Lettuce (Lactuca sativa L.) is not only easy to grow, but it is also common in diets around the world. This study was conducted to determine the impact of Chinese chive (Allium tuberosum Rottler), soybean (Glycine max L.) leaf, and soybean stem extracts on lettuce plants’ secondary substances, minerals, amino acids, and free sugars. This study was carried out in order to better understand which types of plant extract applications are most effective in increasing lettuce plants’ nutritional value. While not all applications produced an increased nutritional value in the lettuce plants, we found that soybean leaf extract treatments increased the Mg and Ca contents and Chinese chive treatments increased the Fe contents in the lettuce plants. Additionally, glucose and maltose contents in lettuce plants were higher after treatments of Chinese chive and soybean leaf extracts. Finally, all selected extracts increased the total and free amino acid levels in our test plants.

Non-alcoholic fatty liver disease (NAFLD) has become of major interest worldwide, it is estimated that more than 20% of the general population suffer from liver steatosis. NAFLD is highly associated with metabolic risk factors like type 2 diabetes mellitus, obesity and dyslipidemia, the patients diagnosed with NAFLD should adopt a high fiber low calorie diet, with reduced saturated fat and carbohydrates content, leading to weight loss and improvement of metabolic profile. Our study is aiming to shape the profile of the patient interested in being informed related to food quality and chemical composition and to evaluate the aspects on the food products label which are important for the customer. Between June 2017 and December 2017, 83 patients diagnosed with NASH were included in the study, representing the study group, while 33 subjects, without metabolic syndrome or digestive diseases, selected from patient list belonging to two general practitioners, constituted the control group. Related to the interest of being informed about the chemical composition and nutritional value of the products bought, the study showed a low interest for the provided information on nutritional value. lack of confidence in the provided information and complexity of the information are understandable, the high number of subject reasoning through lack of immediate clinical benefit is surprising. Among the healthy population the willingness to pay attention to this aspect is extremely low.

Background:Plant extracts are important products in the world and have been widely used for isolation of important biologically active products. Because of their significant environmental impact, extensive research has been explored to determine the antimicrobial activity of plant extracts.Methods:Acetone extracts of the bark and leaf of Cupressus sempervirens and Juniperus phoenicea, collected from three different altitudes (125, 391, and 851 m high of sea level) at Al- Jabel Al-Akhdar area, Libya were obtained and analyzed by GC/MS. The antimicrobial activity of the extracts was further evaluated against plant bacteria Rhizobium radiobacter, Erwinia carotovora, Rhodococcus fascians and Ralstonia solanacearum and fungus Botrytis cinerea.Results:The impact of the altitude from the sea level on the quantity and chemical constituents of the extracts was investigated. The yield was largely dependent on tree species and the highest yield (6.50%) was obtained with C. sempervirens L bark of altitude III (851 m of the sea level), while the lowest (1.17%) was obtained with the leaf extract of C. sempervirens L from altitude I (125 m). The chemical composition analyzed by GC/MS confirmed that the leaf extracts of C. sempervirens and J. phoenicea contained a complex mixture of monoterpene hydrocarbons, sesquiterpenes, diterpenes, diterpenoids, terpenophenolic, steroids and phthalates. However, the bark extracts of both trees contained a mixture of sesquiterpenes, diterpenes, diterpenoids, terpenophenolics, phthalates, retinol and steroids. These constituents revealed some variability among the extracts displaying the highest interesting chemotype of totarol (terpenophenolic) in all extracts (14.63-78.19% of the total extract). The extracts displayed a noteworthy antifungal potency with varying degrees of inhibition of growth with EC50 values ranged from 78.50 to 206.90 mg/L. The extracts obtained from the leaves of C. sempervirens showed that the highest inhibitory activity was obtained with the extract of altitude II (391 m) with MIC 565, 510, 380 and 710 mg/L against E. carotovora, R. fascians, and R. radiobacter and R. solanacearum, respectively.Conclusion:Based on antimicrobial activity, raw plant extracts can be a cost-effective way to protect crops from microbial pathogens. Because plant extracts contain several antimicrobial compounds, the development of resistant pathogens can be delayed.

Recycling of by-products from the food industry has become a central part of research to help create a more sustainable future. Brewers’ spent grain is one of the main side-streams of the brewing industry, rich in protein and fibre. Its inclusion in bread, however, has been challenging and requires additional processing. Fermentation represents a promising tool to elevate ingredient functionality and improve bread quality. Wheat bread was fortified with spray-dried brewers’ spent grain (BSG) and fermented brewers’ spent grain (FBSG) at two addition levels to achieve “source of fibre” and “high in fibre” claims according to EU regulations. The impact of BSG and FBSG on bread dough, final bread quality and nutritional value was investigated and compared to baker’s flour (BF) and wholemeal flour (WMF) breads. The inclusion of BSG and FBSG resulted in a stronger and faster gluten development; reduced starch pasting capacity; and increased dough resistance/stiffness. However, fermentation improved bread characteristics resulting in increased specific volume, reduced crumb hardness and restricted microbial growth rate over time. Additionally, the inclusion of FBSG slowed the release in reducing sugars over time during in vitro starch digestion. Thus, fermentation of BSG can ameliorate bread techno-functional properties and improve nutritional quality of breads.

Post-extraction soybean (Glycine max (L.) Merr.) meal is widely used as a basic protein feed for farm animals, especially poultry and pigs. Products made from unmodified soybean seeds are an alternative to imported GMO soybean meal. The aim of the study was to develop feed products from popular European varieties of genetically unmodified soybeans, which can be produced on small and medium-sized farms, and to assess their nutritional value and safety to livestock. The research was conducted on the seeds of three soybean varieties and two types of feed products resulting from thermobaric treatment (extrudate) and oil pressing (soybean press cake). The mould and yeast contamination of domestic seeds was negligible. The thermobaric and pressing treatments lowered the content of fungi by 97%. The products were considered free from mycotoxins. In comparison with full-fat soybean seeds, the protein content in the products was up to 19% higher, and 92% of the total lysine remained available. The products had lower content of antinutritional ingredients (trypsin inhibitors) and the urease activity was reduced by 52–59% and 99%, respectively. The experiment showed that the European genetically unmodified soybean feed products were characterised by good quality, mycotoxicological purity and high nutritional value for farm animals.

<p>The chemical interaction between plants, which is referred to as allelopathy, may result in the inhibition of plant growth and development. The objective of this research was to determine the impact of kenaf (<em>Hibiscus cannabinus</em> L.) plant extracts on the post-germination growth of five plant species. Four concentrations (0, 16.7, 33.3 and 66.7 g/L) of kenaf bark, core, and leaf extracts were applied to the germinated seeds of redroot pigweed (<em>Amaranthus retroflexus</em> L.), green bean (<em>Phaseolus vulgaris</em> L.), tomato (<em>Solanum lycopersicum </em>Mill.), cucumber (<em>Cucumis sativus</em> L.), and Italian ryegrass (<em>Lolium multiflorum</em> Lam.). After 7 days, the developing seedlings were measured to determine the length of their hypocotyls (mm) and radicles (mm), and the number of hair roots. Tomato, Italian ryegrass, and redroot pigweed followed similar negative trends in their responses to the extract source (kenaf bark, core, and leaves) and the impact of extract concentration, whereas, cucumber had a mixed response and green bean reacted positively to the kenaf extracts. Tomato was the most sensitive species tested across all kenaf extracts and concentrations, resulting in decreased hypocotyl, radicle, and root growth. Green bean exhibited no negative effects due to the kenaf extracts, but actually produced increased hypocotyl growth as a result of the kenaf bark, core, and leaf extracts. The kenaf extracts resulted in a mixed response for cucumber. The kenaf leaf and bark extract decreased cucumber radicle growth, whereas, the bark and core extracts increased hypocotyl growth. Italian ryegrass hypocotyl growth decreased across all extract sources (bark, core, and leaf), while the leaf extract also reduced root growth. All kenaf extracts reduced redroot pigweed radicle growth, while the core and leaf extracts reduced hypocotyl growth. The research demonstrated that kenaf leaf extracts were the most allelopathic and the hypocotyls were the most sensitive. Future research should isolate the chemicals responsible for both the negative and positive allelopathic impact on the various plant species, determine if the extracts will influence more mature plants, and pursue cultural practices to utilize these natural allelopathic materials to benefit crop production and limit weed competition.</p>

Abstract. Soybean needs national until now as still filled with than the import value that production in the country not enough. In solve the problems the low rate production soybean required production techniques of technology and awareness nice about the cultivation of plants soybean , the expansion of the increase , fix the quality , the environment and the use of varieties superior. Efforts to improving production soybean bounded by the limited by land ownership because some rice-fields productive have changed to a non farming. Behind the limited resources land for the expansion of the acreage of a farm, there are land potential to to use, namely land under kanofi plantation crops. The purpose of this study is to find the impact of shade and varieties and interaction between them to growth and the production of the soybean plant. Design experiments used in this research is a swath separate ( RPT) with two factors treatment. The research results show that treatment shade very had have real impact on some parameters that observed , on the parameter tall plant , diameter of the stem , flowering age , age harvest , the number of pods total , the number of pods pithy , heavy seeds 100 points and potential the results , the best result in find in treatment nuangan 60 % . Varieties influential very real to pertumbuhandan production the soybean plant, based on the results of observation tall plant, diameter of the stem, flowering age, the use of varieties anjasmoro showed growth and best in compared with varieties ringing. There are the interaction that very real between shade and varietas.kombinasi that tends to both in find in varieties anjasmoro but shade 60 %

The current state and new research trends of creating functional ice cream and frozen desserts are considered in the article. Attention is paid to the difference between the characteristics of ice cream regulated by the term in the countries of European Union and Eurasian Union. Taking into account that ice cream and frozen desserts are multicomponent products, the correction of their composition may have different effect on their quality indices. In particular, replacing sucrose by substitutes can lead to a change of traditional taste, consistency and structure. In this connection, aspects of the usage of sucrose substitutes by sweetness (glucose-fructose syrup, processed fruit products, stevia, sucrolose) and by dry matter (food fibers and polyols) are considered. In particular, the authors of researches note that the application of polyols changes the ice cream consistency to be firmer. The researchers pay attention to the impact of some components, introduced into ice cream and frozen desserts, on the cryoscopic temperature of mixture. The enrichment of ice cream and frozen desserts with pro- and prebiotics and application of milk with the increased nutritional value (sheep and goat milk) has been noted to be a trend in research. The attention is drawn to the practical use of enzymes. For people with lactose intolerance, the reason of which in ice cream is Nonfat milk solids (MSNF) it is proposed to hydrolyze it by different methods. In this review the experience of some scientists on the use of transglutaminase enzyme for changing properties of milk proteins, in particular, increasing their water- holding capacity is reflected. Researchers pay great attention to the increasing of nutritional value of ice cream and desserts by growth of mass fraction of protein and introduction of easily digestible proteins (concentrates of whey proteins, including the hydrolyzed proteins). Taking into consideration the growth of people who do not consume products of animal origin, some researches on replacement of milk protein to vegetable one, in particular, soy are noted.

Abstract The aim of this study was to compare the nutritional and use value of berries grown in organic and conventional systems. The polyphenol content, fruit colour and firmness, and yeast, mould, and mycotoxin contents were assessed in blueberry fruit freshly harvested and stored for 8 weeks in controlled conditions (CA: CO2-12%; O2-1.5%, temperature 1.5 °C). The Shannon–Wiener diversity index was comparable in both systems and was lower for mould in organic fruit than in conventional fruit. Mycotoxins (deoxynivalenol, zearalenone) were found only in organic fruits. The optimal mineral content and pH of the soil allowed the cultivation of blueberry in accordance with organic standards. The storage of highbush blueberry fruit in CA cold storage for 8 weeks resulted in a slight deterioration in fruit quality and polyphenol content. The lower nutritional value of these fruits is compensated by the lack of pesticides and artificial fertilizers residues. The use of fungicides in conventional cultivation reduces the population of sensitive fungi and therefore reduces the contamination of fruits with mycotoxins.
