The nutritive value of smoked, dried Procambarus clarkii sourced from Akwa Ibom, Rivers and Lagos states of Nigeria were evaluated and compared.  The proximate composition of the crayfish samples were determined using official methods of analysis, mineral composition were determined using Atomic Absorption Spectrophotometer and  the amino acid composition were analysed using Amino Acid Analyser. The proximate composition of the crayfish samples from three different locations (Akwa Ibom, Lagos and Rivers states) such as moisture, crude protein, crude fat and ash contents showed significant difference (p<0.05) across the selected locations while crude fibre and carbohydrate content showed no significant difference (p<0.05) across the selected locations. The amino acids composition gave the crayfish sample from Akwa Ibom state as the richest source of essential amino acids. The mineral contents of the crayfish samples such as potassium, phosphorus, magnesium, manganese and calcium showed significant difference (p<0.05) across the selected locations while calcium, zinc and sodium contents showed no significant difference (p<0.05) across the selected locations. Comparing their nutrient component, smoked, dried P. Clarkia from Awka Ibom state possess the richest nutritive value.

Waste generation at slaughter from ruminant has led to environmental concerns. Processing slaughter house waste will reduce the problem of disposal and possible utilisation in livestock feed. Subjecting Cattle hoof meal to different processing methods can help in enhancing its nutritive value. Cattle hoof were obtained from the slaughter house; raw hoof was subjected to processing methods by boiling; chemical treatment with 10 % soda ash + boiling; fermentation treatment in water + boiling; 10 % wood ash treatment in water + boiling; autoclave treatment and samples analysed for proximate composition, amino acid profile and mineral content analysis according to standard methods. The hoof proximal analysis ranged 9.30 ± 0.06 % – 12.39 ± 0.01 % moisture content; 0.34 ± 0.01 % – 2.50 ± 0.12 % ash; 0.31 ± 0.01 % – 1.47 ± 0.02 % crude fat; 0.19 ± 0.02 % – 12.71 ± 0.15 % crude fibre and 85.27 ± 0.20 % – 90.74 ± 0.26 % crude protein in all samples. The amino acids profile of the hoof showed significant difference among treated samples. Tryptophan an essential amino acid was below detectable limit in all processed samples and raw hoof. The essential and non-essential minerals content showed significant difference (P < 0.05) among treatments with highest (Mg, Fe, K) in wood ash; (Cu) in raw hoof; (Ca, Na, P, Mn, Zn) in autoclaved samples. This study, suggest that Cattle hoof has the potential of being exploited as a source of animal protein for feed formulation in animal nutrition. This research concludes that the different processing methods affect the nutritive profiles of treated samples hence supplementation of limiting amino acids envisaged.

Three decapod crustaceans (Penaeus notalis, Procambarus clarkii and Callinectes pallidus) were selected in this study due to their low cost and wide distribution across tropical and temperate regions of the world. The proximate, fatty acids, amino acids and total cholesterol contents of Penaeus notalis, Procambarus clarkii and Callinectes pallidus from Badagry Creek, Lagos, Nigeria were evaluated for their nutritional importance in diet and to human health especially as the demand for these resources is increasing worldwide due to increase in human population, low cost and nutritional benefits. The proximate composition of the selected crustaceans was determined using standard methods of analysis, the cholesterol content was determined using enzymatic kit method, the fatty acid composition was analysed using Gas Chromatography- Mass Spectrophotometer and the amino acid composition was analysed using Amino Acid Analyzer. The proximate composition (moisture, crude fat, crude fibre, crude protein, ash and carbohydrate contents) analysed showed significant difference (p<0.05) among the three selected crustaceans studied, so also the cholesterol content. All the fatty acids in the results obtained except (Palmitic acid (C16:0), magaric acid (C17:0), myristoleic acid (C14:1), (C18:1n-9t), (C22:1n-9), cetoleic acid (C22:1n11c), C18:2n-6t, rumenic acid (C18:2n-7), γ-Linolenic acid (GLA) (C18:3n-6), eicosatrienoic acid (ETE) (C20:3n-3), docosadienoic acid (C22:2n-6) and docosapentaenoic acid (DPA) (C22:5n-3)) showed significant difference (p<0.05). All the essential amino acids indicated significant difference (p<0.05). Moreover, all the non-essential amino acids except cystine were also significantly difference (p<0.05) among the three selected crustaceans. This study revealed that all the selected decapod crustaceans studied are good source of high quality protein, essential amino acids, low cholesterol levels, omega 3 and 6 polyunsaturated fatty acids thereby making them of high nutritional benefits to consumers.

1. Adult rats were fed on diets free of either lysine, methionine, threonine or protein. The threonine- and protein-deficient animals lost weight at approximately the same rate, about 100 g in 14 weeks, at which time several were moribund. In contrast, lysine-deficient animals lost only about 30 g in 14 weeks and had lost only 46 g after 22 weeks, when they were killed. Methionine-deficient animals showed an intermediate response. Losses in weight of several tissues – kidney, heart and two muscles – were related to, but not necessarily proportional to, the loss of body-weight. Liver weights relative to body-weights were large in lysine- and threonine-deficient animals and smallest in methionine-deficient animals.2. Adult rats were fed on diets containing zero, a moderate amount (about twice the estimated minimal requirement) or an excess (about four times the estimated requirement) of lysine or threonine in all combinations (3 × 3 design). Analysis of variance of the body-weights, tissue weights and tissue nitrogen contents indicated, in general, a significant effect of each amino acid, as expected, but also, in most instances, a significant interaction. Plasma concentrations of lysine and threonine were affected by the intakes of the respective amino acids, but plasma lysine concentrations were also affected by the threonine intake.3. Liver histology also suggested significant interactions between the two amino acids. Animals given no lysine but moderate amounts of threonine developed severely fatty livers; next most severely affected were animals receiving excess of both amino acids. Threonine deficiency, in the presence or absence of lysine, produced moderately fatty livers similar to those seen in protein-deficient animals.4. Since animals have varying ability to conserve body nitrogen when they are fed on diets limiting in different essential amino acids, measurements of biological value (BV) and net protein utilization by conventional methods, over a short period of time, over-estimate nutritive value relative to amino acid score and probably over-estimate the true nutritive value of poor-quality proteins, particularly those limiting in lysine. If so, this is a serious error, since it leads to underestimates of the protein requirements if BV is used. The fact that certain tissues, particularly the liver, do not necessarily lose nitrogen in proportion to total body nitrogen and may show specific pathological effects depending on the limiting amino acid or the proportions of amino acids in the diet also indicates that general measures of nitrogen economy may not be sufficiently discriminating tests of the nutritive value of proteins.

The biochemical composition of three cultured cichlids (Tilapia zilli, Tilapia guineensis and Orechromis aureus) were evaluated and compared.  The proximate composition of the cichlids was determined using official methods of analysis, mineral composition was determined using Atomic Absorption Spectrophotometer and the amino acid composition was analyzed using Amino Acid Analyzer. The proximate composition of the three cultured species of tilapia fish (T. zilli, T. guineensis and O. aureus) indicated that moisture content, crude fat, crude fiber and ash content showed significant difference (p<0.05) among the three species while crude protein and carbohydrate content showed no significant difference (p<0.05) among the three species. The mineral contents such as zinc, magnesium and manganese showed significant difference (p<0.05) among the three species of tilapia (T. zilli, T. guineensis and O. aureus) while sodium, potassium, calcium, iron, phosphorus and copper contents showed no significant difference (p<0.05) among the three species. The amino acid composition showed lysine as the most abundant amino acids present in all the cultured cichlids studied. This shows that these cultured cichlids are highly nutritious and would be of great value to consumers.

The proximate and amino acid compositions of Artocarpus altilis and Bucchholzia coriacea were investigated using standard analytical techniques. The respective proximate composition (%) for the Artocarpus altilis and Bucchholzia coriacea samples were: Moisture (5.91 and 5.67); ash (4.39 and 5.13); crude fat (4.42 and 2.76); crude protein (12.27 and 14.78); crude fibre (7.10 and 6.27); carbohydrate (65.91 and 65.39). The calculated fatty acids and metabolizable energy for the Artocarpus altilis and Bucchholzia coriacea samples were 3.54 and 2.21 %; 1492.60 and 1465.01 kJ/100 g, respectively. The most abundant minerals in Artocarpus altilis and Bucchholzia were potassium (658.42 and 369.64 mg/100 g) and phosphorus (382.55 and 261.38 mg/100 g), respectively. The amino acid profile revealed that Artocarpus altilis and Bucchholzia coriacea samples contained nutritionally useful quantities of most of the essential amino acids. The total essential amino acids (TEAA) (with His) were 31.14 and 34.40 g/100 g crude protein for the Artocarpus altilis and Bucchholzia coriacea samples, respectively. The first limiting amino acid was Met + Cys (TSAA) for all the samples and calculated isoeletric points (ρl) were 3.52 and 4.05 for Artocarpus altilis and Bucchholzia coriacea, respectively.Bangladesh J. Several plants are utilized for medicinal and nutritional purposes. Irvingia gabonensis O’Rorke Baill leaf is used in herbal medicine for treatment of a number of ailments. This study was therefore carried out to investigate the proximate composition, antinutritional factors, mineral composition and amino acid profile of Irvingia gabonensis O’Rorke Baill leaf. The proximate and antinutritional factors analyses were done using standard procedures. The mineral analyses were done using flame photometry, titrimetic method, molybdo vanadate method and atomic absorption spectrophotometry and the amino acid profile was done with the aid of Applied Biosystems PTH amino acid analyzer. Results of proximate analyses were carbohydrates (75.15±1.29 %), protein (11.43±1.07 %), fat (1.99±0.74 %), fibre (4.89±0.61 %), ash (6.71±0.28 %), moisture (5.12±0.03 %) and caloric value (364.30±5.95 Kcal). Antinutrients (phytate, oxalate and cyanide) levels in the leaf were also very low. Results from mineral analyses obtained revealed that the leaf is also a very rich source of calcium, potassium, sodium, magnesium and so on. Compared with the World health organization (WHO) standards, results of the amino acid profile showed that the leaf is very rich in isoleucine, leucine, lysine, phenylalanine, threonine, valine and tyrosine which are nutritionally essential amino acids. Furthermore, extraction of the leaf using ethanol reduced the levels of these amino acids but not below the recommended WHO standard levels for most of the essential amino acids. Irvingia gabonensis O’Rorke Baill leaf is therefore a potential source of key nutrients.

When a commercial meat meal was used to supplement wheat, corn and sorghum diets to growing chicks, there was a wide variation in performance. Feed conversion efficiencies were higher on diets based on wheat and corn than those based on sorghum. The nutritive value as determined by chick growth tests of a wheat-plus-meat meal diet was higher than a corn or sorghum-plus-meat meal diet. The nutritive value of a wheat–plus–meat meal diet, supplemented with lysine and methionine, was the same as that of a crystalline amino acid reference diet. The weight gains of chicks given these two diets were higher than those obtained with diets based on wheat, corn and sorghum, not supplemented with lysine and methionine. The results were explained in terms of the limiting and digestible essential amino acids in these diets. Abstract The study assesses the proximate composition, amino acid profile and its content and chemical indices of the sun-dried Schilbe mystus, Bagrus bayad, Oreochromis niloticus, Clarias anguillaris and Petrocephalus bane bane from Tiga Dam Reservoir, Nigeria. The proximate composition varied significantly (p<0.05) in all five species of fish and these ranged as follows: Moisture (4.79 - 9.52 g/100 g), Crude Protein (42.20 - 57.71 g/100 g), Ash Content (0.90 - 12.51 g/100 g), Ether Extract (3.41 - 9.93 g/100 g), Crude Fibre (0.62 - 5.08 g/100 g), Nitrogen Free Extract (12.28 - 42.70 g/100 g) and Dry Matter (90.48 - 95.21 g/100 g). The amino acid also differed significantly (p<0.05). The nine essential amino acids found in the five species of fish were Lysine (4.21 - 6.34 g/100 g), Histidine (1.96 - 4.30 g/100 g), Arginine (5.80 - 8.21 g/100 g), Threonine (1.93 - 5.05 g/100 g), Valine (2.91 - 5.53 g/100 g), Methionine (1.74 - 3.80 g/100 g), Isoleucine (2.04 - 3.37 g/100 g), Leucine (3.64 - 7.18 g/100 g) and Phynylalanine (1.90 - 4.23 g/100 g). Whereas, the eight non-essential amino acids included: Serine (2.12 - 5.22 g/100 g), Glutamic acid (13.24 - 16.30 g/100 g), Proline (3.12 - 6.29 g/100 g), Glycine (4.20 - 9.08 g/100 g), Alanine (5.00 - 6.36 g/100 g), Cysteine (0.94 - 1.24 g/100 g), Tyrosine (2.33 - 3.33 g/100 g) and Aspartic acid (6.34 - 11.01 g/100 g). P. bane bane was first in terms of crude protein; S. mystus had the highest lipid and essential amino acid content. Also, C. anguillaris recorded the highest calorific value and best amino acid content. Thus, P. bane bane can serve as a source of animal protein to balance deficiencies in humans. Both S. mystus and C. anguillaris can be used as a nutrient base for high energy food and oil in the food industry.

Background: Plants could either be ornamental, medicinal, as well as nutritional, hence there has been a high level of reliance on plants as a whole by both man and animals for survival. Aim of the Study: This study aimed to evaluate the Phytochemical contents and Nutritional Profiles of Cnidoscolus chayamansa  Leaf Collected in Jos, North Central, Nigeria. Study Duration: This study was conducted on 30th June, 2019 at the Department of Biochemistry, Faculty of Basic Medical Sciences, University of Jos, Nigeria. Methodology: The proximate and phytochemical compositions were investigated in accordance with standard procedures. Mineral concentrations were determined by using flame photometer, atomic absorption spectrophotometer, calorimetry.  Crude protein content was determined by Kjeldahl method and amino acid profile were analyzed using Technicon sequential Multi-Sample Amino Acid Analyzer (TSM). Results: The preliminary qualitative phytochemical screening revealed the presence of alkaloid, flavonoids, tanins, saponins, terpenes and steroids, balsam and phenol with the absence of cardiac glycosides, and resin. The proximate analysis showed high carbohydrate (27.48±0.02), crude fibre (25.18±0.02) and protein (18.63±0.01), moderate concentration of moisture content (12.62±0.00) and ashes content (11.68±0.01), low concentration of crude lipid (4.40±0.01). The minerals detected were calcium, magnesium, potassium, sodium, iron, manganese, cobalt, sulphur, aluminium, zinc, molybdenum, and Phosphorus. Seventeen amino acids were analysed; nine essential amino acids namely; Leucine, isoleucine, phenylalanine, trptophane, valine, threonine, arginine, methionine and histidine and Eight non-essential amino acids namely; proline, tyrosine, cysteine, alanine, glutamate, gycine, serine and aspartic. Glutamic and leucine acids were found in higher concentration as 10.14+ 0.016 and 8.99+ 0.000 respectively. Conclusion: This investigation shows that Cnidoscolus chayamansa leaf from Jos, Nigeria contains high medicinal and nutritional compositions which could be exploited for the treatment of diseases as well as nutritional supplements.

The inability of humans to synthesize essential amino acids (EAA) necessitates the need to increase the levels of these nutrient molecules in certain foods in which they are deficient. Maize ogi is a typical food product for both infants and adults in Africa, but with poor EAA content. This study therefore sought to assess the possibility of increasing the EAA content in maize ogi by processing it with cheese whey instead of water. Maize ogi and whey-fortified ogi were prepared by the usual procedure of grain soaking, milling, and drying. Samples from both treatments were subjected to proximate composition and amino acid profile analyses using Waters 616/626 LC (HPLC) instrument. L-lysine, L-trytophan, and L-methionine contents in maize ogi remarkably increased from 0.52, 0.15, and 0.90 mg/100 gm sample, respectively, to 0.90, 240, and 1.320 mg/100 gm sample in whey-fortified ogi. There were also significant increases in other EAA contents of whey-fortified ogi relative to its counterpart (normal maize ogi). The sum increase in EAA contents (9,405 mg) correlates with the increase in protein (1 gm) per gram sample. This study demonstrates that cheese whey increases EAA content in maize ogi and suggests that whey-fortified maize ogi may be a preferred alternative to water processed maize ogi.
