Approximately one third of the food produced globally is lost or wasted along the supply chain. Reducing this would be an important measure to increase the global food supply as the world continues the struggle to feed its people sustainably. Not merely a waste of food, these losses also represent a waste of human effort and agricultural inputs from expensive fertilizers to natural resources as well as contributing to global greenhouse gas emissions. Measuring the extent of, and understanding the reasons for, these losses can assist in developing appropriate measures required to prevent or reduce such losses. Therefore, the objective of this research was to quantify postharvest losses in quantity and quality of ‘Packham’s Triumph’ pears at farm and simulated retail levels. Pears were sampled from two farms in the Western Cape Province of South Africa, the largest deciduous fruit production and export region in Southern Africa. The greatest losses measured along the supply chain were on-farm immediately after harvest, with 18% recorded. The main reasons for on-farm losses were small size (65%), deformity (26%), and chafed peel (9%). After 14 days in cold storage (−0.3 ± 0.7 °C, 81.3 ± 4.1% RH), mean pear losses were 0.86% which increased to 1.49% after 28 days. After 10 days of further storage under simulated market conditions (5.4 ± 0.6 °C, 83.7 ± 2.9% RH), fruit losses were 1.52% during retail marketing and 2.09% during export. Storing pears under ambient conditions (25.1 ± 1.3 °C and 46.6 ± 6.0% RH) resulted in a higher incidence of losses, increasing from 0.90 to 1.55 and 2.25% after 3, 7, and 10 days, respectively. The socio-economic impacts of these postharvest losses amounted to financial losses of between ZAR 492 million (USD 34.1 million according to the conversion rate of 14 April 2021) to over ZAR 831 million annually, and this was associated with the loss of 301 million MJ of fossil energy, 69 million m3 of fresh water and contributed to the emission of approximately 19,690 tons of CO2 equivalent. The fresh water lost could sustain 3.7 million individuals daily for a whole year at a daily minimum usage rate of 0.05 m3 per day while it will require planting 0.5 million trees to sink the 19,690 tons GHG emissions of the pear losses (0.039 metric ton per urban tree planted). Decreasing postharvest losses will conserve resources as well as improve food security and nutrition, objectives of the post-2015 sustainable development agenda led by the United Nations.

Mayonnaise is an oil-in-water emulsion rich in calorie, micronutrients and fat-soluble vitamins which is produced from dominantly vegetable oil. African pear oil is a highly unsaturated oil, domestically and commercially underutilize with tonnage of postharvest losses. It presently, has little or no industrial attraction for use as commercial ingredient for food production and formulation. The aim therefore is to improve the commercial value of African pear pulp oil for use as a main ingredient in food applications, hence improving its utilization and reducing postharvest losses. Oil was extracted from African pear through Soxhlet extraction using n-hexane as the solvent and the extracted oil was blended with soybean oil in the following ratios: SO100:APO0 (Control), SO0:APO100, SO85:APO15, SO75:APO25, SO65:APO35, and SO50:APO50 for the production of mayonnaise. Some physicochemical properties of the oil blends were evaluated while proximate and sensory properties were also evaluated in the produced mayonnaise. Blending increased theiodine, acid and free fatty acid values of the oil blends and decreased significantly (p < 0.05) the peroxide value. The values ranged from 30.65 to 124.00 g iodine 100g–1, 6.85 to 2.57 mg KOH g–1, 5.03 to 1.91% and 2.62 to 3.50 meq O2 kg–1 for iodine, acid, free fatty acid and peroxide values, respectively. The proximate composition parameters of the mayonnaise samples increased significantly (p < 0.05) after blending. The values ranged from 32.65 to 35.04% for moisture, 1.12 to 1.44% for ash, 30.15 to 37.15% for fat, 1.93 to 2.31% for protein and 25.87 to 34.15% for carbohydrate. Significant improvement was recorded in the values of vitamin E, iodine and viscosity values of the mayonnaise samples after blending compared to the control with values ranging from 4.97 to 22.60 mg 100g–1 for vitamin E, 28.70 to 88.10 g iodine 100g–1 for iodine value and 24.70 to 30.13 Pa.s for viscosity. Sensory evaluation showed that the mayonnaise samples were generally acceptable by the panelists. Conclusively, blending soybean oil with African pear oil up to 50:50 could be used in the production of acceptable mayonnaise with higher fat, protein, ash, vitamin E, iodine value and viscosity, thereby reducing its postharvest losses through improved utilization.

Maize shelling is still a challenge in low developing countries with more efforts required to advance this operation. In Uganda, motorized immobile maize shellers have been fabricated locally to enhance the shelling operation. However, their performance has not elated the farmers. The unsatisfactory performance is a result of these shellers being fabricated by local artisan with finite understanding of the maize grain characteristics and operation factors to optimize maize shelling. In addition, farmers in these countries have a deficiency of power to operate the motorized maize shellers available. Transportation of these motorized maize shellers is also still a challenge and it imposes an extra cost to the farmers hence reducing their profits from maize growing. In this chapter, we reviewed maize shelling process in low developing countries particularly the categories of maize shelling, maize sheller design requirements, use of equations to design sheller parts, modification of the motorized maize shellers and case studies on the mobile maize shellers, comparing them with immobile maize shellers. The study concluded that on addition to other sheller performance attributes, motorized mobile maize shellers can solve transportation challenges associated with motorized immobile maize shellers.

Postharvest losses of tomato pose serious threat on the economic viability of actors in the tomato production chain in Nigeria. Therefore, postharvest losses of tomato among marketers in Ibadan Metropolis of Oyo State Nigeria were investigated by the researchers. One hundred and twenty tomato marketers were chosen from the five food markets in Ibadan metropolis through a simple random sampling technique. The study adopted linear regression and descriptive statistics to analyze data. The outcomes of the investigation show that females were 92.5% and 88.3% were married. Capital is primarily raised through cooperative societies (57.5%). Postharvest losses of tomato accounted for 18.9% of purchase which represents ₦124,800/day. The major causes of PHLs are poor packaging (100%) and poor storage (100%) by the tomato marketers. Meanwhile, all the respondents (100%) adopted sorting to reduce PHLs of tomato. The regression analysis showed that education has a significant effect to reduce PHLs of tomato. The study concluded that huge postharvest and monetary losses of tomato are experienced by the tomato marketers. The study recommends provision of quality postharvest handling education to tomato marketers as a way of reducing PHLs of tomato in Ibadan.

The continuing decline in catch rates instigates various fishing adjustments to keep up with the demands of a growing population. Fishery resources are being caught before they can attain their optimum harvestable size. Undersized catch elicits lower economic value; thus, considered as losses in postharvest fisheries. The present study focused on generating actual data on the volume of undersized catches in selected landing sites in the Philippines. It aims to quantify the magnitude of postharvest and financial losses incurred from catching fishery commodities below their marketable sizes. The estimated loss at 0.97% and 4.02% for capture and aquaculture commodities, respectively, was equivalent to PHP 15,235,290 financial loss. Estimation of losses by commodity showed that squid recorded the highest at 20.14%, followed by tilapia (9.61%), blue swimming crab (4.48%), shrimp (2.75%), small pelagics (1.98%), mussel (1.46%), oceanic tuna (0.91%), by-catch (0.79%), milkfish (0.09%), and oyster (0.02%). Excessive catching of undersized BSC and squid in Western Visayas may lead to overexploitation of resources and may adversely affect subsequent recruitment in the long run. The study's results indicate that catching undersized species could lead to substantial postharvest losses and subsequent loss of potential revenue to the industry players. Allowing the stocks to attain their maximum biomass level will minimize postharvest losses; thus, maximizing utilization of resources and benefits derived from the sector. Unrestrained catching of undersized fishery commodities undermines resource sustainability, economic potential, and food security. The strengthening of regulatory frameworks is, therefore, necessary to address both economic and ecological impacts.

The necessity for food traceability has been increased over the years with the expansion of food supply chains globally over these years due to stringent of food safety regulations. Enhancing the access to quality food safely is one of the essential requirements of food supply chain traceability. Conversely, significant percentages of postharvest losses available especially in developing countries due to poor supply chain and logistics practices thereby threatening food security. Unless there is a possibility to trace the Supply chain, it is difficult to take remedial actions. When it comes to Sri Lanka, currently it is harder to have the traceability in most of the foods supply chains commonly on most of the elementary supply chains such as fruits and vegetables. This has led to postharvest losses since it is harder to identify when and where damages occur, who are accountable, harvested and transient times, supply demand mismatch too. Therefore, this paper aims to investigate the feasibility of tracing of fruit and vegetable supply chain in Sri Lanka and contribute theoretically to facilitate authorities and decision makers for future traceability improvement. Availability of secondary information on fruits and vegetables traceability was examined referring to government agencies. Basic structure of supply chain was identified based on secondary data and a case study was conducted based on supply chains linked to Thambuththegama and Keppetipola Dedicated Economic Centers to gather primary data. To quantify the feasibility of tracing, a feasibility index was developed. Developed index was used to assess the feasibility towards improved traceability of selected chains where it can be applied for other food and non-food supply chains as well. The feasibility index can be used for other fruits and vegetables supply chains too to assess the feasibility prior to implementation of a traceability system. Furthermore, it can be used for non-food supply chains with some modifications. Analysis revealed that poor feasibility of wholesalers compared to farmers and retailers. Product identification technologies, awareness and willingness for traceability improvement were ranged low to fair for all the entity categories. Hence, enhancement of record-keeping and information sharing, adopting product identification and quality measurement technologies, and strengthening of legislation were identified as key improvements for enhanced fruits and vegetable traceability and efficient postharvest management of studied supply chains

Rapid postharvest losses and quality deteriorations in pineapple are major challenges to growers and handlers. Chitosan-based coatings on fruit surfaces have gained importance in recent years to enhance postharvest shelf life of the fruits. In this study, aloe vera gel was added as a natural antioxidant in chitosan-based composite coating containing ZnO nanoparticles. The developed formulation was applied on the surface of freshly harvested pineapple fruits. ZnO nanoparticles were used as an antimicrobial agent. Coated pineapple fruits were evaluated for weight loss, total soluble solids, titratable acidity, decay index, maturity index, and sensory attributes, including visual appearance, periodically at 5 day interval during storage. The results showed that the coating of the fruit reduced weight loss by about 5%, and also delayed ripening and oxidative decay compared to the uncoated fruit. Thus, the developed coating formulation is a promising sustainable solution to reduce postharvest losses and to extend shelf life of pineapples.
