Colostrum contains all essential nutrients for the neonate during the first days of life, with impacts that continue far beyond these first days. Bovine colostrum has been used for human consumption due to the high concentrations of bioactive proteins, vitamins, minerals, growth factors, as well as free and conjugated oligosaccharides. Processes involved in the preparation of bovine colostrum for human consumption play a pivotal role in preserving and maintaining the activity of the bioactive molecules. As bovine colostrum is a multifunctional food that offers a myriad of benefits for human health, assessing the main processes used in preparing it with both advantages and disadvantages is a crucial point to discuss. We discuss major processes effects for colostrum production on the nutritional value, some advanced technologies to preserve processed bovine colostrum and the end-product forms consumed by humans whether as dairy products or dietary supplements.

Abstract Although research has demonstrated the positive nutritional value and environmental benefits associated with edible insect consumption, several factors challenge the growth and development of the edible insect industry for human consumption in the US and Canada. Cultural and psychological factors account for much of the aversion US and Canadian consumers display. The absence of specific regulation also constitutes a structural barrier to more widespread production and sale of edible insects. Compared to the US, the European Union has a more developed edible insect industry and has enacted legislation that removes some of the barriers. As consumer awareness of the putative health benefits of edible insects increases, more comprehensive regulations may emerge to keep pace with the growth of this industry. Overall, a multi-disciplinary approach that addresses both benefits and barriers to consumption is needed to facilitate a robust market for edible insects in the US and Canada.

Se considera comida rápida a toda clase de comida preparada de manera rápida, cómoda y por lo general barata y de amplia comercialización. El presente artículo contribuye con definiciones, características, ventajas y desventajas del producto, así como sus consecuencias en la salud en las personas. El objetivo fue identificar cual es la comida rápida de mayor consumo y a partir de este obtuvo el valor nutricional de la comida rápida que resultó consumida en mayor cantidad, así como también se conocieron cuáles son los factores que influyen en su consumo. La metodología que se empleó fue el enfoque cuantitativo y cualitativo, se aplicó encuestas a los estudiantes de Facultad de Ciencias Pecuarias de la Escuela Superior Politécnica de Chimborazo, periodo académico abril – agosto 2018, también se analizó los productos de mayor consumo en el laboratorio de la Facultad de Ciencias Pecuarias. El resultado obtenido demostró un alto porcentaje de estudiantes que consumen comida rápida a pesar de estar conscientes que es de mala calidad y que afecta a la salud. It is considered fast food to all kinds of food prepared in a fast, comfortable way and in general cheap and of extensive marketing. The present article contributes with definitions, characteristics, advantages and disadvantages of this product, such as its consequences related to people´s health. The aim was to identify which is the most consumed fast food and obtained its nutritional value that turns out to be mainly eaten, as well as knowing which are the factors that influence on its consumption. The methodology used is the quantitative and qualitative approach, surveys were applied to 108 students of the Career of Agroindustries of the Escuela Superior Politécnica de Chimborazo, during the academic period April - August, 2018, also the most consumed food were analyzed in the laboratory of the Animal Ground Sciences Faculty. Obtained results demonstrate a high percentage of students who consume fast food in spite of being conscious about its poor quality and health issues. In Vietnam, the giant mottle eel Anguilla marmorata is the most widely distributed species and being exploited for seed in aquaculture as well as for human consumption. This study aims to investigate the basic nutritional components of the fish. The eels were collected from six locations of Thua Thien Hue province, with weights from 5 to 3200 g. In addition, the content of lipid in skin and tissue was also examined. The results show that eel flesh has a relatively high nutritional value. The water, protein, lipid, and total sugar content of the fish meat is 60.4 ± 0.94%, 19.54 ± 4.31%, 18.2 ± 1.02%, and 1.34 ± 0.34 (mg/g), respectively. The nutritional components of the eel have a good correlation with the weight according to the equation: Y = a × ln (W) + b (where W is the weight of eels; Y is the content of nutritional components; a is the correlation coefficient b is a constant) with r > 0.9. The lipid content of the fish skin is higher than that of muscle and meat.

Boron (В) is widely spread in surface and ground waters. The article deals with the problem of drinking groundwater quality. Groundwater is the only source of water supply, in the most districts of the Altai Region. This suggests that the quality of groundwater is of great importance for the population of the region. Drinking water should be suitable for human consumption and for all household purposes. The main attention is focused on identifying the area of distribution B containing waters with the content exceeding the maximum permissible concentration (MPC). The relationship between В and dry residue (MCO) is analyzed. Crucial factors responsible for high В concentration have been identified. The general complex research of presence, distribution and sources of В inflow into groundwaters of the Altai Region are defined in the article. The relationship between the В content and the high incidence of people living in areas with a high В content has been revealed. It was found that high concentrations of В (more than 0.5 mg/l) correspond to the zone of brackish water distribution, which occupies almost the entire territory of the steppe Altai - Kulundinsko-Barnaul artesian basin. Their distribution coincides geographically with the distribution of В.

In this study, the effect of different drying processes (freeze-drying (FD), microwave-assisted drying (MWD) and classic hot air drying (HAD)) on the polyphenols, flavonoids, and amino acids content was investigated on bee-collected chestnut, willow and ivy pollen for human consumption. Furthermore, the pollen chemical properties were monitored after three and six months of storage, and then analyzed using a multivariate approach. Chestnut pollen was the richest source of polyphenols, flavonoids, and rutin, while ivy pollen contained the highest amount of total and free amino acids, and total and free proline. Drying and storage affected pollen chemical composition with species-dependent effects. MWD allowed the best retention of flavonoids in chestnut pollen for up to six months of storage. All drying techniques led to a depletion of flavonoids in willow pollen; however, MWD ensured the highest flavonoids content after six months. FD and MWD did not lead to flavonoids depletion in ivy pollen during storage. Additionally, storage did not affect the rutin content, which was highest in FD willow samples after six months. Notably, both FD and MWD techniques are efficient in preserving amino acids-related quality of bee pollen up to six months of storage.

AbstractNectarine (Prunus persica var. nucipersica) is a worldwide appreciated edible subspecies, with a high nutritional value and benefits on human health due to its phenolic content. Despite the large consumption of the fruit, the potential use of its kernel is poorly studied. Herein, the potential pharmacological activities and the phenolic constituents of an alcoholic extract of kernel nectarine fruits were investigated. Administering nectarine kernel extract (50 and 100 mg/kg, respectively) in rats reduced paw edema after carrageenan injection by 11 and 47% in 1 h, 24 and 33% in 2 h, and 23 and 32% in 4 h, when compared to the controls. At the higher dose (100 mg/kg), nectarine kernel extract increased the reaction time in the hot-plate model and produced a significant decrease in the rectal temperature of the pyretic rats, while both doses produced 52 and 59% of writhing inhibition compared to the control group. Total polyphenolic (55.91 ± 5.78 mg/g) and flavonoid (29.89 ± 0.55 mg/g) content indicated that the extract is a promising source of these constituents. HPLC-ESI-MS/MS analysis demonstrated the presence of flavonoids, such as naringenin and apigenin glycosides. The cyanogenic glycosides amigdalin and prunasin were also detected. These results highlight the anti-inflammatory, analgesic, and antipyretic activities of nectarine kernel alcoholic extract, together with significant phenolic content, promoting its exploitation as a source of bioactive molecules.

Fumonisins are mycotoxins (MTs) produced mainly by the fungus Fusarium verticillioides, the main pathogens of maize which cause ear rot. The aim of this work was to evaluate some factors that may lead to high fumonisin production by F. verticillioides in maize grains, correlating the pathogen inoculation method with different genotypes grown in four Brazilian states. Experiments were conducted in 2015–2016 in maize crops from experimental maize fields located in four distinct states of Brazil. Results showed that contamination by fumonisin mycotoxins occurred even on symptomatic or asymptomatic grains. In all municipalities, the samples showed levels of fumonisin B1 that were higher than would be tolerable for the human consumption of corn products (the current tolerance limit for fumonisin is 1.5 μg g−1). High severity of grains infected with F. verticillioides does not always show high concentrations of fumonisins. Environments with higher temperatures may influence the production of high concentrations of fumonisin in maize hybrids. Spray inoculation methods and inoculation at the center of spikes did not influence fumonisin concentrations. Results showed that the hybrids P3630H, P32R48 and P3250 presented higher disease severity, as well as higher mycotoxin levels in the studied locations with higher temperatures.

The concentration of Cu, Fe, Pb, Zn and As in the surface water intended for human consumption and other uses in the Mantaro River basin were analysed using multivariate methods. The water samples were collected from seven water bodies in the Junín region in June 2019, in the low discharge period. In each body of water, a sector with six sampling sites was established. The Cu, Fe, Pb, Zn and As contents were determined by the flame atomic absorption spectrophotometry method. The correlation analysis revealed positive and significant correlations (P < 0.05) for the Zn/Pb, Pb/Fe and Zn/Fe pairs with a good association, higher than 0.80 and for the Pb/Cu, Fe/Cu, As/Pb and As/Zn pairs a weak degree of association (P < 0.05). The analysis of the main components showed three components with their own values > 1. The hierarchical grouping analysis classified the evaluated water bodies into three groups according to the concentration of the Cu, Fe, Pb, Zn and As. The high concentrations of heavy metals and arsenic recorded in the CIMIRM and MERIS irrigation channels reveal that the Mantaro River continues to be a sink for mine wastewater discharges and runoff from mining liabilities at the headwaters of the Mantaro basin. It is, therefore, necessary to implement urgent management policies to control and reduce the levels of contamination by potentially toxic metals and metalloids in the Mantaro River.

Beans (Phaseolus spp.) are one of the most important legumes for their nutritional value and health benefits in many world regions. In addition to Phaseolus vulgaris, there are four additional species that are cultivated in many regions of the world and are a source of food for human consumption: P. lunatus, P. coccineus, P. polyanthus, and P. acutifolius. In this work, phenolic compounds, antioxidant activity, and anti-nutritional compounds of 18 bean accessions, corresponding to four different species of the genus Phaseolus, were analyzed. In addition, their physical characteristics, proximate composition, and amino acid content were determined in order to compare their phytochemical composition and nutritional value. The species closest to each other in terms of essential amino acid content were P. polyanthus with P. vulgaris and P. lunatus with P. coccineus. Furthermore, there was a strong positive correlation between antioxidant activity and flavonoids, anthocyanins, and lectins with all the accessions collected. Significant differences in the content of phenolic compounds were found among the bean species studied. Therefore, in addition to P. vulgaris, other species such as P. coccineus and P. lunatus have high biological and antioxidant potential that could be beneficial to human health when consumed as nutraceutical foods.
