Abstract L-leucine powder (LP) were added to improve the aroma of Robusta coffee beans. Treatment was a short soaking (M1) or spraying procedure (M2), then LP was added at varying levels up to 3% (w/w). All samples were roasted (240 °C/15 min) and extracted using an espresso machine. Volatile compounds were analysed by solid-phase microextraction−gas chromatography−mass selective detection. Thirty volatile compounds (6 pyrroles, 8 pyrazines, 3 phenols, 9 furans, 2 ketones, 2 aldehydes) were analysed. In 15 coffee samples, the levels of total volatile compounds (based on peak area ratios) ranged from 8.9 (M1-1) to 15.5 (non-treated Robusta: NTR). Robusta coffee has lower levels of bitter aroma compounds when pre-treated with LP. The sum of bitter volatiles (phenols, pyrroles, pyrazines) was lowest in M1-5 (3% LP), M2-1 (1% LP; both dried at 50 °C/15 min) and M2-7 (3% LP, dried at 70 °C/15 min) compared with NTR (p < 0.05).

It is well known that the methionine dipeptide (MD) could enhance the dairy cows milking performance. However, there is still a knowledge gap of the effects of MD on the rumen fermentation characteristics, microbiota composition, and digestibility. This experiment was conducted to determine the effect of different nitrogen sources with a total mixed ration on in vitro nutrient digestibility, fermentation characteristics, and bacterial composition. The treatments included 5 mg urea (UR), 25.08 mg methionine (Met), 23.57 mg MD, and no additive (CON) in fermentation culture medium composed of buffer solution, filtrated Holstein dairy cow rumen fluid, and substrate (1 g total mixed ration). Nutrient digestibility was measured after 24 h and 48 h fermentation, and fermentation parameters and microbial composition were measured after 48 h fermentation. Digestibility of dry matter, crude protein, neutral detergent fiber (NDF), and acid detergent fiber (ADF) in the MD group at 48 h were significantly higher than in the CON and UR groups. The total volatile fatty acid concentration was higher in the MD group than in the other groups. In addition, 16S rRNA microbial sequencing results showed MD significantly improved the relative abundances of Succinivibrio, Anaerotruncus, and Treponema_2, whereas there was no significant difference between Met and UR groups. Spearman’s correlation analysis showed the relative abundance of Succinivibrio and Anaerotruncus were positively correlated with gas production, NDF digestibility, ADF digestibility, and acetate, propionate, butyrate, and total volatile fatty acid concentrations. Overall, our results suggested that the microbiota in the fermentation system could be affected by additional nitrogen supplementation and MD could effectively enhance the nutrient utilization in dairy cows.

The effects of the sodium alginate (SA) coating incorporated with cinnamon essential oil nanocapsules (CEO-NPs) and Nisin, as a new edible coating, were investigated on the preservation of beef slices in the refrigerated storage for 15 days. All beef samples were analyzed for physicochemical properties (pH value, weight loss, the total volatile base nitrogen (TVB-N)) and antimicrobial activity against total bacterial count (TBC). Besides, the changes in color parameters and sensory attributes of all beef samples were evaluated. The results revealed that the incorporation of the complex of CEO-NPs and Nisin retarded the growth of the microorganism and reduced lipid oxidation, as determined by pH, TVB-N, and TBC. This can extend the shelf life of beef slices to 15 days. Moreover, the treatment with the SA coating, incorporating CEO-NPs and Nisin, significantly improved the weight loss, color, odor, textural, and broth attributes of the beef samples. The results suggest that the coating treatment enriched with CEO-NPs and Nisin could significantly inhibit quality deterioration of beef slices, and the complex of CEO-NPs and Nisin can improve antioxidant, antibacterial and sensory properties of the SA coating. Thus, the new edible coating could be regarded as a potential material to preserve beef slices.

ABSTRACT: This study was designed to evaluate the effect of corn dried distiller´s grains (DDGS) supplementation on feed intake, total tract digestibility, and ruminal fermentation of beef steers fed low-quality Guinea grass (Megathyrsus maximus, cv. Gatton panic). Twelve Braford crossbred steers were housed in individual pens (n = 4 steers/treatment), provided with three levels of DDGS supplement: 0%, 0.6%, or 1.2% BW. Steers were blocked by live weight and randomly assigned to treatments within the block. Corn DDGS supplementation increased total OM intake (21.55, 40.23, and 56.69 g/kg BW0.75) and tract OM digestibility (46.33, 49.03, and 72.39 % DM). Total tract digestible OM, CP, NDF and EE intake also increase in response to DDGS supplementation. Forage OM intake decreased when supplementation level reached 1.2 % BW. Also, ruminal pH decreased with DDGS supplementation level (6.88, 6.47, and 6.27). No differences were observed in total volatile fatty acids (VFA) concentration; however, the molar proportion of acetate decreased (77.98, 73.90, and 67.29 % Total VFA) as well as acetate: propionate ratio (4.38, 3.48, and 2.74). On the contrary, propionate proportions increased (18.32, 21.86, and 24.81 % Total VFA). Levels of ammonia and lactate were within suggested values for optimal fermentation and bacterial growth. Low-quality grass supplementation with corn DDGS increased total OM intake and digestibility. Also, DDGS inclusion favorably altered volatile fatty acids profile by reducing the acetate to propionate ratio regarding forage-only diets.

The anti-inflammatory activity of blackberries has been attributed to phenolic compounds, especially anthocyanins. The present study hypothesized that volatiles could contribute to anti-inflammatory activity as well. The anti-inflammatory properties of three blackberry genotypes varying in total volatile and phenolic contents were assessed by measuring concentrations of nitric oxide (NO), interleukin-6 (IL-6) and tumor necrosis factor -α  (TNF-α) within LPS-inflamed RAW264.7 murine macrophage cells after a preventive treatment of either a phenolic or a volatile extract. Extracts from blackberry genotypes A2528T, A2587T and Natchez had total phenolic contents of 4315, 3369 and 3680 µg/mL, respectively, and total volatile contents of 283, 852 and 444 ng/mL, respectively. Phenolic and volatile extracts of all genotypes significantly lowered the secretion of NO, IL-6 and TNF-α in ranges varying between 20-42%, 34-60% and 28-73% inhibition, respectively. Volatile extracts exhibited greater anti-inflammatory properties than phenolic extracts, despite being present at much lower concentrations in the berries. Further research is needed to assess bioavailability and anti-inflammatory effect of blackberry volatiles in vivo.

Brazilin in sappan is sensitive to pH, which make it possible as indicator of food quality. This research aimed to investigate performance of sappan extract as colorant for indicator label applied in chicken meat packaging. The samples were stored at room and refrigerator temperature. They were then tested for color change of label RGB (Red Green Blue), pH and TVB-N (Total Volatile Base-Nitrogen) of the meat. Data were analyzed using ANOVA at significant level of 5%. Indicator label showed the reduced RGB during storage, while pH and TVB-N increased. In case of room temperature, the color change into pink occurred in day 3 with pH 6.72 and TVB-N 1.84 mg N/100g. Meanwhile, for samples at refrigerator temperature, the label color turned into pink in day 6, with pH 6.56 and TVB-N 2.09 mg N/100g. In this regard, indicator label could detect the depletion of chicken meat quality as indicated by color shift from yellow to pink when pH and TVB-N were at critical value. This result provides significant output for development of sappan extract for indicator of meat spoilage.

In this study, by comparing the four groups of sausages, namely, CO (without starter culture), LB (with Lactobacillus sakei), LS (with L. sakei 3X-2B + Staphylococcus xylosus SZ-8), and LSS (with L. sakei 3X-2B + S. xylosus SZ-8 + S. carnosus SZ-2), the effects of mixed starter cultures on physical–chemical quality, proteolysis, and biogenic amines (BAs) during fermentation and ripening were investigated. Inoculation of the mixed starter cultures increased the number of lactic acid bacteria and staphylococci in sausages during fermentation and ripening for 0 to 5 days. The L. sakei 3X-2B + S. xylosus SZ-8 + S. carnosus SZ-2 mixed starter accelerated the rate of acid production and water activity reduction of sausages and improved the redness value. Compared with CO, the mixed starter effectively inhibited Enterobacteriaceae. At the end of ripening, the LSS group was approximately 1.25 CFU/g, which was less than the CO group, thereby reducing the total volatile basic nitrogen (TVB-N) in the LSS group. The free amino acids in the LS and LSS groups (224.97 and 235.53 mg/kg dry sausage, respectively) were significantly (p < 0.001) higher than that in the CO group (170.93 mg/kg dry sausage). The level of histamine, cadaverine, putrescine, and common BAs showed an opposite trend to the increase of the corresponding precursor amino acid content, which were significantly lower (p < 0.001) in the LS and LSS sausages than in CO. This study showed that L. sakei 3X-2B + S. xylosus SZ-8 + S. carnosus SZ-2 is a potential mixed starter for fermented meat products.

The present study evaluated the effect of breed, Jaca Navarra (JN) vs. Burguete (BU), and finishing diet, conventional concentrate—diet 1 (D1) vs. silage and organic feed—diet 2 (D2), on the fatty acid composition and volatile profile of longissimus thoracis et lumborum muscle from forty-six foals. For this, foals were reared under a semi-extensive system and slaughtered at about 21 months of age. The outcomes showed that breed and finishing regime had a significant (p < 0.05) effect on the lipid and volatile profile of foal meat. In particular, JN foals reported higher polyunsaturated fatty acid contents and better nutritional indices in line with the health guidelines; whereas, BU and D1 groups generated higher amounts of total volatile compounds. However, it was the diet to occupy a central role in this study. Indeed, diet 2, due to its “ingredients” and composition, not only ameliorated the lipid profile of foal meat, but also reduced the generation of volatile compounds associated with lipid oxidation and minimized off-flavors. Thus, this diet could give an added value to the aromatic perception of meat and improve its sensorial acceptability.

White water is highly recycled in the papermaking process so that its quality is easily deteriorated, thus producing lots of malodorous gases that are extremely harmful to human health and the environment. In this paper, the effect of hydrogen peroxide (H2O2) on the control of malodorous gases released from white water was investigated. The results showed that the released amount of total volatile organic compounds (TVOC) decreased gradually with the increase of H2O2 dosage. Specifically, the TVOC emission reached the minimum as the H2O2 dosage was 1.5 mmol/L, and meanwhile, the hydrogen sulfide (H2S) and ammonia (NH3) were almost completely removed. It was also found that pH had little effect on the release of TVOC as H2O2 was added, but it evidently affect-ed the release of H2S and NH3. When the pH value of the white water was changed to 4.0 or 9.0, the emission of TVOC decreased slightly, while both H2S and NH3 were completely removed in both cases. The ferrous ions (Fe2+) and the copper ions (Cu2+) were found to promote the generation of hydroxyl radicals (HO•) out of H2O2, enhancing its inhibition on the release of malodorous gases from white water. The Fe2+/H2O2 system and Cu2+/H2O2 system exhibited similar efficiency in inhibiting the TVOC releasing, whereas the Cu2+/H2O2 system showed better perfor-mance in removing H2S and NH3.

Abstract Air quality in the classroom can affect the health of students because students spend a lot of time in the classroom for learning activities. In addition to the air quality of healthy buildings, it is also related to thermal comfort. During the learning process, a comfortable learning interaction is needed, to make it easier for teachers to deliver learning materials. Therefore, this study evaluated the classrooms of SDN 10 Banda Aceh and SDN Kajhu Aceh Besar which were used as objects of research studies. This study uses a quantitative approach through measuring air quality parameters, namely CO2 (Carbon Dioxide), HCHO (Formaldehyde), and TVOC (Total Volatile Organic Compound) concentrations, while thermal comfort, namely air temperature, humidity, and wind speed using an air quality detector and hotwire anemometer. The level of air quality is evaluated based on MENKES/SK/2011 while thermal comfort is evaluated based on the Indonesian national standard SNI and adaptive thermal comfort. Based on the results of the research, the air quality in both schools still meets the MENKES/SK/2011 standard, while the level of thermal comfort in both schools is classified as uncomfortable according to SNI and adaptive thermal comfort.
