and Dzuliunska Shipka. Its design involved randomised sub-blocks, with three replications comprising nine plants each. The area of a single plot was 1.44 m<sup>2 </sup>(1.2 m × 1.2 m). The study confirmed the strong antioxidant properties of pepper grown in the field, without cover, and under temperate climate conditions. The vegetable is rich in vitamin C, polyphenols, carotenoids, chlorophyll pigments, and shows high antioxidant activity. However, the biological value of pepper is cultivar-dependent and is also determined by the fruit colouration degree. The coloured fruits are richer in vitamin C and carotenoids than the green ones, and when matured, they have greater antioxidant capacity. Green fruits contain more chlorophyll a, chlorophyll b and total chlorophyll than the coloured ones. The fruits of cv. Etiuda were the richest in vitamin C, of cv. Sivriya in polyphenols, of cv. Dzuliunska Shipka in carotenoids, and of cv. Trapez in total chlorophyll. Cv. Sivriya showed the strongest antioxidant properties.

The aim of this study was to compare total phenolic and flavonoid content, antioxidant and reducing activity, as well as vitamin C and E content in beebread and honey. The antioxidant activity of samples was determined by photochemiluminescence (PCL) assay, while reducing potential was measured using FRAP and ORAC assays. Vitamin C was analysed by HPLC–MS-TripleTOF method and vitamin E by HPLC-DAD. Beebread was characterised by the higher level of the total phenolic (~90%), flavonoid (~97%), vitamin C (~99%) and E (~98%) as compared to the honey. The data showed that beebread had also higher values of antioxidant activity and reducing potential by ~99% and ~41–98%, respectively, than honey. Our findings indicate that beebread is valuable source of bioactive substances, with the high beneficial properties.

The natural antioxidant hydroxytyrosol (HT) was used to functionalize a strawberry puree. The effect of the antioxidant on the stability of the two bioactive forms of vitamin C (ascorbic acid-AA and dehydroascorbic acid-DHAA) in strawberry puree stored at 4 °C, compared with the effect on a model system of AA in water, was investigated. In the absence of HT, the concentration of vitamin C in strawberry puree decreased but not in the model system. Low concentrations of HT in strawberry puree (0.05 and 0.1 mg HT/g puree) stabilized vitamin C and improved its antioxidant activity. However, at high concentrations of HT (from 0.5 mg HT/g puree), although the antioxidant activity improved, degradation of vitamin C occurred. Therefore, the concentration of HT used to obtain a functionalized strawberry puree it is very important. An adequate concentration increases the antioxidant activity and protects vitamin C from degradation, developing a functional food. However, an inadequate concentration of HT affects the vitamin C content, which is essential for the human diet because it cannot be biosynthetized by the organism.

Stara Planina Mt is rich in medicinal plants, that are natural sources of various bioactive substances and have many useful medicinal properties. Rosehip, the fruit of wild rose (Rosa canina L.) is very popular and widely used. There is extensive empirical evidence of its therapeutic effects. The high content of vitamins, organic acids, phenolic compounds, carotenoids and pleasant taste define it as a valuable dietary supplement. There are different procedures for making rosehip teas. In this paper, we have optimized the process of preparation of rosehip tea from the aspect of maximum extraction and preservation of vitamin C content in tea. The antioxidant activity of aqueous extracts of rosehips, depending on the extraction time and the temperature at which the extraction is performed, was also examined..The free radical scavenging activity of the plant extracts was analyzed by using the 2.2-diphenyl-1-picrylhydrazyl (DPPH) assay. Optimal conditions are 30 minutes and a temperature of 40 °С. In this way, vitamin C is best extracted and its stability is preserved, which results in the high antioxidant activity of the tested teas.

<p>Honey and namnam leaves (Cynometra cauliflora L.) have been shown to have antioxidant activity. Combination of both materials potent to be used as functional food. In this study, antioxidant activity of samples was measured by the DPPH method (1,1-diphenyl-2-picrylhydrazyl) (IC<sub>50</sub>) while total phenolic, total flavonoids, and vitamin C were determinated by UV-Vis spectrophotometry. Honey samples used were commercial packaging rambutan honey (MR), commercial packaging rubber honey (MK), and commercial unpackaging rambutan honey (MR2). The combination ratio of honey and namnam leaves extract was 1:1, 1:2 and 2:1 (b/b). The highest value of total phenolic, total flavonoids, vitamin C and antioxidant activity in namnam leaves extract (N) was 267.690 mg GAE/g, 12.284 mg QE/g, 203.500 mg AA/g and IC<sub>50</sub> 0.004 mg/mL, respectively. The highest value of total phenolic was 0.588 mg GAE/g in MR2, while the highest value of total flavonoids and antioxidant activity (IC<sub>50</sub>) were 0.027 mg QE/g and 21.576 mg/mL in in MR, respectively. Combination MR and MR2 with namnam leaves extract (MR-N and MR2-N) with ratio 1:2 gave the highest antioxidant activity with IC<sub>50</sub> value 0.005±0.000 mg/mL in both samples. The highest value of total phenolic, total flavonoid, and vitamin C in MR-N and MR2-N was 266.027 mg GAE/g, 9.790 mg QE/g, and 100.33 mg AA/g, respectively. Therefore, the combination is potential as a functional food</p><p> </p><p>Madu dan daun namnam (<em>Cynometra cauliflora</em>) telah terbukti memiliki aktivitas antioksidan. Kombinasi kedua bahan ini akan sangat potensial digunakan sebagai pangan fungsional. Perbandingan kombinasi madu dan ekstrak daun namnam masing-masing 1:1, 1:2 dan 2:1 (b/b). Hasil analisis menunjukkan bahwa total fenolik, total flavonoid, vitamin C dan aktivitas antioksidan tertinggi terdapat pada ekstrak daun namnam (N) masing-masing sebesar 267,690 mg GAE/g, 12,284 mg QE/g, 203,500 mg AA/g dan IC<sub>50</sub> 0,004 mg/mL. Kandungan total fenolik tertinggi pada sampel madu adalah MR2 sebesar 0,588 mg GAE/g, sedangkan total flavonoid dan aktivitas antioksidan tertinggi pada MR yaitu 0,027 mg QE/g dan IC<sub>50 </sub>21,576 mg/mL. The benefits of natural honeybee products (e.g., honey, royal jelly, beeswax, propolis, beevenom and pollen) to the immune system are remarkable, and many of them are involved in the induction of antibody production, maturation of immune cells and stimulation of the immune system. The type of plants in the geographical area, climatic conditions and production method have a significantly influence on the nutritional quality of honey. However, this variability can influence consumer liking by the sensory attributes of the product. The aim of this work was to compare the most popular honeys from Poland in terms of nutritional value, organoleptic properties and antioxidant activity. In the study, five varieties of honey (honeydew, forest, buckwheat, linden and dandelion) from conventional and organic production methods were tested. The nutritional characteristics of honey samples included acidity, content of water, sugars, vitamin C, HMF and phenolics (total and flavonoids), while honey color, taste, aroma and consistency were investigated in the organoleptic characteristics. The antioxidant activity was determined in water- and ethanol-soluble honey extracts using DPPH and ORAC tests. The results showed that organoleptic and nutritional characteristics of popular Polish honeys differ significantly in relation to plant source and production method. The significant effect of honey variety on the content of HMF, saccharose and phenolics, as well as acidity and antioxidant capacity were noted. The impact of variety and variety × production method interaction was significant in the case of the content of vitamin C, glucose and fructose. A visible difference of buckwheat and forest honeys from other samples was observed. The highest content of total phenolics with antioxidant activity based on the SET mechanism was found in buckwheat honeys, while forest honeys were richer in flavonoids.

This study compares the content of basic nutrients (proteins, fats, digestible carbohydrates, dietary fiber and ash), steviol glycosides, selected antioxidants (vitamin C, total polyphenols) and antioxidant activity in dried leaves of Stevia rebaudiana Bertoni cultivated in Poland, Paraguay and Brazil and available in the direct sale. The basic chemical composition was determined by standard AOAC (Association of Official Analytical Chemists) methods. Content of steviol glycosides was determined by the UHPLC-UV chromatographic method. Total polyphenols content was expressed as gallic acid equivalent (GAE) and catechins equivalent (CE). Antioxidant activity was measured as ABTS●+ free radical scavenging activity. Dried leaves of S. rebaudiana grown in Poland had significantly higher contents of dietary fiber, and lower protein and ash content, compared to those derived from Paraguay and Brazil. The former had, however, considerably higher contents of total steviol glycosides, stevioside and rebaudioside D, compared to the remaining two plants. In the Paraguay-derived dried leaves, the content of rebaudioside A, C, E and rubusoside was found to be significantly lower. Dried leaves of S. rebaudiana Bertoni, cultivated in Poland, contained substantially more vitamin C and a similar content of total polyphenols, compared to those from Brazil and Paraguay. The examined material from Brazil and Paraguay plantations showed similar antioxidant activity, while that obtained from Polish cultivation was characterized by a significantly lower value of this parameter.
