Undaria pinnatifida (UP) is a brown algae commonly consumed as food in Asian countries. The purpose of this study was to compare the effects of different domestic cooking methods (i.e., air frying (AF), microwaving, and high temperature and pressure (HTP) cooking) on the nutritional and bioactive substances in UP, as well as on UP color and texture, in order to identify methods to retain beneficial components better. In this study, microwave treatment resulted in better retention of color, polysaccharide (4.17 ± 0.07 mg glucose equivalents (GE)/g dry weight (dw) ), total phenol content (TPC) (1.50 ± 0.0062 mg gallic acid equivalents (GAE)/g dw) as well as chlorophyll a (18.18 ± 0.41 mg/g fresh weight (fw) ) and fucoxanthin (281.78 ± 17.06 μg/g dw). HTP treatment increased the TPC of UP (1.69 ± 0.0075 mg GAE/g dw), and AF treatment resulted in a lower loss of total amino acids (2.14 ± 0.15%). Overall, microwave cooking appeared to be the best among the three in producing cooked UP with high quality. This study provided a useful guideline in selection of cooking for UP which could retain more health-beneficial substances and yield products with better eating qualities to improve human diet.

Spinach ( Spinacia oleracia) and amaranth ( Amaranthus tricolor) leaves were stored in polyethylene bags and without packing for 24 and 48 hours in a refrigerator at 5°C and 30°C in polyethylene bags. The fresh leaves were also dried (oven and sun), blanched (5, 10 and 15 min) and cooked in an open pan and a pressure cooker. The processed leaves were analysed for total iron, its availability and antinutrient content. The iron content of these leaves varied from 26.54 to 34.14 mg/l00g, dry weight and its HCl-extractability and in vitro availability were 62.11–67.18% and 3.03–3.97% of total respectively. Drying and storage had no significant effect on total iron content, Hel-extractability and availability ( in vitro), while blanching and cooking resulted in significant improvement of iron availability, and a significant reduction in oxalic acid content, while only blanching significantly reduced phytic acid and polyphenol contents. Thus cooking and blanching are good ways to improve HCl-extractability and in vitro availability of iron.

Landrace tea populations are important recourses for germplasm conservation and selection of elite tea clone cultivars. To understand their genetic diversity and use them effectively for breeding, two traditional landrace tea populations, Beichuan Taizicha (BCTZ) and Nanjiang Dayecha (NJDY), localized to northern Sichuan, were evaluated for morphological characters, simple sequence repeat (SSR)–based DNA markers and the contents of biochemical components. A wide range of morphological variation and a moderately high level of DNA polymorphism were observed from both BCTZ and NJDY. NJDY had on average, bigger leaves, larger flowers, higher total catechins (TCs), and greater gene diversity (GD) than BCTZ. Interestingly, samples from BCTZ had a wide range in the ratio of galloylated catechins to nongalloylated catechins (G/NG) (1.83–8.12, cv = 48.8%), whereas samples from NJDY were more variable in total amino acid (TAA) content (25.3–50.8 mg·g−1 dry weight) than those from BCTZ. We concluded that the two Camellia sinensis landrace populations are of great interest for both individual selection breeding and scientific studies.

ABSTRACT: Cratylia argentea is a leguminous shrub native to the cerrado, which has great potential for forage production and recovery of degraded areas. This study aimed to isolate, characterize, and select efficient rhizobial strains in symbiosis with Cratylia argentea . Rhizobacteria were isolated from the nodules of 12-month-old plants and cultivated in pots containing cerrado soil. Twenty-five bacterial strains were obtained, which displayed extensive variability with respect to morphological and symbiotic characteristics. Cratylia argentea seeds were planted in pots containing 5kg of cerrado soil and maintained in the greenhouse. The treatments consisted of 25 rhizobial isolates, two controls (without nitrogen and without inoculation), with or without nitrogen fertilization (5mgN·plant-1·week-1), and four replications. Plants were cultivated for 150 days after planting seeds to evaluate nodule number, nodule dry weight, shoot and root dry weight, shoot and root N content, and relative and symbiotic efficiency. Thirteen isolates improved shoot dry weight (up to 65.8%) and shoot nitrogen concentration (up to 76%) compared with those of control treatments. Two isolates, 4 (CR42) and 22 (CR52), conferred higher symbiotic efficiency values of approximately 20%. Therefore, these two rhizobial isolates displayed the highest potential as beneficial inoculants to optimize the symbiotic efficiency for Cratylia and to increase the incorporation of nutrients and biomass into the productive system in the cerrado.

In this study the plant growth-promoting bacteria were analysed for their growth-stimulating effects on two wheat cultivars. The investigations were carried out in pot experiments using calcareous soil. The results showed that bacterial strains Pseudomonas spp. NUU1 and P. fluorescens NUU2 were able to colonize the rhizosphere of both wheat cultivars. Their plant growth-stimulating abilities were affected by wheat cultivars. The bacterial strains Pseudomonas sp. NUU1 and P. fluorescens NUU2 significantly stimulated the shoot and root length and dry weight of wheat cv. Turon, whereas cv. Residence was less affected by bacterial inoculation. The results of our study suggest that inoculation of wheat with Pseudomonas strains can improve plant growth in calcareous soil and it depends upon wheat cultivars. Prior to a selection of good bacterial inoculants, it is recommended to select cultivars that benefit from association with these bacteria.

This paper is concerned with the nature of common-sense reasoning and understanding in relation to practical behaviour. It examines the relationship between intuitive knowledge based on everyday experience and institutionalized theory and practice. An analysis of the types of knowledge that guide the selection of actions and understanding in the domain of cooking practice is presented. Verbal transcripts were elicited from participants, with varying levels of experience, of the cooking methods they followed and their underlying rationale. The results suggest that individuals utilize various high level knowledge primitives in combination with pragmatic utility principles in their reasoning. The findings are discussed in the light of recent theoretical approaches concerned with the relationship between knowledge and inference.

Abstract Selections of white clover resistant or susceptible to Heterodera trifolii in earlier rounds of a recurrent selection programme were intercrossed and selected in three further rounds of selection. Resistance and susceptibility were measured by comparisons of cysts per gram of root dry weight (cpg). In the third, fourth, and fifth rounds of recurrent selection, the mean cpg of progenies from resistant parents was 23% (n = 974), 6% (n = 870) and 11% (n = 98) of that of progenies from susceptible parents. In each selection round, the resistant selections had 31, 4 and 7% of the number of cysts on susceptible selections. The percentages of immune plants (i.e. with 0 cysts) in the resistant groups were 1, 39, and 50% after the third, fourth, and fifth rounds of recurrent selection, respectively. Inoculum from 16 populations of H. trifolii from around New Zealand was added to two resistant and two susceptible white clover lines. After one generation of nematode development there were fewer cysts on the resistant lines for each population tested. Two resistant and two susceptible lines were compared in a glasshouse trial for their reaction to parasitism by H. trifolii . Infection reduced the shoot weight of all four lines but resistant lines grew better than either one or both susceptible lines at 109, 126, and 160 days after inoculation. In contrast, the uninfected lines did not differ in shoot weight over five samplings. More cysts were recovered from susceptible lines (means of 370 and 430 cysts per plant) than from resistant lines (means of 41 and 56 cysts per plant). Results indicate that development of a white clover cultivar resistant to H. trifolii is achievable and that the resistance will be effective against the nematode in most of New Zealand. The growth study indicated that advantages will be conferred in pastures where the presence of H. trifolii causes major limitations to white clover growth and persistence. Zusammenfassung- Die Wirksamkeit einer mehrfach wiederholten Selektion von Weissklee (Trifolium repens) auf Resistenz gegen das Kleezystenalchen (Heterodera trifolii)- In einem fruheren Selektionsprogramm gegen Heterodera trifolii resistente oder anfallige Weisskleeselektionen wurden gekreuzt und in weiteren Selektionsrunden selektiert. Resistenz und Anfalligkeit wurden durch Vergleich der Anzahl der Zysten je Gramm Wurzeltrockengewicht (cpg) bestimmt. In der dritten, vierten und funften Runde der Wiederholungsselektion betrugen die cpg-Werte bei Nachkommen von resistenten Eltern 23% (n = 974), 6% (n = 870) und 11% (n = 98) der Werte bei Nachkommen anfalliger Eltern. In jeder der Selektionsrunden hatten die resistenten Selektionen nur 31, 4 und 7% der Zystenzahlen an den anfalligen Selektionen. Nach der dritten, vierten bzw. funften Selektionsrunde betrugen die Anteile immuner Pflanzen (d.h. mit 0 Zysten) 1, 39 bzw. 50%. Das Inoculum von 16 Populationen aus ganz Neuseeland wurde an zwei resistente und zwei anfallige Weisskleelinien gegeben. An den anfalligen Pflanzen wurden mehr Zysten gefunden (im Mittel 370 und 430 je Pflanze) als an den resistenten Pflanzen (im Mittel 41 und 56 je Pflanze). Die Ergebnisse zeigen, dass die Entwicklung einer gegen H. trifolii resistenten Weisskleesorte erreichbar ist, und dass diese Resistenz gegen die Nematoden im grossten Teil Neuseelands wirksam sein wird. Die Wachstumsuntersuchungen haben gezeigt, dass die Vorteile besonders auf solchen Weideflachen deutlich werden, wo die Anwesenheit von H. trifolii erhebliche Einschrankungen des Wachstums und des Uberdauerns von Weissklee verursacht.

The possibility of sustainable use of sorghum as raw material for bioethanol needs to be supported by evaluation and selection of sorghum varieties for high biomass production and sugar content. An experiment was conducted on forest dry land , altitude 63 m asl. This research aimed to determine the interaction of sorghum varieties and mycorrhiza on biomass production and the high sugar content. The experiment was a two factor (varieties and dosage of mycorrhiza plus) in a randomized complete block design with three replications. The varieties were Suri 3, Kawali, Super 2, Suri 4. Dosage of mycorrhiza plus (5, 10, 15) g per plant. The interaction only significant on a number of internodes and bagasse. There are no effects of dosages mycorrhiza plus, however, varieties of sorghum have significant effects on many variables measured. The highest amount of biomass include the stem height (301.28 cm), stem Dry Weight (DW) is 23.48 t ha-1, leaf DW (4.65 t ha-1), panicle DW (11.35 t ha-1) and biomass DW (39.98 t ha-1) were obtained in varieties Super 2. Sugar content (16.93 %) was obtained in varieties Suri 3 and juice production (2 742.86 L ha-1) in varieties Suri 4.

Presently, there is a high demand for nutritionally enhanced foods, so it is a current challenge to look at new raw food sources that can supplement beneficially the human diet. The nutritional profile and key secondary metabolites of red seaweeds (Rhodophyta) are gaining interest because of this challenge. In this context, the possible use of the red seaweed Chondracanthus teedei var. lusitanicus (Gigartinales) as a novel nutraceutical source was investigated. As a result, we highlight the high mineral content of this seaweed, representing 29.35 g 100 g−1 of its dry weight (DW). Despite the low levels of calcium and phosphorus (0.26 and 0.20 g 100 g−1 DW, respectively), this seaweed is an interesting source of nitrogen and potassium (2.13 and 2.29 g−1 DW, accordingly). Furthermore, the high content of carbohydrates (56.03 g 100 g−1 DW), which acts as dietary fibers, confers a low caloric content of this raw food source. Thus, this study demonstrates that C. teedei var. lusitanicus is in fact an unexploited potential resource with the capability to provide key minerals to the human diet with promising nutraceutical properties.

Introduction. With the development of the food and processing industry, the matter of environmental pollution is becoming more and more acute. Environmental protection is based on the principle of rational use of natural resources and sustainable technology. Vegetable pomace is a secondary raw material; its amount depends on the production technology and equipment. The observed positive trend in the gross harvest of vegetables in open ground can increase the number of vegetable processing enterprises and the capacity of existing enterprises. Eventually, waste will start accumulating at processing sites, and it will have to be used as raw materials. The present paper features the content of biologically active substances in pomace of carrots and beets grown on the territory of the Siberian region and introduces options for their further use in functional foods. Study objects and methods. The research featured carrot pomace of the varieties Losinoostrovskaya, Nantskaya, and Queen of Autumn, as well as beet pomace of varieties Cylinder and Bordeaux. All the samples were harvested in the Kemerovo region in 2019. Determination of physical and chemical parameters was carried out using standard methods. Carotenoids, flavonoids, β-cyanine were studied using spectrometry and photocolorimetric method. Results and discussion. The experiment featured the content of bioactive substances in pomace of carrots and beets obtained during industrial processing. The content of carotenoids in carrots (mg of β-carotene per 100 g of dry weight): for Losinoostrovskaya variety – 23.56 ± 0.23; Nantskaya – 25.32 ± 0.18; Queen of Autumn – 20.78 ± 0.25. Flavonoid content (mg of catechol equivalent per 100 g of dry weight): Losinoostrovskaya – 12.02 ± 0.37; Nantskaya – 13.45 ± 0.56; Queen of Autumn – 11.50 ± 0.48. The content of β-cyanine in beets (mg per 100 g of dry weight): Cylinder – 100.0 ± 8.5; Bordeaux – 35.0 ± 1.8. The nutritional value of carrot and beet pomace with a mass fraction of moisture was 10%. The nutritional value of vegetable pomace is due to the high content of dietary fiber; therefore, the raw materials can be considered for functional food production. The content of biologically active substances in vegetable pomace (flavonoids, carotenoids, β-cyanines) can enhance the functional orientation of this secondary raw material when used in food technologies for the production of food of high nutritional value. Conclusion. The results obtained will make it possible to use the biochemical potential of plant raw materials in many aspects, as well as to obtain new functional food products, thereby expanding the range of healthy foods.
