The aim of the study was to test the possibility of using carcass measurements and joint tissue composition to predict the half-carcass tissue composition of lambs more accurately. With this purpose in mind, 6 different carcass joints (neck, flank, shoulder, ribs, hind limb, and tail) from 42 Kıvırcık male lambs were dissected. In addition, various carcass characteristics were recorded. When carcass characteristics and measurements were used alone in the prediction equations, accuracy (between 37%–68%) was similar to the equations that included only joint dissections (36%–75%). However, when joint dissection and various carcass traits were combined, half-carcass tissue composition was predicted more accurately (65%–90%) than in measures using either joint dissection or various carcass traits alone. Flank was the most successful predictive joint for prediction of muscle weight, when combined with some carcass traits, while the equation built with hind limb and various carcass traits was most successful for predicting total fat weight. Carcass traits yielded accuracy that was similar to joint dissection results, especially for muscle and total fat weights. Therefore, for these parameters, carcass traits are preferred as this measure is cost-effective, noninvasive, and practical. However, for greater accuracy, joint dissection and various carcass characteristics and measurements should be combined

Forty male lambs of the mountain Greek breed were used to evaluate the effect of age at slaughter on carcass characteristics and composition. The slaughter of lambs was carried out at the age of 30, 45, 60, 75 and 90 days. The slaughter procedure, carcass dissection and carcass composition were realized according to the standard method of CIHEAM-AGRIMED programme. The results of this work showed that the lambs of different age groups did not differ in dressing percentage significantly. The proportion of muscles showed a tendency of increase with the increasing slaughter age but the differences were not significant. The proportion of total fat in carcass increased with the increasing slaughter age from 20.84 to 23.59% for the age group of 30 and 90 days, respectively (P < 0.05). On the contrary, as the age at slaughter increased, the proportion of bones decreased (P < 0.05). Subcutaneous, intermuscular, perinephric and pelvic fats increased with the slaughter age, but only the subcutaneous fat was influenced significantly (P < 0.05). Among the different commercial cuts proportions of long leg, first 5 ribs and shoulder decreased, while those of last 8 ribs-loin and breast-flank increased (P < 0.05). The overall results suggest that the slaughter age of lambs of the mountain Greek breed should be increased from the present ~45 days to more advanced age of 75 or 90 days in order to improve the farmers’ profits without serious negative effects on the quality of carcasses or meat of lambs.

Nineteen mature Double Muscled (DM) cattle consisting of 11 cows and eight bulls were slaughtered between 470 and 710 kg to determine the influence of sex on carcass composition and muscle, bone and fat in DM cattle. Expressed as a percentage of the total side weight, DM bull carcasses had 15% more muscle and 55% less total fat. When sides were compared DM bulls showed a 17% increase in the muscle:bone ratio compared with DM cows. In bull carcasses, there were shifts in muscle weight distribution towards the forequarter. The ratio of hindquarter muscle:forequarter muscle was greater in cows than in bulls. Expressed as a percentage of the total side muscle, significant differences between sexes were found in 48 of the 95 muscles. The most striking sexual dimorphism was found in the neck region, particularly among the muscles responsible for secondary sexual features and those which act to elevate and extend the head. Sexual dimorphism was less pronounced in the distal parts of the both limbs. The cervical vertebrae and scapula made up a greater proportion of total side bone in DM bulls than in DM cows. There was a consistent but nonsignificant trend for the cows to have more of their bone caudally and less anteriorly compared with the bulls. The effects of estrus suppression (none, oral melengestrol acetate (0.4 mg d−1) or ovariectomy via Willis spay technique) and an anabolic implant (none or Synovex Plus®) on growth performance and carcass characteristics were determined using 90 beef heifers of composite breeding in a 2 × 3 factorial experiment conducted in the last 50 d before slaughter. Spaying caused no morbidity or mortality and resulted in average daily gains (1.37 kg d−1) comparable to heifers fed melengestrol acetate (1.33 kg d−1). Implanting improved (P < 0.05) feed efficiency and increased (P < 0.05) animal gain, ribeye area, carcass weight and yield and reduced (P < 0.05) intramuscular fat deposition but estrus suppression did not. Method of estrus suppression did not influence (P > 0.05) carcass traits. Spaying and implanting represent an effective means of improving returns from heifers, even late in the finishing period. ABSTRACT1. An anatomical explanation of the observed differences between double-muscled and phenotypically normal cattle was sought by detailed dissection of the sides of six double-muscled Santa Gertrudis steers and six Brangus steers.2. Relative to carcass weight the double-muscled steers had a significantly greater proportion of muscle and a significantly lower proportion of bone and fat than the Brangus steers. Relative to muscle plus bone weight the muscle proportion was greater and the bone proportion lower in the double-muscled steers.3. The musculature of the double-muscled steers exhibited a gradient of hypertrophy: 12 muscles (234g/kg of total muscle weight) were grossly hypertrophied, 56 muscles (565g/kg) were hypertrophied to a lesser degree and 28 muscles (195g/kg) showed either a minor degree of hypertrophy or no hypertrophy.4. The grossly hypertrophied muscles were generally the larger, superficial muscles of the proximal pelvic limb and shoulder area. The muscles showing least hypertrophy were mostly small muscles located in the deeper areas of the carcass, particularly around the spine and in the proximal hindlimb, and in the proximal and distal forelimb.5. Abnormalities of shape in double-muscled cattle may be attributed largely to altered proportions of total muscle and total fat, and to changes in weight distribution within the musculature.

SUMMARYThe relationship was examined between the composition of carcasses from 30 castrated Hereford male cattle and their profile areas obtained from photographic negatives. The accuracy of this method n i determining fatness was compared with that of other methods including visual assessment.Photographs were taken of a dorsal view of the intact carcass and lateral and medial views of the left side after splitting the carcass. A planimeter was used to measure the areas which were obtained from photographic negatives. Carcass lengths were recorded from the medial views. A panel of six judges assessed the sides for fatness on a seven-point scale with the aid of photographic standards.Areas and carcass lengths, adjusted to dimensional parity, were used as independent variables in multiple regression analyses, with the weights of the dissected tissues as dependent variables. Explanation of variation in muscle weight was poor, but dorsal area and length were (very nearly) as good as visual score and side weight in predicting total fat weight.

BackgroundCarcass traits are crucial characteristics of broilers. However, the underlying genetic mechanisms are not well understood. In the current study, significant loci and major-effect candidate genes affecting nine carcass traits related to meat production were analyzed in 873 purebred broilers using an imputation-based genome-wide association study.ResultsThe heritability estimates of nine carcass traits, including carcass weight, thigh muscle weight, and thigh muscle percentage, were moderate to high and ranged from 0.21 to 0.39. Twelve genome-wide significant SNPs and 118 suggestively significant SNPs of 546,656 autosomal variants were associated with carcass traits. All SNPs for six weight traits (body weight at 42 days of age, carcass weight, eviscerated weight, whole thigh weight, thigh weight, and thigh muscle weight) were clustered around the 24.08 Kb region (GGA24: 5.73–5.75 Mb) and contained only one candidate gene (DRD2). The most significant SNP, rs15226023, accounted for 4.85–7.71% of the estimated genetic variance of the six weight traits. The remaining SNPs for carcass composition traits (whole thigh percentage and thigh percentage) were clustered around the 42.52 Kb region (GGA3: 53.03–53.08 Mb) and contained only one candidate gene (ADGRG6). The most significant SNP in this region, rs13571431, accounted for 11.89–13.56% of the estimated genetic variance of two carcass composition traits. Some degree of genetic differentiation in ADGRG6 between large and small breeds was observed.ConclusionWe identified one 24.08 Kb region for weight traits and one 42.52 Kb region for thigh-related carcass traits. DRD2 was the major-effect candidate gene for weight traits, and ADGRG6 was the major-effect candidate gene for carcass composition traits. Our results supply essential information for causative mutation identification of carcass traits in broilers.

Abstract Background Application of advanced body composition measurement methods is not practical in developing countries context due to cost and unavailability of facilities. This study generated ethnic specific body fat percent prediction equation for Ethiopian adults using appropriate data. Methods A cross-sectional study was carried ifrom February to April 2015 among 704 randomly selected adult employees of Jimma University. Ethnic specific Ethiopian body fat percent (BF%) prediction equation was developed using a multivariable linear regression model with measured BF% as dependent variable and age, sex, and body mass index as predictor variables. Agreement between fat percent measured using air displacement plethysmography and body fat percent estimated using Caucasian prediction equations was determined using Bland Altman plot. Results Comparison of ADP measured and predicted BF% showed that Caucasian prediction equation underestimated body fat percent among Ethiopian adults by 6.78% (P < 0.0001). This finding is consistent across all age groups and ethnicities in both sexes. Bland Altman plot did not show agreement between ADP and Caucasian prediction equation (mean difference = 6.7825) and some of the points are outside 95% confidence interval. The caucasian prediction equation significantly underestimates body fat percent in Ethiopian adults, which is consistent across all ethnic groups in the sample. The study developed Ethnic specific BF% prediction equations for Ethiopian adults. Conclusion The Caucasian prediction equation significantly underestimates body fat percent among Ethiopian adults regardless of ethnicity. Ethiopian ethnic-specific prediction equation can be used as a very simple, cheap, and cost-effective alternative for estimating body fat percent among Ethiopian adults for health care provision in the prevention of obesity and related morbidities and for research purposes.

Half-carcasses of 108 wether and ewe lambs from six genotypes, slaughtered at 34, 44 and 54 kg liveweight, were dissected into subcutaneous fat, intermuscular fat, muscle, bone and connective tissue. The six genotypes were the progeny of Dorset Horn and Border Leicester rams mated to Merino, Corriedale and Border Leicester x Merino first-cross ewes. As carcass weight increased, the proportion of subcutaneous and intermuscular fat increased (b > 1 ; P < 0.05) and the proportion of muscle and bone decreased (b < 1; P < 0.05). Lambs sired by Border Leicester rams had more subcutaneous fat (12.7%), more intermuscular fat (7.6%) and more bone (5.7%) than lambs sired by Dorset Horn rams at the same carcass weight (P< 0.05). Similarly, lambs sired by Dorset Horn rams had more muscle (7.2%) than lambs sired by Border Leicester rams at the same carcass weight (P < 0.05). Breed of dam had no effect on carcass composition. Wether lambs had a greater proportion of bone (5.7%) than ewe lambs at the same carcass weight (P < 0.05). The breed of sire effect and the lack of a breed of dam effect on carcass composition, in conjunction with estimated mature weights for the breeds, suggest possible differences between sire and dam breeds in the partitioning of fat between the carcass and non-carcass depots. ____________________ *Part I, Aust. Data for a total of approximately 1100 lambs tested in 12 trials from 1992 to 1995 in commercial lamb test stations in Quebec were used to determine the effect of sex, sire breed and genetic type on growth performance and carcass characteristics. Lambs were housed two to a pen and fed commercial diets. Maximum test length was 112 d. Lambs were slaughtered when their liveweight was approximately 47 ± 5 kg for the males and 43 ± 4 kg for the females. Feed intake and growth rate were measured during the test, and carcass measurements were taken at slaughter and at 24 h following slaughter. Feed intake was the average for the pen, while the growth and carcass measurements were taken individually. Males ate more per day, had better gain and were younger at slaughter than females. Females had more body fat and better carcass conformation scores than males. However, males did not have a greater loin muscle thickness compared to females. Lambs sired by Hampshire or Suffolk rams had superior growth performance and leaner carcasses than lambs sired by Dorset rams. However, Hampshire and Suffolk-sired lambs did not have a greater loin muscle thickness compared to Dorset-sired lambs. Analysis of different genetic types did not demonstrate a pronounced effect on lamb performance. No specific genetic composition was clearly superior to the others for the various variables studied. Genetic quality within a breed of sheep bought or kept for reproduction is as important as the choice of breed or the combination of breeds. Key words: Lamb, growth performance, carcass composition

A study was conducted to examine how lupin grains (LUPs) feeding affected nutritional intake, digestibility, growth, and carcass characteristics in kids. A total of 24 growing black kids (initial body weight (BW) = 16.4 ± 0.49 kg) were allocated to one of three diets at random. Lupin was included in the diet at a rate of 0 (control; CON), 100 (LUP100), or 200 g/kg (LUP200) of total dry matter (DM). The trial lasted for 91 days divided into 7 and 84 days to be used for adaptation and data collection, respectively. Feed intake was evaluated daily throughout the study. At the commencement and the end of the study, each kid’s body weight was measured to determine its average daily gain (ADG). On day 70, 5 kids were chosen at random from each group to investigate nutrient in vivo digestibility and N balance. At the end of the study, all of the kids were slaughtered to examine carcass features. Nutrient intakes (neutral detergent fiber, acid detergent fiber, and ether extract) were higher (p ≤ 0.01) in LUP-containing diets than in the CON diet. The average daily gain was greater (p ≤ 0.03) in diets containing lupin grains than in the CON diet. Cost of gain ($US/kg growth) was lower (p = 0.004) in kids fed diets containing lupin than the CON diet. Dry matter and CP digestibility rates were greater (p ≤ 0.03) in lupin diets. Retained N was higher (p = 0.04) in lupin-containing diets than in the CON diet. Cold carcass weight was higher (p < 0.05) for kids consuming the LUP100 diet than the CON diet. In lupin diets, carcass cut weights were higher (p < 0.05). Results of the current study indicate that feeding black kids diets containing lupin grains at 100 or 200 g/kg DM basis is cost effective and would increase profitability.
